찰보리를 이용한 인절미 제조와 품질 특성 (Preparation of Waxy Barley Cake and Its Quality Characteristics)

  • In order to increase the use of waxy barley, cakes were made and the textural and sensory properties were investigated. The moisture content of cakes made out of waxy barley grain and flour were 51.0 and 52.1%, respectively. L values in color of the waxy barley cakes tended to decrease during 3 day storage at 15$^{\circ}C$. Textural analysis showed that there were no differences among two waxy barley and waxy rice cakes in hardness at fresh state. But after 3 day storage at 15$^{\circ}C$, the hardness of the waxy barley cake was lower than that of waxy rice cake. These results implied that the degree of retrogradation of waxy barley cake might be low due to its high dietary fiber content. The hardness and adhesiveness of the waxy barley cake thawed after 15 day freezing were not significantly different from those of the fresh cake. In sensory evaluation, the overall preference of waxy barley cake was lower than that of waxy rice, but the sensory score of the cake made of waxy baley flour was above 4 point in the 5 point scale, showing a patency of waxy barley for the cakes.

  • 찹쌀을 $20^{\circ}C$에서 30시간 수침하면서 6시간 간격으로 만든 찹쌀떡의 경도와 $20^{\circ}C$에서 3일 저장후의 경도는 모두 수침시간이 길어질수록 작아졌고, 노화속도도 늦어졌다. 이러한 변화는 수침 $18{\sim}30$시간 시료에서는 큰 차이를 보이지 않았다.

Studies on the Processing Properties and Interactions Between Porcine Blood Proteins and Waxy Rice Starch During Making Porcine Blood Cake

  • The physiochemical properties and interactions between porcine blood and waxy rice were determined. Addition of calcium chloride (0.15%) improved acceptability of blood cake and increased the gelatinization degree of waxy rice. The water-holding capacity of porcine blood gel (blood/water=60/40, v/v), extent of absorption and gelatinization of waxy rice, and scanning electron microscopy showed that blood protein matrix and waxy rice are competitors for holding water in the cooking procedure. Non-haem iron content increased linearly (R=0.95) when heating temperature rose. The presence of blood proteins caused increasing of peak temperature (Tp) of gelatinization in differential scanning calorimetric thermal gram, The microstnlcture of plasma proteins and haemoglobin appeared continuous changes, and interacted with surface of waxy rice flour in terms of network and mosaic form, respectively. The electrophoretic patterns revealed an interaction between plasma proteins and waxy rice glutelin and haemoglobin when heated could be found at temperatures above $60^{\circ}C$.

멥쌀 혼합비율에 따른 유과의 품질특성 (Yukwa Quality on Mixing of Non-waxy Rice to Waxy Rice)

  • 유과는 전통적으로 찹쌀로만 만들어 왔으나 일반계인 신선찰벼 품종의 찹쌀에 통일계 삼강벼 품종의 멥쌀을 $0{\sim}30%$ 혼합하여 유과를 만든 결과 혼합비율20% 수준까지 유과의 팽화율, 아삭아삭한 정도 및 굳기에서 찹쌀로만 만든 유과와 유의적 차이를 보이지 않아 유과 제조시 찹쌀에 멥쌀을 20%까지를 혼합할 수 있음을 확인하였다. 아울러 멥쌀을 혼합한 처리에서 연속식 꽈리치기 장치를 성공적으로 도입할 수 있었으며, 이때 반죽의 유동특성을 개선키 위하여 수분함량을 찹쌀만을 사용할 때보다 높여서 54% 내외가 적당하였다.

종류별 유화제가 찹쌀떡의 품질에 미치는 영향 (Effects of Various Emulsifiers on the Quality of Waxy Rice Cake)

