우리나라 전통발효식품(傳統醱酵食品)의 연구개발동향(硏究開發動向) (R & D Trend of The Traditional Fermented Foods in Korea)

  • Korean traditional fermented foods have been diversely developed to enhance taste and flavor while preserving them on a long term basis. For those furthur utilization and development, more efforts to commercialize these products focusing to the consumer's needs should be proceded. In that sence, the fermented foods might be classified into the bioproduct (biofood) and the sterilized. The former defines the non-sterilized such as Kimchi, Jeotkal (fermented fishes), and Jang (fermented soybean products) so as to include various kinds of microorganisms, enzymes and the unknown bioproducts, while the latter defines the sterilized such as soysauce and vinegars proper to the commercialization. In this paper, present R & D status has been reviewed laying stress on Kimchi, Jeotkal and Jang and the mixed fermentation system by the microflora was suggested as a Korean style model for the future R & D direction in these fields.

한국 전통 발효식품 중의 Ethyl Carbamate 정량 (Fermentation Specific Carcinogen Ethyl Carbamate in Korean Traditional Foods)

  • Diet is generally accepted as one of the important factors in human cancer development. Ethyl carbamate has been associated with cancer for several decades and mainly found in the fermented beverages and foodstuff. The relationship between ethyl carbamate and the human health cannot be ignored especially in the areas where fermented foods consists of regular food consumption. To investigate the ethyl carbamate exposure level in Korean population, commercial fermented food samples were collected form local markets I Seoul area and home-made varieties were collected throughout the country. Following partial purification the concentration of ethyl carbamete was determined by GC/ MS. The concentration of ethyl carbamate ranged to 70 ppb in soysauce, to 10 ppb in soybean paste, and to 5 ppb in vinegars. Korean traditional alcoholic beverages showed small amount of ethyl carbamate. The estimated daily exposure of Korean population was 0~1900ng/day. It would be prudent to put efforts to minimize the formation of ethyl carbamate since the risk from the higher range exposure cannot be ignored.

시판 전통발효식품에 대한 대전지역 소비자들의 반응 및 구입현황 (Consumers' Response and Purchasing of Traditional Fermented Foods Marketed in Taejon)

  • A survey was conducted to investigate housewives' perception and consumption of Korean fermented foods marketed in Taejon. Most subjects know how to prepare Kimchi(seasoned and fermented vegetables), 65-67% can make Kochujang(fermented red pepper soybean paste), Toenjang(Korean style soysauce) and Jang-atchies(pickled basic side dishes), 56% can make Kuk-ganjang(Korean style coysauce), 45% can make Chonggukjang (fermented soybean) and 34% can make Jot-kals(salt-fermented fish products). With decreasing age(p<0.0001), not many other subjects could make other fermented foods besides Kimchi. The percentages of subjects buying fermented foods were 71.5% for Chin-ganjang(Japanese style soysauce), 51.7% Jot-kals, 27.1%Kochujang, 25.7% Chonggukjang, 20.1% Jang-atchies, 10.4% Toenjang, 5.9% Kuk-ganjang, and 3.8% Kimchi. the uounger in age, the higher the tendency to buy marketed Kimchies(p<0.05) and Kochujang(p<0.01). The resons for purchasing fermented foods were convenience (52.9%), lack of preparation knowledge(17.5%), lack of time for preparation(12.5%), and lack of space for food storage(8.2%). Subjects indicated that their reasons for mot buying were as follows : use of additives or unreliability with regard to manufacturing dates(45%), bad taste(21%), unsanitary treatment(16%) and to keep their indigenous taste(14%). They cosidered expiration dates, taste, crpteria and safety as the important standard in selecting marketed foods. Younger subjects insisted on the improvement of sanitary condition and partial change of taste to increase the consumption of fermented foods. However, older subjects thought it best to keep the taste original for more utilization of fermented foods.

