즉석팥죽 제조를 위한 가공조건 및 제품의 품질 (Preparation Condition and Product Quality of Precooked Redbean Porridge)

  • 이축압출성형기를 사용하여 붉은 통팥과 옥수수전분을 원료로 하여 압축성형하고 이를 건조, 분쇄, 배합하여 즉석팥죽 분말을 제조하였으며 이때의 제조공정과 제품의 품질을 검토하였다. 원료의 수분함량 $24{\sim}26%$, 압출성형온도 $150{\sim}155^{\circ}C$, 스크류의 회전속도 350 rpm 및 원료투입량 60 kg/hr의 압출성형조건으로 제품을 생산하였을 경우 팥죽 고유의 냄새와 색상을 유지하는 제품을 얻을 수 있었다. 압출성형중 분말원료에 가해지는 가수량이 6 kg/hr에서 2 kg/hr로 감소됨에 따라서 압출성형온도는 $150^{\circ}C$에서 $198^{\circ}C$로, 기계적소모에너지는 134 kwh/ton에서 144 kwh/ton으로 증가하였다. 건조분말상태에서 caking이 형성이 되지 않는 수분함량인 4% 이하로 건조되는 열풍건조 조건은 건조온도 $80^{\circ}C$ 에서는 4시간, $100^{\circ}C$ 에서는 1.5시간 이었다. 압출물의 분쇄후 분말의 입도분석은 체목이 0.5 mm인 것을 사용하였을 경우 약 80%가 65 mesh 체를 통과하였고, 1 mm인 체목인 경우는 약 65%가 65 mesh 체를 통과하였다. 최종배합제품의 수분흡수속도는 설탕배합구가 100% RH하에서 13시간이 경과된 후 caking이 형성되었다. 팥압출물분말, 옥수수전분 및 설탕의 배합비를 달리한 제품의 기호도 검사에서 팥의 함량이 줄어듬에 따라 팥죽냄새가 감소하여 기호성이 저하되었다.

천연 항균 추출물의 첨가가 가자미 식해의 품질 및 저장성에 미치는 영향 (Effect of Natural Antimicrobial Extracts on Shelf-life Extension and Quality Improvement of the Flounder Sikhe)

  • 본 연구에서는 꿀, 아로니아베리, 고추냉이, 프로폴리스, 후코이단 에탄올 추출물에 대한 항균 항산화 효능 실험과 가자미 식해에 추출물을 첨가했을 때 나타나는 저장성 변화에 대하여 확인한 결과는 다음과 같다. 다른 추출물들과는 달리 프로폴리스 에탄올 추출물은 B. cereus, S. aureus, L. monocytogenes에서 생육저해가 나타났고, 폴리페놀과 플라보노이드와 같은 항산화물질이 각각 91.18, $457.09{\mu}g/mL$로 가장 많이 함유하면서 가장 높은 항산화 활성을 나타내었다. 또한 저장성에서도 저장 15일까지 pH 변화가 6.04-5.39로 가장 적었으며, VBN 함량 24.73 mg/100 g 및 총균수까지 가장 낮게 나타나 가장 우수한 저장성을 나타내었다. 이것으로 볼 때, 병원성균에 대한 항균성 및 항산화성이 가자미 식해의 저장성에 큰 영향을 미치는 것으로 판단된다. 아로니아베리, 고추냉이, 후코이단에서 또한 대조군과 비교해 볼 때 저장성 효과가 나타났다. 하지만 아로니아베리에서 Salmonella Typhimurium에서의 항균력이 나타났으며, 폴리페놀 함량 및 플라보노이드 함량이 각각 61.20, $197.00{\mu}g/mL$로, 고추냉이 및 후코이단에 비해 높은 함량을 나타내었는데 저장 15일까지의 pH 변화와 VBN 함량 및 총균수를 비교 분석한 결과 유의적으로 큰 차이를 나타내지 않았다. 이것으로 보아 항균성 및 항산화성이 저장성 향상과 관련되어 있긴 하지만, 에탄올 추출물들의 추출용매의 종류나 추출 방법, 유기산에 미치는 영향이나 단백질 변성, 발효에 미치는 영향 등 다른 기작으로 인하여, 저장성 향상에 영향을 줄 수도 있다고 판단되며, 현재 아로니아베리나 고추냉이의 저장성에 대한 자료가 적은 상황이며, 추후 추가적인 연구를 통하여 각각의 저장성 향상에 영향을 미치는 천연 식자재 에탄올 추출물들의 key compound를 찾아낸다면, 천연 보존료로서의 산업적 활용에 큰 도움이 될 것으로 사료된다.

