Analysis and Comparison of Volatile Flavor Components in Rice Wine Fermented with Phellinus linteus Mycelium and Regular Commercial Rice Wine

  • This study identified and compared the volatile flavor components of two commercial rice wines: one fermented using the mycelium of Phellinus linteus and a regular commercial rice wine. The volatile flavor components were isolated from the infusions by Porapak Q (50-80 mesh) column adsorption. The concentrated aroma extracts were then analyzed and identified by GC and GC-MS. Thirty-four kinds of flavor components were identified in the mycelium-fermented rice wine, including 11 alcohols, 8 esters, 3 ketones, 6 acids, 3 hydrocarbones, and 4 others. In the regular commercial rice wine, 36 kindss of flavor compounds were identified, including 9 alcohols, 6 esters, 4 ketones, 6 acids, 9 hydrocarbones, and 2 others. Therefore, the data indicate that the primary flavor components in the rice wines were alcohols and esters.

Antimicrobial Activity and Components of Extracts from Agastache rugosa during Growth Period

  • Antimicrobial activities of volatile flavor, water and methanol extracts from Agastache rugosa were investigated. The volatile flavor extract was obtained from A. rugosa by simulataneous distillation-extraction (SDE) method. Antimicrobial activity was investigated by disc diffusion method against several microorganisms, four species of Gram positive, three species of Gram negative and tow species of yeast. The volatile flavor extracts had strong antimicrobial activity againstc. utilisand S. cerevisiae. During the growth period, a difference in antimicrobial activity among volatile flavor extracts from A. rugosa was not shown. The water extract of above 10 mg/disc showed antimicrobial activity. Methanol extracts from A. rugosa harvested in June showed antimicrobial activity against tested Gram positive and Gram negative bacteria, showed weak antimicrobial activity against the bacteria from those harvested in July and August. In particular, antimicrobial activity against V. parahaemolyticus was stronger than that against other bacteria. Water and methanol extracts did not inhibit yeast. C. utilis and S. cerevisiae. To further elucidate the effective components, volatile flavor extracts was analyzed by GC/MS. harvested in June, the components included 8 phenols (93.031%), 18 terpenes (5.230%), 12 alcohols (1.300%) 8 alkanes (0.181%), 1 ester (0.056%), 2 ketones (0.033%), 2 aldehydes (0.011%) and 1 pyrrole (0.007%). In July, the components included 6 phenols (94.366%), 19 terpenes (3.394%), 11 alcohols (2.045%), 1 ester (0.039%), 2 ketones (0.028%), 1 furan (0.005%) and 1 aldehyde (0.005%). And in August, the components included 7 phenols (95.270%), 19 terpenes (2.951%), 13 alcohols (1.399%), 1 ester (0.063%), 2 aldehydes (0.016%), 2 ketones (0.011%), 1 alkane (0.006%), 1 acid (0.005%) and 1 pyrrole (0.005%). The major component of volatile flavors was estragole, a phenolic compound.

Comparative Chemical Composition of Domestic and Imported Chrysanthemum indicum L. Flower Oils

  • Volatile flavor compounds were isolated from the flowers of Chrysanthemum indicum L. (gamguk) produced in Korea and China by the hydro distillation, and were analyzed by gas chromatography-mass spectrometry (GC/MS). The yield of oils from Korean and Chinese gamguk were 2.0 and 0.5%(v/w), respectively. Sixty-three volatile compounds of Korean gamguk representing 89.28% of the total peak area were tentatively identified, including 35 hydrocarbons, 12 alcohols, 6 ketones, 3 esters, 5 aldehydes, 1 oxide, and 1 miscellaneous component. Thirty-six volatile components of Chinese gamguk constituted 58.15% of the total volatile composition were tentatively characterized, consisting of 19 hydrocarbons, 7 alcohols, 2 ketones, 2 esters, 4 aldehydes, 1 oxide, and 1 miscellaneous component. The predominant components of Korean oil were ${\alpha}$-pinene, 1,8-cineol, and chrysanthenone. Whereas, camphor, ${\alpha}$-curcumene, and ${\beta}$-sesquiphellandrene were the main aroma compounds of Chinese gamguk.

