한국 전통음식 통합검색 시스템 개발에 관한 연구 (A Study on the Development of a Korean Traditional Food Data Integration System)

  • This study is attempt to develop for Korean traditional food data integration system with food database. We are collected all kinds of traditional Korean foods, and referred to document and classified according to food types and cooking methods. Also we are classified 6 types of traditional Korean foods as follows: traditional common, royal, local, festival, rites, and Buddhist temple foods, And we integrate all of that databases for using a specialist or not. We researched for Korean traditional food by cooking type and planed organization for the standardized code and construction for database of Korean traditional foods. It was combined all of them, constructed for Korean traditional food data integration system. Korean traditional foods are classified with 10 provinces local foods, 18 festival foods by seasonal divisions reflecting traditional Korean holidays; and 9 classes rites foods. Korean traditional food using a traditional Korean food classification system was investigated a total of 7,289 kinds foods according to food types. those were 2,585 kinds traditional common foods, 142 kinds of royal foods, 2,137 kinds of local foods, 515 kinds of festival foods, 403 kinds of rites foods, and 1,507 kinds of Buddhist temple foods. And Korean traditional foods included 980 kinds of main dishes, 4,456 kinds of side dishes, 873 kinds of tteok lyou, 515 kinds of hangwa lyou and 465 kinds of emchong lyou. It is therefore recommended that knowledge of traditional Korean foods be preserving and develop their excellence and to further studies.

부산의 전통.향토음식의 현황 고찰 (A Rearch of Traditional & Native Local Foods in Busan)

  • Busan is an underdeveloped region in food culture, though it has geographically convenient conditions of location to make good use of marine products from the sea and the river, a variety of grain and vegetables, and forest products. Thus, in this research, I studied the traditional and local native foods of Busan, focusing on there origins and the backgrounds of their development. There are many traditional and local native foods in Busan, Pajun, Macguli, Jaechupguk, Gupoguksoo and etc. For the development of food culture of Busan, We will keep researching its traditional and local native foods and try to form a new pattern of food culture, making the adventage of an international trading city.

담양권 대나무 이용 향토음식에 관한 연구 (A study on the redeveloping traditional foods with bamboo in Damyang)

  • Damyang is famous for the bamboo and various foods. It is urgently needed that native foods in this area are studied and modernized. Developing new foods and redeveloping local economy. Bamboo shoots can be raw materials for kimchi, canned goods, salted goods, Korean cookies, bread, tea, beverage, and so on. This study aims to invent new traditional foods using local product such as bamboo shoots will contribute to boost the recipe. to explore the new method of production and to modernize the traditional dishes. In the final analysis, economic and cultural consideration would be attached in this study.

광주.전남 전통 음식을 연계한 농촌 관광 프로그램에 관한 연구 (On the Programs of Green Tourism Involving the Traditional Cuisine of Gwangju/Chonnam Provinces)

  • The purpose of this paper is to explore the possibility that green tourism involving traditional local foods could help reinvigorate local economy. The author examines some examples of developed countries to develop tour programs of the rural community and systematizes the local cuisine of Gwangju and Chonnam provinces. The source materials for this research include the data from the Office of Rural Development and interviews with the people concerned in June to July, 2005. The author starts with the literature review of written documents from various sources including the government, the Chonnam local government, periodicals and the internet. It seems necessary that we develop green tours involving unique local cuisines. To that purpose, the author claims that a variety of programs should be developed; (i) a public demonstration of traditional local foods, (ii) a hands-on experience program in which people can learn and cook by themselves, (iii) a tasting program of organic food and chemical-free produce, (iv) a program developing well-being food, and (v) lectures on healthy foods. The development of such green tours connected with the local cuisine will help vitalize the local economy and maintain tradition of the local cuisine.

전북지역 대학생의 전라북도 향토 음식에 대한 인식과 의식에 관한 연구 (Perception and Concerns Regarding Jeollabuk-do Local Foods among University Students in Jeollabuk-do)

  • 'Local food' is defined as food that has been cooked using local specialities or food prepared with the application of special cooking method associated with a particular locale. In Korea, much of what is considered 'traditional food' is derived from local foods. Therefore, much attention has recently been focused on the role of local foods in terms of the development of Korean traditional foods. The primary objective of this study was to characterize the perception concerns regrading Jeollabuk-do local foods held by university students in Jeollabuk-do, a province which is famous for its delicious local foods. The majority of students felt sympathy toward the succession and development of Jeollabuk-do local foods and generally appeared to feel that Jeollabuk-do local food was representative of a vital cultural heritage. Summing up answers to questions regarding the reasons for the succession and development of local food in Jeollabuk-do, it seems clear that in order to augment the popularity of Jeollabuk-do local foods, a variety of schemes should be implemented rather than any specific strategy.

울산향토음식의 대중화 및 관광상품화를 위한 중요도와 만족도 연구 -울산시민을 대상으로- (A Comparison of the Importance and Satisfaction for the Popularization and Merchandising of Local Foods in the Ulsan Area)

  • The purpose of this study was to gather useful information for establishing an efficient marketing direction by investigating the performance (satisfaction) and importance for the quality, popularization and merchandising of local foods in the Ulsan area. A questionnaire was answered by 500 citizens over 16 years old living in the Ulsan area. The study data were analyzed by Importance-Performance Analysis method(IPA), frequency analysis, T-test, and ANOVA. The analysis of the quality attributes of local foods for tourist merchandising showed that importance was generally higher than performance. 'Sanitation', 'taste', 'freshness', 'healthfulness', 'nutrition' and 'service' were revealed to be significant ones in the quality attributes. The respondents thought that a lot of emphasis needs to be placed on 'generalizing and globalizing local cuisine', 'passing down traditional recipes','hosting various cultural events related with traditional foods', and 'increasing the number of restaurants specializing in local traditional foods'.

