Most fresh-cut agri-food products are less stable than unprocessed materials from which they are made. The objective of this study was the development of a quality control system for fresh-cut agri-food products. In this study, vitamin C, minerals, residual heavy metals, and pesticides of various fresh-cut agri-food products were analysed. Sensory evaluation revealed that overall acceptability scores were less than expected in most products since fresh-cut products are likely to cause browning and easily lose their freshness. Therefore, the postharvest technologies that can maintain the quality, freshness and appearance must be supplied. Although vitamin C and minerals are main nutrients that can be supplied from salads, the results showed that vitamin C and mineral contents were very small and extremely small compared with the values from the food composition tables. It is possible that vitamin C and most minerals that are easily destroyed were lost through minimal processes like peeling and cutting. In safety side, the remaining heavy metal contents of fresh-cut agri-food were investigated and the results showed that copper and lead existed in some products because only cadmium in agricultural produce is controlled by the minimum standard of heavy metal contents in Korea. No residual pesticides were detected in all products.
Twenty four Hanwoo steers(average body weight=550.4±42.8kg) were used in the experiment to determine the effects of supplementing coated vitamin C+E with cottonseed on meat quality, meat color and carcass grade in Hanwoo steers fed brewers grain and cracked corn-based fermented feedstuff. Steers were randomly assigned to feeding groups of fermented feedstuff without any supplements(T1) and fermented feedstuff supplemented with coated vitamin C+E and cottonseed(T2). Ether extract content of longissimus dorsi was higher in T2 than in T1(p<0.05). Yellowness and hue-angle among surface colors of longissimus dorsi was lower(p<0.05) in T2 than in T1 but lightness was higher(p<0.05) in T2 than in T1. Ratio of yield grade ‘A’ was higher from T2 group than from T1 group. Marbling score was higher in T2 than in T1(p<0.05). Present results indicate that supplementation of coated vitamin C+E and cottonseed to brewers grain and cracked corn-based fermented feedstuff has positive effects on ether extract content, color, marbling score of longissimus dorsi in Hanwoo steers.

In our study, oriental melon (Cucumis melo L. var makuwa Makino) was harvested in Seongju at major harvest time from June to August with the intervals of one month in 2009. In order to elucidate the effect of meteorological condition of harvest time on fruit quality and water-soluble vitamin contents of oriental melon, quality attributes including weight, hardness, and sugar were examined and water-soluble vitamin contents such as folic acid and vitamin C were analyzed. Fruit quality factors and water-soluble vitamin contents were the highest in June when rainfall was low and solar radiation was high. Meanwhile, both of them were the lowest in July when it was the worst weather condition for cultivation of oriental melon. After then, the contents of folic acid and vitamin C increased when the rainfall had decreased in Aug. The contents of both vitamins were much high in placenta than peel and flesh. In conclusion, the meteorological condition of the summer season by torrential rains and lack of solar radiation influence water-soluble vitamin contents, especially folic acid contents of oriental melon as well as quality attributes such as hardness and sugar.
The purpose of this study is to discribe the nutritional status between female collegians on normal diet and lacto-ovo-vegetarian in the child bearing age. Physical examination, hematological parameters(hemoglobin, hematocrit, serum iron, serum albumin)and nutrient intake by dietary survey were carried out on each subject. Serum zinc, iron and copper concentrations were also determined. The results are summarized as follows : 1) Students on normal diet had higher values than lacto-ovo-vegetarian students in the height, weight, and skinfold thickness. 2) Hemoglobin, hematocrit, serum albumin values of the two groups showed no difference. But students on normal diet were higher in the serum irom and copper values than lacto-ovo-vegetarian students. 3) Serum zinc values differed significantly between the vegetarians and non vegetarians (Vegetarians') > non vegetarians') 4) On the nutrient intake of two groups, students on normal diet were higher than lacto-ovo-vegetarian students in the protein but students on normal diet were lower than lacto-ovo-vegetarian students in iron, vitamin A, $vitamin\;B_{2}$, vitamin C and crude fiber. 5) Intakes of calories and protein in the two groups were lower than RDA but Ca, vitamin A, $vitamin\;B_{1}$, $vitamin\;B_{2}$ niacin and vitamin C intakes of the two groups was higher than RDA. 6) Amounts of iron absorbed showed no difference in the two groups. But iron absorption rate was higher in students on normal diet than lacto-ovo-vegetarian students.