즙장의 전통적 유형과 제조방법의 고찰 (A Review on Preparing Methods of Traditional Jeupjang)

  • Jeupjang like salted soybean paste with vegetable is the Korean traditional side order eating at table. Bibliographical studies on the Jeupjang in historic books such as Jeungbo-Sanlim-Keongjae(Re-edition of agriculture economic), Imwon- Keongjae Ji(Book of country economic) and Keuhap-Chongseo(Handbook of household) described the Korean food in the 18 century carried out. In addition, investigation and analytical studies on various home-made Jeupjang in present was accomplished. Jeupjangs were classified into three types according to variety preparing methods. Three types were fermented soybean paste (Doenjang) type using traditional Meju(soybean cake stater) for Jeupjang, salted pickle (Jangachi) type buried cucumber and eggplant into soybean paste or soysauce (Kanjang), and salted sauer kraut (Kimchii) type prepared vegetable in Jeupjang-Meju mash. The procedures for producing Jeupjang were Jeupjang-Meju making, and mixing vegetable with Meju powder into brine. At last process was fermented in horse wastes or grasses for 7-14 days. But manufacturing methods of Jeupjang before the 18 century were different in present. Nowadays glutinous rice, red pepper powder and various vegetable were used for domestic Jeupjang.

한국의 발효식품에 관하여 (Traditional Fermented Food Products in Korea)

  • Fermented foods available in Korea may be classified into four groups, namely, fermented soybean products, fermented cereal products, fermented vegetable products, and fermented fishery products based on raw materials used. The representative fermented foods based on soybean are Kanjang(soysauce), Doenjang(fermented soybean pastes), and Kochujang(red pepper added-fermented soybean paste). Such fermented products are made using Meju(functioning as a starter and prepared by fermentation of steamed soybean mash) as an essential ingredient, and used widely as a soup base and/or in seasoning side-dishes for everyday meals year around. Excepting Sikhae, all fermented products based on rice and other cereal grains are of alcoholic nature. Takju (Makgeolli) used to be made using rice as the major raw material, however, mainly due to the shortage of rice in recent years, other cereals, such as, barely, corn, and wheat flours are also used to replace rice today. Owing to such changes in the raw materials. the popularity of Takju has been somewhat reduced, yet it is still widely consumed in rural areas. Although Chungju is a popular rice wine with superior qualify over Takju, the amount consumed is considerably limited. The highest qualify rice wine, Bupju, in particular, is made by a low temperature fermentation using glutinous rice. Kimchi is an unique fermented vegetable product of long tradition in Korea. Although it was for consumption mainly in winter season serving as a source of vitamins, today it is widely used throughout the year. Except Kkakdugi and Dongchimi, all of the fermented vegetable products contain salted Korean cabbage as an essential item, while they abound in varieties depending on material composition and methods of processing, and also on seasons and localities Next to Kimchi in this category is Kkakdugi made of raddish in popularity and quantity consumed. The four groups of fermented food products described above are reviewed in some detail and evaluated in terms of their nutritional significances, processes and microorganisms involved. and their commercial potentials. Jeotkal (or Jeot) is a name given to all fermented products of fishery origin. A number of Jeot can be prepared by adding salt and allowing fermentation to the raw materials such as shrimp, anchovy octopus, clam, oyster, etc.

전통재래 간장으로부터 항진균 활성 B. velezensis SSH100-10의 분리와 그 항진균 물질의 특성 구명 (Isolation of Bacillus velezensis SSH100-10 with Antifungal Activity from Korean Traditional Soysauce and Characterization of Its Antifungal Compounds)