크릴간장 제조(製造)에 관한 연구(硏究) (Studies on the Processing of Krill Sauce)

  • 남대양(南大洋)에 다량 서식하고 있는 중요한 단백질자원(蛋白質資源)인 크릴을 보다 유효하게 식량(食糧)으로 이용하기 위한 방안의 하나로 크릴을 원료로 하여 그 자체에 존재하는 활성이 높은 자가소화효소(自家消化酵素)나 단백질분해효소(蛋白質分解酵素)로써 크릴간장 제조(製造)를 시도(試圖)하였다. 마쇄한 크릴에 동량(同量)의 물을 첨가하여 가수분해(加水分解)시킬 때의 최적가수분해조건(最適加水分解條件) 및 저장안정성(貯藏安定性)을 검토(檢討)하고 아울려 제품의 정미성분(呈味成分)을 분석(分析)하였다. 자가소화(自家消化)에 의한 경우와 bromelain, complex enzyme을 첨가한 시료(試料) 모두 $52.5^{\circ}C$에서 최대활성을 나타내었고, 분해시간(分解時間)은 3시간(時間)이 적합하였으며, 효소농도(醴素濃度)는 bromelain의 경우 0.5 %, complex enzyme은 5%가 가장 좋았다. 그리고 pH는 자가소화(自家消化)나 complex enzyme을 첨가하여 분해(分解)하였을 경우는 7.0${\sim}$7.5, bromelain을 첨가하여 분해(分解)하였을 때는 6.5부근에서 가장 활성이 높았다. 이와 같은 최적가수부해조건(最適加水分解條件)에서 크릴을 자가소화(自家消化)시킨 후 $100^{\circ}C$, 20 분간(分間) 불활성화한 다음 여과한 가수분해물(加水分解物)에 식염(食鹽)(10 %)과 벤조산(0.06%)이나 알코올(3 %)을 첨가하여 멸균한 유리병에 밀봉(貯減)한 결과 $37^{\circ}C$에서 한달간 저장(貯藏)하여도 화학적, 미생물적 및 관능적으로 안정하였다. 또한 관능적인 맛으로 보아 식염(食鹽) 10 % 중 5 % 정도까지는 나트륨염(鹽) 대신 칼륨염(鹽)을 대체 첨가할 수 있었다. 크릴간장의 단백질가수분해율(蛋白質加水分解率)은 자가소화법(自家消火法)인 경우 83.2%, bromelain 첨가구는 89.7%, complex enzyme 첨가구는 92.7 %이었다. 자가소화법(自家消化法), bromelain 또는 complex enzyme첨가에 의해 제조(製造) 된 크릴간장의 유리(遊離)아미노산(酸) 중 함량이 많은 것은 lysine, arginine, leucine, proline, alanine 및 valine으로서 전 유리(遊離)아미노산(酸)에 대해 각각 58.8 %, 56.0 %, 55.3 %를 차지하였다. 그리고 전엑스분망(分望) 소(素)에 대하여 유리(遊離)아미노산(酸)이 차지하는 비율은 각각 67.4 %,69.4%, 69.8 %이었다. 핵산관련물질(核酸關聯物質) 중 함량이 가장 많은 것은 hypoxanthine이었고, 다음이 5’-IMP였다. TMAO, betaine, 총 creatinine은 함량이 적었다. 관능검사결과(官能檢査結果) 자가소화(自家消化)시킨 크릴간장은 효소(酵素)처리한 것이나 재래식 콩간장에 비하여 품질 면에서 손색이 없고 저장성(貯藏性)이 좋은 크릴간장을 제조(製造)할 수 있다는 결론을 얻었다.

