This study was done to investigate the health-related habits, dietary intakes and serum lipid levels in overweight and obese women by body mass index(BMI). Subjects were 137 pre-menopausal women aged 19 to 49 years. They were divided by 3 groups, overweight($23{\leqq}BMI<25$), obese($25{\leqq}BMI<30$) and morbidly obese($BMI{\geq}30$) according to their BMI. Body composition was determined by bioelectrical impedance analysis(BIA) method. Dietary intakes were examined by 3-day record method and nutrient intakes were analyzed by the Computer Aided Nutritional analysis program for professionals(CAN-pro 3.1). Serum lipid levels were measured using automatic biochemical analyzer(Selectra E). The average age, height weight and BMI of subjects were 31.7 years old, 159.3cm, 69.4kg, and $27.4kg/m^2$, respectively. Their average consumption of energy were 1712kca1 and 86.4% of estimated energy requirement(EER). Their mom ratio of carbohydrate:protein:fat was 55.2:14.6:30.2. Particularly, the fat consumption of subjects tended to be elevated with increasing BMI. There was no significant difference in nutrient intakes among 3 groups. But the mom intakes of Ca, Fe, vitamin C and Na of all the subjects were 70.1%, 81.2%, 75.7% of recommended intake(RI) and 258.9% of adequate intake(AI), respectively, The intakes of vegetables and seaweeds were significantly higher in morbidly obese group while the intake of fruits was higher in overweight group compared to the other groups. Serum lipid analysis showed that there were no significant differences in the levels of total cholesterol, triglyceride and LDL-cholesterol among the groups. But the serum HDL-cholesterol level of the overweight group was significantly higher than that of the other groups. LDL-/HDL-cholesterol ratio and AI index were significantly higher in the morbidly obese group compared to the other groups. In addition, The systolic blood pressure of morbidly obese group was significantly higher compared to the other groups. Overall data suggest that morbidly obese women have to more concern about reducing systolic blood pressure and nm lipid levels by decreasing their fat consumption and salt intakes as well as loosing body fat. In addition, all the subjects participated in this study have to be careful about their meals and health-related behaviors in order to prevent obesity-related chronic diseases.

Intramuscular fat (IMF) content in skeletal muscle including the longissimus dorsi muscle (LM), also known as marbling fat, is one of the most important factors determining beef quality in several countries including Korea, Japan, Australia, and the United States. Genetics and breed, management, and nutrition affect IMF deposition. Japanese Black cattle breed has the highest IMF content in the world, and Korean cattle (also called Hanwoo) the second highest. Here, we review results of research on genetic factors (breed and sex differences and heritability) that affect IMF deposition. Cattle management factors are also important for IMF deposition. Castration of bulls increases IMF deposition in most cattle breeds. The effects of several management factors, including weaning age, castration, slaughter weight and age, and environmental conditions on IMF deposition are also reviewed. Nutritional factors, including fat metabolism, digestion and absorption of feed, glucose/starch availability, and vitamin A, D, and C levels are important for IMF deposition. Manipulating IMF deposition through developmental programming via metabolic imprinting is a recently proposed nutritional method to change potential IMF deposition during the fetal and neonatal periods in rodents and domestic animals. Application of fetal nutritional programming to increase IMF deposition of progeny in later life is reviewed. The coordination of several factors affects IMF deposition. Thus, a combination of several strategies may be needed to manipulate IMF deposition, depending on the consumer's beef preference. In particular, stage-specific feeding programs with concentrate-based diets developed by Japan and Korea are described in this article.

Red ginseng prepared from fresh 6-year-old ginseng treated with colloidal gold nanoparticles was extracted using hot water to evaluate its total phenolic and flavonoid contents, antioxidant capacity, and neuroprotective effects. Water extract of red ginseng treated with gold nanoparticles (WERGGN) had total phenolic and total flavonoid contents of 212.2 mg gallic acid equivalents/$^{\circ}Bx$ and 3.5 mg catechin equivalents/$^{\circ}Bx$, respectively. The antioxidant capacities of WERGGN measured using ABTS, DPPH, and ORAC assays were 272.3, 141.2, and 868.4 mg vitamin C equivalents/$^{\circ}Bx$, respectively. The WERGGN showed protective effects on the viability of neuron-like PC-12 cells against oxidative stress induced by hydrogen peroxide in a dose-dependent manner, partly because of a reduction in intracellular oxidative stress. Acetylcholinesterase and butyrylcholinesterase, which degrade the neurotransmitter acetylcholine to terminate neurotransmission, were inhibited by treatment with WERGGN. These results suggest that WERGGN is useful as a functional material to decrease oxidative stress and neuronal damage.

