누에분말 및 누에동충하초분말 함유 돈육 패티의 냉장저장 중 품질변화 (Quality Characteristics of Pork Patties Containing Silkworm Powder and Vegetable Worm (Paecilomyces Japonica) during Cold Storage)

  • 본 연구는 누에분말 및 누에동충하초분말을 첨가하여 제조한 돈육 패티의 $5^{\circ}C$ 냉장저장 기간(0, 3, 6, 9일)동안의 품질변화를 평가하기 위해 실시하였다. 저장 6일차까지 처리구가 대조구보다 유의적으로 높은 pH값을 보였으며 육색의 경우 누에분말과 누에 동충하초 분말 첨가비율이 높을수록 L과 a값은 감소했으며 b값은 증가하였다(p<0.05). 누에분말과 누에 동충하초 분말 첨가가 보수력에는 크게 영향을 미치지 않는 것으로 나타났으며 T2 처리구에서 낮은 가열감량을 보여 0.4%의 누에분말이 가열감량을 억제하였다(p<0.05). 지방산패도는 누에분말과 누에동충하초분말 첨가구 및 혼합 첨가구에서 모두 대조구보다 낮은 수준을 보였다(p<0.05). 그러나 누에분말과 누에동충하초분말 처리간의 뚜렷한 차이는 보이지 않았다. 돈육 패티의 관능적 특성은 저장기간이 증가함에 따라 감소하였으나 풍미의 경우 저장초기에는 처리구의 기호도가 높았으나 저장기간이 증가하면서 차이는 보이지 않았다. 냄새도 대조구와 차이가 없었으며 종합적기호도에서도 저장초기에 대조구보다 높은 기호도를 보였으나 저장기간이 증가하면서 대조구에 비해 높거나 차이가 없었다. 누에분말과 누에동충하초분말 처리구간의 뚜렷한 기호도 차이는 보이지 않았다. 따라서 누에 및 누에동충하초분말은 돈육 패티의 pH값을 증가시키며 가열감량과 지방산패도를 억제시켰으며 보수력과 관능적 특성에도 부정적인 영향을 보이지 않아 추후 가공육제품의 첨가제로의 이용 가능성을 나타내었다.

스크류 조합과 공정변수 조절에 따른 밀기울 압출물의 특성 (Effect of Screw Configurations and Process Parameters on Characteristics of Wheat Bran Extrudates)

  • 밀기울의 압출가공시 스크류의 조합과 공정변수 조절에 따른 압출물의 특성을 나타내는 target parameters(수분용해지수, 압출물의 고유점도, 보수력과 보유력, 식이섬유, 압출물의 미세구조)의 변화를 연구하였다. 수분용해지수(WSI)는 원료의 수분함량에 가장 큰 영향을 받았고, 역방향 스크류(RSE)를 5개 사용한 경우 밀기울이 13.7%인 것에 비하여 압출물은 $16.3{\sim}23.2%$의 범위로 높은 WSI를 보였다. 밀기울 압출물의 고유점도는 RSE가 $3{\sim}5$개로 증가할수록 높아져 원료 밀기울이 10.6 ml/g인 것에 비하여 $37.86{\sim}45.44\;ml/g$의 수준으로 증가하였으며, 원료의 수분함량과 압출압력에도 큰 영향을 받았다. 고유점도(IV) X 수용성 고형분(SS)의 무차원 변수와 기계적 에너지 소모율(SME)과의 관계는 높은 상관관계$(R^2=0.85)$를 보여 밀기울 세포벽 수용화 반응에 SS와 분자량 크기의 상관관계가 SME에 의하여 지배받는 인자임이 확인되었다. 압출물의 보수력은 원료의 공급량과 수분함량이 높을수록 원료 밀기울보다 높은 값을 보였고, 보유력은 원료 밀기울에 비하여 낮았다. 압출물의 수용성 식이섬유는 원료의 수분함량이 적은 조건에서 $4.32{\sim}6.48%$의 분포를 보여 원료 밀기울 2.68%보다 크게 증가하였다. 이는 압출공정이 밀기울 세포벽의 수용화에 효과적으로 작용하였음을 의미한다. 압출물의 미세구조는 원료의 수분함량에 따라서 붕괴와 용융정도의 차이를 보여 주었다.

