Oxidative Stability of Perilla Blended Oils in Mayonnaise Preparation (마요네즈 제조시 들기름 혼합유의 산화안정성)

  • This study was designed to select the most stable oil among vegetable oils for mayonnaise preparation on lipid oxidation when blended with perilla oil. Oxidative stabilities of perilla oil, soybean oil, rapeseed oil, corn oil, sunflower oil and perilla blended oils (blended perilla oil with other vegetable oil in a equal weight rate) were tested. Among the perilla blended oils, perilla blended soybean oil was the most effective on oxidative stability. This may be concerned with the fact that the content of natural antioxidant, tocopherol, is higher than that of other oils. Mayonnaise was prepared by using both perilla oil and perilla blended soybean oil. Variations of POV and tocopherol content of mayonnaise during storage at $37^{\circ}C$ were compared. The changes in POV and tocopherol content in the mayonnaise of perilla blended soybean oil were less than those of perilla oil. This result suggested that the usage of perilla blended soybean oil instead of perilla oil itself is possible in the manufacturing of mayonnaise.

  • Biodiesel produced from triglyceride which is main component of animal fats and vegetable oils by methanolysis was known for remarkable cetane number. In this study, the derived cetane number of 3 kinds of biodiesel came from vegetable oils such as soybean oil, palm oil, and perilla oil and 2 kind of biodiesel which were produced from beef tallow and pork lard were analyzed using IQT (Ignition quality tester). In IQT test result, the derived cetane number of palm- , beef tallow- and pork lard's biodiesel were more excellent than other biodiesels. After analysis of biodiesel composed molecular by gas chromatography-mass and determination of the derived cetane number of pure biodiesel components using IQT, we have found that the low olefin contented and long alkyl chained biodiesel have excellent derived cetane number.

A Study on the Usability of Biodiesel Fuel Derived from Rice Bran Oil as an Alternative Fuel for IDI Diesel Engine

  • The world is faced with a problem of air pollution due to the exhaust emissions from automobile. Recently, lots of researchers have been attracted to develope various alternative fuels and to use renewable fuels as a solution of these problems. There are many alternative fuels studied in place of diesel fuel made from petroleum. Biodiesel fuel (BDF) is a domestically produced. renewable fuel that can be manufactured from vegetable oils, used vegetable oils, or animal fats. In this study, the usability of BDF, one of the oxygenated fuels as an alternative fuel for diesel engines was investigated in an IDI diesel engine. Emissions were characterized with a neat BDF and with a blend of BDF and conventional diesel fuel. Since the BDF includes oxygen of about 11 %, it could influence the combustion process strongly. Therefore, the use of BDF resulted in lower emissions of carbon monoxide and smoke emissions with some increase in emissions of oxides of nitrogen. It is concluded that BDF can be utilized effectively as a renewable fuel for IDI diesel engines.

Patterns of Dietary Fat Intake by University Female Students Living in Kongju City: Comparisons among Groups Divided by Living Arrangement (공주지역 여대생의 지방 섭취 양상 조사)

  • This study was aimed at examining the pattern of dietary fat intake of 120 university female students living in Kongju city in order to provide baseic data for establishing the dietary grideline of desirable fat intake. The subjects were divided into three groups according to living arrangenment ; family home(FH), or dormitory(DM), or self-boarding house(SB). Fat consumption of subjects was surveyed by two-day food records, and profiles of fatty acid and cholesterol taken were calculated based upon the data reported their contents of foods. The result was that mean daily fat intake was 42$\pm$2g for FH, 48$\pm$4g for DM and 41$\pm$3g for SB. The calorie intake by fat was 20.8, 21.5, and 20.4% respectively. The ratio of P/M/S was 1.3/1.7/1 for FH, 1.3/1.6/1 for DM and 1, .5/1.5/1 for SB. And the ratio of n-6/n-3 fatty acid was 5.2/1 for FH, 8.3/1 for DM and 7.2/1 for SB. Daily cholesterol intake was 208$\pm$20mg for FH, 223$\pm$29mg for DM and 251$\pm$27mg for SB. In addition, intake of n-3 fatty acid was 1.2$\pm$0.2g for FH, 0.9$\pm$0.1g for DM and 1.2$\pm$0.2g for DB. Considering the food source of fatty acids, saturated fatty acid and monounsaturated fatty acid were taken primarily from animal foods, especially milk and milk products, and n-6 polyunsaturated fatty acid was taken from vegetable oils and fats. As a major source of n-3 fatty acid, linolenic acid was obtained through vegetable oils and fats, and eicosapentaenoic acid and docosahexaenoic acid were provided by fishes and their products. There patterns of fatty acid intakes did not differ according to living arrangement. The above results showed that intakes of fat and cholesterol, and ratios of P/M/S and n-6/n-3 fatty acid were overall desirable in all groups. However, intake of n-3 fatty acid was low in all groups. Therefore, consumption of perilla oil, legumes and fishes as a source of n-3 fatty acid should be increased by substituting other food source which provide fats and oils because calorie intake by fat was enough in these subject.