This study was conducted to find out the change of infernal quality, such as vitamin C and nitrate contents in some leaf vegetables grown hydropoincally in different nutrient conditions. Pak-choi (Brassica camperistis L. spp. chinesis Jusl.), chungchima (Lactuca sativa L. var. crispa cv. Chungchima) and romaine (Lactuca sativa L. var. longifolia Lam.) lettuces were cultivated for 2 weeks in 4 different nutrient solutions, such as tap water; no-nutrient, added $NH_4$, discarded $NO_3$, and supplied Yamazaki' solution for lettuce as a control. The growth of leaf vegetables was not different among nutrient solution treatments except tap water. The nitrate content showed the highest in control, and followed by $+NH_4$ treatment, $-NO_3$ and tap water treatment, regardless of kind of vegetables. The vitamin C content in 3 different vegetables showed the opposite result against nitrate content so that the treatment that showing the highest vitamin C content was tap water in romaine and chungchima lettuces, and $-NO_3$ treatment in pak-choi. The vitamin C and the nitrate content showed high correlations; $r=-0.614^*$ in pak-choi, $-0.651^*$ in romaine lettuce, and $-0.804^{**}$ in chungchima lettuce.
The present study examined the effects of dietary PUFA and vitamin E supplementation(2,000 I.U./Kg diet) on vitamin E levels of serum, liver and brain in chicks aged one week (younger chick) and four weeks(older chick). 1) Younger chicks showed more sensitive response to vitamin E supplementation in the diet than older chicks in their serum levels, but not in liver levels. 2) Chicks fed excess vitamin E showed significantly higher levels of vitamin E in both serum and liver than unsupplemented groups. 3) PUFA diet lowered serum and liver vitamin E levels especially for vitamin E supplemented groups except for older chick liver at 3 weeks of the experimental period. 4) Vitamin E levels of brain were relatively lower than those of serum and liver and showed little change according either to the dietary PUFA or to vitamin E supplementation.
Atopic dermatitis (AD) has become a serious epidemic in Korean children. We aimed to investigate the association between vitamin C, E and other nutrients, and serum total IgE/specific IgE levels in children with AD. A total of 119 children (0-24 mo) diagnosed with AD were recruited for this cross-sectional study from a medical center in Seoul. A 24 h recall was used to assess dietary intakes. Serum total and six food-allergen specific IgE levels were measured by CAP-FEIA. Serum vitamin E was also measured but only in 25 out of the total 119 participants. Multiple linear regression analysis was performed to estimate the coefficients between serum IgE levels and dietary intake as well as serum vitamin E. Serum vitamin E levels showed a significantly inverse association with serum total IgE and all specific IgE levels (P < 0.05). Fat intake was inversely related with specific-IgEs for egg whites, milk, buck wheat, soy, and peanuts (P < 0.05). Positive associations were found between carbohydrate (CHO) intake and total IgE and specific IgEs to egg whites, milk, soy, and peanuts (P < 0.05). Vitamin C, E and n-3/n-6 fatty acids were not related with serum total IgE and specific IgE levels except for the association between buck wheat and vitamin E. In addition, there were no significant differences between males and females in dietary intake and serum IgE levels by student's t-test. Although dietary vitamin E showed no association with serum IgE levels, serum vitamin E drew a significant inverse relationship with serum IgE levels. The evidence seems to suggest that vitamin E may possibly lower total and specific-IgEs in children with AD, and that it is important to maintain a relatively high serum vitamin E level in children with AD.

Collagen is the major matrix protein in dermis and consists of proline and lysine, which are hydroxylated by prolyl hydroxylase (PH) and lysyl hydroxylase (LH) with cofactors such as vitamin C, oxygen, iron (Fe$^{2+}$), ketoglutarate and silicon. The collagen degradation is regulated by matrix metalloproteinase-1 (MMP-1), of which is the major collagen-degrading proteinase whereas tissue inhibitors of metalloproteinase-1 (TIMP-1) bind to MMP-1 thereby inhibiting MMP-1 activity. In this study, we investigated the effects of vitamin C, silicon and iron on mRNA, protein expressions of PH, LH, MMP-1 and TIMP-1. The physiological concentrations of vitamin C (0-100 $\mu$M), silicon (0-50 $\mu$M) and iron (Fe$^{2+}$:0-50 $\mu$M) were treated to human dermal fibroblast cells (HS27 cells) for 3 or 5days. The expression level of mRNA and protein was increased in not only PH but also LH when cells were incubated with vitamin C. A similar increase in LH mRNA or protein expression occurred when cells were incubated with silicon. Our results suggest that treatment of vitamin C and silicon increased mRNA and protein expression of PH and LH in human dermal fibroblast.