  • 유화제가 찹쌀떡의 품질에 미치는 영향을 규명하기 위하여 monoglyceride, lecithin, sugar ester를 찹쌀분말 대비 각각 0.5%, 1%씩 혼합하여 falling number, RVA를 측정하고 찹쌀떡을 제조한 후 5~7$^{\circ}C$ 사이에 서 냉장 보관하면서 색차계, 수분활성도, rheometer 등을 조사하였다. Falling number는 control과 mono-glyceride, lecithin 0.5%, 1%를 사용한 것은 큰 차이를 보이지 않았으나 control의 77.5에 비하여 sugar ester의 경우0.5%와1% 사용시 각각 88.4, 81로 높게 나와 sugar ester가 점도를 높이는 것을 알 수 있었다. 찹쌀 분말의 호화개시온도는 66.78$^{\circ}C$이었으며 유화제를 첨가한 것은 66.45~67.05$^{\circ}C$로 유화제가 호화개시온도에 큰 영향을 미치지 못하였다. 최고점도는 lecithin이 227 RVU, 1% sugar ester가 228.5로 control 231.5에 비하여 낮아졌으며 그밖에 유화제는 최고점도 및 최종 점도가 control에 비하여 높아졌고 특히 1% sugar ester 사용한 것의 최종점도는 199.5 RVU로 가장 높게 나와 falling number와 유사한 경향을 보였다. 유화제를 첨가하여 찹쌀떡의 제조한 결과 유화제를 첨가하지 않은 경우보다 노화가 지연되었으며 1% sugar ester 첨가시 지연 효과가 가장 크게 나타났다. 수분 활성도는 저장 5일째 1% sugar ester를 사용한 것이 0.875로 가장 낮았고 유화제를 사용하지 않은 것이 0.911로 가장 높게 나와 유화제가 찹쌀떡의 수분활성도를 낮추었으며 그 가운데 sugar ester의 효과가 가장 좋았다.

발아찰현미떡의 품질 및 소화특성 (Quality and Digestibility Characteristics of Rice Cake with Germinated Brown Waxy Rice)

  • 백미와 현미, 발아현미 찹쌀떡에 대한 소화율과 품질 특성을 살펴보았다. 또한, 소비자들에게 선호도가 높은 제품의 발아조건을 찾고자 백미와 현미, 발아현미찹쌀떡을 제조하여 색도, 기계적 품질 특성, in vitro 소화율 그리고 관능적 특성을 살펴보았다. 떡의 밝기를 나타내는 명도(L)는 현미보다 발아현미가 낮았으며 발아시간이 길어질수록 감소하였다. 반면 적색도(a)와 황색도(b)는 발아가 진행될수록 증가하여 전체적으로 색이 진해지는 것을 알 수 있다. 현미와 발아현미의 조직감 특성에서 경도, 부착성, 검성, 씹힘성은 현미가 가장 높았고 발아시간이 증가할수록 감소하는 경향을 보였으며 이로써 노화 지연에 도움을 줄 것으로 생각한다. 탄성은 시료 간의 큰 차이를 보이지 않았으며, 응집성은 현미와 발아현미가 백미보다 낮은 값을 보였다. 현미, 발아현미 찹쌀떡의 in vitro 소화율 결과 발아시간이 증가할수록 빠르게 소화되는 전분인 RDS 함량은 증가하고 소화되지 않는 전분인 RS 함량은 감소하는 특성을 나타내어 소화율이 크게 증가함을 알 수 있었다. 관능검사에서는 현미가 색, 부착성, 전체적인 기호도에서 높게 평가되었고, 발아시간이 증가할수록 색, 향에서 높은 점수를 받았지만, 부착성과 전체적인 기호도에서는 낮게 평가되었다. 이상의 결과로 찹쌀떡보다는 높고 찰현미떡과 비슷한 관능적 평가를 받은 10시간 발아한 현미로 만든 발아찰현미떡이 소화조절용 쌀가공식품으로 개발하기에 가장 적당할 것으로 생각된다.

품종을 달리하여 제조한 인절미의 텍스쳐 및 노화도 특성 (Texture and Retrogradation Characteristics of Injeulmi Made by Different Varieties of Waxy Rice)

  • The textural properties and retrogradation of injeulmi(Korean traditional waxy rice cake) made from various waxy cultivars were examined to compare the varietal difference. Injeulmi made from Shinsun chalbyeo and Whasunchalbyeo were exhibited relatively soft texture, while Taichung Sen Glu I and Yuk donongrimna were shown high adhesivness. Intermediate or long grain rice such as Yukdonongrimna, Hangangchalbyeo and Taichung Sen Glu I had a tendency to be rapidly retrogradatated as compared with short grain rice, Shinsunchalbyeo and Whasunchalbyeo. Amylogram characteristics of these intermediate or long grain rice cultivars were shown high value in consistency and low value in setback. Studies per formed by various cookery procedure demonstrated that injeulmi made from cooked waxy rice was softer and delaying retrogradation than made from waxy rice flour.

