Changes of Physicochemical Quality in Hardy Kiwifruit (Actinidia arguta) during Storage at Different Temperature

  • The effect of storage temperature and the storage period of hardy kiwifruits on the fruit firmness, soluble solids and fruit weight were studied in this work. The investigation was carried out on the Sae-Han cultivar of Actinidia arguta. It has an edible smooth skin and contains high amounts of sugar and vitamin C (ascorbic acid). In this research, the measurement of fruit firmness, soluble solids, and fruit weight were carried out at various temperatures (5, 10, 15, and 20℃) during 14 days. Fruit firmness rapidly decreased and soluble solids content increased at 15 and 20℃. We also investigated the correlation between fruit firmness and soluble solids content. There was a strong correlation between fruit firmness and soluble solids content. That means that fruit firmness affect the soluble solids content of hardy kiwifruit.

Comparison of Some Characteristics Relevent to Yukwa (Fried Rice Cookie) made from Different Waxy Rice Cultivars (찰벼품종을 달리하여 제조한 유과의 품질 특성 비교)

  • This study was carried out in order to investigated the degree of expansion, textural and sensory characteristics of Yukwa made from various cultivars of waxy rice, With 5 varieties of waxy rice and a nonwaxy rice, Yukwa were prepared by the standardized method that had been established optimum preparation conditions. Yukwa made from Shinsunchalbyeo and Whasunchal showed lower degree of expansion than Hangangchalbyeo and IR 29, but showed higher crispness and softer texture among tested waxy rice cultivars. Sensory characteristics of these cultivars showed high score in flavor, crispness and preference. Whasunchalbyeo and Shinsunchalbyeo were appropriate varieties for Yukwa preparation and they were both short grain in length/width. Whasunchalbyeo has the highest score of water uptake and reducing sugar content in Key word.

A Study on the Quality Characteristics of Gruel Supplemented with Purple Sweet Potato (자색고구마를 활용한 노인식 죽의 개발 및 품질 특성)

  • This study investigated the quality characteristics of gruel supplemented with purple sweet potato. The gruel was prepared with rice powder, salt, and various amounts of purple sweet potato (0, 2, 4, 6, 8%). Increasing the content of purple sweet potato decreased the pH and viscosity of the gruel, whereas sugar content and spreadability gradually increased. In addition, the content of purple sweet potato increased, the lightness (L) significantly decreased, while redness (a) and yellowness (b) increased. The results of the sensory evaluation show that overall-acceptability was highest for the gruel containing 6% purple sweet potato. In conclusion, the results shows that the gruel with 6% purple sweet potato is the best. This study indicates that it is possible to enhance the quality and acceptability of gruel by adding purple sweet potato powder.

Preparation and Quality Characteristics of Tablet using Cheonggukjang Powder (청국장 타블렛의 제조와 품질 특성)

  • This study was carried out to develop a new product using Cheonggukjang (fermented soybean product) and sub-ingredients(lactic acid bacillus powder, chlorella, lactose, green tea). Fresh Cheonggukjang was dried by a infrared drying(50℃, 36hr) and powdered by a roll mill. The powder was mixed with sub-ingredients and then moulded as tablet type by a press moulder. The pH of tablet was low with the addition of lactobacillus and total sugar content was high with the addition of lactose. Disintegration, absorption capacity and textural properties of tablet were not affected by the addition of any sub-ingredient. Color of non-added tablet was yellow to red, but changed to green when chlorella was added. Sensory properties(color, taste, flavor, chewiness, hardness, acceptability) were not affected by the addition of sub-ingredients. The results indicate that functional healthy tablet could be made from Cheonggukjang powder and various sub-ingredients.

  • This study was performed to develop dried persimmon using Yanggaeng by addition of dried persimmon puree(0, 5.6, 11.2, 16.8 and 22.4%). L value, pH, sugar contents, hardness, chewiness, cohesiveness, gumminess, springiness were, moisture contents, a value, b value and adhesiveness were of dried persimmon puree. different attributes, dried persimmon puree content significantly affected properties including color intensity, gloss, dried persimmon flavor, dried persimmon taste, sweetness, moistness and after taste. In the acceptance test, dried persimmon puree was preferred appearance, flavor, taste, texture and overall quality. The optimal dried persimmon puree content for overall quality of dried persimmon Yanggaeng was 16.8%.