한국산 향미와 일반미와 휘발성 성분 비교 (Comparison of Volatile Flavor Components of Korean Aromatic Rice and Nonaromatic Rice)

  • To compare the composition of volatile flavor components of two different types of rice, the volatile flavor concentrates isolated from brown rices Hyangnambyeo(aromatic cultivar) and Dongjinbyeo (normal cultivar) were analyzed by gas chromatography and gas chromatography mass spectrometry. A total of components, including 16 hydrocarbons, 16 aldehydes and ketones, 15 alcohols, 4 acids, and 10 miscellaneous components were identified positively or tentat ively. Among them, n pentanol was the most abundant component in both samples and Hyangnambyeo contained more aldehydes and alcohols than Dongjinbyeo. 2 Acetyl 1 pyrroline which is chiefly responsible for the character istic odor of aromatic type rice was high in Hyangnambyeo compare to Dongjinbyeo, but these were detected as minor component.

천마의 휘발성 향기성분 (Volatile Flavor Constituents in the Rhizoma of Gastrodia elata)

  • Crude oils in the rhizoma of fresh and dried Gastrodia elata were obtained by a simultaneous steam distillation and extraction(SDE) method using n-pentane/diethyl ether (1 : 1) as solvent, and their volatile constituents were analyzed by gas chromatography-mass spectrometry(GC/MS) A total of 39 volatile flavor constituents (11 acids, 13 alcohols,6 hydrocarbons,7 carbonyls,2 esters) and 25 constituents (6 alcohols, 13 acids, 4 hydrocarbons, 1 carbonyl, ester) were identified in the fresh and dried Gastrodia elate respectively. The major volatile components of the fresh and dried sample were hexadecanoic acid(66.78%, 50.72%), 9-hexadecenoic acid(8.07%, 9.58%), heptadecanoic acid(2.01%, 0.13%), pentadecanoic acid(6.41%, 4.94%), p-cresol(1.43%,0.52%) and cyclododecene(1.83%, 6.00%).

알코올 발효과정 중 양파착즙액 휘발성 향기성분 변화 (Fermented Production of Onion Vinegar and Its Biological Activities)

  • This study aimed to provide volatile flavor compounds of three onion products through thermal process and alcohol fermentation, to meet the quality standard of onion products. The identified components of onion extracts (OE) included 49 (18 sulfur-containing compounds, 5 alcohols, 8 acids, 3 ketones, 4 esters, 4 aromatic compounds, 2 aldehydes, 1 pyrazines and 4 miscellaneous compounds), and 55 (17 sulfur-containing compounds, 15 alcohols, 5 acids, 11 ketones, 3 aromatic compounds, 2 aldehydes and 1 pyrazine) in autoclave-sterilized onion extracts (SOE); and 69 (10 sulfur-containing compounds, 27 alcohols, 11 acids, 11 ketones, 6 esters, 1 aromatic compound and 3 pyrazines) in onion wine (OW), respectively. Among the major flavor classes, sulfur-containing compounds (36.8%), acids (31.3%) and aldehydes (13.6%) in OE were changed to alcohols (46.5%) and ketones (27.3%) in SOE whereas, alcohols (56.3%) and acids (26.6%) in OW. Moreover, 1,3-butanediol, 2,3-butanediol, and 3-hydroxy-2-butanone were highly detected in SOE whereas, acetic acid, 3-methylbutanol, 2-phenylethanol and 1,2,3-propanetriol in OW.

  • McIntosh apple을 climacteric maximum 시기인 9월 25일에 채취하여 향기성분을 추출, 분리 및 동정한 결과 head space법에 의한 향기성분은 etsers 13종, alcohols 6종, aldehyde 및 ketone 각 1종으로 총 21종을 동정하였다. 연속수증기증류법에 의해 동정된 향기성분은 esters 20종, alcohols 14종, aldehydes 2종 및 ketone 1종으로 총 37종을 동정하여 head space법보다 16종을 더 동정할 수 있었다. 두 방법에 의해 동정된 향기성분 중 모두 ester가 가장 많아 사과에서 가장 중요한 향기성분이었으며 다음이 alcohol이었다.

