Comparison of Physicochemical Properties and Antioxidant Activity between Raw and Heat-Treated Vegetables (열처리한 채소류의 이화학적 특성 및 항산화 활성 비교)

  • This study examines the changes in the physicochemical property and antioxidant activity of six types of vegetables (carrots, crown daisy, mugwort, cabbages, onions, and garlic) based on heat-treated cooking. According to the results, proximate contents (crude protein, fat, and ash) were lower in blanched samples than in untreated samples. Untreated cabbages showed the highest level of total dietary fiber content, which decreased by blanching and increased by high-temperature/high-pressure (HTHP) treatment. Noteworthy is that, in the case of soluble dietary fiber, blanched crown daisy and mugwort showed significantly high levels of 12.0 g and 7.3 g per 100 g(dry basis). There was no significant change in tocopherol content in heat-treated samples. The highest levels of total polyphenol and flavonoid content were 6.73 g and 5.51 g per 100 g, respectively, in the mugwort sample with HTHP treatment at $130^{\circ}C$ for 2 h. The water extract of mugwort with HTHP treatment had the strongest antioxidant effect based on three bioassays (SOD, DPPH, and ABTS). These results indicate the relative correlation between the level of physiologically active content and antioxidant activity and suggest new insights into ingredients for developing functional foods.

Composition and Antioxidant Activity of Dried Laver, Dolgim (돌김의 조성 특성 및 산화방지 활성)

  • The composition and antioxidant activity of three kinds of dried laver were compared (ondolgim, bandolgim, and paraegim). Dolgim was high in protein (>35%), carbohydrates (>41%), and minerals (>7.5%). Lipid content in dolgim was very low (<1%); eicosapentaenoic acid was the most abundant fatty acid. There were higher levels of carotenoids than phycobilin in dolgim, and chlorophyll among pigments was present at the least amount. Porphyran content was high (>110 g/kg), while tocopherol content was very low (<12.0 mg/kg). Ondolgim had the lowest levels of carotenoids, phycobilin, and chlorophyll, however, polyphenol content was higher in ondolgim. The antioxidant activity was the same among the three kinds of dolgim, and both water and a 20% ethanol extract of dolgim showed higher antioxidant activity than did a 100% ethanol extract. The results suggested that dried laver dolgim was a good food and that all varieties provided both food and health functionality.

Comparative Biological Properties of Prunus davidiana Fruits according to Harvest Month (산복사나무 열매의 수확시기별 생리활성물질 함량 비교)

  • This study was performed to determine the optimal month of harvest between May and July for wild peach (Prunus davidiana) by comparison of functional materials. The general composition, amino acid and vitamin (A, C, and E) content, and antioxidant activity were determined. With respect to the general composition of wild peach according to the month of harvest, wild peach harvested in May (HMP) and July (HJP) contained mostly carbohydrate, the contents of which amounted to 77.37 g/100 g and 77.92 g/100 g, respectively. The total amino acid content of HMP and HJP were 675.29 mg% and 573.25 mg%, respectively. Regarding the vitamin contents, vitamin A (retinol), E (${\alpha}-tocopherol$) and C in HMP were higher than those in HJP. The total polyphenol content of HMP (218.37 mg TAE/g) was higher than that of HJP (71.45 mg TAE/g). The total flavonoid content of HMP (64.95 mg RE/g) was also higher than that of HJP (32.67 mg RE/g). Moreover, the DPPH and ABTS radical scavenging activities ($IC_{50}$) were higher in HMP ($137.18{\mu}g/mL$ and $157.15{\mu}g/mL$) than those in HJP ($160.10 {\mu}g/mL$ and $186.01 {\mu}g/mL$), meaning that the former produces better antioxidant effects. It can be concluded that wild peach harvested in May contained higher functional materials such as vitamins and amino acids and had a higher antioxidant effect, than wild peach harvested in july.

