Efficacy of Sweet Potato Powder and Added Water as Fat Replacer on the Quality Attributes of Low-fat Pork Patties

  • The present study was conducted to investigate the efficacy of sweet potato powder (SPP) and water as a fat replacer in low-fat pork patties. Low-fat pork patties were developed by replacing the added fat with combinations of SPP and chilled water. Three different levels of SPP/chilled water viz. 0.5/9.5% (T-1), 1.0/9.0% (T-2), and 1.5/8.5% (T-3) were compared with a control containing 10% animal fat. The quality of low-fat pork patties was evaluated for physico-chemical (pH, emulsion stability, cooking yield, $a_w$), proximate, instrumental colour and textural profile, and sensory attributes. The cooking yield and emulsion stability improved (p<0.05) in all treatments over the control and were highest in T-2. Instrumental texture profile attributes and hardness decreased, whereas cohesiveness increased compared with control, irrespective of SPP level. Dimensional parameters (% gain in height and % decrease in diameter) were better maintained during cooking in the low-fat product than control. The sensory quality attributes juiciness, texture and overall acceptability of T-2 and T-3 were (p<0.05) higher than control. Results concluded that low-fat pork patties with acceptable sensory attributes, improved cooking yield and textural attributes can be successfully developed with the incorporation of a combination of 1.0% SPP and 9.0% chilled water.

Heterophil Phagocytic Activity Stimulated by Lactobacillus salivarius L61 and L55 Supplementation in Broilers with Salmonella Infection

  • Newborn chicks are susceptible to Salmonella enterica serovar Enteritidis (SE). The objective of this study was to evaluate the effect of Lactobacillus probiotic isolated from chicken feces on heterophil phagocytosis in broiler chicks. A total of 150 newborn broiler chicks were divided into 5 groups (30 chicks per group) as follows: group 1 (normal control), given feed and water only, group 2 (positive control) given feed, water and SE infection, group 3 (L61 treated) given feed, water, SE infection followed by Lactobacillus salivarius L61 treatment, group 4 (L55 treated) given feed, water, SE infection followed by L. salivarius L55 treatment, and group 5 given feed, water, SE infection followed by L. salivarius L61 + L55 combination treatment. After SE infection, L. salivarius treatment lasted for 7 days. The results showed that L. salivarius L61 and L. salivarius L55 treatment, either alone or combination of both, increased the survival rate after SE infection, and upregulated heterophil phagocytosis and phagocytic index (PI). Conversely, chick groups treated with Lactobacillus showed lower SE recovery rate from cecal tonsils than that of the positive control group. The PI values of the chicken group with SE infection, followed by the combination of L. salivarius L61 and L. salivarius L55 were the highest as compared to either positive control or normal control group. Two Lactobacillus strains supplementation group showed significantly (p<0.05) higher PI value at 48 h than 24 h after treatment.

Influence of Sargassum beds on the Water Quality Characteristics in Gamak Bay, Korea (가막만의 모자반군락이 수질환경에 미치는 영향)

  • We determined the influence of Sargassum beds on the water quality in Gamak Bay, Korea. Water temperature and salinity range from 3.3 to $23.4^{\circ}C$ and from 29.6 to 33.7 psu, respectively. Dissolved oxygen was 10.45 mg L-1 in the Sargassum bed and 9.23 mg L-1 in the control. Chlorophyll-a was $3.90{\mu}g\;L^{-1}$ in the Sargassum bed and 2.21${\mu}g \;L^{-1}$ in the control. Chemical oxygen demand were 1.14${\mu}g\;L^{-1}$ in the Sargassum bed and 1.43${\mu}g\;L^{-1}$ in the control. Total nitrogen were 0.038${\mu}g\;L^{-1}$ in the Sargassum bed and 0.067${\mu}g \;L^{-1}$ in the control. Total phosphorus were 0.043${\mu}g \;L^{-1}$ in the Sargassum bed and 0.072${\mu}g \;L^{-1}$ in the control. Multivariate statistical analysis was used to analyze data. Water temperature was highly positively correlated with DO (p<0.01). T-N was highly positively correlated with T-P (p<0.01).