Red pepper (Capsicum annuum L.) powder is widely used as a spice and flavor ingredient in the food industry. It is well known that during the drying process red pepper undergoes physico-chemical and nutritional changes. The objective of this study was to investigate the quality of red pepper powder according to drying method. Red pepper was dried by far-infrared drying, hot air drying, and polyethylene (PE) house drying. Average moisture content of dried red pepper powder from the three different drying methods was $12.5{\pm}0.3%$. The pH level slightly increased from 4.93 before drying to 5.00~5.54 after drying. Contents of capsaicinoids were highest (224.40 mg/100 g) in the PE house drying method and lowest (191.87 mg/100 g) in the hot air drying ($70^{\circ}C$) method. However, capsaicinoid contents were not significantly different among the various drying methods. Vitamin C content decreased as temperature increased. Drying conditions, particularly temperature, lead to loss of vitamin C in red pepper, resulting in quality degradation. Taken together, these results demonstrate that the content of vitamin C, one of the major factors affecting pepper powder quality, was affected by drying temperature.
This study was performed to investigate the in vitro and in vivo anticancer effects of persimmon leaf extracts on human gastric cancer cells. In vitro anticancer effects of persimmon leaf extracts (water extract at 8$0^{\circ}C$ for 3 hours, water extract at room temperature for 48 hours, 50% ethanol extract at 8$0^{\circ}C$ for 3 hours, 50% ethanol extract at room temperature for 48 hours, 75% ethanol extract at 8$0^{\circ}C$ for 3 hours and 75% ethanol extract at room temperature for 48 hours) on SNU16 (Korean gastric cancer cell) were investigated by MTT assay. Persimmon leaf extracts exhibited strong in vitro anticancer effects. We found that the higher the ethanol content of the solvent, the stronger the in vitro anticancer effects. Extraction yields, contents of flavonoids, vitamin A, vitamin C and vitamin E were measured. We found that the higher the ethanol content of the solvent, the higher the extraction yields and the contents of flavonoids, vitamin A and vitamin E. Among persimmon leaf extracts, 75% ethanol 8$0^{\circ}C$ extract showed the highest extraction yield, the highest contents of flavonoids, vitamin A and vitamin E and exhibitied the strongest in vitro anticancer effect on SNU16. Therefore, 75% ethanol 8$0^{\circ}C$ extract was chosen as the material to investigate in vivo anticancer effects. In vivo anticancer effect of persimmon leaf 75% ethanol 8$0^{\circ}C$ extract was investigated in SNU16 transplanted nude mice. Twenty five female nude mice (BALB/c) were blocked into five groups according to body weight and raised for 4 weeks with diets containing 4% (w/w), 8% (w/w) persimmon leaf 75% ethanol 8$0^{\circ}C$ extract, with IT (intratumoral) injection treatment with 1.65 mg/100 $\mu$1, 3.3 mg/100 $\mu$1 concentration every other day 3 weeks after SNU16 was transplanted. Persimmon 75% ethanol 8$0^{\circ}C$ extract significantly lowered tumor weight and tumor volume in SNU16 transplanted nude mice. Tumor weight and tumor volume in all experimental groups were significantly lower than those in the control group. Helper T cell (CD4) levels of mice injected with 3.3 mg/100 $\mu$1 extract significantly increased. Cytotoxic T cell (CD8) levels in all experimental groups significantly increased and helper/cytotoxic T cell ratios in all experimental groups significantly decreased. Natural killer cell and MHC class II molecule in all experimental groups significantly increased. In conclusion, persimmon leaf 75% ethanol 8$0^{\circ}C$ extract exhibited strong in vitro and in vivo anticancer effects against SNU16 cells and it increased cytotoxic T cell, natural killer cell and MHC classII molecule in experimental groups in SNU16 transplanted nude mice.