Effects of Basil Extract and Iron Addition on the Lipid Autoxidation of Soybean Oil-in-Water Emulsion with High Oil Content (고지방 물속 콩기름 에멀션의 지방질 자동 산화에서의 바질 추출물과 철 첨가 효과)

  • Purpose: Lipid autoxidation of a soybean oil-in-water emulsion with high oil content was studied under after basil extract and/or iron addition. Methods: The emulsion consisted of tocopherol-stripped soybean oil (40 g), citrate buffer (60 g, pH 4.0), and/or $FeSO_4$ (0.5 mg) with 75% ethanol extract (200 mg/kg) of basil (Ocimum basilicum). Lipid oxidation was evaluated using headspace oxygen content, hydroperoxide contents, and p-anisidne values of the emulsion. Polyphenol compound retention in the emulsion during oxidation was determined spectrophotometrically. Results: Addition of basil extract significantly (p<0.05) decreased reduced hydroperoxide contents of the emulsion, and iron significantly (p<0.05) increased anisidine values and decreased oxygen contents. Co-addition of basil extract and iron showed significantly (p<0.05) lower reduced hydroperoxide contents in the emulsion than compared to those of the emulsion with added iron and the control emulsion without basil extract nor or iron. During the emulsion oxidation, polyphenol compounds in the emulsion with added basil extract were degraded, but more slowlywhich was slowed degraded in the presence of iron. Conclusion: The iIron increased the lipid oxidation through hydroperoxide decomposition, and basil extract showed antioxidant activity through radical-scavenging and iron-chelation. Polyphenol degradation was decelerated by iron addition, which suggested suggests iron chelation may be more preferred topreferentially activated over radical scavenging in the antioxidant action by of basil extract in the oil-in-water emulsion with high oil content.

Effect of degree of milling on the chemical composition of rice oil

  • The degree of milling is an important factor in terms of the nutritional value and the economic return of the milled rice. This study was to investigate the changes in compositions of the oils obtained from rice with different degree of milling. The content of total tocols in rice significantly (p<0.05) decreased, as degree of milling increased. The relative % of -tocopherol in brown rice had lower than those in milled rices whereas the relative % of -tocotrienol, and -tocotrienol in brown rice higher than those in milled rices. -Oryzanol content significantly (P<0.05) decreased from 198.5 mg/kg rice for brown rice (0% milling) to 65.5 125.0 mg/kg rice for rice samples with 5.6, 8.0, and 9.6 % milling. -Sitosterol was most abundant sterol representing 50 % - 56% of the total sterol content in all analyzed samples. The content of total sterol as well as each sterol isomers in rice significantly (P<0.05) decreased, as degree of milling increased. A similar trend was observed in changes of octacosanol and squalene.

Effect of Maltodextrin and Recycled Dehydration Liquid on the Quality Characteristics of Green Pepper (Maltodextrin과 재사용 탈수액이 고추의 품질에 미치는 영향)

  • Green peppers were dried using maltodextrin and recycled dehydration liquid as dehydrating agents, and the quality of dried green pepper powders was compared with that of freeze-dried and hot air-dried samples in terms of moisture content, color, antioxidant activity, capsaicinoid level, and sensory acceptability. The moisture content of maltodextrin-treatedgreen pepper powder was higher than that of samples prepared using recycled dehydration liquid. The lightness (L) value rose with increasing concentrations of maltodextrin powder or liquid. The antioxidant activities of pepper powders prepared using the molecular press dehydration method were similar to that of alpha-tocopherol, and better than that offreeze-dried or hot air-dried samples. Capsaicinoid levels fell with increasing concentrations of maltodextrin powder and liquid. The sensory evaluation data on green pepper powders prepared using the molecular press dehydration method were better than those obtained when freeze-dried and hot air-dried samples were evaluated. These results indicate that drying of green pepper powders using maltodextrin and recycled dehydration liquid as dehydrating agents is very efficient.

Comparison of the Chemical Components of Buckwheat Seed and Sprout (메밀종자와 메밀나물의 화학적 성분비교)

  • The chemical components of buckwheat seed and sprout were compared for predicting the usefulness of buckwheat sprout as food materials. The buckwheat sprout was harvested and lyophilized after germination for 7 days. Crude protein, lipid and ash contents of buckwheat sprout were 20.8, 1.3 and 2.6% in dry basis, respectively. Major amino acids of buckwheat sprout were glutamic acid (2,764 mg/l00 g) and aspartic acid (1,698 mg/l00 g). The contents of tryptophan, alanine, tyrosine and histidine of buckwheat sprout were about 1.7 to 1.9 times higher than those of buckwheat seed. Major fatty acids of buckwheat sprout were linoleic acid (45.9%) and oleic acid (18.4%). The contents of stearic acid (18:0) and oleic acid (18:1) were decreased by about 21% and 50%, whereas those of linoleic acid (18:2) and linolenic acid (18:3) were increased by 1.3 and 5.4 times, respectively after germination for 7 days. The mineral contents of buckwheat sprout were 152.0 mg/l00 g for Ca, 9.9 mg/l00 g for Zn, 485.0 mg/l00 g for Mg and 5.4 mg/l00 g for Fe. Vitamin A, C and E contents of buckwheat sprout were 1,180 IU/100 g, 203 mg/l00 g and 32.1 mg/l00 g in dry basis, respectively. Especially, the content of $\alpha$ -tocopherol was increased by 27.5 times as compared to that of buckwheat seed. The rutin content of buckwheat sprout was 343.67 mg/l00 g, which was about 18 times higher than that of buckwheat seed.

