백일주 양조중 알코올, 유리아미노산, 비휘발성유기산 및 지방산조성의 변화 (Changes of Alcohol, Free Amino Acid, Non-Volatile Organic Acid and fatty Acid Composition during Brewing of Backilju)

  • Changes in taste components of Backilju, an traditional alcoholic beverage of Korea, were investigated. Ethanol(17%) was the most abundant, and then isoamylalcohol(23mg%) and methanol(8mg%) were also detected in a small amount in Backilju. Major non-volatile organic acids were lactic and malic acid, followed by citric, fumaric and succinic acid. Arginine, phenylalanine and glutamic acid were major free amino acids and essential amino acid content was 230∼560 mg%, which was 45∼48% of total free amino acids. The major fatty acid of total lipid was palmitic acid(37∼43%). It has been found that the Backilju contained more free amino acids and alcohols than other Korean Yokjus.

Constituents Analysis of Amino Acid and Antioxidative Activity from Cultivated Callus and Rhizome in Rhodiola sachalinensis

  • The material of Rhodiola sachatinensis collected from an alpine region of the west-northern China. For analysing the effect, 1 used Rhodiola sachatinensis's rhizome and cultivated callus. In EtOAc, BuOH, $H_2O$ separation the plant showed strong antioxidative activity, but not in Hexane. The radical scavenging effect of EtOAc(RC$_{50}$,35(g), BuOH(RC$_{50}$, 43(g), H$_2$0(RC$_{50}$, 50(g) fraction and MeOH extract(RC$_{50}$, 50(g) of the Rhodiola sachatinensis was comparable to that of synthetic antioxidant BHA(RC$_{50}$, 14(g) and $\alpha$-Tocopherol(RC$_{50}$, 12(g). Total amino acid concentration of plant of In nature condition were 18,009ppm, and major components were arginine, glutamic acid, aspartic acid and valine. The ratio of essential/total amino acid on plant of In nature condition was 46.93%. Total amino acid concentration of callus of In vitro condition were 32,435ppm, and major components were valine, histidine, lysine and leucine. The ratio of essential/total amino acid on callus of In vitro condition was 56.07%. was 56.07%.

Assessment of Ruminal and Post Ruminal Amino Acid Digestibility of Chinese and Canadian Rapeseed (Canola) Meals

  • Two rapeseed meal samples (Sample A, hybrid 5900 and sample B, double low rapeseed No.4) obtained from China and one Canola meal sample obtained from a local crushing plant in Canada were used to investigate the amino acid degradability of rapeseed/Canola meal in rumen and amino acid digestibility of ruminal incubation residues by precision-fed rooster bioassay. Results show that in ruminal incubation the degradation rate of non amino acid nitrogen in crude protein is higher than that for amino acid nitrogen in crude protein, the results also suggest that the degradation rate of amino acid nitrogen in Chinese rapeseed meal sample B was lower than that for Canadian Canola, but that in Chinese rapeseed meal sample A is much close to that for Canadian canola meal. For all amino acids the digestibility of the bypass or residual protein as measured by the precision-fed rooster bioassay tended to be lower for Chinese rapeseed meal sample A than for sample B or Canadian canola meal which had similar digestibility values. However following a calculation of total amino acid availability, involving the digestibility of amino acids in the rumen and rooster bioassay the results are less contradictory. Results indicated that in traditional roasting-expelling process, heat treatment, especially dry heat treatmeat could decrease amino acids degradability in rumen of rapeseed/canola meal, but also may decrease total availability of amino acids of rapeseed/canola meal.

  • The aims of this study were to investigate various components and their physiological activities of Sarcodon aspratus (Berk.) S. Ito which grows wildly in Korea, belonging to the family Thelephoraceae. The analysis of the powered carpophore of this fungus by TLC and an amino acid autoanalyzer revealed that it contained twenty-one free amino acids and that twenty­two total amino acids were identified in its acid hydrolysate. These amino acids were also quantified.