  • 향미가 우수한 100년 묵은 재래 간장에서 부터 강력한 항진균 활성(antifungal)균주를 분리 동정하여 Bacillus velelzensis SSH100-10으로 명명하였다. B. velezensis SSH100-10은 식품 위해 및 식품 변패곰팡이에 대한 항곰팡이 활성과 장류에 이취를 주는 산막효모 등에 대한 항효모 활성이 동시에 있으며, 강력한 단백분해활성을 나타내었다. NaCl 내염성도 우수하여 12% NaCl 농도하에서도 생육 48시간에 $A_{600}$에서 3.51의 생육도를 나타내었다. 또한 최근 Bacillus subtilis group 중 일부 균주에서 설사형 독소인 enterotixon을 나타내는 균주들에 대한 보고가 증가함에 따라, 안전성검증의 일환으로 enterotoxin 생성 여부를 조사하였을 때, 본 분리 균주는 enterotoxin 검지반응에서 음성을 나타내었다. B. velezensis SSH100-10이 생산하는 항진균 활성물질을 SPE, preparative HPLC, reverse phase-HPLC로 정제 후, MALDI-TOF-MS와 아미노산 조성 분석을 통하여 그 항진균 원인 물질이 $C_{14}$ iturin A와 $C_{15}$ iturin A 임을 구명하였다. 또한 B. velezensis SSH100-10의 배양상징액과 분리 정제된 항진균 물질 $C_{14}$ iturin A와 $C_{15}$ iturin A와 대조구로 시판되는 $C_{14{\sim}15}$ iturin A의 pH, 온도, 효소 안정성 실험을 통하여 B. velezensis SSH100-10은 pH, 열, 효소처리에 매우 안정한 iturin A 이외에도 pH에 불안정한 또 다른 구명되지 않은 항진균 물질을 생산함을 보고하였다. 본 연구에서 보고된 강력한 항진균 활성을 지니는 B. velezensis SSH100-10은 맛있는 발효과정의 종균으로서의 작용과 더불어 콩발효식품에서 유해요소가 될 수 있는 바람직하지 못한 미생물을 제어함으로서 콩발효식품의 안전과 위생수준을 개선할 수 있는 우수한 종균으로 활용될 수 있을 것이다.

Changes of Isoflavones and Fatty Acids in Eoyukjang, a Traditional Korean Fermented Soysauce Prepared under the Ground in a Pot or an Incubator

  • Eoyukjang is a traditional Korean sauce made of cooked soypaste or meju supplemented with fish and meats at least 1 year of fermentation period. Eoyukjang was recovered according to the traditional method and stored under the ground in a pot without plastic packaging (13G: 13 month fermentation under the ground) or in an incubator wrapped with plastic packaging (6I, 12I, and 18I: 6, 12, and 18 month fermentation, respectively). Distribution of isoflavones and fatty acids were monitored by high performance liquid chromatography (HPLC) and gas chromatography (GC), respectively. Total isoflavones in 13G, 6I, 12I, and 18I were 3.792, 0.387, 0.460, and $0.510{\mu}mol/g$, respectively. Samples of 13G had at least 8.24 times higher isoflavone contents than samples from 12I. Aglycones were the major isoflavones in eoyukjang and were found more than 92% in 13G and 39-63% in incubated samples. In fatty acid analysis, the ratios of unsaturated to saturated fatty acids from 13G were higher than those from 6I, 12I, and 18I. Traditional fermentation methods using a pot may allow more migration of air and moisture than samples wrapped with plastic packaging, which caused the difference in the distribution of isoflavones and fatty acids.

전통(傳統)고추장의 품질개량(品質改良)에 있어서 재래식(在來式) 및 개량식(改良式) 고추장 메주의 효과(效果) (Effect of Traditional and Improved Kochujang Koji on the Quality Improvement of Traditional Kochujang)

  • 우리나라 전통(傳統)고추장의 계승(繼承) 및 과학적(科學的)인 제조(製造)방법(方法)을 제시(提示)하고 그 품질(品質)을 개량(改良)하기 위하여 전라북도(全羅北道)지방(地方)의 전통적(傳統的) 고추장 제조법(製造法)에 의하여 메주가루를 메주식(式)과 제국식(製麴式)으로 제조(製造)하고 그 메주가루로서 전통적(傳統的) 원료(原料) 담금비율로 담금하여 90일간(日間)의 숙성과정중(熟成過程中) 온도(溫度), pH와 적정산도(適正酸度), 일반성분(一般成分), 질소성분(質素成分), 당분(糖分), 에틸알콜 및 효소력(酵素力)의 변화(變化)를 실험(實驗)하였으며 재래식(在來式) 및 개량식(改良式) 고추장 메주의 효과(效果)의 차이(差異)는 다음과 같다. 1. 아미노태(態) 질소함량(質素含量)은 개량식(改良式) 메주가루로 담근 고추장이 재래식(在來式) 메주가루로 담근 고추장보다 그리고 동일(同一)한 원료(原料)로 담글때는 조미원료(調味原料)로서 식염(食鹽) 만을 첨가(添加)한 것보다 간장과 식염(食鹽)을 첨가(添加)한 고추장에서 많았다. 2. 수용성(水溶性) 질소(質素), 암모니아태(態) 질소(質素)는 조미료(調味料)로서 간장과 식염(食鹽)을 첨가(添加)한 제국식(製麴式)에서 높았다. 3. 숙성기간중(熟成其間中) 환원당함량(還元糖含量)은 메주식 고추장이 제국식(製麴式)고추장보다 높았다. 4. 에틸알콜은 담금 직후(直後) 각(各) 시험구(試驗區)가 0.04% 였으나 숙성(熟成)이 진행(進行)됨에 따라 급격(急激)히 증가(增加)하여 $40{\sim}50$일간(日間) 숙성(熟成)되었을 때는 각(各) 시험구(試驗區)가 2.5% 이상이었다. 5. 총당함량(總糖含量)은 담금기간(期間)에는 각(各) 시험구간(試驗區間)에 큰 차이가 없었으나 성숙후기(成熟後期)에는 조미료(調味料)로서 간장을 첨가(添加)한 제국식(製麴式) 고추장에서 높았다.