Numerical Modeling Effects of a Skimmer Weir Method on the Control of Algal Growth in Daecheong Reservoir (부상웨어 설치에 따른 대청호 조류 성장 억제 효과 수치모의)

  • A float-type weir has been proposed for the control of algal blooms in some of eutrophic reservoirs recently. It is known as a costly and ecologically sound method, but there is little understanding about the sustainability of this low-cost technology for reservoirs that are located in monsoon climate areas where large flood events during the summer cause high water surface fluctuations. The objective of this study was to assess the effectiveness of a skimmer weir aimed at controlling algal blooms in the lacustrine zone and near the drinking water withdrawal structures of Daecheong Reservoir under various hydrodynamic flow conditions. The effect of weir on the control of algal blooms was simulated using a laterally averaged two-dimensional hydrodynamic and eutrophication model that can accommodate vertical displacement of the weir following the water surface fluctuations. Numerical simulations were performed for two different hydrological conditions, 2001 and 2004 for representing drought year and normal year, respectively. The results showed that the weir is very effective method to control algal blooms in the reservoir by curtailing the transport of phosphorus and algae from contaminated inflow to the downstream lacustrine epilimnion during the draught year. However, large flood events occurred in 2004 transported nutrients and algae built upstream of the weir into the downstream euphotic zone by strong entrainments.

Development of a constant pressure feed system using a constant pressure proportional control mode (정압비례제어방식을 적용한 정압급수장치의 개발)

  • Automatic feed pumps are operated and stopped by a pressure switch. Thus, because of repeated operations and stops of the pumps according to fluctuations of water volume, operation with constant rate and pressure is impossible. Moreover, because of repeated running of the pump, keeping up of constant pressure is impossible and damage and energy loss are weak points of the pimps. To make up for defects of an automatic feed pump, this paper designed and made a static pressure feed system which was composed of a feed water control valve, a flow sensor and a control system. The valve device plays an important part in reducing load of pumps by constant water supply regardless of outflow of water. Outflow of water is determined by infrared diode of the flow sensor. The control system is made of a 8 bit micro-processor and the pump was controled by a specific control algorithm. With the constant pressure feed system, discharge pressure was kept at fixed pressure, accurate operations and stops were smoothly accomplished and the pump was operated with constant pressure. Thus, the constant pressure feed system can be considered as an advanced system which made up for the weak points in the current automatic feed systems.

The effects of water-based exercise on postural control in children with spastic cerebral palsy

  • Objective: Swimming and water-based exercise (WE) programs can provide vigorous physical activity in a fun and a motivating environment. The properties of water, may make it easier for children with cerebral palsy (CP) to move and to participate in an WE program. The aims of this study was to evaluate the effect of WEs on postural control in children with spastic CP. Design: Quasi-experimental design (one group pretest-posttest design). Methods: Twenty preschoolers with spastic CP participated in this study. Prior to the application, sufficient warm-up training was performed to allow the subjects to adapt to the water. Afterwards, three different types of underwater leg exercises for the flexor, extensor, and adductor/abductor of muscles of the lower limb were performed. The WE program lasted during 8 weeks, with one-40 minute sessions per week (8 training session). The usual care was performed during the training session. The Korean-trunk control measurement scale (K-TCMS) and weight distribution variability (difference of both Fz) were measured before and after training session. Results: According to the results, the K-TCMS scores of the three sub-levels, including static sitting, dynamic sitting, and dynamic reaching, was significantly increased after the training session (p<0.05). Also, the weight distribution variability was significantly decreased after 8 weeks (p<0.05). Conclusions: We suggest that WEs may improve the postural control ability in children with spastic CP. Furthermore, we support the need for additional research on the effect of WE on gait or activity of daily living performance with a control group included.

A Study on the Factors Quality Evaluation of the Drinking Water Service in Incheon Metropolitan City (인천시 상수도서비스 품질평가에 관한 연구)

  • This study is to evaluate the public drinking water service systematically, to improve customer satisfaction level, also overcoming the limitations of the existing method often relying on the satisfaction measurement subjectively. Thorough the rigid quality control of the service and its effect on civil affairs administration, we conclude that quality of the public service has an influences on the customers' satisfaction, which play a role to intensify the confidence and support of the civil administration by its appropriate management. Thus quality control management itself has its own value in that the satisfaction and confidence of the service result from the quality. The new model can be utilized as a Service Quality Index for the public drinking water service. To enhance the customers' satisfaction and confidence of the water suppliers, it is very useful that they reflect the customers' needs exactly through the service quality control regularly.