비중선별(比重選別) 현미중(玄米中) 유리 Amino산 함량 (Free amino acids of brown rice in relation to specific gravity grade)

  • The contents of free amino acids in deembryod brown rice of two varieties were investigated by amino acid autoanalizer in relation to specific gravity grade. The analytical methods of free amino acid were also discussed. 1) The lower the specific gravity of the unhulled rice the higher the content of total free amino acids in the deembryod brown rice, and the similar trend appears to hold on each amino acids. 2) Main free amino acids were serine+asparagine, glutamic acid, aspartic acid, alanine and valine, and maximum values of them were 7.3, 5.1, 4.0, 3.4, 0.9mg/100g rice, respectively. They consist about 85% of total free amino acids in most cases. 3) The contents of soluble nitrogen and free amino acids appear to be lower in high protein variety (IR 667) than in low protein variety (Jinhung). The percentage of free amino acid nitrogen to soluble nitrogen, however, appears to be higher in high protein variety (IR 667). 4) Alanine was much lower than aspartic acid in IR 667 having Indica blood while alanine appears to be higher than aspartic acid in Jinhung (Japonica rice) suggesting varietal difference in amino acid metabolism. 5) Threonine peak was overlaped with glutamine, and serine was with asparagine in this study.

식이 단백질의 종류와 함황아미노산 함량이 성장기 쥐의 골밀도에 미치는 영향 (The Effect of Dietary Protein Source and Sulfur Amino acid Content on bone Metabolism in Growing Rats)

  • This study was performed to evaluate the effect of dietary protein source and sulfur amino acid content on bone metabolism in ra. Thirty male rats (body weight 145$\pm$2g) were divided into three groups. The rats in the first group were fed on casein 20% diet as animal protein source and those in the second group were fed on soy 20% diet as plant protein source. Sulfur amino acid ratio of these group was 1.07:1. The rats in the third group were fed on soy 20% diet and the sulfur amino acid were supplemented with the amount contained as much in the soy 20% diet. All rats were fed on experimental diet and deionized water ad libitum for 9 weeks, The total body, spine, femur bone mineral density and bone mineral content were measured using Dual Energy X-ray Absorptiometry Calcium, phosphate, pyridinoline, creatinine in urine and calcium, phosphate, alkaline phosphatase, osteocalcin in serum were measured. During the experimental period, plant protein (soy protein) group had a lower urinary Ca excretion, urine pyridinoline & crosslinks value and had a higher Ca efficiency in total bone and femur bone mineral density than animal protein (casein) group. There were no significant differences in serum calcium, phosphate, alkaline phosphatase and osteocalcin among the three groups of the rats. The findings from this study demonstrated that plant protein (soy protein) is beneficial of bone mineral density because it had a higher Ca efficiency in total bone and femur bone mineral density than animal protein (casein). However, the supplementation of sulfur amino acid on soy results were consistent with prior studies that dietary sulfur amino acid load had a negative effect on calcium balance. The rats fed sulfur amino acid supplementation diet increased urinary calcium excretion and decreased calcium efficiency for total and femur mineral density. 토양부식산(土壤腐植酸)의 형태별(形態別) Amino 산(酸) 함량(含量)에 관(關)한 연구(硏究) (A Study on the Amino Acid Components Soil Humus Composition)

