In order to establish effective extracting method of ginseng extracts from fresh ginseng, the yield, chemical composition, physical properties and organoleptic quality of the extracts, which are extracted with various concentrations of ethanol, were investigated. The results are as follows : 1. The yield of the extracts was increased with decreasing the concentration of ethanol as solvent. As in case of water as a solvents, the highest yield was achieved when 23.64% of water was used. The yield were 12.3% and 9.05%, when 70% and 90% of ethanol were used, respectively lively. 2. Crude protein content is the highest level and nitrogen·free extracts content is the lowest at the concentration of 50% ethanol. Lipid was increased linerly while ash was decreased as increment of ethanol concentration. 3. Viscosity and residue of the extracts also decreased in accordance with the increament of ethanol concentration and the transmittance value and pH of extract solutions were almost similar except transmittance value of the water extracts. 4. The extracts extracted with 70% ethanol gave the best result of sensory test. The total sensory test score of each extracts (70%, 90%, 50%, 0% and 30%) were 70, 65, 50, 46 and 41, respectively.

This study was conducted to determine the antioxidant activities of ethanol and water extracts of Sargassum hemiphyllum. Antioxidant activities were evaluated by assessing total phenolic contents, 2,2-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, chelating effect, reducing power, and using the rancimat method. Total phenolic contents in the ethanol and water extracts were 17.91 and 13.44 mg gallic acid equivalents/g, respectively. Ethanol extract showed higher DPPH radical scavenging activity than water extract and similar activity to that of BHT. The reducing power of ethanol and water extracts increased in a concentration-dependent manner. Particularly, ethanol extract was more effective than water extract. Water extract showed a higher chelating effect compared to ethanol extract. The antioxidant index measured by rancimat was lower than those in BHT, but the ethanol extract showed a higher value than the water extract. The ethanol extract showed higher antioxidant activity than the water extract, except for the chelating effect. These results suggest that the ethanol extract of Sargassum hemiphyllum has more potent antioxidant activity and may be used as a source of natural antioxidants.
This study was carried out to investigate the extraction yield, the contents of total phenol substances and antioxidative substances, electron donating abilities, nitrite scavenging abilities of water and ethanol extracts from Cassia tora L. and Pueraria thunbergiana and antioxidative activity of water and ethoanol extract from Cassia tara L. Tatal phenol substances of water and ethanol extract from Cassia tora L. and Pueraria thunbergiana showed nearly the same levels, and the antioxidative substances of water and ethanol extract from Pueraria thunbergiana has as much as two times higher than those from Cassia tara L.. The nitrite scavenging abilities were measured at pH 1.2, 3.0, 4.2 and 6.0, respectively. Water and ethanol extracts from Cassia tora L showed 14.9%∼22.3% and 49.1%∼56.7%, and those from Pueraria thunbergiana revealed 57.7%∼61.0% of nitrite scavenging abilities, respectively. Especially the extracts from Pueraria thunbergiana showed higher pH dependence than those from Cassia tora L. The electrol donating abilities of water extract from Cassia tora L. were higher than those from Pueraria thunbergiana, and vice versa in the case of ethanol extracts. In the antioxidative activitiy of extracts from Cassia tora L. against linoleic acid during storage of 20 days at 50$^{circ}C$, peroxide values at the addition level of 5mg and 10mg were consoderably lower than 2mg although peroxide value increased above 375 after 12days of storage compared with the control(BHA-added) of 129 at 8days.
The angular dispersion-type non-scanning Fabry-Perot was applied to an ethanol-water mixture in order to investigate its acoustic properties such as the sound velocity and the absorption coefficient. The scattered light from the mixture was analyzed by using the charge-coupled-device area detector, which made the measurement time much shorter than that obtained by using the conventional scanning tandem multi-pass Fabry-Perot interferometer. The sound velocity showed a deviation from ultrasonic sound velocities at low temperatures accompanied by the increase in the absorption coefficient, indicating acoustic dispersion due to the coupling between the acoustic waves and some relaxation process. Based on a simplified viscoelastic theory, the temperature dependence of the relaxation time was obtained. The addition of water molecules to ethanol reduced the relaxation time, consistent with dielectric measurements. The present study showed that the angular dispersion-type Fabry-Perot interferometer combined with an area detector could be a very powerful tool in the real-time monitoring of the acoustic properties of condensed matter.

