1차 발효 후 냉동생지를 이용한 빵의 특성에 미치는 비타민 C의 영향 (The Effect of Vitamin C on Properties of the Breads Made by Dough Frozen after 1st Fermentation)

  • 반죽을 중종법으로 제조하여 1차발효 후 냉동생지 제조시 비타민 C의 양을 다르게 첨가하여 효모의 생균수, 제품의 부피, 비용적, 조직감 및 관능검사 등에 미치는 영향을 조사하였다. 효모의 생균수는 비타민 C를 100 ppm 첨가한 것에서 높은 생존율을 나타냈다. 비용적과 부피에서는 비타민 C를 150 ppm 첨가한 것에서 가장 높은 값을 나타냈다. 제품의 조직감에 미치는 영향은 비타민 C의 첨가량이 많을수록 높은 값을 모여 첨가량이 많을수록 부드럽지 못함을 나타냈다. 관능검사에서는 비타민 C를 100 ppm 첨가한 것이 높은 점수를 얻었다.

  • 미세과육 함유 사과주스의 비타민 C 첨가에 따른 저장 중의 품질변화를 조사하였다. 비타민 C 첨가 유무에 따라 저장 기간 동안 비타민 C 함량의 차이가 크게 나타났다. 비타민 C 첨가농도에 따른 당도와 산도의 차이는 크게 나타나지 않았으며, pH는 비타민 C 무첨가 구간 4.40에 비해 첨가구간에서 pH 4.30~4.29 수준으로 낮게 나타났다. 색상의 변화는 비타민 C 첨가량이 증가하고 저장기간이 길어질수록 L값과 b값이 감소하였으며, 관능평가에서 taste, 전반적인 기호도에서 비타민 C 0.02%(w/v) 첨가구, 무첨가구 순으로 높게 나타났으며, 이 외에 비타민 C 0.02%(w/v) 첨가구는 color에서, 무첨가구는 flavor에서 가장 높은 기호도를 나타내었다. 저장기간 중 비타민 C 감소의 변화는 저장온도 $4^{\circ}C$에서 저장기간이 길어질수록 비타민 C 함량의 감소가 적게 나타나 저장온도와 비타민 C 함량은 저장기간이 길어질수록 효과가 큰 것으로 나타났다. ASC(alcohol soluble color)의 변화는 비타민 C 첨가량이 많을수록 낮게 나타났으며, $37^{\circ}C$에 비해 $4^{\circ}C$ 저장구간에서 ASC가 낮게 나타나는 경향을 보였다. 이상의 결과, 미세과육 함유 사과주스는 비타민 C를 0.02% 첨가하여 $4^{\circ}C$에서 저장하는 것이 가장 효과적으로 나타났다.

Antioxidant effect of Vitamin-C / alginate gel-entrapped liposomes for resistance of DHA autoxidation

  • DHA의 산화를 방지하기 위하여 vitamin C/alginate 리포솜에 병합시켰다. TEM을 통하여 제조된 AVDLs를 확인할 수 있었고, TLC를 통하여 각각의 AVDLs는 초기 첨가량의 15 ${\sim}$ 18 % DHA를 함유하고 있음을 확인하였다. TBARS assay에 의해$40^{\circ}C$에서 AVDLs에 포함된 DHA의 산화정도를 분석한 결과 vitamin C를 포함한 리포솜이 DHA의 산화를 억제하는 것으로 확인되었으며 0.2 % vitamin C를 포함한 AVDLs가 항산화 효과가 가장 큼을 알 수 있었다. AVDLs는 실험에서와 같은 산화조건에서 DHA의 산화를 초기 3일까지는 억제시킴을 알 수있었다.

비타민 C와 산화 게르마늄 및 셀레늄이 새싹에 미치는 영향 (Effect of Vitamin C, Germanium Oxide and Selenium Treatment on the during Cultivation of Sprouts)

  • In this study, for development of functional sprouts, we have investigated the change of antioxidant activity and quantity of vitamin C, germanium and selenium according to the addition of vitamin C, germanium oxide and selenium oxide on the during cultivation of various sprouts. We were cultivated the sprouts using water solution added vitamin C, germanium oxide and selenium oxide on the system of cultivation instrument. Analysis of quantity of vitamin C on control group and treatment group were conducted by HPLC. Quantity of germanium and selenium were analyzed by ICP-MS(Inductively Coupled Plasma-Mass Spectrometer), and antioxidant activities were checked by DPPH method. As a result, quantity of vitamin C, germanium and selenium on the treatment groups have increased tendency compared to the control group. And antioxidant activity of treatment groups showed increasing tendency compared to the control group.

