  • BACKGROUND/OBJECTIVES: This study aimed at evaluating the dietary intakes of Korean adolescents affected by food insecurity, in comparison with those who were food secure. SUBJECTS/METHODS: The study used one day 24-hour dietary recall data from the $6^{th}$ Korea National Health and Nutrition Examination Survey. The study subjects consisted of 1,453 adolescents of whom 695 were middle school-aged and 758 were high school-aged. Food security status was assessed using the 18-item questionnaire. Nutrient intake was evaluated in terms of nutrient density, insufficient intake, and excessive intake for selected nutrients, in addition to meeting the appropriate range for total energy intake and energy intakes from carbohydrate, sugar, protein, fat, and saturated fatty acids. Food intake was evaluated in terms of food group servings and dietary diversity score (DDS). RESULTS: The percentages of food insecurity were 11.1% for middle school-aged adolescents and 16.8% for high school-aged adolescents. Food insecure middle school-aged adolescents had higher intake of carbohydrate (P = 0.006) but lower intake of fat (P = 0.010) and saturated fatty acids (P = 0.005) than their food secure counterparts although the intake of both groups was in the recommended ranges. Nutrient intake among high school-aged adolescents was generally similar regardless of food security status. Both food secure and insecure adolescents showed insufficient intake of vitamin A, vitamin C, and calcium, and excessive sodium intake. They additionally had low prevalence of meeting appropriate intake ranges for energy, carbohydrate, and sugar. Food intake in terms of food group servings and DDS was also similar regardless of food security status among both age groups, with low intakes of foods from fruit and dairy groups. CONCLUSIONS: Except for a few nutrients among the middle school-aged adolescents, dietary intakes among Korean adolescents did not differ by food security status in this study.

  • Objective : To get a better understanding of obesity and etiological factors of obesity among school children. Methods : We have conducted a questionnaire survey of 4542 (2395male and 2147female) age from 7-15 in Shanghai School District to study their 24h nutrition intakes ; we have asked all our survey participating students to take a physical exam and body mass index measurement to determine the morbidity of obesity. Common statistic method was used in analyzing the data. Results : The result shows an over all morbidity (boys and girls) of $12.3\%$ among the students we have studied. Our research shows that boys have a higher rate of morbidity of obesity $17.1\%$ vs. $7.0\%$ for girls. The morbidity for boys starts under age 10, reaches the peak at age 10 ($24.3\%$), then declines after age 11 ; as for girls the morbidity starts at under age 9, reaches the peak at 9, and then declines after 10. Our study also indicates that the daily nutrition intake of protein, fat and carbohydrate by the students have satisfied Chinese Dietary Reference Intakes (DRIs), while the daily intakes of calcium, iron, zinc, and vitamin C are below the $80\%$ of the DRIs suggested value. For students who are obese, our study shows that their average daily intakes of calories and protein have reached $90\%$ of the suggested value by the RNI while the intakes of calcium, iron, and zinc are far below standards. Furthermore, our research shows that the obese students usually intake more calories, proteins and vitamin $B_1$, but less for iron and calcium compared to the normal students. Some other factors such as the education and occupation of the parents, especially the mother, the family history of obesity and the eating habits are important factors that should be closely watched. Conclusion : The morbidity of obesity among boys is higher than girls. Obesity is closely related to the family history, the diet habits and the life styles.

  • This study was done to investigate the nutrient intakes and plasma biochemcial indices in 68 female college students according to their skin types. Nutrient intakes were investigated by quick estimation. The plasma TG and total cholesterol levels were measured by the Spotchem sp-4410. The plasma levels of retinol and $\alpha$-tocopherol were measured by HPLC. In addition, the activities of antioxidant defense enzymes such as plasma glutathione peroxidase(GSH-Px) and glutathione reductase(GHS-Rd) were determined. All data were statistically analyzed by SAS PC package program. The results of this study were as follows : The average age, height, weight, BMI, systolic blood pressure and diastolic blood pressure ofthe subjects were $20.9{\pm}1.9yr, 160.7{\pm}4.3cm, 53.0{\pm}7.1kg, 20.5{\pm}2.4kg/m^2, 105.3{\pm}11.5mmHg and 70.6{\pm}7.7mmHg$, respectively. Ten students(14.7%) had normal skin type, 19 students(27.9%) had dry skin type, 11 students(16.2%) had oily skin type, 17 students(25.0%) had acne and 11 students(16.2%) had mixed skin type. The intakes of energy and fats in oily skin group were significantly higher(p<0.05) than those of the dry skin group, but vitamin C intake in the mixed skin group was significantly higher(p<0.05) than those of the dry skin group, but vitamin C intake in the mixed skin group was significantly lower(p<0.05) than that in other skin types. The intakes of other nutrients were not significantly different among skin types. The analysis of lipids showed that the plasma total-cholesterol level of mixed skin group was significantly lower(p<0.05) than that of the oily skin group, whereas other lipid levels were not significantly different. The other parameters such as retinol, $\alpha$-tocopherol, GSH-Px and GSH-Rd of plasma were not significantly different among skin types. Overall results indicate that dietary intake pattern may influence skin type and thereby some blood biochemical indices can be different by skin types.