The present study was investigated effect of each water extract from Pueraria flos (PF) and Pueraria radix (PR) on serum several biomarkers in ethanol-treated rats. Male Sprague-Dawley rats were randomly divided into six groups: Normal (None-treated group); Ethanol (only ethanol-treated group); EPF I (ethanol-treated, supplemented group); EPR (ethanol-treated, PF II-supplemented group); EPR I (ethanol-treated, PR I-supplemented group) ; EPR (ethanoltreated, PR II-supplemented grou). Five groups of male Sprague-Dawley rats were orally administered 25% ethanol (5 g/kg body weight/day) and sacrified 5 weeks post treatment. Aspartate aminotransferase, alanine aminotransferase, alkaline phosphatase and ${\gamma}-glutamyl$ transpeptidase activities were significiantly lowered by feeding of PF or PR than those of only ethanol-treated group. Whereas serum glucoseand liver glycogen contents were significantly decreased (p<0.05) by ethanol administration and increased decreased (p<0.05) by PF or PR supplement. This results indicate that Pueraria flos and radix water extract supplement improves alcoholic disorder.

Objective: The purpose of this study was to determine the effects of feeding ethanol on growth performances, carcass characteristics, and lipid metabolism of finishing Korean cattle (Hanwoo) steers. Methods: Thirty (30) Hanwoo steers (average 25.1 months of age, body weight 660.1 kg) were assigned to three treatments: control (0% ethanol), E-3 (1.44% ethanol for 3 months), or E-5 (0.72% ethanol for 2 months followed by 1.44% ethanol for 3 months). The animals were allotted by treatment group into six pens and fed concentrate and perennial ryegrass. Ethanol (30%, v/v) was supplemented into drinking water twice a day to meet final concentrations based on average water consumption of finishing Hanwoo steers. Results: There were no statistical differences among the groups in final body weight, average daily gain, or carcass yield grade indices such as cold carcass weight, fat thickness, and loin area. The marbling score tended (p = 0.228) to increase with the highest score (6.7) in the E-5 group followed by 6.3 and 6.0 in E-3 and control groups, respectively. The appearance frequencies of quality grades of $1^{{+}{+}}$ (the best), $1^{+}$, 1, and 2, were; 30%, 50%, 0%, and 20% for control, 10%, 80%, 10%, and 0% for E-3, and 10%, 80%, 0%, and 10% for E-5 groups, respectively, indicating improvements of quality grades by feeding ethanol. Concentrations of serum glucose tended to decrease whereas those of insulin and non-esterified fatty acid to increase by feeding ethanol (E-3 and E-5; p>0.05). Conclusion: Feeding ethanol directly into drinking water of finishing Hanwoo steers stimulated lipogenesis in intramuscular adipose tissue (marbling) and thereby improved carcass quality grade. The serum metabolites results supported the hypothesis of lipolysis of existing adipose tissue, such as abdominal fats, and lipogenesis in intramuscular adipocytes.
The newly bred Picnic apple was extracted using water and ethanol for extracting solvent. Each water and ethanol extract showed relatively high phenolic compound of 3.69 and 5.55 mg/g. Each water and ethanol extract of Picnic apple showed 1,1-diphenyl-2-picrylhydrazyl of 88.10 and 88.07%, 2,2'-Azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) of 98.79 and 97.25%, antioxidant protection factor of 2.07 and 2.00 PF and thiobarbituric acid reactive substances showed anti-oxidation effect of 9.69 and 19.83% all at $100{\mu}g/mL$ phenolics concentration. Therefore extract of Picnic apple can be considered as anti-oxidant for anti-aging. The anti-inflammatory effect (hyaluronidase inhibition) of extract of Picnic apple were 4.62% with water extract and 4.39% with ethanol extract both at $200{\mu}g/mL$ phenolics concentration. Both water and ethanol extract showed low ${\alpha}$-amylase inhibition effect but each showed 67.37 and 79.16% of ${\alpha}$-glucosidase inhibition effect at $200{\mu}g/mL$ phenolics concentration. In anti-wrinkle effect, water extract showed each 23.70 and 66.29% in elastase inhibition and collagenase inhibition and ethanol extract showed 64.83 and 65.70% each. These result show high potential for functional food and cosmetic source. Picnic apple was identified to have various functions of anti-oxidation, anti-inflammation, anti-wrinkle effect, and anti-diabetic effect. Therefore, Picnic apple is qualified as a source for new functional cosmetics and functional foods.