차수수가루 첨가량을 달리한 설기떡의 품질특성 (Quality Characteristics of Sulgidduk with Different Amounts of Waxy Sorghum Flour)

  • The aim of this study was to determine the optimum addition amount of waxy sorghum flour to rice flour in the preparation of Sulgidduk(waxy sorghum rice cake). The moisture content of Sulgidduk with added wary sorghum flour was $37{\sim}41%$. With increasing waxy sorghum (lour content over the range from 10% to 50%, the L-value decreased, whereas the a-and b-values increased. In the mechanical evaluation of waxy sorghum Sulgidduk, the hardness, gumminess and brittleness increased with increasing waxy sorghum flour content above 20%. The adhesiveness increased with increasing waxy sorghum flour content. The cohesiveness and springiness did not differ significantly with the addition of waxy sorghum flour. In the sensory evaluation of waxy sorghum Sulgidduk, the evaluation of the softness, moistness and chewiness was the best at 20% content. Sulgidduk made with the addition of 20% waxy sorghum flour to rice flour was found to be the best recipe in terms of overall acceptability and the sensory qualities of softness, moistness and chewiness.

밀가루와 튀김온도가 개성주악의 품질에 미치는 영향 (Effect of flour and frying temperature on quality of Gaeseong-Juak(doughnut of waxy rice))

  • This study was carried out to standardize the recipe of Gaeseong-Juak. The formation and quality of the Juak were investigated under different treatment conditions. 1. The high ratio of medium flour(20%) in the flour mixture resulted in poor swelling. 2. The flour mixture with 10% strong flour showed higher volume of Gaeseong-Juak compared with the 10% mixture of medium flour, but the score of sensory evaluation was low. 3. The addition of Makkoli in the dough did not give significant difference in the formation of Juak, but the sensory score was low. 4. The deep-frying temperature in the range of 150$\^{C}$ to 170$\^{C}$ allowed the greatest swelling of Gaeseong-Juak, but the highest quality score was obtained at 160$\^{C}$ treatment. Overall, the best preparation condition of Gaeseong-Juak was that the mixture of waxy rice flour with 10% medium flour was kneaded with Makkoli and fried at 160$\^{C}$.

감단자의 관능적 및 텍스쳐 특성 (Sensory and Texture Properties of Gamdanja)

  • The objective of this study was to seek the best recipe for making Gamdanja. Gamdanja is a kind of rice cake made from persimmon extract and winy flour, with a little salt mixed into the waxy flour. The method involved boiling the persimmon extract and beating in the waxy rice powder until all the waxy flour had been added. The procedure was as follows: Gamdanja containing different ratios of ingredients, such as persimmon extract (23, 23.5 and 24 hrs) and waxy rice flour (160 and 180g). The most desirable recipe was determined after sensory examination and mechanical tests using texture, moisture content and colorimeter measurements. The results of the sensory evaluation showed that Gamdanja made using persimmon extracted for 23.5 hrs, with the additional of 160g of winy flour gave the higher scores for QDA profile, chewiness, delicacy and after swallowing preference than the other ratios. The results of the acceptance test also showed that the Gamdanja made using the persimmon extracted for 23.5 hrs with 160g of waxy rice flour was the best mix in every respect, such as for color and overall acceptability. In the textural analysis of Gamdanja, the hardness, adhesiveness, gumminess and chewiness were increased by the additiong of furtherway lour. The moisture content of Gamdnja with persimmon extracted for 23 hrs was higher an those extracted for 23.5 and 24 hrs. The L-, a- and values of Gamdanja were increased with decreasing waxy flour. The sensory and mechanical examinations showed the overall quality of Gamdanja had positive correlations with delicacy and color, but negative correlations with hardness, adhesiveness, gumminess, and chewiness. As a result of these tests, the most desirable recipe for the Gamdanja was persimmon extracted for 23.5 hrs with the additional of 160g of waxy rice flour, containing $1\%$ salt and a moisture content of $45.87\%$.
