  • Recently, synthetic polymers containing units of carbohydrate derivatives with pendatnt functional groups have been much studied. The polymers should be able to be used drug carriers and scaffold for tissue engineering, because of their nontoxicity, biocompatibility, and biodegradability.$\^$1-6/ During the last three decades, various polyfunctional polymers, e.g. polyhydroxypolyamides and polyesteramides, based on carbohydrates have been reported and synthesized by condensation polymerization between sugar derivative and diamines, although it could be done via complicated reaction routes going through protecting.$\^$1-6/ (omitted)

  • The paper is an attempt to explore various aspects of Thai traditional cake culture in order to understand the characteristics of Thai tradition cakes and their significance in Thai cultural life. The study will focus on cake culture in both folk culture and court culture as well as observe the changes of this culture in the present time of globalization. In the text book on Thai Khanom, Kobkhaew Natpinit sums up the characteristic of Thai traditional 'Khanom' as follows: 1. Thai traditional (cake) Khanom are mostly made from rice, sugar and coconut. 2. The tastes of Thai Khanom are sweet and rich in coconut cream with a little bit of salty taste to enhance the flavour of coconut. 3. The colour and scents of Thai Khanom are naturally fragrant. Fresh fragrant flowers are used to add pleasing fragrance and colour to Thai Khanom.

  • Biosurfactant have a low toxicity, good biodegradable, various structure. It can be used for a broad range of purposes in a large variety of different applications. Sorbitol mono alkyl ester synthesized by the Porcine Pancreatic lipase catalyzes transesterification reaction between a sugar alcohol and plant oils. We are examined the surface tension, emusion stability and critical micelle concentration were evaluated. Consequently It has a good properties of biosurfactant.

  • To develop the processing methods of grape and increase the use of poor fruits, we researched the health drink made with them after making grape juice and vinegar. The grape heated at $80^{\circ}C$ during 30min was followed by filtration. Grape vinegar was prepared by alcohol and acetic acid fermentation of grape. Optimum initial alcohol concentration for acetic acid fermentation was 6-8%. Acetic acid fermentation of grape vinegar manufactured in onggi took 9 days and was faster than any other type of utensil. As the result of analysis of grape vinegar fermented in the various ratio of 'Campbell Early' and 'Kyoho' grape, the redness and total anthocyanin content and the score of sensory evaluation were higher in vinegar made with 100% 'Campbell Early'. The drink manufactured by adding grape vinegar was developed and adding 10% of grape vinegar to volume of grape juice and water mixture(1:1) was best in sensory evaluation. In this mixture, sugar content was $14^{\circ}$Bx.

  • Bambusa arundinacea family Graminae, is one of the precious plant resources of the earth. It has played a significant role in human civilization since ancient times. It is tall sized tree growing throughout India, moist parts of India. It also occurs in Sri Lanka, Malaya, Peru and Myanmar. The different parts of this plant contain silica, cholin, betain, cynogenetic glycosides, albuminoids, oxalic acid, reducing sugar, resins, waxes, benzoic acid, arginine, cysteine, histidine, niacin, riboflavin, thiamine, protein, gluteline, contains lysine, methionine, betain, cholin, proteolytic enzyme, nuclease, urease. Various parts of this plant such as leaf, root, shoot and seed possess anti-inflammatory, antiulcer, anti-diabetic, anti-oxidant, anthelmintic, antifertility, antibacterial, insectisidal, antiarthritic, vessele protection etc. This review mainly focuses on the traditional, phytochemical and pharmacological information of Bambusa arundinacea.

  • Anthocyanins are water-soluble glycosides and acylglycosides of anthocyanidins, having different color variations due to its substitution patterns. Anthocyanins, present in various fruits, vegetables and crops as natural colorant, have been well characterized for its bioactive properties, anti-oxidant, anti-cancer, anti-proliferative and anti-inflammatory properties. During extraction and purification, the factors, such as pH, temperature, oxygen, light, enzymes, nucleophilic agents, sugar derivatives and co-pigments, have affected on anthocyanin stability. For this reason, the extraction method should be thoroughly checked for the qualitative/quantitative analysis of anthocyanin in particular plant material. To identify the optimum extraction method of cyanidin-3-glucoside, major anthocyanin of dark purple-colored grains, Oryza sativa cv. Heugjinjubyeo, Phaselous vulgaris, Phynchosia gngularis, Sesamum indium, Rhynchosia nulubilis and Lablab purpureus, reversed-phase HPLC analysis using solvent system of acetonitrile, methanol and water were accomplished.

  • In this paper a fast non-destructive analytical method to measure various nutrients in the intact tomato---Near infrared Spectrometry NIRs was introduced Using this method the content of some organic acid, vitamin C, reductive sugar, and solid soluble were determined simultaneously. Screen out four wavelengths at 916nm, 1000nm, 1004nm and 832nm to present optimum four optical terms of d$^2$ log(1/R) with second derivative spectra treating data scanned under these wavelengths. The multiple correlation coefficients between these values and those obtained on chemical analysis were 0.983, 0.990, 0.987, and 0.994, respectively, and the standard errors of prediction (SEP) were 0.007, 0.440, 0.037, and 0.057, respectively. These results indicate that NIRs is comparable to chemical methods in both accuracy and precision and is reliable method for determination of nutrients in intact tomato.

  • The purpose of this study is to evaluate the sensory characteristics and the taste components of Korean soybean paste (doenjang) with mushrooms such as Lentinus edodes, Ganoderma lucidum and Phellinus Lentinus. edodes doenjang turned out to have a good taste, odor and color, but Ganoderma lucidum and Phellinus liteus doenjang were worse than control doenjang in the taste, odor and color as well as in sensory evaluation. The contents of amino type nitrogen were higher in Lentinus edodes and Phellinus liteus doenjang than in control doenjang. Of organic acids, succinic acid was the most abundant and Ganoderma lucidum doenjang had a little higher acetic, butyric and propionic acid. Fructose and glucose were detected as free sugar of mushroom doenjang, of which glucose was considerably contained in Ganoderma lucidum doenjang, Total contents of free amino acid were 2.247 ∼ 2.833mg/100g in doenjangs added mushrooms. Glutamic acid and alanine were dominant in mushroom doenjangs.

  • Cellulose is the most abundant organic polymer constituent of the cell wall of green plants and of various forms of algae. The complexity of lignocellulosic biomass is a major challenge in industrial research. Most mushroom species that naturally grow on soil or wood possess cellulases and the corresponding enzymatic system and, potential candidates for the direct bioconversion of softwood polysaccharides into fermentable sugars. However, there have been fewer studies on mushroom cellulases than on fungi such as Trichoderma spp., exploit the full potential of mushroom cellulases. This review will focus on the current status ofmushroom cellulase research and applications and will provide insight into promising future prospects.

  • The personal health record platform can store and manage medical records, health-monitoring data such as blood pressure and blood sugar, and life logs generated from various wearable devices. It provides services such as international standard-based medical document management, data pattern analysis and an intelligent inference engine, and disease prediction and domain contents. This study aims to construct a foundation for the transmission of international standard-based medical documents by mapping the diagnosis items of a general health examination, special health examination, life logs, health data, and life habits with the international standard terminology systems. The results of mapping with international standard terminology systems show a high mapping rate of 95.6%, with 78.8% for LOINC, 10.3% for SNOMED, and 6.5% when mapped with both LOINC and SNOMED.