In this study, the biological activity of water and ethanol extracts from Chrysanthemum incidicum Linne by ultrafine grinding for functional food source are examined. The content of phenolic compounds from Chrysanthemum incidicum Linne were the highest when extracted for 6 hr with 70% ethanol. The extraction yield of water and ethanol extracts were $7.12{\pm}1.61$ mg/g and $7.51{\pm}2.14$ mg/g, respectively. With ultrafine grinding, water and ethanol extracts were $8.63{\pm}1.15$ mg/g and $9.33{\pm}1.35$ mg/g, respectively. In determining anti-oxidative activity of Chrysanthemum incidicum Linne extracts, DPPH of normal grinding extracts was 83.52% and ultrafine grinding was 92.37%. In ABTS radical cation decolorization, normal grinding, fine grinding, and ultrafine grinding extracts were 90% or higher. In antioxidant protection factor (PF), water and ethanol extracts of ultrafine grinding showed relatively high anti-oxidative activities of each 1.82 PF and 2.16 PF, respectively. The TBARS value of ultrafine grinding extracts were lower than normal grinding and fine grinding extracts. The inhibition activity on xanthin oxidase of Chrysanthemum incidicum Linne extracts was 67.53% in ultrafine grinded water extracts and 83.45% in ultrafine grinded ethanol extracts. Inhibition on xanthin oxidase of ethanol extracts showed a higher inhibition effect than water extracts, and ultrafine grinding was higher than normal grinding. In angiotensin converting enzyme inhibition activity, ultrafine grinding water extract was 24% or higher, and ethanol extract was 34% or higher. The elastase inhibition activity of ultrafine grinding extract was 25.56%, which was higher than 20.34% of fine grinding extracts. Water extracts did not show hyaluronidase inhibition activity but ethanol extracts showed 35% of hyaluronidase inhibition activity. The determining expression inhibition of iNOS and COX-2 protein in macrophage by Chrysanthemum incidicum Linne extracts with a Western blot analysis, iNOS and COX-2 protein expression inhibition by Chrysanthemum incidicum Linne ethanol extracts were 40% and 15%, respectively at 100 ${\mu}g/mL$ concentration. The inhibitory patterns of iNOS and COX-2 protein expression was concentration dependent. The result suggests that Chrysanthemum incidicum Linne extracts by ultrafine grinding may be more useful than normal grinding as potential sources due to anti-oxidation, angiotensin converting enzyme and xanthine oxidase inhibition, anti-inflammation effect.
A water soluble antifungal antibiotic, Solumycin, was separated from the culture broth of Streptomyces sp. LAM-593, isolated from soil, by butanol extraction, alumina-, 1st and 2nd Sephadex LH-20 column chromatography. The substance was pale yellow crystal which gave a single spot at Rf value 0.24 with ethanol-ammonia water-water (8:1:1), 0.46 with butanol-ethanol-water (5:1:4), 0.84 with 50% methanol on silica gel TLC. It was dissolved well in water, methanol and acidic aq. butanol but not in ethanol, acetone, ethyl acetate, chloroform. acetic acid etc., and gave positive Fehling and Molish reaction. The UV spectrum in methanol showed absorption at 342, 361, 380, and 404 nm. The antibiotic was active against fungi such as Candide, Cryptococcus, Saccharomyces, Trichophyton and Trichosporon, but not to bacteria such as Bacillus, Escherichia and Staphylococcus.
The relationships between affinity of membranes and optimum operation conditions were investigated in the pervaporation of water(1)/ethanol(2) mixture through cellulose acetate(CA) membranes having more affinity to water and silicone rubber(SR) membranes having more affinity to ethanol. CA and SR membranes were prepared and amount of sorption, sorption selectivity, pervaporation separation factor and pervaporation rate in both of membranes were determined and compared. The effects of downstream pressure were analyzed using Thompson diagram and the sorption and pervaporation characteristics with composition of feed and operation temperature were examined in terms of affinity, activity coefficient, plasticizing effect and activation energy of individual species. In the separation of water through CA membranes, high performance of both pervaporation separation factor (water to ethanol, $[\alpha^2_1]_{PV}$) and pervaporation rate was obtained in the conditions of low downstream pressure, middle range of feed concentration and high temperature. In the separation of ethanol through SR membranes, pervaporation separation factor(ethanol to water, $[\alpha^2_1]_{PV}$) increased with downstream pressure and decreased with concentration of ethanol in feed and operation temperature, while pervaporation rate showed opposite trends to those of ($[\alpha^2_1]_{PV}$).
