The present study identified volatile flavor components of Hanwoo longissimus muscle and other Korean foods (Doenjang, Chungukjang, sesame oil) and their traits were compared in relation with flavor precursors that include fatty acids and protein degradation products. Hanwoo longissimus muscle was purchased from a commercial abattoir while the other foods were sampled from three separate households. The results showed totals of 68 ($9.94{\mu}g/g$), 60 ($15.75{\mu}g/g$), 49 ($107.61{\mu}g/ml$) and 50 ($7.20{\mu}g/g$) volatile components for Doenjang, Chungukjang, sesame oil and Hanwoo beef longissimus, respectively (p<0.05). Aldehydes were the most predominant components in beef, but alcohols, acids and esters, and pyrazines are probably the major contributors to the flavor characteristics of other foods. SDS-PAGE revealed that beef longissimus muscle and Doenjang showed higher protein degradation than other foods which could be likely related to chiller ageing and ripening process. The total polyunsaturated fatty acids were approximately 50, 60, 41 and 5% for Doenjang, Chungukjang, sesame oil and beef longissimus muscle, respectively. Based on the mechanism(s) of generation of the volatile compounds and the chemical composition of each food sample, differences and traits of volatile flavor components among the four food types are likely due to fatty acid profiles, proteolytic activity and processing conditions. Aroma intense compounds like pyrazines and sulfur-containing compounds were limited in cooked beef in the current experimental condition (i.e., relatively low heating temperature). This suggests that higher heating temperature as in the case of roasting is needed for the generation of high aroma notes in meat. Furthermore, proteolytic activity and stability of fatty acids during ageing have a great influence on the generation of flavor components in cooked beef.
Simultaneous distillation-extration method에 의해 4종의 국내에서 인공재배되고 있는 느타리 버섯류 (Pleurotus sp)로부터 휘발성 향기성분을 분리한 다음 GC-MS 및 GC에 의한 표준품과의 머무름 시간 비교에 의해 성분을 확인 하였다. 확인된 54종의 휘발성 화합물중 저온성 느타리 (Pleurotus ostreatus ASI 201)에서는 1-octen-3-ol, 3-octanone, 3-octanol등이, 원형 느타리 (Pleurotus florida--ostreatus-ostreatus)에서는 1-octen-3-ol, n-hexanol, 3-octanone, 3-octanol, phenol등이, 애느타리 (Pleurotus ostreatus)에서는 1-octen-3-ol, n-pentanal, n-hexanol, n-pentanol, 3-octanone, 3-octanol, 1,5-octadien-3-one등이었다. 특히 확인된 성분중에는 탄소수가 8개인 alcohol 및 carbonyl화합물이 많았으며 전체 향기성분에 대한 $C_8$화합물의 비율은 각각 56.60%, 72.46%, 54.84%, 35.85%이었다.
재래식 메주, 고오지, 나토 메주, 고오지-나토의 혼용 메주를 사용하여 90일 수성시킨 된장의 향기 성분은 다음과 같다. 된장의 향기 성분을 Headspace 방법으로 추출하여 GC-MS로 분석한 결과 36종이 검출되었는데 이중 알콜류 5종, 알데히드류 5종, 케톤류 8종, 유기산류 3종, 에스테르류 9종, 그 외 6종으로 확인되었다. 시험 된장별로는 재래식 된장에서 29종으로 가장 많았고, 고오지 된장과 고오지-나토 된장에서 각각 $26{\sim}24$종, 그리고 나토 된장에서 20종으로 가장 적었다. 관능기별 향기성분 조성비는 각 시험구에서 알콜 함량이 가장 많았으며 재래식 된장은 다른 시험된장 보다 카보닐 화합물, 에스테르 함량비가 높았고 고오지-나토된장에서는 이들의 조성비가 가장 낮았다. 된장의 향기 성분으로 아직까지 제시되지 않은 화합물인 3-ethoxy-1-propene, dihydro-2-methyl-3-furanone, 1-hydroxy-2-propanone, 1-(2-furanyl)ethanone, 2-acetyl-ethylhexanoate 등 5종이 확인되었다.
우리나라의 고유한 향신료로 활용되고 있는 소엽의 휘발성 향기성분 분석에 적합한 solid phase microextraction(SPME) fiber를 선정하기 위하여 carboxen/polydimethylsiloxane(CAR/PDMS)과 polydimethylsiloxane(PDMS)의 2종류 fiber를 이용하여 향을 추출한 후 GC/MS로 분석하였다. CAR/PDMS fber에 소엽의 향을 흡착시켜 분석한 결과, 39종의 성분이 확인되었으며, PDMS fiber를 이용하였을 때는 20가지의 향기성분이 확인되었다. 특히 PDMS fiber를 사용하였을 때 CAR/PDMS fber를 이용하였을 때 보다 perillaldehyde (40.50%), limonene (27.32%), E,E-,${\alpha}-famesene$ (10.22%) 및 ${\beta}-caryophyllene$ (8.02%)의 소엽의 주요 향기성분이 선택적으로 많이 확인되었다. 따라서 방향성 식용식물인 소엽의 향기를 SPME법으로 추출할 때는 PDMS fiber가 적합하다고 판단된다.
