Quality Characteristics of Salad Dressing Prepared with Mulberry, Schisandra chinensis and Discorea Powder (산약, 오미자 및 오디 첨가 샐러드 드레싱의 품질 특성 및 항산화성)

  • In this study, the quality characteristics of salad dressing prepared with mulberry, Schisandra chinensis, and Discorea powder were evaluated. Salad dressing was prepared with salad base (plain yogurt : mayonnaise : fresh cream = 8:1:1), mulberry, Schisandra chinensis for acidity, and Discorea powder for viscosity (4:4:6:1 or 4:4:6:3). Discorea powder was added at levels of 0, 7, and 18% to the salad dressing. As the concentration of Discorea powder increased, the pH level increased, and acidity decreased. Hunter's color L (lightness) value of salad dressing decreased as the amount of Discorea powder increased. Viscosity increased according to the amount of Discorea powder. Moreover, total phenolic content increased according to the amount of Discorea powder. Further, DPPH antioxidant and hydroxyl radical activity of mulberry salad dressing increased as the amount of Discorea powder increased. Sensory preference test results showed that the salad dressing added with Discorea powder had higher scores for color, flavor, taste, and texture than the control. Regarding overall preference, salad dressing containing 7% Discorea powder had the highest scores among the treatments. From these results, salad dressing containing mulberry, Schisandra chinensis for acidity, and Discorea powder for viscosity could be a functional salad dressing with high antioxidant activity.

A Study on the Preference of Hobakjook upon Material & Mixing ratio Change (호박죽의 재료와 배합비 변화에 따른 기호도 연구)

  • Determining the optimal mixing ratio of pumpkin, water, glutinous rice powder, red bean, kidney bean in preparing Hobakjook has been attempted and on the basis of it, Hobakjook with glutinous rice powder was set to be A group, and the one that glutinous rice powder was replaced by brown glutinous rice powder for the purpose of enhancing preference and nutrition was set to be B group. A group and B group with additional 0%, 5%, 10%, 15% perilla powder of pumpkin weight was labeled as Al-A4 and Bl-B4 respectively, and then analyzed nutritionally. Optimal material mixing ratio and preference was investigated by use of sensory evluation and instrumental test. As a result, the optimal material mixing ratio was determined as pumpkin 400 g, water 60 cc, glutinous rice powder 40 g, red bean 30 g, kidney bean 30 g, salt 4 g, sugar 10 g. In sensory evaluation significant difference (P < 0.05) was shown among the samples in color., flavor.1, falvor. II and overall quality. And A3 in viscosity, A2 in color, A4 in sweetness, B2 in flavor 1, Al and B2 in flavor 11, and B2 in overall quality was preferred most. Instrumental measurement shows that B4 in viscosity and A4 in sweentness was highestly recorded and showed significant difference (p<0.05). As the addition of perilla powder increased, the viscosity and sweetness was increased. In color measurement A4 in L value, A3 in a value, and Bl in b value was highestly recorded. And as perilla powder was added, L value and a value was increased while b value was decreased. Color in sensory evaluation was significantly correlated to b value in instrumental measurement. In summary, Hobakjook with brown glutinous rice was superior to the one with glutinous rice in preference and proximate composition, and as the addition of perilla powder was increased, proximate composition was increased but preference was rather decreased, and Hobakiook with 5% addition of perilla powder to brown glutinous rice powder was preferred most.

Characteristics and Yield of Jochung Processed by Different Preparation Methods (제조 방법에 따른 쌀 조청의 특성 및 수율)

  • This study was performed to increase the yield and to reduce the processing times for the preparation to improve the productivity and quality of rice jochung, a traditional food in Korea. In order to evaluate the quality characteristics and yield of jochung, the viscosity, color value, mineral contents and the sensory evaluation were measured. Jochung is prepared from steamed rice (STR), wet-milled rice flour (WRF) and dry-milled rice flour (DRF) by processing methods of rice and reacting times (6 hours or 13 hours) of liquefaction and saccharification. There is commonly added liquefying enzyme for rice liquefaction (0.4%/10 kg rice, at $85{\sim}90^{\circ}C$ for 1 hour or 4 hours) and saccharogenic enzyme with malt (2.5% or 4.5%/10 kg rice, at $56{\sim}60^{\circ}C$ for 5 hours or 9 hours). The inner structural properties of WRF showed the more distinct shape regular structure of uncombined starch particles but the DRF closely maintained particles of rice flour observed by SEM. If processing times for liquefation and saccharification were reduced from 13 hours to 6 hours, the yield of jochungs prepared with WRF increased 8%, the DRF 7%, and the STR 3% respectively and the sensory evaluation as well as color values and overall desirability received high scores. The viscosity, color a and b values of jochung processed with WRF for 6 hours were lower than that processed for 13 hours. The viscosity and color a, b value and Ca content were decreased in the jochung processed with WRF or DRF for 6 hours, but Mg, P and K were increased than that of STR. Jochung processed by 0.4% liquefying enzyme and 2.5% malt with WRF for 6 hours will increase the yield, save manufacturing times and costs and will thereby enable cost-effective techniques.

