전통 방법으로 제조한 소주 술덧의 품질 특성 (Quality Characteristics of Soju Mashes Brewed by Korean Traditional Method)

  • 증류식 소주를 안동소주식, 문배주식, 이강주식, 진도홍주식의 전통 방법으로 제조하여 숙성 과정 중 술덧의 pH, 총산, 환원당, 총당, ${\beta}-amylase$, 에탄올, 고형분 등의 성분을 조사하였다. 술덧이 숙성됨에 따라 에탄올은 증가 경향을 보여 발효 16일에 $8.8{\sim}11.2%$까지 증가하였다. 발효 16일 후 술덧의 알콜 함량은 덧술이 첨가된 구가 첨가되지 않은 구에 비하여 높게 나타났다. 총산은 $0.59{\sim}1.10%$까지 증가하였으며 시험구 중 안동소주식 담금 시험구에서 가장 많았다. 총당은 감소경향을 보여 16일에 $6.76{\sim}8.94{\%}$였고 이강주식 담금 시험구가 가장 적었다. 환원당은 담금 직후에는 $6.42{\sim}0.62%$로 안동소주식 담금 시험구가 가장 많았고 발효 16일에는 $0.30{\sim}0.09%$로 감소하였으며 시험구간에 차이가 없는 편이었다. 토고리를 변형하여 제작한 증류장치로 술덧을 증류하여 얻은 소주의 성분을 보면 에탄올 함량은 $35{\sim}40%$로 나타났고, 술덧보다 소주에서 pH가 다소 상승되었고 총산은 감소하였다. 시험구간에 이들 성분의 차이는 거의 없었다. 술덧 중의 당분, 고형분은 소주에서는 검출되지 않았으나 후숙이나 약재 통과의 소주에서는 당분, 고형분이 다소 검출되었다.

유기산 및 효소적 전처리를 이용한 다시마에서 바이오 에탄올 생산 (Organic Acid and Enzyme Pretreatment of Laminaria japonica for Bio-ethanol Production)

  • 본 연구는 갈조류인 다시마의 당 성분 함량에 대한 분석과 효소 및 유기산 가수분해물을 이용한 생물학적 바이오 에탄올 생산에 대해 연구하였다. HPLC를 이용한 당 성분 분석 결과 alginate가 total sugar의 65.99%로 가장 많은 것으로 확인되었으며, laminaran과 mannitol이 각각 6.24, 27.77%로 나타났다. 1.5% acetic acid를 이용하여 $121^{\circ}C$, 60 min 동안 가수분해 결과 최대 1.874 g/L의 환원당이 생성되었으며, ascorbic acid의 경우 2.0%에서 최대 4.291 g/L의 환원당이 생성되는 것으로 나타났다. Alginate lyase와 laminarinase와 같은 효소를 이용한 가수분해에서 환원당 생성량은 최대 2.219 g/L였다. 다시마 가수분해물을 이용한 에탄올 발효 결과 유기산을 처리했을 때에는 에탄올 생산량이 오히려 감소하는 것으로 나타났으며, alginate lyase와 laminarinase를 혼합처리 했을 때 에탄올 생산량이 1.26 g/L로 가장 높았다.

함초의 부위별 항산화 및 항혈전 활성 (Anti-oxidation and Anti-thrombosis Activities of Different Parts of Salicornia herbacea L)

  • 함초를 이용한 고부가가치 기능성 음료 개발 연구의 일환으로, 성숙한 함초의 잎, 줄기, 씨를 대상으로 ethanol 추출물을 조제하고 이들의 항산화 및 항혈전 활성을 평가하였다. 추출물의 총 폴리페놀 함량은 잎 > 줄기 > 씨의 순으로, 총 플라보노이드 함량은 잎 > 씨 = 줄기 순으로 나타났다. 총당 및 환원당 함량은 잎과 줄기에서 유사하게 나타났으며, 씨 추출물은 잎 추출물의 1/10 정도의 낮은 총당 및 환원당 함량을 나타내었다. 추출물의 항산화 활성을 RC50로 계산한 결과, DPPH 음이온 소거능, 환원력과 nitrite 소거능은 잎 > 씨 > 줄기, ABTS 양이온 소거능은 잎 = 씨 > 줄기 순으로 나타났다. 항응고 활성 평가결과, 씨 추출물에서 우수한 트롬빈 저해, 혈액응고인자 저해가 나타났으며, 모든 추출물에서 혈소판 응집저해활성 및 인간 적혈구 용혈활성은 나타나지 않았다. 본 연구는 함초 잎과 씨를 이용한 항혈전제 개발이 가능함을 제시하고 있다.