Effects of carcass weight increase on meat quality and sensory properties of pork loin

  • The objective of this study was to investigate the influence of increasing carcass weight (CW) on meat quality traits including meat color, water-holding capacity (WHC), tenderness, backfat thickness and intramuscular fat (IMF) content of pork loin. A total of 96 pork carcasses (48 LYD [Landrace × Yorkshire × Duroc] barrows and gilts) were selected at a commercial slaughterhouse. Each gender had commercial CW (≤ 90 kg), heavy CW (91-100 kg) and very heavy CW (> 100 kg) (16 carcasses from each CW group). Loin cuts (Longissimus lumborum) were excised to investigate meat color (CIE L*a*b*), drip loss, cooking loss, released water, Warner-Bratzler shear force (WBSF), and IMF content. Backfat thickness and IMF content of pork loin samples were significantly (p < 0.05) increased with increasing CW, although there was no significant difference in ultimate pH (pHu). CIE a* increased significantly (p < 0.05) with increasing CW, while there were no significant differences in CIE L* or CIE b* among CW groups. Although all WHC measures showed no significant differences among CW groups, WBSF increased significantly (p < 0.01) with increasing CW. Sensory flavor score was significantly increased while panel score for tenderness was decreased significantly (p < 0.001) with increasing CW. Consequently, CW had a positive correlation with flavor but negative correlation with tenderness. These results indicate that the increased IMF content improves flavor, juiciness and palatability, although tenderness deteriorates with increasing CW.

Quality Properties of Bulgogi Sauce with Crust Derived from Dry-Aged Beef Loin

  • This study aimed to determine the physicochemical properties (proximate composition, color, pH, salinity, water holding capacity (WHC), curing yield, and shear force) and sensory properties (electric nose and sensory evaluation) of Bulgogi sauce with added crust derived from dry-aged beef loin. Increasing the amount of crust in the Bulgogi sauce tended to increase the protein content, fat content, and pH. Uncooked Bulgogi also tended to have elevated fat content, ash content, pH, and shear force. Increasing the crust content tended to decrease the water content, lightness, redness, and yellowness of Bulgogi sauce. The yellowness of uncooked Bulgogi with 6%-12% crust in sauce was significantly lower than that of the control (no crust) and the sample with 3% crust in sauce (p<0.05). The redness of the cooked control Bulgogi was significantly lower than that of the samples with crust in sauce (p<0.05). The WHC of uncooked Bulgogi with 6%-12% crust in sauce was significantly higher than that of the control and the sample with 3% crust in sauce (p<0.05). The flavor, texture, and overall acceptability of the Bulgogi with 9% crust in sauce were significantly higher than those of the control (p<0.05). These findings showed that the crust did not degrade the physicochemical properties of Bulgogi sauce and meat. The sensory characteristics of Bulgogi marinated with 9% crust in sauce were rated the best as persensory evaluation. Therefore, crust is a suitable flavor enhancer for Bulgogi sauce, and a 9% addition amount is optimal in terms of quality.

Comparison of Meat Quality Characteristics of Wet- and Dry-aging Pork Belly and Shoulder Blade

  • The physicochemical characteristics and oxidative stability of wet-aged and dry-aged pork cuts were investigated at different aging periods (1, 7, 14 and 21 d). Samples were assigned into four groups in terms of shoulder blade-wet aging (SW), shoulder blade-dry aging (SD), belly-wet aging (BW), and belly-dry aging (BD). SD showed significantly higher pH at 21 d of aging than the other samples. Wet-aged cuts had significantly higher released water (RW) %, lightness ($L^*$) and shear force compared to the dry-aged meats. Sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) analysis showed greater degradation of proteins for dry-aged cuts than the wet-aged cuts. At the end of aging, wet-aged cuts showed significantly lower thiobarbituric acid-reactive substances (TBARS) value than the dry-aged samples, indicating higher oxidative stability for wet-aged pork cuts. However, dry-aging led to higher degradation of proteins resulting in increased water-holding capacity (WHC) and decreased shear force value.