Puer tea is a traditional beverage originating from Yunnam area of China. It supplies basic nutrients such as vitamin C. It has been well reported that daily drinking of Puer tea can help the digestion and ease the stomachache after food intake. Puer tea also contains various polyphenols which may exert antibacterial activity against Staphylococcus aureus and Listeria monocytogenes. Because of these functional effects on digestive system we suspected if Puer tea can display any dietary effect or decrease the obesity after long-term drinking. We employed 6-week old SD rats as experimental animal and treated them with extract of Puer tea in relation to the body weights. Rats were divided into 5 groups (NC, PC, E, E+P, E+P5). NC group was experimental control and rest of them are as follows: water only (PC), water with exercise (E), water with exercise and Puer tea extract (E+P), water with exercise and 5X extract of Puer tea (E+P5). Feeding was carried out every day for 5 weeks by oral administration. Reduction rate of body weights was highest in E group. Relative ratio of losing weight was as follows: PC group (100.78%), E group (95.57%), E+P group (94.53%) and E+P5 group (74.22%), respectively. Exercise was more helpful to control the body weight. The result strongly suggests that Puer tea is highly effective to control the body weight and could be used for pharmaceutical purpose to treat obesity without side effects.
The goal of this study was to isolate wild yeasts from reed fields in the Seocheon-gun county in Chungcheongnam-do, South Korea. Molecular analysis of the D1/D2 domain of the 26S rDNA of the yeasts isolated from soil samples was performed using Basic Local Alignment Search Tool (BLAST). In total, 20 yeast strains from 11 species were isolated from 20 different soil samples. Candida species were observed to be the most common yeasts. Of these 20 strains, Candida subhashii (6 strains), Candida tropicalis (3 strains), Candida boleticola MS008, and Lachancea thermotolerans (2 strains) were identified as alcohol-fermenting yeasts. Further, Bullera japonica YJ10-1, Candida subhashii J7-1, Kluyveromyces yarrowii YJ11-1, and Ustilago shanxiensis Y10-1 were newly recorded yeast strains in Korea, and therefore, their microbiological characteristics were investigated further. All of these unrecorded yeast strains had oval cells; only Candida subhashii J7-1 formed ascospores and pseudomycelia. Kluyveromyces yarrowii YJ11-1 grew in vitamin-free medium, and all of these strains, except Candida subhashii J7-1, grew in 5% NaCl-containing YPD broth.
Aging in humans is inexorable and inescapable. The progressive decrease of physiological capacity and the reduction of the ability to cope with environmental stresses lead to increased susceptibility and vulnerability to human disease. Recently, in the cosmetic industry, many researchers have paid considerable attention to delaying or improving the symptoms of skin aging. Since the early 1990`s, there have been various challenges in developing cosmeceutical products which have strong anti-aging effects, and this has been an important issue in the cosmetic industry. Meanwhile, development of anti-aging cosmetics supported by biochemical activities in the skin has been researched. Castanea crenata inner Shell solvent extracts were investigated for anti-wrinkle and whitening effects, in order to apply it as a functional ingredient for cosmetic products. For anti-wrinkle effect, elastase inhibition activity of Castanea crenata inner shell acetone extract (CA) was 51.0% at a concentration of 100 ug/ml. The collagenase inhibition activity of CA and Castanea crenata inner shell ethanol extract (CE) was 96.4%, 94.3% at a concentration of 50 ug/ml. The tyrosinase inhibitory effect, which is related to skin-whitening, was 47.2% and 45.8% in CA and CE at a concentration of 500 ug/ml. All these results suggest that Castanea crenata inner shell can be effectively used as a cosmeceutical ingredient for the prevention of wrinkles.
Piscicidal substance produced by Streptomyces sp. isolated from soil was toxic against various kinds of fish. After extraction with CH$Cl_3$ from the culture medium, the substance was purified by avicel column chromatography. In order to test toxicity, various kinds of fish were subjected to the acqueous solution of 100 us of the substance per liter of water. Generally, the substance was toxic to most fish, but Macropodus chinenes and Misgurnus mizolepis are resistant to the substance than Gobius similis and Pseudorasbora parva. The substance was stable at pH range, 3.0 to 7.0, but labile at alkaline pH, and to heat as well. Succinic dehydrogenase on most of tissue cell of Cyprinus carpio was inhibited by this substance strongly, but spinal cord was not inhibited. By addition of Cu and Pb salts to the culture medium, piscicidal substance producibility was activated.