영주 지역 향토음식의 인지도 분석 및 개발방안 (Study on Recognition and Development of Native Local Foods in the Young-ju Area)

  • This study was conducted in order to better understand the local and specialty foods of the Yeong-ju region. This study provides basic data for new menu development and commercialization. The results of 384 surveys, which were conducted to determine traditional rice cake production methods and their traits, were analyzed. Samgyetang was ranked top in the survey on recognition, public interest, and frequency of the local foods. Dakjuk was ranked second, followed by Baechujeon and Bopguk, in order. The levels of recognition and preference of specialty foods were in the order of hasuo, peach, apple, and meat. Among the answers in the survey on the popularization and commercialization of local foods, changing of the cooking style for younger generations' taste was considered to be the most important. Holding events to promote regional specialty foods and initiate the public to traditional cooking styles were listed sequentially by importance. The survey results show that promotion of local foods through education, and as well as incorporation of new ingredients are both highly effective ways to commercialize local foods for tourism. The results also indicate that taste, nutrition, and appearance of food should be considered in order to improve quality.

전라북도 향토음식의 조리법 표준화 및 영양분석 분석(제1보)-전주비빔밥, 콩나물국밥, 민물장어구이, 애저찜, 아귀찜- (Recipe Standardization and Nutrient Analysis of Local Foods of Cheollabuk-do Province(The First Report))

  • As the incidence of diet-related diseases increase, much attention has been focused of traditional foods. Traditional foods are ultimately based on local foods. However, there has been little study looking into the recipes and nutritional value of local foods. Therefore, the present study was designed to standardize recipes and analyze the nutrients of some representative local foods of Cheollabuk-do Province. Their foods were Cheonju pibimpap, kongnamulgukpap, minmuljangokui, aejeotchim and aguytichim. Test recipes for each food were prepared, being based on various information obtained from personal interviews, literature surveys of restaurant recipes. Then test recepe was subjected to sensory evaluation. All characteristics of each food were judged as "satisfactory". The analysis of nutrient composition revealed that in general energy content was low whereas protein content was as high as recommended reguirement in all foods except for kongnamulgukpap. Vitamin content was generally high but contents of calcium and iron were relatively low in all foods. Cheonju pibimpap was rich in dietary fiber. Dietary fiber content of Cheonju pibimpap was 16.6g per serving size. All foods contained considerable amounts of essential amino acids. The major fatty acide were oleic acid, linoleic acid and glutamic acid, oleic acid being the highest in terms of composition ratio.ion ratio.

한국 전통음식 통합 검색 시스템 구축을 위한 향토음식 연구 (A Study on the Korean Local Foods for the Construction of a Traditional Korean Food Data Integration System)

  • This study was conducted to construct database of Korean local foods, and to investigate the total kinds of local foods using a traditional Korean food classification system. A total of 2,137 kinds of local foods were investigated. The results for 10 local provinces are as follows. Seoul had a total of 116 kinds of local foods that were investigated including 13 main dishes, 41 side dishes, 22 kinds of ttdok lyou, 20 kinds of hangwa lyou, and 19 kinds of emuchong lyou. The Gyeonggi local foods totaled 209 kinds: 37 kind main dishes, 130 kind side dishes, 26 kinds of ttdok lyou, 7 kinds of hangwa lyou, and 9 kinds of emuchong lyou. The Gangwon local foods included a total of 198 kinds: 37 main dishes, 111 side dishes, 35 kinds of tteok lyou, 8 kinds of hangwa lyou, and 7 kinds of eumchong lyou. The Chungbuk local foods included a total of 123 kinds: 19 main dishes, 68 side dishes, 17 kinds of tteok lyou, 14 kinds of hangwa lyou, and 5 kinds of eumchong lyou. The Chungnam local foods totaled 185 kinds: 26 main dishes, 124, side dishes, 16 kinds of tteok lyou, 14 kinds of hangwa lyou, and 5 kinds of eumchong lyou. The Gyongbuk local foods investigated included 314 kinds: 52 main dishes, 170 side dishes, 52 kinds of tteok lyou, 21 kinds of hangwa lyoll, and 19 kinds of eumchong lyou. The Gyongnam local foods totaled 342 kinds: 63 main dishes, 234 side dishes, 16 kinds of tteoks lyou, 15 kinds of hangwa lyou and 14 kinds of eumchong lyou. The Jeonbuk local foods totaled 146 kinds: 25 main dishes, 85 side dishes, 18 kinds of tteok lyou, 14 kinds of hangwa lyou, and 4 kinds of eumchong lyou, The Jeonnam local foods totaled 309 kinds: 32 main dish, 207 side dishes,20 kinds of tteok lyou, 27 kinds of hangwa lyou, and 23 kinds of eumchong lyou. Finally, the Jeju local foods totaled 195 kinds: 36 main dishes, 123 side dishes, 19 kinds of tteok lyou, 10 kinds of hangwa lyou and 7 kinds of eumchong lyou.

  • Cheju's local foods are various but Island being geographically surrounded by water, sea-foods play a greater part in the diet that is quite different from the mainland Most of dishes are prepared from local foods and the marine products. That traditional food that have been developed through the lifestyle are now becoming the great interest to both foreign and domestic guests. In this research, we have concluded that developing a cheju's traditional food manu and local manu cooking method. 1. Improvement of cooking method. - development of cheju's traditional Food material and spice. 2. Use not raw fish - boiling, grilling, frying 3. Improvement of cheju's local Food's name. 4. Use the only Boneless fish. 5. taste reformation of Fermentation Food - Masking the TMA etc. 6. Use the many Spice in local food.