생육단계별 배 과피에서 분리한 식이섬유원의 물리적 특성 (Physical Properties of Dietary Fiber Sources from Peel of Asian Pear Fruit at Different Growth Stages)

  • 상품성이 낮은 배 그리고 가공 부산물의 하나인 과피의 기능성식품 소재로써의 이용가능성을 검토하고자 생육단계별 풍수, 신고, 추황배의 과피로부터 식이섬유원을 분리하여 이들의 성분을 분석하고 물리적 특성을 측정하였다. 3 품종의 3 생육단계에서 과피로부터 분리한 식이섬유원의 총식이섬유 함량은 74.00-88.38%로 비교적 높은 수준이었고 그 중 92-94%가 불용성 성분이었다. 분리된 식이섬유원에 잔존하는 총페놀성물질의 함량은 1.64-4.46mg/g이었고 신고와 추황배에서는 과실의 성숙도에 따라 잔존하는 총페놀성물질의 함량이 증가하였다. 평균입자의 크기는 $255-381{\mu}m$이었고 동일한 품종내에서 성숙된 과실일수록 분리된 식이섬유원의 입자는 증대하였으며 이에 따라 유과에서 분리한 식이섬유윈의 밀도가 유의적으로 작았다. 보수력은 3.11-6.03g water/g solid이었고 신고와 추황배에서는 유과, 미숙과, 성숙과의 순으로 점차 증가하였으며 oil 흡착력은 1.98-2.57g oil/g sample로 보수력보다 낮은 값을 보였고 보수력이 낮은 유파의 식이섬유원이 oil 흡착력은 컸다. 식이섬유원의 입자의 크기는 밀도, 보수력, oil 흡착력과 높은 상관관계를 나타내었고 물리적 특성에 영향을 주는 주요성분은 Cellulose와 uronic acid로 나타났다. 결론적으로 배 과피에서 분리한 식이섬유원은 총 식이섬유 함량이 높고 생리활성 물질인 페놀성물질을 함유하고 있으며 미숙과, 성숙과 식이섬유원은 비교적 높은 보수력을 갖고 있어 새로운 식이섬유원 소재로 이용이 가능할 것으로 생각된다.

Evaluation of sensitivity of soil respiration to temperature in different forest types and developmental stages of maturity using the incubation method

  • To calculate and predict soil carbon budget and cycle, it is important to understand the complex interrelationships involved in soil respiration rate (Rs). We attempted to reveal relationships between Rs and key environmental factors, such as soil temperature, using a laboratory incubation method. Soil samples were collected from mature deciduous (MD), mature coniferous (MC), immature deciduous (ID), and immature coniferous (IC) forests. Prior to measure, soils were pre-incubated for 3 days at $25^{\circ}C$ and 60% of maximum water holding capacity (WHC). Samples of gasses were collected with 0, 2, and 4 h interval after the beginning of the measurement at soil temperatures of 5, 15, 25, and $35^{\circ}C$ (at 60% WHC). Air samples were collected using a syringe attached to the cap of closed bottles that contained the soil samples. The $CO_2$ concentration of each gas sample was measured by gas chromatography. Rs was strongly correlated with soil temperature (r, 0.93 to 0.96; P < 0.001). For MD, MC, ID, and IC soils taken from 0-5 cm below the surface, exponential functions explained 90%, 82%, 92%, and 86% of the respective data plots. The temperature and Rs data for soil taken from 5-10 cm beneath the surface at MD, MC, ID, and IC sites also closely fit exponential functions, with 83%, 95%, 87%, and 89% of the data points, respectively, fitting an exponential curve. The soil organic content in mature forests was significantly higher than in soils from immature forests (P < 0.001 at 0-5 cm and P < 0.005 at 5-10 cm) and surface layer (P = 0.04 at 0-5 cm and P = 0.12). High soil organic matter content is clearly associated with high Rs, especially in the surface layer. We determined that the incubation method used in this study have the possibility for comprehending complex characteristic of Rs.

