매생이 분말을 이용하여 제조한 만두피의 품질특성 (Quality Characteristics of Dumpling Shell made with Capsosiphon fulvescens Powder)

  • The purpose of this study was to investigate the effects of Capsosiphon fulvescens powder on the functional and sensory characteristics of dumpling shell. Various dumpling shell samples were prepared with wheat flour along with the addition of different amounts of Capsosiphon fulvescens powder, and then instrumental characteristics and sensory evaluations were investigated. According to amylograph data, the composite Capsosiphon fulvescens powder-wheat flour samples had increased gelatinization temperatures with increasing Capsosiphon fulvescens powder content; whereas initial viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15minutes, and maximum viscosity were reduced. In terms of Hunter's color values, L, a and b values decreased with increasing Capsosiphon fulvescens powder content. Besides cooked weight, cooked volume and turbidity of dumpling shell increased as the addition level of Capsosiphon fulvescens powder increase. In terms of textural characteristics, addition of Capsosiphon fulvescens powder increased springiness, chewiness, brittleness, pringiness and adhesiveness. Based on sensory evaluations, the overall preference of dumpling shell with 3% added Capsosiphon fulvescens powder, was more effective than control.

청동호박과 단호박을 첨가한 크림수프의 품질 특성 (Quality Properties of Cream Soup Added with Chungdong Pumpkin and Sweet Pumpkin)

  • 본 연구는 각종 영양적, 식품 기능적 특성이 우수한 청동호박과 단호박을 이용한 크림수프를 제조하기 위해 재료의 첨가량에 따른 품질 특성을 비교하여 최적의 크림수프의 제조 조건을 산출하기 위한 것이다. 그 결과 호박을 이용한 크림수프의 제조 시 주재료인 호박과 화이트 루의 첨가량에 따라 품질 특성에 있어 전반적인 유의성이 평가되어, 호박의 첨가량은 색상과 외관에 대한 선호도에 영향을 주었고, 화이트 루는 점도와 맛에 영향을 준 것으로 평가되었다. 호박은 첨가량이 증가할수록 명도는 현저하게 감소하였고 적색도와 황색도는 증가하였다. 점도, 색상, 외관, 전체 선호도에서 유의적인 차이를 나타냈고 첨가량 38%의 경우에 가장 높은 선호도를 나타내었다. 루 첨가량이 증가할수록 명도는 증가하고 적색도와 황색도는 소폭으로 감소하였다. 색상, 맛, 외관, 전체 선호도에서 유의적인 차이를 나타냈고 첨가량 1.5%인 경우에 가장 높은 선호도를 나타내었다. 닭 육수의 첨가량이 증가하고 우유의 첨가량이 감소할수록 명도는 전반적으로 증가하고 적색도와 황색도는 감소하였다. 점도, 색상, 맛, 외관, 전체 선호도에서 유의적인 차이를 나타냈고 닭 육수 37.5% : 우유 12.5%의 첨가가 가장 높은 선호도를 나타내었다. 점도 특성으로 호박 첨가량이 증가함에 따라 점도가 큰 폭으로 증가하였으며 닭 육수도 점도 증가의 요인이 되었다. 또한 화이트 루의 첨가량에 비례하여 점도가 전반적으로 증가하였다. 온도 증가에 따라 점도도 전반적으로 증가하여 온도차에 따라 큰 변화를 나타내었다. 단호박을 첨가하여 제조한 크림수프의 최적 품질 조건으로 호박 첨가량은 단호박과 청동호박을 1 : 1의 비율로 하여 37.5% 첨가하고, 닭 육수는 호박과 동량을 첨가한 후 닭 육수의 30%에 해당하는 양의 우유를 부가했을 때 색도, 점도와 전반적인 기호성이 높았다. 또한 화이트 루는 1.5% 첨가 시 최적 품질의 크림수프 제조를 위한 배합비율로 산출되었다.

유색미가루와 현미가루를 첨가한 국수제조 및 품질특성 (Quality Characteristics and Preparation of Noodles from Brown Rice Flour and Colored Rice Flour)

  • 단백질 함유량은 유색미가루가 밀가루보다 적지만 현미가루보다는 함유량이 많았고, 지방함량과 회분함량에서는 현미와 비슷하였다. 현미가루는 유색미가루보다 peak viscosity, holding viscosity, breakdown viscosity, final viscosity에서 높았을 뿐만 아니라 setback viscosity에서도 높았지만 유색미가루는 호화점도에서 현미가루 뿐만 아니라 밀가루보다도 월등히 낮았다. 현미가루와 흑미가루는 5.3~6.4%의 총 식이섬유를 함유하였으나 수용성 식이섬유의 함량은 낮은 반면 주로 불용성 식이섬유를 함유하였다. 건조면과 조리면의 cutting force는 현미가루와 유색미가루의 혼합비율을 높이면 감소하였고 조리면의 경우에는 찰흑미가루 10%와 화성현미가루 20%를 첨가했을 때 밀가루 100%로 만든 대조군과 큰 차이가 없었다. 국수의 기능성을 높이고 기호도를 향상시키기 위하여 현미가루와 유색미가루를 10~30%를 첨가하여 관능검사를 실험한 결과 현미가루 20%와 찰흑미가루 20%를 첨가한 국수가 가장 높은 관능적 평가를 받았다.