어육장의 휘발성 향기 성분 특성 (Characterization of Volatile Components in Eoyuk-jang)

  • 어육장의 휘발성 향기 성분들을 용매추출을 이용하여 분리, 농축하였으며, GC-MS로 분석하였다. 총 36가지의 휘발성 성분들이 검출되었으며, 11개의 aliphatic hydrocarbons, 4개의 acids, 2개의 ketones, 5개의 phenols, 7개의 alcohols, 1개의 pyrazine, 4개의 pyrones와 furanones, 2개의 miscellaneous components 등으로 구성되어 있었다. 특히, acids인 butanoic acid가 높은 함량을 나타내었다. 어육장의 향기활성 성분을 규명하기 위해 용매추출을 이용하여 휘발성 성분들을 분리 후 향추출물 희석분석법으로 flavor dilution(FD) $factor(Log_3$ FD)를 구하였다. 이 결과 어육장에서 총 20종의 향기활성 성분들이 확인되었다. 이 중 군덕내의 특성을 지닌 butanoic acid와 구운 감자향을 지닌 methional이 높은 FD factor를 보였으며, 이들 성분 외에 높은$(Log_3$ FD>7)를 나타내는 성분들로는 2-methyl-2-butanol(soysauce-like), 3-hydroxy-2-butanone(buttery), 2-furanmethanol(burnt sugar-like) 등이 있었다. 본 실험에서는 어육장을 시료로 하여 휘발성 향기성분 및 향기활성 성분들을 GC-MS 및 AEDA법에 의해 분석함으로 어육장 특유의 향미특성을 규명하였다. 이는 앞으로 고급화된 장류 제품으로서는 물론, 다양한 식품에서 조미소재로의 어육장의 활용도를 높이는데 기여할 것이다.

한국전통 식품의 원료인 메주와 누룩에서 분리된 황곡균에 대한 연구 (Studies on the Yellow Fungal Isolates (Aspergillus species) Inhabiting at the Cereals in Korea)

  • The yellow fungal isolates inhabiting at the cereals (Hwang-Kuk, HK-fungi) were widely collected from the mejus and nuluks in Korea; the meju is a raw material for Korean traditional foods for soysauce and soypaste, and the nuluk is a raw material for Korean traditional rice wine. These isolates, well known as an Aspergillus oryzae producing amylase for Korean rice wine or producing protease for soybeans, were compared with Aspergillus species known. All isolates were microscopically observed to be a species of A. oryzae or its related, but to be difficult to be identified. Thus, RAPD-DNA techniques were applied for these isolates and analyzed with nummerical values using NT-system, or Ecological programs or Factorial analyses. Several common bands of RAPD-DNA in the 28 isolates were synthesized with the different OPD primers and speculated to be used for identification of HK fungi. The HK-fungi isolated were revealed to belong to the group of A. flavus previously defined. Particularly, the isolates collected from mejus were analyzed to be more closed to A. flavus, The species of A. flavus, A. oryzae and A. sojae were grouped at the values lower than those indicating the diversity of species. In other words, these three fungal species were not distinguishable and all isolates known as a HK-fungus were very closed to A. flavus, All isolates were not diversified at groupings of RAPD-DNA, and considered to be not the natural flora at the mejus or nuluks.
