Evaluation of Volatile Compounds Isolated from Pork Loin (Longissimus dorsi) as Affected by Fiber Type of Solid-phase Microextraction (SPME), Preheating and Storage Time

  • This study was conducted to investigate the effects of heating, fiber type used in solid-phase microextraction (SPME, two phase vs three phase) and storage time on the volatile compounds of porcine M. longissimus dorsi (LD). Volatile compounds were measured using a gas chromatography and mass spectrometry (GC/MS) with a quadrupole mass analyzer. Among the volatile compounds identified, aldehydes (49.33%), alcohols (24.63%) and ketones (9.85%) were higher in pre-heated loins ($100^{\circ}C$/30 min), whereas, alcohols (34.33%), hydrocarbons (22.84%) and ketones (16.88%) were higher in non-heated loins. Heating of loins induced the formation of various volatile compounds such as aldehydes (hexanal) and alcohols. The total contents of hydrocarbons, alcohols, and carboxylic acids were higher in two phase fibers, whereas those of esters tended to be higher in three-phase fibers (p<0.05). Most volatile compounds increased (p<0.05) with increased storage time. Thus, the analysis of volatile compounds were affected by the fiber type, while heating and refrigerated storage of pork M. longissimus dorsi increased the volatile compounds derived from lipid oxidation and amino acid catabolism, respectively.

  • About 2.1g of pale yellow flavor concentrate was obtained from 10kg of chopped fresh ascidians through a Likens-Nickerson steam distilllation/solvent extraction. These concentrates could be fractionated to neutral $(91.5\%),\;basic\;(1.0\%),\;phenolic\;(3.2\%),\;and\;acidic\;(4.3\%)$ fractions. Total 65 volatile compounds were identified from those concentrates. The neutral fraction was representative flavor fraction which showed a similar flavor of total steam distillates of ascidian. The major compounds $(38.2\%\;of\;neutral\;fraction)$ were identified as carbon atoms 8 to 10 of alcohols. Among these volatile alcohols, 1-octanol, 2,7-decadien-1-o1, 3-octen-l-01, 7-decen-l-ol, and l-decanol were the dominent compounds found in neutral fraction. But the basic, phenolic, and acidic fractions differs from ascidian steam distillates flavor.

쑥갓으로부터 추출한 정유의 휘발성 향기성분 분석 (Analysis of Volatile Flavor Components of the Essential Oil from Chrysanthemum coronarium var. spatiosum Bailey)

  • This study investigated the volatile flavor components of the essential oil from Chrysanthemum coronarium var. spatiosumBailey. The essential oil obtained from the aerial parts of the plant by the hydrodistillation extraction method was analyzed by gas chromatography and gas chromatography-mass spectrometry. One hundred and one (99.11%) volatile flavor components were identified in the essential oil from the Chrysanthemum coronarium var. spatiosum Bailey. The major compounds were hexanedioic acid, bis(2-ethylhexyl) ester (12.45%), 6.10.14-trimethyl-2-pentadecanone (7.94%), 1-(phenylethynyl)-1-cyclohexanol (6.34%), α-farnesene (5.55%), phytol (4.99%), and α-caryophyllene (4.39%). When the volatile flavor components of Chrysanthemum coronarium var. spatiosum Bailey were classified by functional group, the content was high in the order of hydrocarbons, alcohols, esters, ketones, aldehydes, and phthalides. Sesquiterpene hydrocarbons were the most common hydrocarbons, mainly due to α-farnesene and α-caryophyllene. Among the alcohols, the content of aliphatic alcohols was significantly higher, mainly due to 1-(phenylethnyl)-1-cyclohexanol (6.34%) and phytol (4.99%). The analysis of the volatile flavor components of Chrysanthemum coronarium var. spatiosum Bailey in this study will provide useful information to consumers when purchasing food and to industries using fragrance ingredients.

옥수수 수염의 휘발성 성분 (Volatile Components of Cornsilk(Zea mays L.))

  • Volatile components of Cornsilk(Zea mays L.) were isolated by purge and trap headspace method and were analyzed by GC and GC/MSD. A total of 44 components were identified in the cornsilk volatile coponents including 9 alcohols 7 aldehydes and ketones 14 terpenes and terpene alcohols 3 pyrazines 5 hydrocarbons and 6 miscellaneous components. The major components were 2-propanol(8.08%) pen-tanol(1.82%) hexanol(2.86%) hexanal(3.68%) heptanal(7.40%) nonanal(7.93%) decanal (2.04%) $\alpha$-copaene(2.20%) limonene(1.68%) $\alpha$-selinene(1.03%) $\beta$-selinene(1.03%)

닭의장풀의 식용부위별 휘발성 향기성분 (Volatile Flavor Components in Various Edible Portions of Commelina communis L.)