  • 토양부식산(土壤腐植酸) 형태(形態)(Rp, B, A, P)별(別) 부식산(腐植酸)과 fulv 산중(酸中) amino 산(酸)의 함량(含量)과 조성(組成)을 규명코자 부식산(腐植酸)과 fluv산(酸)을 각각(各各) 분수(分雖) 정렬(精裂)하여 분석(分析)해 얻은 결과(結果)를 요약(要約)하면 다음과 같다. 1. 부식(腐植)의 조방(粗放) 전부식량(全部植量)$(H_T)$, 부식산량(腐植酸量)(a), fulv 산량(酸量)(b), 색조계수(色調係數)$({\Delta}logK)$$Rp{\rightarrow}B{\rightarrow}A{\rightarrow}P$형(型)으로 갈수록 적어졌고 전질소(全窒素) 전탄소(全炭素)도 같은 경향이었다. 2. 부식산중(腐植酸中) amino 산(酸)의 함량(含量) 및 조성(組成) 가. 부식산(腐植酸)의 형태별(形態別) 전(全) amino 산(酸)의 함량(含量)은 침엽수(針葉樹) 임토양(林土壤)에서는 Rp>B>A>P형(型)의 순(順)이었으나 활엽수(闊葉樹) 임토양(林土壤)에서는 P>A>Rp>B형(型)의 순(順)이었다. 전(全) amino산(酸)과 부식조성(腐植組成)과의 관계(關係)에서 침엽수림토양(針葉樹林土壤)에서 전탄소(全炭素)${\Delta}logK$와는 정(正)의 상관(相關)이 있었고 C/N율(率)과는 부(負)의 상관(相關)이 있었다. 활엽수림토양(闊葉樹林土壤)에서는 유의상관(有意相關)이 없었다. 나. 형태문(形態問) 산성(酸性), 중성(中性), 염기성(鹽基性) amino 산(酸)의 함량비(含量比)는 침엽수림토양(針葉樹林土壤)에서 산성(酸性) amino 산(酸)은 P>Rp>B>A 형(型)의 순(順), 중성(中性) amino 산(酸)은 Rp>B>A>P형(型)의 순(順), 염기성(鹽基性) amino 산(酸)은 B>A>Rp>P형(型)의 순(順)이었다. 함량(含量)은 중성(中性)>산성(酸性)>염기성(鹽基性) anomi 산(酸)의 순(順)이었다. 활엽수림토양(闊葉樹林土壤)에서는 산성(酸性) amino 산(酸) A>P>B>Rp형(形)의 순(順), 중성(中性) amino 산(酸)은 P>Rp>A>B 형(形)의 순(順), 염기성(鹽基性) amino 산(酸)은 $$P{\geq_-}$$ A > $$B{\geq_-}Rp$$형(形)으로 근소한 차이였다. 다. 형태별(形態別) 각(各) amino 산(酸) 함량(含量)에서는 전체적으로 aspartic acid, glycine, glutamic acid 가 많았고 histidine, tyrosine, methionine이 적었다. 3. Fulv 산중(酸中) amino 산(酸)의 함량(含量) 및 조성(組成) 가. 형태별(形態別) 전(全) amino 산(酸)의 함량(含量)은 두 토양(土壤) 공(共)히 Rp>B>P>A 형(形)의 순(順)이었다. 침엽수림토양(針葉樹林土壤)에서 전(全) amno산(酸)과 전탄소(全炭素), ${\Delta}logK$와 정(正)의 상관(相關)이 있었고 활엽수림토양(闊葉樹林土壤)에서는 전질소(全窒素), 전부식량(全腐植量)$(H_T)$, 부식산량(腐植酸量)(a), 색조계수(色調係數)$({\Delta}logK)$와는 정(正)의 상관(相關)이 있었고 C/N율(率)과는 부(負)의 상관(相關)이 있었다. 나. 형태문(形態問) 산성(酸性), 중성(中性), 염기성(鹽基性) amino 산(酸)의 함량비(含量比)는 두 토양(土壤) 공(共)히 Rp>B>P>A형(形)의 순(順)이었다. 다. 형태문(形態問) 각(各) amino 산(酸)의 함량(含量)을 비교(比較)할 때 전체적(全體的)으로 glycine, aspartic acid, alanine 이 많았고 tyrosine, methionine은 적었고 arginine은 거의 측정되지 않았다.

시판 쌈장의 품질 특성 (The Study on the Characteristics of Commercial Samjangs)

  • Characteristics of six commercial samjangs were analyzed such as proximate composition, free amino acids, organic acids and free sugars. Also color, taste and odor were evaluated by 36 panelists. They were composed of moisture content 41.4-48.4%, crude protein 9.2-10.4%, crude fat 2.2-3.4%, pH 5.3-5.7, amino nitrogen 194.0%-375.6 mg% and sodium chloride 7.7-9.1%. Total free amino acids of samjangs were 975.89-2304.98 mg%. Glutamic acid was the highest amino acid among free amino acids as 231.7-788.01 mg%. Proline, arginine, alanine and lysine were higher than other free amino acids while histidine, cystine and methionine were lower than other. Eleven free amino acids including glutamic acid were the highest in samjang (B) which contained more doenjang than any other makers did. Total organic acids were 401.01-640.27 mg%. 69.65-269.07 mg% of succinic acid was the highest among organic acids. Lactic acid was the highest in samjang (F) which was home made. Total free sugars was the highest in samjang (A) which contained more wheat flour than any other makers did it. Glucose was 9.30-23.99% and fructose was nd-2.69%. The result of proximate composition showed a different pattern comparing with that sensory evaluation. Samjang (A) which contained less salt showed the highest overall acceptability while samjang (F) which contained more dark color, more salt was the lowest one among the samples.