Evaluation of Physicochemical Deterioration and Lipid Oxidation of Beef Muscle Affected by Freeze-thaw Cycles

  • This study was performed to explore the deterioration of physicochemical quality of beef hind limb during frozen storage at −20℃, affected by repeated freeze-thaw cycles. The effects of three successive freeze-thaw cycles on beef hind limb were investigated comparing with unfrozen beef muscle for 80 d by keeping at −20±1℃. The freeze-thaw cycles were subjected to three thawing methods and carried out to select the best one on the basis of deterioration of physicochemical properties of beef. As the number of repeated freeze-thaw cycles increased, drip loss decreased and water holding capacity (WHC) increased (p<0.05) till two cycles and then decreased. Cooking loss increased in cycle one and three but decreased in cycle two. Moreover, drip loss, WHC and cooking loss affected (p<0.05) by thawing methods within the cycles. However, pH value decreased (p<0.05), but peroxide value (p<0.05), free fatty acids value (p<0.05) and TBARS value increased (p<0.05) significantly as the number of repeated freeze-thaw cycles increased. Moreover, significant (p<0.05) interactive effects were found among the thawing methods and repeated cycles. As a result, freeze-thaw cycles affected the physicochemical quality of beef muscle, causing the degradation of its quality.

Effects of Deep Freezing Temperature for Long-term Storage on Quality Characteristics and Freshness of Lamb Meat

  • This study investigated the effects of deep freezing and storage temperature ($-50^{\circ}C$, $-60^{\circ}C$, and $-80^{\circ}C$) on the quality and freshness of lamb. To compare the qualities of deep frozen and stored lamb, fresh control and normal freezing conditions ($-18^{\circ}C$) were adopted. As quality and freshness parameters, drip loss (thawing loss and cooking loss), water-holding capacity (WHC), texture profile analysis (TPA), thiobarbituric acid reactive substances (TBARS), and total volatile basic nitrogen (TVBN) were evaluated during 5 months of storage. Temperature influenced the drip loss and WHC, and deep freezing minimized the moisture loss during frozen storage compared to the normal freezing condition. Lamb frozen and stored at deep freezing temperature showed better tenderness than that stored in normal freezing conditions. In particular, lamb frozen at lower than $-60^{\circ}C$ exhibited fresh lamb-like tenderness. Regardless of temperature, evidence of lipid oxidation was not found in any frozen lamb after 5 months, while TVBN was dependent on the applied temperature. Therefore, this study demonstrated that deep freezing could potentially be used to maintain freshness of lamb for 5 months. From the quality and economic aspects, the freezing and storage condition of $-60^{\circ}C$ is estimated as the optimum condition for frozen lamb.

Pumpkin Seed Oil as a Partial Animal Fat Replacer in Bologna-type Sausages

  • Beef fat was replaced with cold press pumpkin seed oil (PSO; 0%, 5%, 15%, and 20%) in the production of bologna-type sausages. A value of pH, water-holding capacity (WHC), jelly-fat separation, emulsion stability and viscosity values were determined in meat batters. Thiobarbituric acid reactive substances (TBARS), color, and textural characteristics (TPA, shear test, penetration test) were determined in end-product at 1, 7, 14, 21, and 28 days of storage at 4℃. The pH values were varied between 6.06 and 6.08. With the increase in the level of PSO in meat batters, there was a significant increase in WHC, jelly-fat separation and viscosity values (p<0.05) while a significant decrease in emulsion stability (p<0.05). TBARS values of sausages were found to be significantly higher than in the control group (p<0.05), and this trend continued during storage. Increasing of PSO level were caused a significant increase in L* and b* values while a decrease in a* value (p<0.05). Hardness, adhesiveness and chewiness values were significantly reduced whereas cohesiveness and resilience values increased (p<0.05). Maximum shear force and work of shear was significantly decreased as the level of PSO increased (p<0.05). Hardness, work of penetration and the resistance during the withdrawal of the probe values (penetration tests) increased significantly with the increase in the level of PSO (p<0.05). These results indicate that PSO has potential to be use as a replacement of animal-based fats in the production of bologna-type sausages.