  • 야생식용식물인 닭의장풀의 식용부위에 따른 휘발성 향기성분을 분석하기 위해 SDE방법으로 정유성분을 추출한 다음 GC 및 GC-MS를 이용하여 성분을 확인하였다. 전초에서는 탄화수소류 33종 알데히드류 4종, 케톤류 9종, 알코올류 23종, 에스테르류 6종, 유기산류 10종 및 기타 4종이 확인되었고, 잎에서는 탄화수소류 14종 및 알코올류 7종및 에스테르류 2종, 주기에서는 탄화수소류 3종 및 알코올류 3종, 뿌리에서는 탄화수소류 13종, 케톤류 1종, 알코올류 3종 및 유기산류 1종이 확인되었다. 닭의장풀 잎의 경우 줄기 및 뿌리부위보다 탄화수소류가 차지하는 비율이 높았고 다른 부위보다 알코올류의 함량은 적었으나 그 수는 더욱 다양하였다. 줄기 부위는 다른 부위에 비하여 가장 적은 수의 휘발성 향기성분이 확인되었으나 알코올류가 차지하는 비율은 월등히 높았다.

SPME에 의한 꽃향유의 휘발성 향기성분 분석 (Analysis of Volatile Compounds in Elsholtzia splendens by Solid Phase Microextraction)

  • Volatile compounds in Elsholtzia splendens were extracted by solid phase microextraction (SPME). Two kinds of SPME fiber, carboxen/polydimethylsiloxane (CAR/PDMS) and polydimethylsiloxane (PDMS) were used to determine the selectivity of the fibers to the different flavor compounds present in the Elsholtzia splendens. Identification of volatile compounds was based on the linear retention indices (RI) and the comparison of their mass spectra with those of on-computer library. Thirty compounds were identified in the volatile compounds extracted by CAR/PDMS fiber, including 1 aldehyde, 5 alcohols, 3 hydrocarbons, 17 terpene hydrocarbons, 3 ketones and 1 miscellaneous. And 5 alcohols, 3 hydrocarbons, 18 terpene hydrocarbons, 3 ketones and 2 miscellaneouses were identified in PDMS fiber. These results suggested that the selectivity of PDMS fiber was similar to that of CAR/PDMS fiber in Elsholtzia splendens. The major volatile compounds were naginataketone and elsholtziaketone in Elsholtzia splendens.

꽃향유의 휘발성 향기성분 (Volatile Compounds of Elsholtzia splendens)

  • 본 연구에서는 독특한 방향을 지닌 식용 및 약용식물인 꽃향유의 휘발성 향기성분을 SDE 및 HS-SPME법에 의해 추출한 후, GC-MSD를 이용하여 분석 동정하였으며, GC-O에 의하여 꽃향유의 aroma-active compounds를 확인하였다. SDE법에 의해 꽃에서는 aldehydes 3종, alcohols 7종, hydro-carbons 11종, ketones 5종 및 기타 3종의 총 29종이 확인되었고, 잎에서는 aldehydes 3종, alcohols 6종, hydrocarbons 11종, ketones 6종 및 기타 4종의 총 30종이 확인되었다. PDMS fiber를 사용한 HS-SPUE법에 의해 꽃과 잎에서는 aldehyde가 검출 되지 않았으며 alcohols 3종, hydrocarbons 18종, ketones 3종 및 기타 2종의 총 26종이 확인되었고, 잎에서는 alcohols 7종, hydrocarbons 15종, ketones 7종 및 기타 2종의 총 31종이 확인되었다. 꽃향유의 주요 향기성분으로 알려진 elsholtziaketone과 naginataketone은 SDE법과 HS-SPME법 모두에서 확인되었으며 꽃과 잎 부위에서 상대적으로 많은 양이 나타났다. 꽃향유 향기분석에서 SDE 및 PDMS fiber를 이용한 HS-SPME방법의 주요한 차이는 비극성인 SPME fiber에서 비교적 극성 물질인 aldehyde류가 확인되지 않았다는 점이다. 또한 GC-O 분석을 통하여 elsholtziaketone과 naginataketone이 강렬한 운향(rue-like)을 지니며, 톡 쏘는 듯한 향신료의 향을 갖는 것으로 확인되었다. 따라서 elsholtziaketone과 naginataketone이 꽃향유 특유의 향 발현에 기여하는 것으로 판단된다.