  • PC 리포솜에 최대로 포함되는 DHA의 양은 PC : DHA의 비율이 1 : 0.8인 것으로 나타났으며 이때 적재 효율은 약 91 %였고 AVDL의 경우에는 약 17 %이었다. DHA의 산화를 방지하기 위하여 vitamin C/alginate 리포솜에 병합시킬 수 있었고 TEM을 통하여 제조된 다양한 리포솜의 형태와 크기를 확인할 수 있었다. TBARS 분석법에 의해 $40^{\circ}C$에서 DHA가 포함된 PC 리포솜과 AVDL에 포함된 DHA의 산화정도를 분석하였고, 결과적으로 자연 상태에서 리포솜에 포함된 DHA는 밀도가 높아질수록 산화에 안정하며, vitamin C를 포함한 alginate gel 리포솜은 DHA의 산화를 크게 억제한다는 것을 확인하였다. AVDL은 실험에서와 같은 산화조건에서 DHA의 산화를 초기 3일까지는 거의 완전히 억제하였고 그 이후에도 항산화 효과가 크다는 것을 확인하였다.

  • A chemiluminescent method with gold nanoparticles for determination of vitamin C has been presented. Gold nanoparticles highly increased chemiluminescence intensity of lumimol-H2O2 system by its catalytic effect. The gold nanoparticles enhanced chemiluminescent method is applicable for the determination of an antioxidant such as vitamin C. When vitamin C was introduced to the lumimol system with gold nanoparticles, chemiluminescence intensity was reduced with the concentration of the added vitamin C. Low concentrated vitamin C solutions in the range of 1×10-3-1×10-9 M were produced reduced chemiluminescence intensity of lumimol-H2O2 with gold nanoparticles system.

  • This presentation reviewed the dietary vitamin C requirements in main marine finfish culture in Korea. In experiment I, an II-week feeding trial was conducted to study the effects of the different levels of dietary vitamin C on growth, tissue ascorbic acid concentrations and histopathological changes in parrot fish. Casein and gelatin based diets were formulated to contain 0, 60, 120, 240, 480 and 2000mg L-ascorbic acid (AA)kg diets on Ah equivalent basis in the form of L-ascorbyl-2-monophosphate (AMP), 60 and 240 mg AA/kg diet as L-ascorbic acid. Broken line analysis of weight gain indicated that the dietary vitamin C requirement of parrot fish is l18$\pm$12 mg AA/kg diet in the form of L-ascorbyl-2-monophosphate for maximum growth. In experiment II, a 12-week experiment was conducted to compare L-ascorbyl-2-monophosphate-Ca (AMP-Ca) with L-ascorbyl-2-monophosphate-Na/Ca (AMP-Na/Ca) for supplying the dietary vitamin C for juvenile Korean rockfish Sebastes schlegeli. Fish were fed one of 11 semi-purified diets containing equivalent of 0, 50, 100, 200, 400, and 800 mg ascorbic acid (AA)kg diet in the form of AMP-Ca or AMP-Na/Ca for 12 weeks. Broken line analysis of weight gain indicated that the dietary vitamin C requirement of Korean rockfish is 100 mg AA/kg diet in the form of AMP-Na/Ca, and 117 nag AA/kg diet in the form of AMP-Ca. In experiment III, a 12-week experiment was conducted to study the effects of different dietary levels of vitamin C, L-ascorbyl-2-polyphosphate (ASPP), on growth and tissue vitamin C concentrations in juvenile olive flounder. Fish were fed one of six semi-purified diets containing an equivalent of 0, 25, 50, 75, 150, or 1500 mg ascorbic acid (AA) kg 1 diet in the form of ASPP for 12 weeks. Based on broken line analyses for WG and PER, the optimum dietary levels of vitamin C were 91 and 93 mg AA/kg diet, respectively.