Effects of Foliar spray of Kinetin on the growth and metabolism of mulberry tree was investigated in this studies. The results are summarized as follows; 1. Appropriate level of Kinetin for the optimal growth of mulberry tree was 100ppm. 2. In the non-fertilizer, N, P, K, and N+P+K treated plots supplemented with Kinetin, the growth of mulberry tree was generally promoted, especially in the roots, in comparison to non-supplemented plots. The effect was notably outstanding in the N, and N+P+K treated plots. 3. The mechanism by which the growth of root is stimulated was fundamentally attributed to the hypertrophy of unit cells. 4. The chlorophyll contents of the leaves in the Kinetin supplemented plots were higher than that of the non-supplemented, especially in the N, and N+P+K treated ones. 5. Likewise, total sugar contents of Kinetin supplemented plots were higher than that of the non-supplemented. Particularly the N+P+K treated plots showed higher level of sugar contents. In other plots, there were no significant differences in the level of sugar contents. 6. The activity of GOT and GPT was higher in the Kinetin supplemented plots, particularly in the N, and N+P+K treateated. 7. The contents of ascorbic acid were increased in plots with kinetin supplement in the order of N+P+K>potassium>Nitrogen>phosphorus$\geq$non-fertilizer. 8. Difference between Kinetin treatment and non-treatment was not recognized in the contents of inorganic and organic compounds.
In this study, silk gland powder of silkworm were investigated to see the possibility for baby powder cosmetics materials. To test possibility as a baby powder cosmetics, total content rate of amino acids, DPPH free radical scavenging assay, MTT assay, and clinical trial were done. According to the result of the analysis of the amino acids of silk gland powder, serin (26.77%) content was the highest and asparatic acid (15.47%), and glycine (9.62%) were followed. DPPH free radical scavenging activity of silk gland powder was lower than vitamin C by 82.3% and 97%, respectively, which is relatively good. Moisture effect were increased in silk gland powder compared to control cosmetics by 50%. Also, silk gland powder was classified as a practically non-irritating material based on the score 0.05 of primary irritation index. Thus, these results suggest that silk gland powder of silkworm may have beneficial properties as a material for baby powder cosmetics.

A cross-sectional study was performed to estimate the nutritional status of Korean male lead workers and to assess the relationship between calcium nutritional status and blood lead levels. A flood consumption survey was conducted by the 24-hr recall method with 118 lead workers and 63 non-lead exposed controls. Blood lead levels were analyzed from whole blood and serum calcium concentrations were also assessed. Results of dietary analysis showed Korean lead workers consumed relatively sufficient nutrients (more than 75% of RDA) except, calcium. Mean dietary calcium intake of lead workers was 502.2mg(72% of RDA) while that of the non-lead workers was estimated as 600.8mg(86% of RDA). Intakes of protein, iron, niacin and vitamin C of lead workers were significantly lower than those of non-lead workers. There was a wide range of blood lead levels(5.5 to 73.5$\mu\textrm{g}$/㎗) observed while mean blood lead level of lead workers was 30.9$\mu\textrm{g}$/㎗. However, 98% of lead workers showed normal serum ca1cium concentrations (range ; 8.9 to 10.7mg/㎗, mean ; 9.77mg/㎗) while 66% of lead workers were estimated to intake a dietary calcium lower than 75% of RDA. Mean blood lead levels of non-1ead workers were significantly lower(mean ; 5.1$\mu\textrm{g}$/㎗, p < 0.001) and the serum calcium concentration was significantly higher(mean ; 10.20mg/㎗, p < 0.001) than lead workers. Results of unadjusted correlation showed that serum calcium level and dietary calcium intake were negatively correlated with blood lead concentration. In a multiple regression of blood lead levels with variables known as affecting blood lead 1eve1 such as age, body mass index and occupational lead exposure, serum calcium was insignificant while dietary calcium intake showed statistically significant(p < 0.05) relation. Since calcium is a very important nutrient to reduce hazardous effects of lead, it should be strongly recommended that lead workers need to increase dietary calcium intake.
