Effect of Seawater on the Technological Properties of Chicken Emulsion Sausage in a Model System

  • The aim of this study was to compare the effect of seawater to that of conventional salt (NaCl) on the technological properties of chicken emulsion sausages in a model system. Chicken sausages were prepared with seawater at three levels (10%, 15%, and 20%) in iced water (10%, 5%, and 0%, respectively) or with iced water (20%) and salt (1.2%). There was no difference in pH values and fat loss from emulsion stability between the two treatments. In general, with an increase in the amount of seawater, the water holding capacity (cooking yield and water loss), protein solubility (total and myofibrillar protein), and viscosity were increased. The addition of 20% seawater induced greater (p<0.05) water holding capacity, protein solubility, and viscosity compared to the control sample treated with salt, which was accompanied by an increase in the level of myosin heavy chain protein of samples with 10% and 20% seawater. Furthermore, addition of at least 15% seawater increased all of the main textural properties except for cohesiveness along with the moisture of sausage, whereas the fat and protein contents were decreased. Based on these results, the addition of ≥15% seawater to chicken breast sausage can induce equivalent or enhanced technological properties to those induced with salt, including water holding capacity, protein solubility, viscosity, and textural properties.

HepG2 cell에서 식용수산자원 추출물의 지질축적억제효과 (Inhibitory Activity of Intracellular Lipid Accumulation by Various Marine Extracts in HepG2 Cells)

  • 수산물 추출물로부터 간세포내 지질축적억제효과 추출물의 탐색을 통해 지방간 형성 억제 활성물질을 밝힐 목적으로, 각 48종의 수산물 추출물의 사람 간암세포유래인 HepG2 세포주에서의 중성지질축적억제 효과를 조사하였다. 그 결과, 18개의 추출물에서 유의적인 지질축적억제효과를 보였고, 그 중 Pagrus major, Octopus minor, Enteroctopus dofleini, Undaria pinnatifida Sporophyll, Styela clava, Enteromorpha intenstinalis 등 6개의 추출물이 유효한 효과가 있음을 관찰하였다. 이상의 결과를 바탕으로 지질대사에 관여하는 단백질들의 발현 정도를 조사하고, 활성물질의 분리 및 정제 등에 관한 연구와 지방간 형성 억제 효과에 대한 기전 연구가 진행되어야 할 것으로 사료된다.

석탄폐석의 자열소성을 이용한 토양개량용 펠릿의 제조와 특성 (Characteristics of Soil Conditioner Pellets Fabricated by Self-propagating Combustion Methods Using Coal Refuse)

  • 토양개량방법의 하나로서 다공성 소성 과립체를 토양에 사용하는 방법을 적용하고자 하였다. 석탄폐석을 토양개량제의 원료로 사용하면 자열소성방법에 의해 저비용으로 과립체를 생산할 수 있고, 더불어 국내에 대량으로 적치되어 있는 석탄폐석을 활용할 수 있는 방안도 될 것임을 착안하여, 석탄폐석을 분쇄, 과립하고 자열소성방법으로 소성하여 과립(pellet)을 제조한 후 이의 다공체로서의 특성과 수분보유특성, pH등을 확인하였다. 고정탄소량이 약 28%인 시료 HCR을 고령토와 1:4의 무게비(20%)로 혼합하여 제조한 과립과 고정탄소가 약 9.66%인 LCR시료만을 사용한 과립을 자열소성한 결과, 별도의 가열에너지의 공급 없이 최대온도 $1200^{\circ}C$ 이하에서 연속적인 소성이 가능하였다. 이렇게제조한 과립체를 고령토만 사용하여 제조한 일반 소성 점토과립과 비교하였을 때 평균공극의 크기가 커졌음이 확인되었다. 이렇게 변화된 공극의 특성으로 인해 HCR과 LCR 과립의 내부에 흡수된 수분이 kaolin 과립에 비해 더 낮은 potential에서 방출되었고, 식물이 더 이용하기 쉬운 상태로 수분이 보유됨을 확인하였다. 그리고 자열소성한 과립은 kaolin 과립에 비해 높은 포장용수량과 유효수분의 값을 나타내었다. 포장용수량은 HCR과 LCR 과립이 각각 47.64, 38.43mL/100g값을 나타내었고, 유효수분의 양은 각각 38.39과 28.49mL/100g으로 나타났다. 자열소성한 과립의 pH는 6~8로서 토양에 활용이 가능함을 확인하였다.

통계연보를 활용한 대구·경북지역 24개 지자체의 물복지 수준 평가 (Evaluation of the Level of Water Welfare in 24 Local Governments in Deagu·Gyeongsangbukdo using Statistical Yearbook)

  • In this study, water resource topics, infrastructure, water supply, users, and economic indicators based on statistical annual standards for evaluating water welfare were selected by examining domestic and foreign water resource-related indicators. The level of water welfare was evaluated relative to 23 cities and counties in Daegu and Gyeongsangbuk-do using data from the Statistical yearbook, and places with high value of indicators urbanization and large populations were excellent in the infrastructure field, but overall analysis showed that small and medium-sized cities had higher levels. It is judged that it is necessary to develop continuous research and indicators that can evaluate and quantify the level of physical welfare that the people can feel by utilizing the results of this study. In future studies, it is necessary to systematically evaluate the level of water welfare by local governments in Korea through more diverse evaluation items and detailed indicators for each item so that it can be used as basic data for realizing water welfare.