  • The authors reviewed information about biorefining of biomass by using academic information databases. Feedstocks were classified into triglycerides biomass, sugar biomass, starchy biomass, lignocellulosic biomass, and organic waste biomass. Biorefinery is an integrated system converting biomass into biofuels and biochemicals by various physical, chemical, biological, and thermochemical technologies. This paper presented a comprehensive summaries of opportunities, recent trends and challenges of biorefinery. A brief overview of promising building blocks, their sources from biomass, and their derivatives were also provided. In conclusion, this paper demonstrated the feasibility of biorefinery producing biofuels and biochemicals from biomass.

Biochemical Studies on Lectins from Misgurnus spp. (미꾸라지 렉틴 성분의 생화학적 특성)

  • Two kinds of new lectin fractions (LOA-I, LOA-II) were obtained from loach (Misgurnus spp.) meat by 0.15 M NaCl extraction, salt fractionation, ion exchange and hydroxyapatite column chromatographies. On polyacrylamide gel electrophoresis, LOA-I exhibited one major and a few minor bands, but LOA-II exhibited three minor bands. The partially purified loach lectins agglutinated not only erythrocytes of human B and AB type, rabbit, dog, but also murine splenic lymphocytes. Agglutinability was relatively labile at various pH and stable at increasing temperature, but was not affected by tested several metal ions. By the sugar specificity test, D-glucosamine and metyl-$\beta$-galactopyranose inhibited agglutinating activity at a final concentration of 3 mM. The lectins contained relatively high amounts of aspartic acid, valine and leucine, but sulfur containing amino acids, cystein, methionine and isoleucine were not determined. LOA-I, LOA-II lectins were nonmitogenic toward murine lymphocytes.

Chemical Components of Rusty Root of Ginseng (적변인삼의 화학적 성분에 관한 연구)

  • This study was conducted to investigate the chemical components of rusty root for seeking the cause of rust. Na, Fe contents were higher in various tissues of six-year-old rusty root than healthy root. Contents of total sugar in epidermis of rusty root was low but crude lignin and suborn contents were high. Crude lipid content increased with the rate of rusty symptoms in each part of root respectively. Pentadecanoic, stearic, oleic, lignoseric acid contents increased in cortex of tap root with the rate of rusty symptoms but decreased in pith. Total ginsenoside and crude saponin contents increased , in pith and cortex of tap root with the rate of rusty symptoms but decreased in lateral and fine root.

홍삼분말과 Maltodextrin 또는 Lactose 이상혼합물의 흡습특성

  • A study was designed to investigate the sorption characteristics of binary mixture of red ginseng powder and maltodextrin(DE-17) or lactose stored at various relative humidities ranging from 52% to 93%. At low relative humilities below RH 67%, the sorption equilibrium was easily achieved, whereas at higher relative humidity values over 75%, all of the mixtures tended to absorb moisture continuously with an increase in storage time. A linear equation of log(dw/dt): a log(t)+ log b was found to be valid between the sorption rate and storage time with respect to storage humilities. A linearity was also found between log(1-Aw) and the amount of water absorbed over the Aw range of 0.52∼0.93 and the slope was affected by the kind of sugar added with that of red ginseng powder and maltodextrin mixture being the smallest.

Manufacture and Physiological Functionality of Wines and Liquors by Using Plum [Prunus salicina] (자두[Prunus salicina]를 이용한 주류의 제조 및 생리기능성)

  • Alcohol fermentation conditions for the production of plum wine were investigated and further, sensory evaluation and physiological functionalities of the plum wines were also determined and compared with those of plum liquors made by soaking plums in a mixture of commercial soju and 10% sugar for 15, 30, 60 and 120 days. Ethanol was produced maximally when 5% Saccharomyces cerevisiae was added to red plum juices and fermented at 25$^{\circ}C$ for 5 days. Angiotensin-converting enzyme inhibitory activity and fibrinolytic activity of the red plum wine were better than those of the plum liquors. However, the antioxidant activity, the SOD-like activity and the tyrosinase inhibitory activity of the plum liquors were better than those of the red plum wine. On comparing the red plum wine and the various kinds of plum liquors, the red plum wine was shown to be more acceptable by sensory evaluation.