Effect of Corydalidis Tuber.Carthami Flos.Paeoniae Radix Rubra on Anti-Inflamation and function of the Liver at Arthritis Rats (현호색(玄胡索).홍화(紅花).적작약(赤芍藥)이 관절염 흰쥐의 염증과 간(肝)에 미치는 영향)

  • This study is designed to find out the effect of Corydalidis Tuber Carthami Flos Paeoniae Radix Rubra mixed water extract on adjuvant arthritis, and to check the stability for Corydalidis Tuber Carthami Flos Paeoniae Radix Rubra mixed water extract about the liver. At first, rats were devided into four groups; Normal(Non-treated group with FCA), Control(Group administrated saline everyday for 1 week after treatment of FCA), Sample A(group administrated Corydalidis Tuber Paeoniae Radix Rubra Carthami Flos mixed water extract $9mg/200{\sim}220g$ everyday 1 week after treatment of FCA) and Sample B(Group administrated Corydalidis Tuber Paeoniae Radix Rubra Carthami Flos mixed water extract $18mg/200{\sim}220g$ everyday 1 week after treatment of FCA). After then, separated searches were made on the change of edema rate, the number of WBC, the contented quantities of total protein, total bilirubin, GOT, GPT in the serum. Result : In the right planter edema, both of Sample groups showed a decrease with statistical significance in comparison with control group. In the WBC count, Sample B group showed a decrease with statistical significance in comparison with control group and also sample A group showed a decrease, but did not show statistical significance. In the serum total protein, both of samples did not show statistically significant decrease in comparison with the control group. In the serum total bilirubin, GOT and GPT, both of samples did not show any harmful change about the liver in comparison with the control group. According to the above results, it is concluded that Corydalidis Tuber Paeoniae Radix Rubra Carthami Flos mixed water extract had the therapeutic effect of anti-inflammation in adjuvant arthritis with no injury to liver.

The effect of dietary ions difference on drinking and eating patterns in dairy goats under high ambient temperature

  • Objective: The present study was carried out to evaluate the effect of high dietary cation and anion difference (DCAD) rations on diurnal variations in eating and meal patterns, water intake and urination patterns in dairy goats fed under high ambient temperature (HTa). Methods: Ten crossbred dairy goats during peri-parturition period were selected and divided into two groups of five animals each. Experimental diets were control DCAD (control, 22.8 mEq/100 g dry matter [DM]) and high DCAD (DCAD, 39.1 mEq/100 g DM). The composition of two diets consisted of 44% corn silage and 56% concentrate. From the 2nd week to 8th week postpartum, goats were fed ad libitum twice daily either with the control or DCAD total mix ration with free access to water. The spontaneous eating and drinking patterns were determined. Results: The environmental conditions in the present experiment indicated that goats were fed under HTa conditions (average peak THI = 85.2) and were in heat stress. In addition to the typical HTa induced tachypnoea in both groups, the respiratory rate in the DCAD group was significantly higher than the control group (p<0.05). Although the goats from both groups showed comparable level of eating, drinking and urination during experiment, the meal pattern and water intake were different. High DCAD apparently increased eating and meal patterns compared with the control. At week 8 postpartum, goats from high DCAD group had significant (p<0.05) bigger meal size and longer meal duration. Moreover, high DCAD appeared to increase night-time water intake (p<0.05). Conclusion: Both meal pattern and night-time drinking effects of DCAD suggested that feeding with high DCAD ration may alleviate the effect of heat stress in dairy goat fed under HTa conditions.

Effect and Control of the Sediment in the Combined Sewer on CSOs (합류식 하수관거내 퇴적물이 CSOs에 미치는 영향 및 제어방안)

  • This study is selected two points of combined sewer that occurred Fish Kill after first flush, that analyzed generation of pollutants and stream runoff generation of combined sewer overflows (CSOs) as fine weather and rainfall. In addition, this study was to analyze the relationship between CSOs and sediments, to propose measures to reduce the sediment relevant with CSOs and rainfall runoff from entering sewage treatment plants and measures for discharged directly into streams when indicate relatively good water quality after overflow. Sediments in combined sewer system was discharged about 50~80% as overflows during rainfall and we can reduce the amount of the CSOs at least 50% or more if the sewer does not exist in the sediments because of the amount of discharge about the amount of intercept has been investigated by 3~5 times. Because of velocity at sediment interval in sewer is very low, sewage velocity of about 3~5 times as much as it can increase the amount of sediment can be reduced if the separation wall is installed. Effective control of BOD overflow load is respectively 77.5%, 75.8% at first point, second point by the separation wall is installed. Drainage area greater than area in this study or many combined sewer overflows region is increased the more effective control of separation wall. Turbidity to measure changes in water quality of overflows can be used as an factor to control the intercept flows because the intercept flows(3Q) after the first flush has lowered removal efficiency and increases the operational load of sewage treatment plants. Sewage water quality after a overflow when the reasonable turbidity was measured at this point flows to excluded intercept flow(1Q) can be discharged to stream.