Quality Characteristics of Sponge Cake Prepared with Red Ginseng Marc Powder (홍삼박 분말을 대체한 스폰지 케이크의 품질 특성)

  • In this study, sponge cakes were prepared with 3, 6, 9, 12, and 15% red ginseng marc powder. The samples and a control were then compared in terms of quality characteristics, including batter viscosity and specific gravity, moisture content, water activity, volume index, weight, color, textural characteristics, and sensory qualities, in order to determine the optimal ratio of red ginseng marc powder in the formulation. The batter samples containing 0, 12, and 15% red ginseng marc powder had significantly higher viscosity than the other samples. Specific gravity of batter was not significantly different among the batter samples. The control group presented significantly higher moisture content as compared to the samples containing red ginseng marc powder samples. Water activity, volume index, and weight of all samples were not significantly different among the samples. In terms of crust color, lightness, redness, and yellowness of the crust samples decreased as the level of red ginseng marc powder content increased. For the crumb color, lightness and yellowness decreased, and redness increased, with increasing red ginseng marc powder content. Hardness, cohesiveness, gumminess, and springiness were not significantly different among the samples; however, the red ginseng marc powder samples had significantly higher chewiness than the control group. In the sensory evaluation, as the content of red ginseng marc powder increased, scores for color, flavor, softness, overall acceptability, moistness, and egg-flavor decreased, while scores for red ginseng taste, bitterness, astringency, and off-flavor incresed. Overall, the 3 and 6% red ginseng marc powder samples obtained fairly good sensory scores. In conclusion, the results indicate that adding $3{\sim}6%$ red ginseng marc powder to sponge cake is optimal, providing good physiological properties as well as reasonably high overall consumer acceptability.

Quality Characteristics and Shelf-life of Tomato sauce Prepared by Addition of fresh dill (딜의 첨가량을 달리한 토마토 소스의 품질특성 및 저장성)

  • The purpose of this study was to investigate the effects of dill on the quality characteristics of tomato sauce during 60 days of storage. As storage time increased, the pH stays between 4.10-4.22 on all additives. The lowest pH appeared on a 0% dill added sample during the storage period, except at 45 or 60 days of storage. The more dill was added, the less sugar appeared, and this was generally consistent across other samples. As storage times increased, the sugar content showed a tendency to decrease in all additives. Salinity turned out to be between 0.90-1.48 among all of the additives. For the L-value, the more dill was added, the less the L-value decreased, and this was consistent across all the samples. As the storage period increased, the L-value showed a tendency to decrease in all samples. The more dill was added, the more the a-value showed a tendency to decrease. The b-value showed a tendency to decline the more dill was added. Also, as storage time increased, the b-value decreased in all samples. Viscosity showed a tendency to increase in all samples the more dill was added. The reducing sugar content was kept between 44.83-55.38. A sensory evaluation was performed by 15 professional panelists with scoring tests for color, flavor, taste, aftertaste, viscosity, and overall acceptability. The tomato sauce with 2% dill showed the best score in the color, flavor, and overall acceptability. From the above results, the data suggests that an addition of 2% fresh dill to tomato sauce is recommended for commercial use.