키조개 부산물로 부터 향미제로 응용하기 위하여 제조한 가수분해물의 유리아미노산 및 휘발성 향기성분을 분석한 결과, 유리아미노산의 경우 가수분해물이 생시료에 비해 3배 이상 증가하였으며 taurine의 함량이 가장 많았다. 그리고 생시료와 가수분해물의 휘발성 향기성분을 분석한 결과 총 109종의 화합물이 동정되었는데 이중에서 생시료는 88종, 가수분해물은 65종이 검출되었다. 그리고 이들은 주로 알데히드류(16종), 케톤류(17종), 알콜류(31종), 함질소화합물류(16종), 방향족화합물류(8종), 에스테르류(3종) 및 기타 화합물류(17종)으로 구성되어 있었다. 특히 생시료에서의 산화취 성분인 알데히드류 및 방향족화합물은 가수분해물에서 상당량 감소되었으며 반면에 고소한 향기성분인 heterocyclic 화합물이 상당량 검출되었다.

A total of 48 different volatile oils were identified form P. brevitarsis larvae by gas chromatography/mass spectrometry (GC/MS). Acids (48.67%) were detected as the major group in P. brevitarsis larvae comprising the largest proportion of the volatile compounds, followed by esters (19.84%), hydrocarbons (18.90%), alcohols (8.37%), miscellaneous (1.71%), aldehydes (1.35%) and terpenes (1.16%). The major volatile constituents were 9-hexadecenoic acid (16.75%), 6-octadecenoic acid (14.88%) and n-hexadecanoic acid (11.06%). The composition of fatty acid was also determined by GC analysis and 16 fatty acids were identified. The predominant fatty acids were oleic acid ($C_{18:1}$, 64.24%) followed by palmitic acid ($C_{16:0}$, 15.89%), palmitoleic acid ($C_{16:1}$, 10.43%) and linoleic acid ($C_{18:2}$, 4.69%) constituting more than 95% of total fatty acids. The distinguished characteristic of the fatty acid profile of P. brevitarsis larvae was the high proportion of unsaturated fatty acid (80.54% of total fatty acids) versus saturated fatty acids (19.46% of total fatty acids). Furthermore, small but significant amounts of linoleic, linolenic and ${\gamma}$-linolenic acids bestow P. brevitarsis larvae with considerable nutritional value. The novel findings of the present study provide a scientific basis for the comprehensive utilization of the insect as a nutritionally promising food source and a possibility for more effective utilization.
The aim of this study was to explore the volatile compounds of hind leg, foreleg, abdomen and Longissimus dorsi in both male and female Hyla rabbit meat by solid phase microextraction tandem with gas chromatography mass spectrometry, and to seek out the key odorants via calculating the odor activity value and principal component analysis. Cluster analysis is used to study the flavor pattern differences in four edible parts. Sixty three volatile compounds were detected, including 23 aldehydes, 4 alcohols, 5 ketones, 11 esters, 5 aromatics, 8 acids and 7 hydrocarbons. Among them, 6 aldehydes and 3 acids were identified as the potential key odorants according to the ratio of concentration and threshold. The contents of volatile compounds in male Hyla rabbit meat were significantly higher than those in female one (p<0.05). The results of principal component analysis showed that the first two principal component cumulative variance contributions reach 87.69%; Hexanal, octanal, 2-nonenal, 2-decenal and decanal were regard as the key odorants of Hyla rabbit meat by combining odor activity value and principal component analysis. Therefore volatile compounds of rabbit meat can be effectively characterized. Cluster analysis indicated that volatile chemical compounds of Longissimus dorsi were significantly different from other three parts, which provide reliable information for rabbit processing industry and for possible future sale.
Andong Soju is a Korean traditional distilled liquor brewed with Nuruk which is cultured with wild microorganisms. To provide useful information for scientific production and systematic quality control of traditional distilled liquor, the effects of mixed culture of the alcoholic yeasts and saccharifying molds isolated from the Nuruk, and mashes on the flavor and sensory characteristics were investigated. Distillate from mashes cocultured with Saccharomyces cerevisiae and Hansenula anomala using Mucor Nuruk was compared with distillate from mashes brewed with Andong Nuruk and with distillate from plant fermented mashes to analyze their flavor characteristics. The volatile flavor compounds in distillates were analyzed by GC and GC-MS using direct injection, solvent extraction, and purge & trap methods. Alcohols such as 3-methyl-1-butanol, 2-methyl-1-propanol, 1-propanol, and 2-phenyl ethanol; aldehydes such as acetaldehyde and 2-furancar-boxaldehyde; esters such as ethyl ester of acetic acid, hexanoic acid, octanoic acid, decanoic acid; alkanes, alkenes, ketone, sulfur, and pyrone compounds were detected. Alcohols were chief components of flavor compounds. No significant difference in overall acceptability test was shown among three experimental groups(p<0.05), but Nuruk-like aroma, Kaoliangchiew-like aroma, sweet taste, and well rounded mouthfeel showed significant differences among them(p<0.05).