연근분말을 첨가한 국수의 품질특성 (Quality Characteristics of Dried Noodle Made with Lotus Root Powder)

  • The principal objective of this study was to evaluate the quality characteristics of dried noodles when different concentrations of Lotus root powder were added to the wheat flour. The cooking quality, mechanical textural properties, and viscosity were measured, and a sensory evaluation was conducted with the prepared noodles. The gelatinization points of the composite Lotus root powder-wheat flours were shown to have increased and the viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity values of those samples were reduced, as the Lotus root powder content was increased as measured via amylography. As increasing amounts of Lotus root powder were added, the L and b values were reduced, and the color values, weight, and volume of the cooked noodles increased, as did the turbidity of the soup. With regard to the textural characteristics, the Lotus root powder additive increased hardness and reduced adhesiveness, cohesiveness, and springiness. Overall, the noodles prepared with 15% Lotus root powder were preferred more than the other noodles, according to the results of our sensory evaluation.

예방적 유지보수를 위한 소수성 저점도 AP 표면처리재 개발 (The Development of the Hydrophobic - Low Viscosity Filling Material for the Surface Treatment for Pavement Preventive Maintenance)

  • PURPOSES : Surface treatment is a favorable method in the pavement preventive maintenance. This study (Part I) aimed to develop the low viscosity filling material for waterproof characteristics and high penetrable and weather resistance, and a series of companion study (Part II) presents the coating characteristics and performance analysis using field and lab tests. METHODS : Hydrophobic characteristics of the advanced surface treatment material are observed and measured the filling depth and the permeability for sand and asphalt pavement specimen using the water absorption test and permeability test, X-RAY CT test. Color difference for the weather resistance using ultraviolet ray accelerated weathering test is compared with asphalt pavement specimens. RESULTS : The developed material shows the decreased water absorption and increased impermeable effect because of the hydrophobic characteristics. It is found that the filling depth is about 6mm and weather resistance is better than asphalt pavement specimen. CONCLUSIONS : The advanced hydrophobic - low viscosity filling treatment material is developed in this study (Part I) to improve the waterproof characteristics and high filling capacity and weather resistance for the pavement preventive maintenance.

마가루를 첨가한 국수의 품질 특성 (Quality Characteristics of Dried Noodle Made with Dioscorea japonica Flour)

  • This study evaluated the quality characteristics of dried noodles made of wheat flour with different concentrations of Dioscorea japonica flour. Cooking quality, mechanical texture properties and viscosity were measured, and sensory evaluation was performed with the prepared noodles. Water binding capacity, solubility and swelling power of the composite Dioscorea japonica flour-wheat flours were higher than those of pure wheat flour. Gelatinization points of the composite Dioscorea japonica flour-wheat flours were increased and initial viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes and maximum viscosity of these composites were decreased, with increasing Dioscorea japonica flour content, as measured by amylograph. With increasing Dioscorea japonica flour content, L and b values were decreased, but a value was increased, for the color values, while weight and volume of the cooked noodles and turbidity of the soup were increased. For the textural characteristics, the addition of Dioscorea japonica flour increased the hardness and decreased the adhesiveness, cohesiveness and springiness. Overall, the noodles made with 10% Dioscorea japonica flour were preferred more than the other noodles, as tested by sensory evaluation.

복어 분말을 첨가한 국수의 품질특성 (Quality Characteristics of Dried Noodle with Added Lagocephalus lunaris Powder)

  • This study investigated the quality of noodles containing different amounts of Lagocephalus lunaris powder (LLP). Noodles were prepared at ratios of 0, 1, 3, 5 and 7% LLP based on flour weight, after which cooking quality, mechanical texture properties, and viscosity were measured, and a sensory evaluation was performed. The gelatinization points of the composite LLP-wheat flours were shown to increase. Additionally, measurement of the viscosity at 95, viscosity at 95 after 15 minutes, and the maximum viscosity values decreased, as the LLP content increased. As increasing amounts of LLP were added, the L and a values decreased, whereas the b value increased and the color values, weight, and volume of cooked noodle increased, as did the turbidity of the soup. Finally the LLP additive increased hardness and decreased adhesiveness, cohesiveness and springiness. Sensory evaluation showed that high quality cooked noodle could be produced by inclusion of 5% LLP.