Physical Properties and Optimization of Tangsuyuk Batter Ingredients (탕수육 배터의 물리적 특성 및 최적화)

  • Physical properties were investigated in tangsuyuk batter containing different amounts of ingredients, such as wheat flour, corn starch, sodium bicarbonate, alum and water. For the response surface methodology (RSM) central composite design was used to determine the optimal ingredient ratios for viscosity, color properties(lightness, redness, yellowness, color differences) and cutting forces. There were significant differences(p<0.05) between the different batter mixtures. The lightness(L) of batter was in proportion to the increased amount of wheat flour and corn starch. Higher redness was recorded with increasing corn starch. Higher yellowness was observed with increasing wheat flour and sodium bicarbonate. Color differences were higher with increasing wheat flour, corn starch, and/or alum and decreasing water. Cutting forces were linearly increased with increasing sodium bicarbonate. From these results, it is possible to monitor the effects of ingredients on physical properties of tangsuyuk batter, and to predict their optimal ratios.

Potential Detection and Quality Properties of ${\gamma}-Irradiated$ Corn Starch of Korean and Chinese Origins by Viscosity Measurement during Storage (저장 기간 중 감마선 조사 옥수수 전분의 검지를 위한 점도 측정법의 적용과 품질특성)

  • Physicochemical changes in corn starch caused by irradiation were investigated, and irradiated samples were identified. Viscosity, TBA value, Hunter color, and total viable count were measured after irradiation of corn starch. Corn starches from Korea and China were irradiated at 0, 2.5, 5, 7.5, 10, and 15 kGy using a $Co^{60}$ irradiator and stored for 9 months at $0^{\circ}C$ and $20^{\circ}C$. Viscosity and specific parameter values decreased in all samples with increasing irradiation dosage at 50 rpm, showing a dose-dependent relationship $(above\;R^2=0.80)$ between non-irradiated and irradiated samples during storage. These results suggest that detection of irradiated corn starches is possible using viscometric method during storage. Total viable count, TBA value, and Hunter color were determined as supplemental indices for measuring viscosities of samples. Total viable count and TBA values showed dose-dependent relationship $(2.5{\sim}15 kGy)$. Differences in viscosity and total viable count, and TBA values among non-irradiated samples showed little changes with the lapse of post-irradiation time, but were still distinguishable for more than 6 months at $0^{\circ}C$ and $20^{\circ}C$ for corn starches from korea and China.

The Effect of Bovine Plasma for the Preparation of Mayonnaise on Quality Characteristics (Bovine Plasma의 Mayonnaise 제조 적성에 관한 연구)

  • This study was carried out to investigate the effect of bovine plasma for the preparation of mayonnaise on quality characteristics through the tests of viscosity, color, emulsion stability and sensory evaluation. In the case of standard mayonnaise preparation with the bovine plasma addition from 0.01% to 0.1%, The result of viscosity, color, emulsion stability and acceptability are improved. When the bovine plasma(5%) was only used to Prepare mayonnaise without e99 yolk, the result of color and acceptability were reduced, whereas viscosity, emulsion stability were observed as the characteristic of standard mayonnaise. The sample mayonnaise containing the e99 yolk(50%) and bovine Plasma (0.5~1.0%) was observed as the characteristics of standard mayonnaise without color.

  • Stone cultural properties, exposed in natural environment, is deteriorated by many weathering reasons for a long time. It is necessary to treat of consolidation and water-repellent on the surface because of the conservation of stone cultural properties. We was treated the specimen [granite(Hwangdung-suk), sandstone, marble(in JeongSeon)] by synthesis resin of DWR-Ⅲ, SI2121 and fluoropolymer, and tested on the durability, water-repellent, color stability and luster generation etc. In the result of this study, DWR-Ⅲ and fluoropolymer is superior to the waterrepellent, durability of salt and acid rain. SI2121 is superior to the penetration because of lower viscosity, but the water-repellent is inferior to the others. After the treatment of chemicals, the color-variation make an appearance but luster-generation doesn’t. With the passage of time, the color of specimen was got better because of the ‘washing’ phenomenon for ultra-violet, salt etc.

소고기 사골을 재료로 제조한 Brown Stock의 특성

  • The autoclave method and the traditional cooking method are compared for nutrients, mineral, color difference, viscosity, reducing sugar and amino nitrogen content of brown stock. For protein and amino nitrogen contents, the autoclave cooking method is better than the traditional cooking method. Also, reducing sugar content is increased by the autoclave cooking method. Since the color of brown sauce is related with reducing sugar content, the autoclave cooking method is more effective than the traditional cooking method for the color of brown sauce. Since the autoclave method can reduce the cooking time without the loss of quality in brown stock, the traditional method can be substituted by this new method.