The Global Volatile Signature of Veal via Solid-phase Microextraction and Gas Chromatography-mass Spectrometry

  • The volatile composition of veal has yet to be reported and is one of the important factors determining meat character and quality. To identify the most important aroma compounds in veal from Holstein bull calves fed one of three diets, samples were subjected to solid-phase microextraction (SPME) combined with gas chromatography-quadrupole mass spectrometry (GC-MS). Most of the important odorants were aldehydes and alcohols. For group A (veal calves fed entirely on milk for 90 d before slaughter), the most abundant compound class was the aldehydes (52.231%), while that was alcohols (26.260%) in group C (veal calves fed starter diet for at least 60 d before slaughter). In both classes the absolute percentages of the volatile compounds in veal were different indicating that the veal diet significantly (p<0.05) affected headspace volatile composition in veal as determined by principal component analysis (PCA). Twenty three volatile compounds showed significance by using a partial least-squared discriminate analysis (PLS-DA) (VIP>1). The establishment of the global volatile signature of veal may be a useful tool to define the beef diet that improves the organoleptic characteristics of the meat and consequently impacts both its taste and economic value.

삽주의 휘발성 향기성분 (Volatile Flavor of Atractylodes japonica koidzumi)

  • 삽주(Atractylodes japonica Koidzumi)의 약명인 창출(蒼朮)과 백출(白朮)로 휘발성 향기성분을 조사하기 위하여 n-pentane/diethyl ether용매로 사용하여 SDE방법으로 정유성분을 분리한 다음 GC/MS를 이용하여 성분을 확인하였다. 백출에서 30종 그리고 창출에서 28종류의 휘발성 향기성분을 확인하였으며, 백출의 향기성분을 관능기별로 보면 hydrocarbons 18종, carbonyls 2종, alcohols 5종, esters 5종이고, 창출은 hydrocarbons 14종, carbonyls 6종, alcohols 4종, esters 3종, acids 3종으로 각각 조사되었고, 백출 및 창출의 주요 향기성분으로서는 furanodiene 성분이 각각 27.9%, 15.7%, $\alpha$-cyperone 성분이 8.1%, 22.5%, alloaromadendrene 성분이 2.9%, 4.7% (1,1-biphenyl)-4-carbon aldehyde 성분은 창출에서만 8.7%로 확인되었다. 백출에서 limonene, p-cymene, p-cymen-8-ol, (1,1-biphenyl)-4-carbox aldehyde 등을 포함한 10종의 성분이 확인된 반면에 창출에서는 확인되지 않았고, 반면에 창출에서 $\alpha$-copaene; isocaryophyllene, $\beta$ -himachalene, germacrene B 등을 포함한 8종의 성분이 확인된 반면에 백출에서는 확인되지 않았다.

  • 냉이의 식용부위에 따른 휘발성 향기성분을 분석하기 위해 SDE방법으로 정유성분을 추출한 다음 GC 및 GC-MS를 이용하여 성분을 확인하였다. 전초에서는 탄화수소류 12종, 알데히드류 2종, 케톤류 2종, 알코올류 5종, 에스테르류 1종, 유기산류 10종 및 기타 2종이 확인되었고, 잎에서는 탄화수소류 11종, 알데히드류 5종, 케톤류 4종, 알코올류 5종, 에스테르류 1종 및 기타 2종, 뿌리에서는 탄화수소류 5종, 알데히드류 1종, 케톤류 2종, 알코올류 6종, 에스테르류 2종, 유기산류 1종 및 기타 7종이 확인되었다. 전초에서 다량 함유된 유기산류는 잎 부위에서는 확인되지 않았고 뿌리 부위보다 잎 부위에 케톤류 및 알코올류가 더욱 다량 함유되어 있었다. 잎 및 뿌리에서는 지방취 및 약한 왁스냄새를 부여하는 성분들이 확인된 반면 전초에서는 신선하고 단내음을 발하는 성분들이 확인되었고 착향료로서 이용되는 성분들의 함량도 풍부하여 냉이를 조리 및 가공에 이용할 경우 전초를 사용하는 것이 향기 측면에서 가장 바람직하다고 생각된다.