밤의 품질안정성에 대한 저장 온.습도 조건의 영향 (Effect of Storage Temperature and Humidity on the Quality Stability of Chestnuts)

  • Chestnuts(Castanea cretana, Eunki) were used for quality evaluations from the physiological and physicochemical points of view during storage under different temperatures and relative humidities for 8 months. Quality criteria included spouting, rotting, weight loss, and the changes in moisture, total sugar, reducing sugar, and total vitamin C of the stored sample. Sprouts(roots) were developed in about 2 months in all stored samples which had been mixed with sawdust(50% moisture) and stored under the conditions of 2∼25$^{\circ}C$ and 62∼95% RH. The sprout development was more significant in the storage temperature of Pit(9${\pm}$6$^{\circ}C$, 80${\pm}$5% RH, PT)and room(16${\pm}$7$^{\circ}C$, 85${\pm}$10% RH, RT) than low(3${\pm}$1%, 80${\pm}$5% RH, LT)and ambient(14${\pm}$11$^{\circ}C$, 67${\pm}$5% RH, AT). The rates of rotting and weight loss were appreciable in the order of PT, AT, RT and LT, and those of LT were 1∼2%. The use of wet sawdusts resulted in the increase of moisture contents in stored samples, thereby causing the rotting phenomena. Some chemical components of stored samples were found liable to the changes according to storage conditions, that is; total sugars showed a decreasing tendency along with a temporary increase during storage, and both reducing sugar and vitamin C were similarly accumulated in the samples stored at low temperature conditions. The results indicated that long-term storage of chestnuts will be possible in either cases of the application of low temperature following sprout-inhibition treatment or the use of lower temperature than 0$^{\circ}C$ to suppress its sprouting during storage.

반응표면 분석법에 의한 흑마늘 추출물이 첨가된 간장의 제조 조건 설정 (Optimization of Soy Sauce Production Conditions with Black Garlic Extract by Response Surface Methodology)

  • Purpose: The central composition design was used to optimize the mixture conditions of black garlic extract. Methods: The response surface methodology (RSM) was carried out from concentration of black garlic extract ($X_1$) and the amount of the black garlic extract ($X_2$) as independent variables, and salts ($Y_1$), reducing sugars ($Y_2$), the content of total phenolic compounds ($Y_3$) and ABTS radical scavenging activity ($Y_4$) as dependent variables. We confirmed the conditions that salinity was minimized and reducing sugar, total phenolic compounds and ABTS radical scavenging activity had maximum values through the response surface analysis. Results: All results had saddle points in originally set up conditions hence, ridge analysis was carried out for narrowing the experimental area. The minimum salt concentration was 16.03% at black garlic extract concentration of $14.84^{\circ}brix$ and contents of 9.26%. Reducing sugar content had maximum of value 7.30 g/mL at $24.58^{\circ}brix$ and contents of 8.08%. Total phenolic compounds contents and ABTS radical scavenging activity had maximum values at black garlic extract concentration of 20.33 and $25.02^{\circ}brix$. The results indicate that addition of black garlic extract contributed to increased reducing sugar, phenolic compounds contents and antioxidant activity of the soy sauce, but the salt concentration was not significantly affected. Conclusion: Based on the results of RSM, the optimum ranges of addition conditions for lowering the salt concentration and, increasing the sensory and functional ability of soy sauce were as follows: black garlic extract concentration of $15-25^{\circ}brix$ and content of 7.8-9.3%.

Malonic acid를 이용한 전처리가 꼬시레기의 가수분해에 미치는 영향 (Effect of Malonic Acid-Catalyzed Pretreatment on the Hydrolysis of Gracilaria verrucosa)

  • 본 연구에서는 해양 거대조류 중 홍조류에 속하는 꼬시레기(Gracilaria verrucosa)로부터 malonic acid를 사용하여 열수 전처리 조건(전처리 온도, 촉매 농도, 고액비, 전처리 시간)에 따른 전처리와 효소가수분해를 통한 바이오슈거(환원당) 생산 가능성을 조사하였다. 300 mM malonic acid, 1:20 고액비 조건에서 $130^{\circ}C$에서 60분간 전처리를 수행하여 49.2%의 환원당 수율을 얻었다. 전처리 반응 후 이어진 효소 가수분해를 통하여 64.5%의 수율을 확보하였다.

병 포장 갓김치의 항암성에 대한 연구 (Anticancer Effect of Bottled Mustard Leaf Kimchi during Fermentation)

  • Mustard Leaf Kimchi (MLK) is a traditional fermented Korean vegetable food. This study investigated the anticancer effect of partial vacuum treatment of MLK packed in glass bottles during fermentation. Prepared vacuum treated mustard leaf Kimchi (VM) and non-vacuum treated mustard leaf Kimchi (CM) were fermented at $5^{\circ}C$ for 8 weeks. The initial pH and total acidity were approximately 5.7 and, 0.36%, respectively. During fermentation, pH decreased and total acidity increased. Initial contents of reducing sugar and salt were 2.1% and were 2.7 mg/g, respectively. Reducing sugar gradually decreased during fermentation. Growth of cells from mouse cancer cell lines (L12l0 and P338D1) and human cancer cell lines (HepG2 and WiDr) were all decreased by MLK. VM and CM did not affect growth. More potent growth inhibition effects were exhibited by water versus hexane extracts of MLK, and by MLK fermented for 3 weeks versus 6 weeks. However, when applied to control NIH/3T3 cells at the same concentrations, MLK exhibited no cytotoxicity, and cell growth was unimpeded.