Helicobacter pylori 감염과 비타민 C: 과거, 현재, 미래 (Helicobacter pylori Infection and Vitamin C: Past, Present and Future Perspectives)

  • Helicobacter pylori is the causative agent of chronic gastritis and has a role in the pathogenesis of peptic ulcer diseases, and gastric cancer. There have been reports suggesting a close link between these gastroduodenal disorders and a state of vitamin C deficiency. In this paper, the past, present and future perspectives on H. pylori infection and vitamin C will be discussed under the following view points. Since the ecological niche of H. pylori is the mucus layer and intercellular junctions of the gastric epithelium, the various kinds of host inflammatory cells motivated by the local and systemic immune responses cannot eliminate the microorganisms. When the invading foreign body is not removed, despite full activation of defense mechanisms, adverse consequences of the immune responses develop on the host gastric mucosa. The reasons for the body vitamin C depletion could be explained as follows; 1) the increased vitamin C consumption by increased oxygen free radical production through the prolonged hypersensitivity reactions in the gastric mucosa, 2) the increased vitamin C oxidation by the nitrite which is formed from nitrate reduction by the intragastric bacteria proliferated in the hypochlorhydric gastric cavity, 3) the strong ${\gamma}$-glutamyltranspeptidase activity of H. pylori which depletes the glutathiones in gastric mucosa. Depletion of glutathiones in the stomach favors irreversible oxidative destruction of ascorbic acid. Both persistent inflammatory burdens in the stomach by H. pylori and resultant vitamin C depletions synergistically and uninhibitedly might aggravate the hypothetical sequence of gastric carcinogenesis: atrophic gastritis${\rightarrow}$intestinal metaplasia${\rightarrow}$dysplasia${\rightarrow}$gastric adenocarcinoma. High intake of vitamin C could reverse the hypothetical sequence of the gastric carcinogenesis via direct and indirect effects on H. pylori and host-parasite relationships.

스트렙토조토신으로 유도된 신경세포사멸에서 비타민 C의 보호 기전 연구 (Study on the Protective Mechanism of Vitamin C in the SH-SY5Y Cell Death Induced by the Streptozotocin)

  • In this study, we analyzed the protective effects of the vitamin C in the streptozotocin (STZ)-induced apoptosis using the SH-SY5Y, a neuroblastoma cell line. The cells were pretreated with the vitamin C ($100{\mu}g$) for 30 min, followed by the 24-hr treatment with the 2.5-mM STZ. The cell-viability assay using the Cell Counting Kit (CCK)-8 revealed the cell-survival rate increased by 15% following the vitamin-C pretreatment compared to the STZ-only treatment. Moreover, we conducted the western-blot analysis to determine the protective effect of the vitamin C regarding the apoptosis. Compared to those in the STZ-only-treatment group, the p-ERK and Bcl-2 expressions increased in the vitamin-C-pretreatment group, whereas the p-JNK and Bax expressions decreased. The vitamin-C pretreatment increased the expression of the SOD-1, an antioxidant enzyme, by more than 30%, indicating its protective role in the STZ-induced oxidative stress. Also, we found both the intrinsic- and extrinsic-pathway mechanisms of the STZ-induced apoptosis. The results of this study $s{\mu}ggest$ vitamin C may help prevent the neurodegenerative diseases.

한국 성인의 비타민C 섭취와 비만 유병률의 연관성 - 2016-2017년 국민건강영양조사 자료를 이용하여 - (Association between Vitamin C and the Prevalence of Obesity among Korean Adults - The Korea National Health and Nutrition Examination Survey 2016-2017 -)

  • This study investigates the relationship between vitamin C intake and obesity prevalence among Korean adults. Based on data of the Korean National Health and Nutrition Examination Survey (2016-2017), a total of 1,356 participants were included in this analysis. Increasing the dietary vitamin C intake resulted in a significantly decreased occurrence of BMI obesity prevalence (p for trend=0.0194) and WC obesity prevalence (p for trend=0.0452). Moreover, increasing the dietary vitamin C intake of Korean adults having a high frequency of eating breakfast resulted in significantly decreased BMI obesity prevalence (p for trend=0.0406) and WC obesity prevalence (p for trend=0.0432). Among the Korean adults who ate out frequently, decreased BMI obesity prevalence was determined with increased intakes of dietary vitamin C (p for trend=0.0193) and total vitamin C (food and dietary supplements) (p for trend=0.0429), whereas significant decrease in WC obesity prevalence was observed with increased dietary vitamin C intake (p for trend=0.0484). Our results provide conclusive evidence that consumption of dietary vitamin C is associated with obesity prevalence in Korean adults, according to their habits of eating breakfast and frequency of eating out.