번식방법(繁殖方法)에 따른 밭고추냉이의 성분비교(成分比較) (Comparison of Chemical Constituents of Upland Wasabia japonica Matsum Grown by Different Propagation Methods)

  • 향신료(香辛料) 및 고소득 작물로 개발가능성이 있는 고추냉이의 번식방법(繁殖方法)에 따른 성분(成分)을 비교(比較)하여 고추냉이 품질평가 및 우수 품종육성의 기초자료(基礎資料)로 제공(提供)하고자 지폐산(脂肺酸), 아미노산 및 유기산 함양(有機酸 含量) 및 조성(組成)을 조사한 결과(結果)를 (요약)要約하면 다음과 같다. 1. 총지방산 함량 및 지방산조성은 번식방법간에 차이가 없었으나 잎의 지방산함량이 다른 부위보다 높았고, 지방산조성은 부위와 관계없이 linolenic acid 함량이 가장 높았고 그 다음이 Palmitic acid, oleic acid, linoleic acid순이었으며 그 외에 lauric acid, myristic acid, palmitoleic acid, stearic acid, arachidonic acid 소량 함유되어 있었다. 2. 총아미노산 함량은 번식방법 비슷하였으나 부위별로는 잎, 근경, 줄기, 화경순으로 높았고, 아미노산조성은 번식방법에 관계없이 각 부위 모두 glutamic acid $(331{\sim}1568mg)$, asparatic acid $(346{\sim}1380mg)$, arginine $(84{\sim}724mg)$, leucine $(49{\sim}1264mg)$의 함량이 많았다. 3. 유기산 조성은 번식방법에 관계없이 비슷하였며 부위에 관계없이 acetic acid $(60.0{\sim}78.2)$가 가장 함량이 많았고 그 다음은 succinic acid $(9.9{\sim}32.0)$, malic acid $(2.9{\sim}7.9%)$로 함량이 많았다.

벼 재래종 핵심 유전자원의 현미 아미노산 함량 평가 (Characterization of Amino Acid Contents in Grain of Core Collections of Korean Native Rice)

  • 벼 재래종 핵심유전자원의 아미노산조성을 평가하여 벼 품질개량 육종과 기능성 쌀 가공품 개발을 위한 기초소재를 찾기 위한 연구를 수행하였다. 재래종 자원 388품종 간 현미 아미노산 함량의 변이정도는 methionine과 histidine이 매우 컸으며 나머지 아미노산도 변이계수 14.9% 이상의 변이를 보였다. 재래종 핵심유전자원 388품종의 총 아미노산 함량, 제 1제한 그인 lysine함량, 제 2제한 아미노산인 threonine함량 각각의 평균치는 현재 농가에서 재배하고 있는 자포니카형 품종과 비슷하였다. 조사한 재래종 중 백곡,나 대소나, 사두초는 총 아미노산 함량, lysine함량, threonine함량이 월등히 높았고 석산조와 소두조는 아주 낮았다. 또 백곡나, 사두초 및 대소나는 tryptophan을 제외한 7가지 필수아미노산의 총 함량도 아주 높아 이 세 품종은 쌀의 아미노산조성 개량을 위한 유용한 육종소재로 판단하였다. 재래종 품종의 9가지 형태적 특성과 현미 아미노산 함량간의 관계를 검토한 결과 부선색이 자색인 품종은 황백색 품종에 비해 총 아미노산 함량과 serine, proline, glutamic acid, glycine, alanine, valine, leucine, phenylalanine, arginine 함량 모두 적은 쪽에 분포하였으며, aspartic acid는 부선색이 갈색인 품종이 아미노산 함량이 많은 쪽에 분포하였다. 또 주두색이 자색인 품종은 흰색 품종보다 lysine 함량이 많은 쪽에 분포하였다. 그리고 찰벼 품종이 메벼 품종에 비하여 serine, glutamic acid, alanine, valine, leucine 함량은 높은 쪽에 분포하였고, tyrosine 함량은 낮은 쪽에 분포하였다.