Comparison of Volatile Aroma Components from Saussurea lappa C.B. Clarke Root Oils

  • The volatile flavor components were isolated from the roots of Saussurea lappa C.B. Clarke produced in Korea and China by the hydro distillation, and were analyzed by gas chromatography-mass spectrometry (GC/MS). 63 aroma compounds representing 87.47% of the total peak area were tentatively identified, including 13 alcohols (22.56%), 26 hydrocarbons (21.78%), 4 aldehydes (21.24%), 11 ketones (18.04%), 1 oxide (0.52%), 3 esters (0.16%), 1 carboxylic acid (0.02%) and 4 miscellaneous components (3.15%). 46 volatile flavor components of imported S. lappa C.B. Clarke constituted 65.69% of the total volatile composition were tentatively characterized, consisting of 1 aldehyde (23.32%), 24 hydrocarbons (16.69%), 10 ketones (15.84%), 7 alcohols (8.92%), 1 oxide (0.83%), 2 esters (0.07%) and 1 acid (0.02%). The predominant components of both essential oils were (7Z,10Z,13Z)-7,10,13-hexadecatrienal and dehydrocostuslactone.

두메부추의 휘발성 향기성분 분석 (Analysis of Volatile Flavor Components from Allium senescens)

  • 신선 및 동결 건조된 두메부추 잎을 연속수증기 증류추출 장치로 증류하여 얻어진 정유성분을 GC 및 GC-MS로 분석하여 신선한 시료에서 11종의 hydrocarbons 0.136ppm 9종의 aldehydes 0.278ppm, 4종의 alcohols 0.025ppm, 2종의 esters 2.328ppm, 7종의 acids 0.545ppm, 4종의 ketones 0.037ppm 및 9종의 sulfur containing compounds 0.117ppm의 총 46종의 성분을 확인하였다. 동결 건조한 두메부추 잎에서는 8종의 hydrocarbons 1.357ppm 5종의 aldehydes 0.498ppm, 3종의 alcohols 0.094ppm, 5종의 esters 0.720ppm, 2종의 acids 0.069ppm 3종의 ketones 0.163ppm 및 4종의 sulfur containing compounds 0.039ppm을 포함하여 총 30종의 향기성분이 확인되었다. 전자코의 분석 결과, 제1주성분 값의 기여율이 0.987을 나타내어 제1주성분이 두메부추와 부추를 총괄하는 정보로 사용될 수 있음을 알 수 있다. 신선한 두메부추는 제1주성분 값이 0.5부근에 집중된 분포를 보이고, 신선한 부추는 -0.5부근에 분포되어 있어 신선한 두메부추와 신선한 부추의 휘발성 향기성분 패턴이 다름을 알 수 있었다. 또한 동결 건조된 시료의 경우, 두메부추는 제1주성분 값 0을 중심으로 -쪽에 분포되어 있고, 부추는 +부근에 분포되어 있어 동결 건조된 시료의 휘발성 향기성분 패턴도 차이가 있었다.

전통주의 품질 특성 규명을 위한 향기 성분 분석 (Determination of the Volatile Flavor Compounds for the Quality Characteristics in Traditional Alcoholic Beverages)

  • In order to evaluate the aroma compounds in Korean traditional alcoholic beverages, volatile compounds of the commercial wines, Makgeolli were analyzed and quantified using the conventional method. Eight volatile compounds including three kinds of alcohols, two kinds of organic acids and three kinds of ether were extracted by Liquid-Liquid Extraction with Dichloromethane. For the separation and quantification, Gas chromatography coupled with mass spectrometry (GC/MS) was used to analyze these compounds. Also, the separation efficiency of these compounds was performed and compared with GC column. The results of this study were as follows ; Eight kinds of volatile compounds were separated well on the HP-88 column better than on the DB-5MS column. Short chain fatty acids, butyric acid and isovaleric acid were not detected in two brands of makgeolli samples. The higher alcohols were detected in the range of 0.86~225.68 ${\mu}g/mL$ and ethyl esters were detected in the range of 0.86~225.68 ${\mu}g/mL$, respectively. There compounds are known to be associated with sensory and odorant.