NON-POINT SOURCE POLLUTANT MODELING IN USING GIS ASSESSMENT IN STREAM NETWORK AND THE IRRIGATION REGION

  • Recently, the population growth, industrial and agricultural development are rapidly undergoing in the Lower Rio Grande Valley (LRGV) in Texas. The Lower Rio Grande Valley (LRGV) composed of the 4 counties and three of them are interesting for Non-point and point source pollutant modeling: Starr, Cameron, and Hidalgo. Especially, the LRGV is an intensively irrigation region, and Texas A&M University Agriculture Program and the New Mexico State University College of Agriculture applied irrigation district program (Guy Fipps and Craig Pope, 1998), projects in GIS and Hydrology based agricultural water management systems and assessment of prioritized protecting stream network, water quality and rehabilitation based on water saving potential in Rio Grande River. In the LRGV region, where point and non-point sources of pollution may be a big concern, because increasing fertilizers and pesticides use and population cause. This project objective seeks to determine the accumulation of non-point and point source and discuss the main impacts of agriculture and environmental concern with water quality related to pesticides, fertilizer, and nutrients within LRGV region. The GIS technique is widely used and developed for the assessment of non-point source pollution in LRGV region. This project shows the losses in kg/$km^2$/year of BOD (Biological Oxygen Demand), TN (total Nitrogen) and TP (total phosphorus) in the runoff from the surface of LRGV.

기후변화에 대응한 호주의 물관리 정책과 시사점 (Australia's Water Management Policies and Implications in Response to Climate Change)

  • 최근까지 무분별한 수자원 개발과 심각해지는 기후변화로 인한 극심한 가뭄이 지속되면서 물관리 문제에 대해서 관심이 급증하였다. 국내와 유사한 환경 아래 국가 차원에서 일관되고 친환경적이며 체계적으로 관리를 하고 있는 호주의 정책에 대한 분석과 사례검토가 필요하다. 호주는 강우량이 작고 건조하여 가뭄과 홍수가 반복되는 수자원적 특징을 가지고 있으며 1890년대부터 이민자 정착으로 물분쟁이 시작되었다. 일찍이 수자원의 효율적인 분배를 위한 물관리 협약, 물 사용량 규제 프로그램, 연방물법 제정 등이 이루어졌고 현재는 개발과 보전이 균형적으로 이루어지는 물관리 체계를 이루고 있다. 한편 우리나라는 과거 수질은 환경부, 수량은 국토부가 담당하여 물관리의 주무부처가 이분화되어 업무의 중복, 과도한 투자, 비효율 등의 문제로 통합적인 물관리가 어려웠다. 이를 해결하고자 2018년에는 물관련 기본법을 제정하는 등 물관리 기능이 일원화되면서 유역 단위 통합물관리 체계의 기틀이 마련되었고 2019년부터는 유역 단위의 통합물관리 체계를 수행하는 등 통합물관리를 바탕으로 지속 가능한 수자원 관리 효과를 도모하고 있다. 효율적이고 친환경적인 물관리를 위한 관리 정책 수립을 위해 여러 방안으로 강구해온 호주의 IWRM (Integrated Water Resource Management)와 우리나라의 현황과 사례를 비교해보았고 앞으로 나아가야 할 우리나라의 시사점을 제시하였다.

  • Global warming affects water supply and water resources throughout the world. In many countries, climate change affects significantly on the fresh water resources. Vietnam is exposed mainly, to landslides and floods triggered by tropical storms and monsoon rains, although storm surge, whirlwind, river bank and coastal line erosion, hail rain. In addition to the prevalent drought, there are many major water challenges, including water availability, stress, scarcity and accessibility, because of poor resource management. Fast growth of urbanization, industrialization and population growth, agricultural activities and climate change cause heavy pressure on water quality. Both domestic and industrial wastewater, as well as storm water shares the same drainage. The common facilities for wastewater treatment are not available. Therefore, wastewater is treated only superficially and then discharged directly into rivers and lakes causing serious pollution of surface water environment. In this paper, we reported the severe water crisis and massive green algal blooms formation in Vietnam rivers and lakes. This is the biggest evidence of climate change variations in Vietnam.

먹는샘물과 병입수로 이용되는 천연 광천수의 국내외 관리와 연구 동향 분석 (Recent Trends of Domestic and International Management and Research of Natural Mineral Water Used for Bottled Water)

  • In recent years, the sales of bottled spring water (BSW) have been drastically increasing in Korea and other countries, which accompanied great interests in conservation and reclamation of natural mineral water (NMW). In this study, management and research activities on NMW in Europe, USA, and Codex Alimentarius were reviewed. In each region, NMW is regulated with its own quality standards that differ from ordinary drinking water, and management actions are strictly implemented to protect water resources and to secure quality of NMW. Many studies on NMW were carried out for monitoring inorganic constituents including major and trace elements in national levels for bottled NMW, groundwater, and tap water in other countries. In Korea, NMW became commercialized in 1995 when BSW was legally approved as a drinking water. To further promote utilization of various types of NMW in Korea, regulations and policies for NMW need to be revised in accordance with international NMW management trends. Further, studies of NMW that compile a comprehensive set of physical and chemical parameters of NMW are also needed to properly understand occurrences, hydrogeological and geochemical processes of NMW, as well as to evaluate its potential use as a natural resource.

  • Issues and problems in formulating South Korea's water resources policy are discussed in terms of water quantity and quality. South Korean needs both water conservation and water supply capability for the growing population and economic activities. The government has attempted to build more large-scale dams to store and supply water for residential, farming and industrial uses, but the environmentalists who emphasize conservation and environmental protection oppose the government. The environmentalists are popular among the general public. Water quality has been deteriorating from point- ad non-point sources. urban and farm runoffs are serious pollutants. All want by preserve water quality. There is no dispute on this matter between the government and the environmentalists. Money is hard to come by to preserve water quality. Economic and financial crises and no self-sufficient local governments' revenue structure are pessimistic. Basic survey on water resources, hydrology and hydraulic is badly needed for the future water resources planning.