  • The purpose of this study was to examine vegetable & fruit (V/F) intakes, beliefs and self-efficacy regarding V/F consumption, nutrition knowledge and eating behavior of elementary students. A survey was conducted to the 4th graders (n = 234) at two elementary schools in Guri, Kyunggi-do. About one-fourth of subjects were overweight or obese. Subjects had 4.2 servings of V/F a day, consuming 340.2 g of V/F. Girls consumed significantly more amounts of vegetables than boys (p < 0.05). Girls were more favorable regarding V/F consumption (p < 0.01), and believed more strongly on advantages of having V/F such as “good for skin” constipation prevention (p < 0.001) and cancer prevention (p < 0.05). Boys felt more strongly in disadvantages or barriers of eating V/F, including mother's cooking time constraints (p < 0.01), lack of past experience of eating V/F, and family members' disliking of V/F (p < 0.05). Girls felt more confident in eating V/F (p < 0.05) than boys; they also felt more confident in specific items of "eating fruits/salads instead of cookies/chips for snack" and "eating fruit juice/vegetable juice instead of soda"(p < 0.01). Subjects showed low level of nutrition knowledge, especially in items such as balanced meals, recommended servings of V/F and vitamin deficiency. Compared to boys, girls had more desirable eating behavior such as eating adequate amount of meals (p < 0.001), having a variety of foods, eating fruits daily, and having fatty foods less frequently (p < 0.05). Intakes of Ca and K were quite below the recommended level, while the intakes of protein, Na and vitamin A intake were much above the Dietary Reference Intakes (DRI) for 9-11 old children. Nutrient intakes expressed as %DRI was higher in girls for vitamin A (p < 0.01), energy and riboflavin (p < 0.05). High V/F consumption group (${\geq}5$ servings of V/F a day) compared to the counterparts showed higher self-efficacy and had better eating behaviors. Nutrition education for children should focus on increasing consumption of V/F, by helping them to increase self-efficacy for eating V/F and to recognize the benefits and reduce the barriers of eating V/F, especially in boys. It is also needed to provide nutrition information for balanced meals or increasing V/F consumption, and help the children to adopt desirable eating behavior.

  • As diverse physiological functions of taurine have been reported, taurine-containing health drinks and products are marketed worldwide for the treatment of various conditions such as improvements of liver, heart and circulatory functions or as an aid to athletic performance. Although animal studies have shown that taurine is fairly safe when supplemented in the diet for an extended period, the effective dose range of taurine for dietary supplements is in controversy. Reports on dietary taurine intakes have been sparse, and would serve as a guideline for determining an appropriate taurine dosage. The present study was aimed to estimate dietary intake level of taurine using the taurine content database of commonly used food stuffs established recently in our laboratory, and also to evaluate plasma concentration and urinary excretion of taurine in adolescents and adults residing in Seoul area. Dietary taurine intakes of the subjects were 219$\pm$16.9mg/day for 16-19 years old(n=123), 177$\pm$18.1mg/day for adults older than 20 years old(n=123). Male subjects(n=115) consumed 216$\pm$21.1mg of taurine/day, while female subjects(n=131) consumed 181$\pm$14.3mg of taurine/day(p<0.05). The level of dietary taurine intake was positively correlated with the levels of dietary intakes of energy, carbohydrate, total lipids, cholesterol, vitamin A, vitamin B$_1$, niacin, vitamin C, calcium, phosphorous, sodium and potassium at p<0.01, and with dietary intakes of iron and animal lipids at p<0.05, respectively. Plasma taurine concentration of subjects were 135$\pm$5.9$\mu$mol/L, which is considered to be within a normal range for healthy subjects. The subjects excreted 1158$\pm$72.7nmol/ of tarine mg creatinine in their urine, which is approximated as 150-170mg of taurine/24hr urine based on the assumption that 18mg creatinine/kg/day is excreted in the urine of healthy adults, and this would be about 80% of the daily taurine intake observed in the same subjects. Dietary taurine intake level was positively correlated with plasma taurine concentration, as well as with urinary taurine excretion corrected by creatinine excretion at p<0.05. The present study was the first report of taurine intake, and plasma concentration and urinary excretion of taurine in a Korean population so far, and these results would serve as an index for the future study evaluating taurine status in a diverse population within and outside Korea. • The purpose of this study was to investigate the effect of bone mineral density on life styles, dietary habits and nutrient intakes among the male college students. The subjects were divided into four groups; $Q_1$ (calcaneus BMD < 25 percentile, n = 117), $Q_2$ (25 percentile $\le$ calcaneus BMD < 50 percentile, n = 118), $Q_3$ (50 percentile $\le$ calcaneus BMD < 75 percentile, n = 118) $Q_4$ (calcaneus BMD $\ge$ 75 percentile, n = 116). And they were asked about general characteristics, life style, dietary habit, and nutrient intake using questionnaire and 24-hr recall method. They were measured the bone mineral density of calcaneus using quantitative ultrasound. The average age of the subjects of the study was 23.0 yews and the average height, weight, and BMI were 174.7 cm, 69.0 kg, $22.5 kg/m^2$. The bone mineral density in calcaneus was $0.43 g/cm^2$ in $Q_1,\;0.50 g/cm^2$ in $Q_2,\;0.56 g/cm^2$ in $Q_3$, and $0.69 g/cm^2$ in $Q_4$ (p < 0.001). The results showed that $Q_1$ tended to have irregular exercise compared to the other three groups. Compared with $Q_1$ and $Q_2$, the frequency of skipping breakfast was lower in $Q_3$ and $Q_4$. Also the results showed that the $Q_4$ was significantly more often to drink coffee compared with the other three groups (p < 0.01). The mean daily energy intake was 2210.6 kcal ($88.4\%$ of RDA). The intake of energy, vitamin $B_2$, calcium, and zinc did not meet the Korean RDA. Also the $Q_2$consumed significantly lower intakes of protein (p < 0.05) and plant protein (p < 0.05) compared to the $Q_3$ and $Q_4$. The $Q_1$ and $Q_2$ consumed significantly lower intakes of vitamin $B_2$ (p < 0.01) compared to the $Q_3$ and $Q_4$. In conclusion, male student in lower bone mineral density appeared to have unhealthy life styles and dietary habits in terms of irregular exercise, high frequency of skipping breakfast and lower intakes of protein, vitamin $B_2$ showing a strong need proper education on meal practices and exercise habits for the bone health.

