This study was conducted to investigate physicochemical properties and anti-allergic properties of walnut oil. pH, acid value and iodine value of walnut oil were respectively 4.9, 0.8 and 117. Most of general composition of walnut oil was crude fat(99.9%) Vitamin A and E were 0.06 and 10.25mg/100g and the major fatty acids of walnut oil was linoleic acid(62.8%). Total phenolics and antiallergic effects of walnut oil were estimated 27mg% and 62.82% at the concentration of 0.5% ethanol walnut oil. These results suggest that the walnut oil can provide one of the valuable resource for the functional foods.
These experiments were carried out to study the factors affecting quality and textural characteristics in the preparation of artificial gluten meat (AGM). These results were compared with the raw beef on its properties. The results obtained were summarized as follows: 1, The affective factors on the color of AGM were walnut, oil, salt, onion, water, interactions of oil and water, and interactions of heating temperature and heating time. 2. Shear force was affected by the factors of walnut, onion, water and interactions of walnut and oil. 3. Walnut, oil, onion, salt, water, interactions of walnut and oil, interactions of oil and water, and heating temperature affected on hardness, springiness, cohesiveness and chewiness. 4. Walnut and water affected on the water holding capacity.
The objective of this study was to examine the effects of seven dietary oils on the serum lipid patterns of rats. Seventy weanling Wistar Kyoto rats were divided into seven groups of ten rats each. Walnut oil (rich in PUFA), wheat germ oil (rich in PUFA), corn oil (rich in PUFA), canola oil (rich in monounsaturated fatty acids), fish oil (rich in PUFA), primrose oil (rich in PUFA), and palm oil (rich in saturated fatty acids) were employed for 21 days. Serum total cholesterol concentrations for rats fed palm oil, walnut oil, and wheat germ oil were significantly higher than were concentrations for rats receiving corn oil. fish oil, and primrose oil. The mean serum LDL cholesterol values for rats fed fish oil, primrose oil, and corn oil were significantly lower than those for rats fed walnut oil, wheat germ oil, canola oil, and palm oil. HDL cholesterol concentrations were the highest when wheat germ oil was fed and the lowest when fish oil was fed. The feeding of wheat germ oil and palm oil to rats resulted in considerably higher serum triglyceride levels than did all other treatments. The feeding of wheat germ oil to rats resulted in considerably higher serum phospholipid levels. Serum phospholipid concentrations were significantly lower in rats fed the canola oil, fish oil, ,and primrose oil diets, when compared to concentrations achieved with the feeding of walnut oil, wheat germ oil, corn oil, and palm oil. Palm oil, which has a high ratio of saturated to polyunsaturated fatty acids, resulted in the highest serum total cholesterol and highest LDL cholesterol levels, while fish oil, primrose oil, and corn oil produced the lowest total cholesterol and LDL cholesterol. Wheat germ oil produced the highest values for HDL cholesterol, triglycerides, and phospholipids. In general, feeding oils rich in polyunsaturated fatty acids produced more favorable responses than feeding oils containing large amounts of monounsaturated or saturated fatty acids.

The composition of triglyceride in the oil of walnut and pine-nut were analysed quantitatively by Tri-analysis column of HPLC. The results were as follows: 1. The compositions of triglyceride of pine-nut oil were $C_{52}=31.55%,\;C_{44}=20.72%,\;C_{54}=17.52%,\;C_{34}=15.24%,\;C_{56}=12.50%$ in order, respectively. 2. The compositions of triglyceride of walnut oil were $C_{44}=38.66%,\;C_{52}=29.47%,\;C_{54}=16.53%,\;C_{34}=11.12%,\;C_{50}=1.51%$ in order, respectively.
To obtain the oil sesame, walnut, whole wheat, and rice bran were extracted for 1, 3, or 6 hr by a shanking water bath(35$^{\circ}C$ and 100 rpm), and by soxhlet extractor(80$^{\circ}C$) for 1, 3 or 6 hr, respectively. The highest yield of extracted oil was obtained from the walnut(63.07% weight) and the whole wheat showed the lowest extraction yield of oil(1.13% weight). Major fatty acids from the extracted oils were linoleic, oleic, and palmitic acid. The maximum contents of total phytosterol in sesame, walnut, whole wheat, and rice bran were 0.44, 1.57, 2.25, and 2.03(% weight), respectively. Besides, total tocopherol contents in sesame, walnut, whole wheat, and rice bran were maxima 3.42, 0.16, 2.92, and 0.07(% weight), respectively. From the extracted oils, structured lipids(SL) were synthesized by the interesterification reaction with conjugated linoleic acid(CLA) in a shanking water bath at 55$^{\circ}C$. When the reactions(1:3 substrate molar ratio, extracted oil:CLA) were conducted for 24 hr, maxima 23.75 mol% of CLA incorporation was obtained from walnut oil and, in other cases, 16.28 - 19.15 mol% of CLA was found in the produced SL triacylglycerol molecules.