양파 김치류의 숙성중 이화학적 성분 및 세균수의 변화 (Changes in Physicochemical components and Bacterial Count during the Fermentation of Onion Kimchi)

  • To develop a functional Kimchi utilizing onion, 5 different Kimchi with onion used as a major ingredient were formulated. The changes in pH. titratable acidity, reducing sugar. total bacterial count, and the number of lactic acid bacteria in the process of fermentation were studied A. onion Kimchi Control. B : onion Kimchi added with oyster, C : onion Kimchi added with salted shrimp, D : onion Kimchi added with oyster, cucumber, and a bit of radish, E : onion Kimchi added with salted shrimp, cucumber, and a bit of radish. pH of onion Kimchi decreased during storage, but titratable acidity increased. The pH values of onion Kimchi were not significantly different among groups, the changes in pH during fermentation were the lowest in A, and changes in B and D were lower than those of C and E. Salt concentration tended to decrease during the fermentation process, and the changes in salt concentration were lower in D and E than in B and C. Reducing sugar content maximized at 4 days of fermentation and decreased after 12 days. The number of lactic acid bacteria increased during first 4 days of fermentation and decreased after 12 days. Total lactic acid bacterial count were the most lowest in A.

메꽃(Calystegia japonica)의 영양학적 특성 (Nutritional Characteristics of Calystegia japonica)

  • In the present study, the proximate composition, sugar, minerals, total phenolic and flavonoid compounds, and amino acids in Calystegia japonica (C. japonica) were measured to determine if it can be used as a nutritional and functional material for the development of valuable foods. The mean crude protein, fat, and ash contents of the leaves were 5.75, 2.46, and 7.77%, respectively. The soluble-protein contents of the leaves and roots were 146.78 and 33.67 mg%, respectively. The reducing-sugar and free-sugar contents of the leaves were 682.70 and 166.00 mg%, respectively, and those of the roots were 2,934.89 and 37.70 mg%. The mineral content of the leaves was 3,122.13 mg%, and that of the roots was 1,540.85 mg%. The three elements Ca, K, and Mg were very rich in all their parts, with minerals accounting for 96-99% of their total mineral contents. The total phenolic compound of the leaves was 3,028.89 mg%, and the total flavonoid compound was 382.67 mg%. The phenolic and flavonoid compounds in the leaves were more than 7.6 times those in the roots. The free-amino acid levels in the leaves and roots were 2,467.15 and 1,334.81 mg%, respectively. The results of the comparison of the leaves and roots of C. japonica showed that the leaves had a rich proximate composition consisting of minerals, total phenolic and flavonoid compounds, and amino acid. This suggests that C. japonica leaves are potentially useful sources of functional and favorite foods and nutraceuticals.

아로니아 첨가 비율에 따른 프리저브 잼의 품질 특성 및 항산화 활성 (Quality characteristics and antioxidant activities of jams according to varying ratios of aronia)

  • 본 연구는 생리활성물질이 풍부한 아로니아를 활용하여 가공식품 개발에 필요한 기초 연구 데이터를 제공하기 위해 아로니아와 설탕의 배합비율별 프리저브 잼을 제조한 뒤 그 품질 특성과 항산화 활성을 조사하였다. 배합비율에 따라 아로니아의 함량이 낮아질수록 당도는 높아졌으며 수분함량은 낮아지는 경향을 나타내었다. 강도와 최대응력은 아로니아 함량이 줄어들고 설탕의 함량이 증가할수록 높은 값을 나타내었다. 잼의 비율별 항산화 활성은 아로니아 함량 70%에서 DPPH radical 저해율이 가장 높았다. 총 페놀 함량, TEAC, FRAP, ORAC의 값은 모두 아로니아 함량에 따라 비례적으로 증가하는 경향을 나타내었다. 관능평가에서 단맛과 식감이 모두 강하다고 평가된 아로니아 함량 30%에서는 오히려 종합적 선호도에서 가장 낮게 나타났으며 아로니아 함량 40%에서 가장 높은 선호도를 나타내었다. 본 연구에서는 아로니아와 설탕 배합비율에 따른 품질 특성과 항산화 연구를 진행하였으며 국산 아로니아를 활용한 제품의 개발에 기초 자료로서 활용될 것으로 기대된다.