홍맥 파우더를 첨가한 기능성 초콜릿의 제조 및 특성 (Preparation of Chocolate Added with Monascus Barley Koji Powder and Quality Characteristics)

  • 홍맥 기능성 초콜릿 제조를 위해 홍맥분말을 2%, 4% 및 6%을 첨가하여 milk chocolate과 white chocolate을 제조하고 점도, 수분 함량, 색도, 산패도 및 관능 검사 등 제품특성을 측정한 결과는 다음과 같다. Milk chocolate의 점도는 홍맥을 첨가하지 않은 경우 56 poise였으며, 홍맥을 첨가한 경우(2%, 4%, 6%) 다소 감소하는 경향이었으나 큰 변화를 보이지 않았다. 그리고 white chocolate의 경우는 홍맥 분말 무첨가의 경우 91.3 poise였으며, 홍맥첨가가 2, 4, 6%로 증가함에 따라 93.3, 97.0, 98.0 poise로 약간 증가하는 경향이었다. 수분 함량은 홍맥을 첨가하지 않은 milk chocolate과 white chocolate 대조구에서 각각 1.90과 2.1%였다. milk chocolate에서는 홍맥 첨가 수준에 따른 수분 함량의 변화가 거의 나타나지 않았으나, white chocolate 에서는 2%, 4% 및 6% 첨가에 따라 수분 함량이 1.90%, 1.60% 및 1.20%로 각각 뚜렷한 감소를 보였다. milk chocolate에서 명도의 L 값, 적색도의 a 값과 황색도의 b 값 모두 홍맥 분말 첨가에 따른 색도의 변화는 없었다. 반면, white chocolate에서는 홍맥의 첨가비율이 증가함에 따라 L 값과 a 값은 뚜렷하게 증가하고 b 값은 감소하는 것으로 나타났다. Milk chocolate와 white chocolate의 산가와 과산화물가는 저장 기간이 길어질수록 증가하였으나, 홍맥 첨가 수준에 따른 차이는 보이지 않았다. 관능검사 결과 milk chocolate에서 색은 홍맥 4%를 첨가한 초콜릿(4.29$\pm$0.14)이 가장 높은 점수를 나타내고, 맛은 2% 첨가 초콜릿(3.67$\pm$0.16)이 가장 좋은 것으로 나타났으나 유의적인 차이는 보이지 않았다. White Chocolate에서 색은 홍맥을 첨가한 초콜릿(2%: 1.88$\pm$0.11, 4%: 1.92$\pm$1.10, 6%: 1.67$\pm$0.13)은 무첨가 초콜릿(3.25$\pm$0.15)에 비해 모두 유의적(P<0.001)으로 낮은 점수를 나타냈으나, 2% 첨가수준에서는 맛, 향, 조직감 및 기호도에서 유의적인 차이를 보이지 않았다.

노인급식에 적용하기 위한 새우 국수의 품질특성 평가 (Assessment of Quality Characteristics of Dried Shrimp Noodles for Elderly Foodservice Operations)

  • The principal objective of this study was to evaluate the quality characteristics of dried wheat flour noodles made with different concentrations of added shrimp powder, for use in elderly foodservice operations. The cooking quality, mechanical textural properties, and viscosity of the noodle samples were measured, and sensory evaluations were conducted with the prepared noodles. As measured by an amylograph, the gelatinization points of the composite shrimp powderwheat flour noodles increased, whereas viscosity at 95$^{\circ}$C, viscosity at 95$^{\circ}$C after 15 minutes, and maximum viscosity values decreased, with increasing shrimp powder content L and b color values were reduced, and the a value increased, with increasing amounts of shrimp powder, Also, greater concentrations of shrimp powder caused increases in the weight and volume of cooked noodles as well as the turbidity of the soup. With regard to the textural characteristics, the shrimp powder additive increased hardness and reduced adhesiveness, cohesiveness, and springiness. Overall, according to the sensory evaluation results, the noodles prepared with 15% shrimp powder were more preferred than the other samples.

모시잎 분말을 첨가한 국수의 품질 특성 (Quality Characteristics of Dried Noodles Made with Boehmeria nivea Powder)

Cooking quality, mechanical textural properties, and viscosity were measured, and sensory evaluation was conducted with the prepared noodles. The gelatinization points of the composite Boehmeria nivea powder-wheat flours increased. The viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity values of the samples decreased, as the Boehmeria nivea powder content increased as measured via amylography. The L and b values decreased and a value increased with increasing amounts of Boehmeria nivea powder. Further, the color values, weight and volume of the cooked noodles increased, along with the turbidity of the soup with increasing amounts of Boehmeria nivea powder. Regarding textural characteristics, Boehmeria nivea powder additive increased hardness and reduced adhesiveness, cohesiveness, and springiness. Overall, noodles prepared with 15% Boehmeria nivea powder were preferred compared to other noodles, according to the results of our sensory evaluation.