The triglycerides of walnut oil were fractionated by high performance liquid chromatography (HPLC) on the basis of partition number (PN). Each triglyceride was finally fractionated on the basis of aryl carbon numbers (CN) by gas-liquid chromatography (GLC). The fatty acids of triglyceride for each PN group were analyzed by GLC. Also, the fatty acid at ${\beta}-position$ of glycerol in each PN fraction separated by HPLC was determined by enzymatic hydrolysis with pancreatic lipase. The major triglyceride molecular species of walnut oil were $C_{18:2}{\cdot}C_{18:2}{\cdot}C_{18:1}$(LLO; 10.9%), $C_{18:3}{\cdot}C_{18:2}{\cdot}C_{18:2}$(LnLL; 17.6%) and $C_{18:2}{\cdot}C_{18:2}{\cdot}C_{18:2}$(LLL; 37.3%). The triglyceride molecular species occupied by unsaturated fatty acid at ${\beta}-position$ were more than 90%.

The present study was conducted to elucidate the triglyceride composition of walnut oil. The triglycerides were separated by thin layer chromatography (TLC) and fractionated on the basis of partition numbers by reverse phase high performance liquid chromatography (HPLC) on a column packed with $\mu$-bondapak $C_{18}$ using methanol-chloroform mixture as a solvent system. Each of these collected fractions was fractionated again on the basis of acyl carbon number of triglyceride by gas liquid chromatography (GLC). The fatty acid composition of triglycerides for each partition numbered group was also analyzed by GLC. From the results, it was found that walnut oil consists of ten kinds of triglycerides, and the patterns of major ones in walnut oil were as follows: 53.3% of $(C_{18:2},\;C_{18:2},\;C_{18:2})$, 10.1% of $(C_{18:1},\;C_{18:2},\;C_{18:2})$, 5.4% of $(C_{18:1},\;C_{18:1},\;C_{18:2})$, 4.3% of $(C_{18:1},\;C_{18:2},\;C_{18:3})$, 3.9% of $(C_{18:0},\;C_{18:2},\;C_{18:2})$, 2.0% of $(C_{18:0},\;C_{18:1},\;C_{18:2})$, 1.8% of $(C_{18:0},\;C_{18:2},\;C_{18:2})$.
The contents of odd number fatty acid in walnut, peach seed and apricot seed were analyzed by HPLC. The results were as follows; the contents of crude oil in walnut, peach seed and apricot seed were 61.7%, 48.21%, and 52.34%, respectively. The contents of neutral lipid in walnut peach seed, and apricot seed were contained 62.32%, 91.50%, and 88.00%, respectively. The contents of glycolipid in walnut peach seed and apricot seed were contained 34.14%, 3.25%, and 4.78%, respectively. The contents of phospholipid in walnut peach seed and apricot seed were contained 3.54%, 5.25%, and 7.27%, respectively. The contents of odd number fatty acid and even number fatty acid in neutralipid were walnut 37.07% and 36.72%, peach seed 5.4% and 94.60%, and apricot seed 6.85% and 93.92%, respectively. The contents of odd number fatty acid and even number fatty acid in glycolipid were walnut 5.37% and 46.21%, peach seed 6.97% and 89.42%, and apricot seed 10.50% and 89.42%, respectively. The contents of odd number fatty acid and even number fatty acid in phospholipld were walnut 3.57% and 96.43%, peach speed 6.51% and 93.49%, and apricot seed 15.00% and 84.20%, respectively. The contents of odd number fatty and even number fatty acid in total fatty acid were walnut 14.47% and 85.53%, peach seed 1.17% and 98.83%, and apricot seed 4.3% and 95.97%, respectively.
The modern unique woodworking furniture has been made in earnest from 50 years ago. Some oil from nut such as soybean, walnut and perilla, which is usually used in our common life, has been used as finishing material for the unique woodworking furniture. Recently, woodworking studio business among the whole furniture industry has grown gradually and many woodworkers uses various kinds of imported wood finishing oil. Many woodworkers use the imported finishing oil in the old ways instead of understanding the characters of the various kind of oil and It causes some serious problems in furniture finishing process. Therefore, this study aims at taking theoretical approach in wood finishing oil and presenting correct usage in understanding the types and characters of oil. Resultingly the new method of oil finishing for wood is suggested and this suggestion is to guide woodworkers into the right usage of wood finishing oil.