Effects of 2-Acetylaminofluorene Injection Time on the Hepatic Lipid Peroxide Metabolism and Cytochrome P450 Contents in Rats Fed Different Dietary Fats (쥐에서 2-Acetylaminofluorene의 투여시기에 따라 식이지방이 간의 지질과산화물 대사 및 Cytochrome P450 함량에 미치는 영향)

  • The purpose of this study was to determine the effects of 2-AAF injection time on hepatic lipid peroxide metabolism and cytochrome P450 content in Sprague-Dawley rats fed diets containing high amounts of vegetable oils or animal fats(15%, w/w). Fifty mg of 2-AAF/kg of body weight/day was injected in PEG 300 intraperitonially for 3 consecutive days after 4 or 8 weeks to rats fed corn oil(CO) or lard(LA) diet. The contents of lipid peroxide and cytochrome P450, and the activities of superoxide dismutase(SOD), glutathione peroxidase(GSH-peroxidase) and glutathione S-transferase(GSH-S-transferase) were determined in hepatic microsomal or cytosolic fraction. Microsomal thiobarbituric acid reactive substances(TBARS) and cytochrome P450 contents increased in Co group injected 2-AAF after 4weeks. Cytosolic SOD activity increased in CO group injected 2-AAF after 4 weeks and in LA group injected 2-AAF after 4 or 8 weeks. Cytosolic GSH-S-transferase activity increased in LA group compared to CO group without 2-AAF injection. GSH-S-transferase activity increased in CO group injected 2-AAF after 4 or 8 weeks and in LA group injected 2-AAF after 4 weeks. Therefore, it may be suggested that 2-AAF injection increase the contents of lipid peroxide or cytochrome P450, and detoxifying enzyme activities in rats fed CO diet for short period and in rats fed LA diet for longer period.

  • The production of high quality oil to meet new standard needs a 'next generation' innovative oil refining tool in paradigm shift. 'Nanoneutralization' using controlled hydrodynamic cavitation-assisted Nanoreactor is successfully being introduced and commercialized into edible oil industry and it plays a key driver for sustainable development of food processing. This emerging technology using bubble dynamics as a consequence of Bernoulli's principle by hydrodynamic cavitation in Venturi-designed multi-flow through cell is radically changing the conventionally chemical-oriented neutralization. Nanoneutralization derived by the creation of nanometer-sized bubbles formed through scientifically structured geometric channels under high pressure has been proven to improve mass transfer and reaction rate so substantially reduce the chemicals required for refined vegetable oil and to increase oil yield while even improving oil quality. More researches on science behind this revolutionary technology will help usto better understand the principle and process hence makes its potential applications expandable in extraction, refining and modification of fats and oils processing.

Primary Food Commodity Classification of Processed Foods of Plant Origin in the Codex Food Classification (코덱스 식품 분류에서 식물성 가공식품의 원료식품 분류)

  • The purpose of this study was to obtain the codex classification information on the primary food commodity (fresh state) of processed foods of plant origin that are included in the Codex Classification of Foods and Animal Feeds. Furthermore, whether or not the primary food commodity is included in the primary food classification from the Food Code of Korea was investigated. The results are summarized as follows: First, the Codex Classification information (number of classification codes/number of the primary food commodity group that fresh commodities of processed foods are classified/number of primary food commodity that is not included in the Codex Classification) by a processed food group appeared to be 46/8/0 for dried fruits, 76/11/1 for dried vegetables, 54/4/12 for dried herbs, 36/1/0 for cereal grain milling fractions, 17/4/3 for oils and fats (crude), 34/8/9 for oils and fats (refined), 20/8/0 for fruit juices, 3/2/0 for vegetable juices, and 19 codes for teas (in the Codex Classification, the primary food commodity group for tea does not exist). Second, the number of the primary food commodities not included in the Food Code of Korea was 9 for dried fruits, 14 for dried vegetables, 35 for dried herbs, 0 for cereal grain milling fractions, 6 for teas, 3 for oils and fats (crude), 9 for oils and fats (refined), 2 for fruit juices, and 0 for vegetable juices. Third, it was demonstrated that caution should be exercised when using Codex Classification due to differences in food classification between Codex and Korea, such as coconut (Codex, as tree nut as well as assorted tropical and sub-tropical fruit) and olive (Codex, as assorted tropical and sub-tropical fruit as well as olives for oil production), as well as special cases in the Codex Classification, such as dried chili pepper (Codex, as spice), tomato juice (Codex, as vegetable for primary food commodity and as fruit juice for juice) and ginger (Codex, as spice for rhizome and not including as primary commodity for leaves).

  • Biodiesel is gaining more attractive due to its eco-friendly and the fact that it is prepared from renewable sources. It is monoalkyl esters of long chain fatty acids derived from vegetable oils and animal fats via transesterification reaction with alcohol in the presence of catalyst. This paper will review briefly (1) the effect of reaction conditions such as catalyst type, amount of free fatty acid and moisture, molar ratio of alcohol and oil, alcohol type, reaction temperature and time and stirring intesity, (2) downstream process of biodiesel after transesterification reaction, and (3) potentialities of biodiesel as an alternative fuel based on its properties in diesel engines.