쿠폰 다운로드를 기준으로 하는 온라인 광고비 모델의 설계 및 분석 (Design and Analysis of Online Advertising Expenditure Model based on Coupon Download)

  • 기존의 인터넷 광고비 모델에는 CPM (Cost Per Mile), CPC (Cost Per Click), CPS (Cost Per Sales) 등이 존재하며, 특히 CPC 모델은 광고주와 미디어에게 모두 합리적이라는 평가를 받으며, 인터넷 광고 시장에서 높은 비중을 차지하고 있다. 그러나 CPC 모델 또한, 경쟁 사업자에 의한 과도한 광고비 부과나 부정한 광고 수익 등을 목적으로 하는 부정 행위가 발생할 수 있고, 사용자의 전환 의도 없는 광고물 클릭으로 인해 광고주에게 부당한 광고비가 부과될 수 있는 것이 사실이다. 이에 본 연구에서는 새로운 광고비 모델인 'CPCD' (Cost Per Coupon Download) 모델을 제안한다. CPCD 모델은 사용자가 단순히 광고물을 클릭하는 행동을 넘어 광고주가 제공하는 쿠폰을 다운로드 받았을 때 광고비가 부과되는 모델로서, CPC 모델과 CPS 모델의 중간 개념이라고 할 수 있다. 본 연구에서는 CPCD 모델의 설계 및 분석을 위하여 발생 가능한 시나리오를 제시하고, 프로세스 분석 및 관련 이슈에 대한 검토를 수행한다. 그리고 CPCD 모델에 참여하는 각 사업 참여자들에 대한 분석을 수행하고, 비용 시뮬레이션을 통해 CPC 모델과 CPCD 모델을 비교함으로써, CPCD 모델에 참여하는 광고주의 사업 참여 조건을 밝히며, 마지막으로 유비쿼터스 환경에서 CPCD 모델의 적용 가능성에 대하여 고찰한다.

초산 세척과 키토산 첨가에 의한 간장게장의 미생물학적 품질 향상 (Improvement of Microbiological Quality of Ganjang-gejang by Acetic Acid Washing and Addition of Chitosan)

  • 간장게장은 우리나라 전통 식품 중의 하나로 생 꽃게를 세척한 후 간장소스를 첨가하고 저온에서 숙성시켜 포장하여 상업적으로 판매하고 있다. 하지만, 간장게장 제조특성 상 열처리를 하지 않기 때문에, 간장게장의 미생물학적 품질을 유지하는데 어려움이 따른다. 따라서 본 연구에서는 원물 꽃게의 초기 미생물 저감화를 위해 여러 살균세척제의 효능을 비교하고 저장 중 간장게장 제품의 미생물학적 품질을 유지하기 위해 키토산의 항균 효능을 평가하였다. 먼저, 상온에서 생 꽃게를 염소수(50 mg/L), 과초산(40 mg/L), acetic acid (5%), lactic acid(5%)에 각각 10분간 침지시켜 일반세균수를 분석하였다. 결과를 살펴보면, 여러 살균세척제 중 5% acetic acid 세척이 생 꽃게에 존재하는 일반세균수를 약 1.5 log CFU/g까지 감소시켜 가장 효과적인 것으로 나타났다. 키토산 효능을 평가하기 위해 현재 상업적으로 제조되고 있는 간장게장(방법 1; 전해수 세척), 5% acetic acid로만 세척된 꽃게(방법 2), 5% acetic acid로 세척된 꽃게에 0.5%(방법 3)와 1%(방법 4)의 수용성 키토산이 첨가된 간장으로 제조된 간장게장을 각각 $4^{\circ}C$$12^{\circ}C$에서 최대 30일까지 저장하면서 일반세균수, 대장균군 및 대장균수를 측정하였다. $12^{\circ}C$에서 저장된 간장게장의 일반세균 수는 7일이 지났을 때 약 8 log CFU/g까지 증가하였다. $4^{\circ}C$의 경우, 1% 키토산이 첨가된 군(방법 4)에서 20일 동안 약 2.9 log CFU/g까지만 증가한 것으로 나타나 키토산 무첨가군(방법 1과2)과 0.5% 첨가군(방법 3)(4.2~4.5 log CFU/g)에 비하여 훨씬 효과적이었다. 본 결과에 따라, 생 꽃게를 5% acetic acid로 세척한 후 간장게장에 1% 키토산을 첨가하여 냉장온도에서 저장한다면 간장게장 제품의 미생물학적 품질 향상에 큰 도움이 될 것으로 여겨진다.

  • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70$\pm$1.32mmHg/min)compared to CF dialyzers(4.32$\pm$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The CF 15-11 HFDs which failed APD test did not show changes in the UFR compared to normal dialyzers indicating that APD is a more sensitive test than UFR test to evaluate the integrity of the fibers. 30527 T00401030527 ^x For quantitative measurement of reflected light from a clinical diagnostic strip, a prototype old reflectance photometer was designed. The strip loader and cassette were made to obtain more accurate reflectance parameters. The strip was illuminated at 45˚c through optical fiber and the intensity of reflected light was determined at rectanguLat angle using a photodiode. The kubelka-munk coefficient and reflection optical density were determined ar four different wavelengths(500, 550, 570 and 610nm) for blood glucose strip. The mice were divided into two groups. One group was injected with Photofrin II, intravenously (2.5mg/kg body weight). The other group received no Photofrin II. The purpose of this study is to identify major geometrical differences between Korean femurs 3nd others that we believe belong to Caucasians so that we would be able to get insights into the femoral component design that fits Asians including Koreans. We utilized computerized tomography (CT) images of femurs extracted from cadavers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. The results suggested that the femoral component suitable for Asians should be different from the currently-used components designed and manufactured mostly by European or American companies. 30537 T00401030537 ^x It is well known that nonlinear propagation characteristics of the wave in the tissue may give very useful information for the medical diagnoisis. In this paper, a new method to detect nonlinear propagation characteristics of the internal vibration in the tissue for the low frequency mechanical vibration by using bispectral analysis is proposed. In the method, low frequency vibration of f0( = 100Hz) is applied on the surface of the object, and the waveform of the internal vibration x (t) is measured from Doppler frequency modulation of silmultaneously transmitted probing ultrasonic waves. Then, the bispectra of the signal x (t) at the frequencies (f0, f0) and (f0, 2f0) are calculated to estimate the nonlinear propagation characteristics as their magnitude ratio, w here since bispectrum is free from the gaussian additive noise we can get the value with high S/N. Basic experimental system is constructed by using 3.0 MHz probing ultrasonic waves and the several experiments are carried out for some phantoms. Our department has developed an information system for routine hematology using down-sized computer system. We have used an IBM 486 compatible PC with 16MB main memory, 210 MB hard disk drive, 9 RS-232C port and 24 pin dot printer. The operating system and database management system were SCO UNIX and SCO foxbase, respectively. For program development, we used Xbase language provided by SCO foxbase. The C language was used for interface purpose. To make the system use friendly, pull-down menu was used. The system connected to our hospital information system via application program interface (API), so the information related to patient and request details is automatically transmitted to our computer. Our system interfaced with fwd complete blood count analyzers(Sysmex NE-8000 and Coulter STKS) for unidirectional data tansmission from analyzer to computer.   • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70${\pm}$1.32mmHg/min)compared to CF dialyzers(4.32${\pm}$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The purpose of this study is to identify major geometrical differences between Korean femurs 3nd others that we believe belong to Caucasians so that we would be able to get insights into the femoral component design that fits Asians including Koreans. We utilized computerized tomography (CT) images of femurs extracted from cadavers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. Then, the bispectra of the signal x (t) at the frequencies (f0, f0) and (f0, 2f0) are calculated to estimate the nonlinear propagation characteristics as their magnitude ratio, w here since bispectrum is free from the gaussian additive noise we can get the value with high S/N.