  • The prevalence of alcoholism among elderly population is reported to be high in rural areas in Korea. Chronic abuse of alcohol can lead to the development of vitamin B deficiency through inadequate intake, altered absorption and metabolism, and increased excretion. The present study was conducted to assess vitamin B1 and B2 status in seventeen alcohol dependent subjects who do not exhibit any clinical neurological symptoms. Vitamin B1 and B2 nutritional states were determined enzymatically by measurement of transketolase and glutathione reductase activities in erythrocytes, respectively. And dietary intakes of nutrients were determined by a 24-hr recall method. The mean percent activation of erythrocyte transketolase was significantly higher in alcoholics than in alcoholics than in control (p<0.05). The proportion of subjects with a low and borderline status of vitamin B1, was significantly higher in alcoholics than in control (p<0.05). The mean percent activation of erythrocyte glutathione reductase was not different between alcoholics and control. And the proportion of subjects with low and borderline status of Vitamin B2, was higher in alcoholics than in control (p<0.1). Vitamin B1 and B2 status were significantly decreased in alcoholics who were smoking cigarettes compared to non-smoking and non-alcoholic subjects(p<0.05). Whether vitamin supplementation improves the vitamin status of alcohol dependent subjects remains to be researched.

  • Objectives: The purpose of this study was to identify the differences in nutrient intake according to using diuretics, symptom severity and degree of physical functioning in heart failure patients. Methods: A secondary data analysis was conducted by using baseline data of an intervention study for heart failure patients. In this study, 131 heart failure patients were included. Data were collected using medical records, NYHA (New York Heart Association functional classification) class, and 6-minute-walking test and 24-hour diet recall. Data were analyzed using descriptive statistics and Chi-square test by SPSS 21.0. Nutrient intake was assessed using CAN-pro 2.0. Results: Majority of the participants consumed total calorie less than Estimated Energy Requirement (EER) and consumed carbohydrates more than 65% of their total calorie intakes. 24.4% of the participants consumed fat more than 30% of their total calorie intakes and 23.7% consumed saturated fat more than 7% of their total calorie intakes. 100.0% of the participants consumed protein less than 7% of their total calorie intakes and 73.3% of the participants consumed more than recommended intakes of sodium. More than 90.0% of the participants consumed less than adequate intakes of potassium (90.1%) and Vitamin D (91.6%), respectively. 100% and 62.6% of the participants consumed less than Estimated Average Requirement (EAR) of magnesium and Vitamin $B_1$, respectively. Nutrient intakes in heart failure patients were different for potassium intake according to the usage of diuretics. The participants with symptom severity tended to intake protein less properly and the participants walking more than 300.0 m tended to intake sodium improperly high. Conclusions: The findings of this study indicated the need for screening nutrient intakes of heart failure patients. It is necessary to increase the intake of total calories and most nutrients and to restrict sodium intakes among heart failure patients.
