Improving Effects of Multigrain Feed on Endurance (혼합곡 식이의 지구력 향상 효과)

  • This study evaluated the effect of multigrain supplementation on exercise-related changes in running time and glycogen storage capacity of male SD rats engaged in treadmill exercise. Thirty-six 6-week-old rats were divided into six groups: normal (Nor) fed normal feed, control (Con) fed with 20% normal feed and 80% milled rice, test group one (GI) fed with multigrain feed I, test group two (GII) fed with multigrain feed II, test group three (GIII) fed with multigrain feed III, and test group four (GIV) fed with multigrain feed IV. Endurance tests by treadmill machine were administered after 24 days of multigrain feed supplementation and adaptive training. Running time was extended and glycogen storage capacity increased in the multigrain-treated group compared to the non-treated group. Also, the fatigue indicators of inorganic phosphorous, CPK, and lactate concentration were all reduced in the multigrain feed group compared to the control group after 25 min and/or exhausted exercise. But there was no difference in GOP, GTP, lactate, or LDH concentrations between the groups. Our results demonstrated that endurance improved with multigrain feed in rats. Specifically, running time, glycogen storage capacity, inorganic phosphorous, CPK, and lactate serum concentration increased. Importantly, the improvements in endurance brought about in the GII group fed with waxy barley was the greatest among the experimental groups.

The Optimal Condition for the Production and Extraction of Monacolin K from Red-Koji (홍국으로부터의 monacolin K 생성 및 추출 최적화)

  • The optimal condition for the production and extraction of monacolin K was reported. HPLC was used to determine monacolin K a kind of metabolite of Monascus from red-koji made of Monascus purpureus CBS 281.34. After culturing Monascus in solid and liquid media at $30^{\circ}C$ for 10 days, each of these were inoculated with soybean, wheat, barley, waxy rice, and rice and cultivated at $30^{\circ}C$ for 11 days. The production of monacolin K was the highest(0.35g/100g) when cultured with rice. The yield of monacolin K in red-koji increased with drying temperature and time according to the removal of water. Considering monacolin K content and the degree of death of Monascus, red-koji was dried at $80^{\circ}C$ for 60 min. Although monacolin K in red-koji was mostly extracted by 80% ethanol, there was no difference in monacolin K between shaking for 1 min and extraction for $0{\sim}24$ hr after sonication for 7 min. The extracted yield of monacolin K was the highest when the ratio of red-koji and 80% ethanol was 1:9. Moreover, the production of monacolin K appeared to be parallel with that of the pigment.

Fermentation Characteristics for Preparation of Distilled Liquor Made of Mixed Grains (혼합잡곡 증류주 제조를 위한 발효 특성)

  • In this study, we aimed to develop mixed grain-derived hard liquor with enhanced favor and taste. First, fermentation characteristics analysis according to the grain used showed that rice and adlay produced high alcohol outputs of 15.2% and 13.3%, respectively, while that of barley was low at 5.6%. In an experiment in which different amounts sorghum flour were added, the sample without sorghum flour showed an alcohol content of 19.0%. The effect of adding up to 7% ipkuk (koji) was examined in a sensory test. Comprehensive preference increased with increasing amounts of added ipkuk. Fermentation characteristics analyses of distilled liquor into which milled rice (5% degrees of milling of unpolished waxy rice) was added showed that alcohol content and acidity were not greatly affected by its addition. Finally, an analysis of aromatic ingredients showed that the percentage of ethyl palmitate, which produces a smooth aroma, was the highest in distilled liquor made of mixed grains.

Characteristics of grain powder as a viscosity agent (증점제로서의 곡류 가루 특성 연구)

  • For increasing both the viscosity and intake of calories and nutrients, four cereal powders: Goami (GR), waxy barley (WBL), germinated brown rice (GBR), and oat (OT) were added to rice porridge, and the properties of the porridge were compared with that containing a commercial thickener. Among the samples, the porridge with WBL showed the highest viscosity, whereas that with GR showed the lowest. With regards to color properties, the porridge with GR showed the highest whiteness, while those with OT or GBR had the highest yellowness, affecting the color of the rice porridge. The viscosity level of porridges with cereal powders did not reach that of the porridge with the commercial thickener at $90-95^{\circ}C$; however, at $55-60^{\circ}C$, the viscosity of the porridge with cereals was enough to replace the commercial thickener. With regards to organoleptic tests, the overall acceptability was mainly attributed to color, and there were no significant differences in other properties. From these results, it seems that the cereal powders could be suitable substitutes for commercial thickeners.