Studies on the Nutritional Components and Physicochemical Characteristics of Various Flax(Linum usitatissimum) Seeds and Oils (아마인과 아마인유의 영양성분과 물리화학적 특성)

  • Flaxseed has recently gained attention as a functional food. In this paper, physicochemical analyses of flaxseed and its oil were performed. Crude fat content ranged from 37~43%, moisture 0.2~6.8%, carbohydrate 30~35%, crude protein 18~23%, and crude ash 3~4%. Flaxseed is also an important source of dietary fiber. The TDF(total dietary fiber) contents of the flaxseed samples were 28~31%, and the SDF(souble dietary fiber) content of roasted flaxseeds was higher than that of raw flaxseeds. The major minerals found in flaxseed were calcium, potassium, magnesium, and phosphate. The flaxseeds were rich in ${\gamma}$-tocopherol with 234.3 mg/kg in raw brown flaxseed and 134.1 mg/kg in raw gold flaxseed, respectively. Roasted flaxseeds showed slightly lower vitamin and amino acid contents than those of the raw samples. The iodine, saponification, and acid values of brown flaxseed oil were 204.1 g/100 g, 193.6 mg/g, and 1.59 mg/g, and for gold flaxseed oil were 203.0 g/100 g, 189.9 mg/g, and 2.35 mg/g, respectively. ${\alpha}$-Linolenic acid(ALA, C18:3n-3) was highly concentrated in the flaxseed oil, which constituted about 55.5~56.1% of total fatty acids. Thus, flaxseed oil is a good source of omega-3 fatty acids and beneficial for the heart. Flaxseed contains high levels of dietary fiber including lignans, as well as minerals and vitamins, which may have antioxidant actions and help protect against certain cancers.

A Study on the Catechins Contents and Antioxidative Effect of Various Solvent Extracts of Green, Oolong and Black Tea (녹차, 우롱차 및 홍차의 용매별 추출물의 카테킨류 함량 및 항산화효과에 관한 연구)

  • The extraction yield of MeOH extract of green teas, oolong tea and black tea were 3 to 5, 4 to 5, and 5 to 7 fold higher than those of EtOH and EtAC extract, respectively. The amount of total catechins of EtAC extract of the black tea, and of the green teas and oolong tea were three- and two-fold higher than that of EtOH or MeOH extract of the corresponding teas, respectively. The antioxidative activities of EtOH, MeOH and EtAc extract were considerably higher than that of BHT and $dl-{\alpha}-tocopherol$ at 200 ppm level. The antioxidative activities of EtOH and MeOH extract at 200 and 500 ppm level, and of EtAc extract at 200 ppm level varied depending on the type of tea as follows : green tea I > green tea II > green tea III > oo-long tea> black tea. The antioxidative activity increased as the content of EGC increased. But the antioxidative activity of MeOH extract at 1000 ppm level, and of EtAc extract at 500 and 1000 ppm level were not affected by the content of EGC and EGCG.

Use of Gamma Irradiation for Improving Quality and Assuring Safety of Meat Products (육제품의 품질개선 및 저장성 확보를 위한 감마선 이용)

  • This study was conducted in order to evaluate the effect of gamma irradiation on improvement of the quality and safety of meat products. Emulsion type bologna sausages were manufactured with 3 kGy gamma irradiated ground beef. Beef patties were also manufactured with the addition of antioxidants (200 ppm, BHA, ascorbyl palmitate, ${\alpha}-tocopherol,\;or\;{\beta}-carotene$) following gamma irradiation of 1.5 or 3 kGy. Bologna sausages could be successfully manufactured with 3 kGy gamma irradiated ground beef and lower salt content(NaCl of 1.0 or 1.2% and phosphate of 0.2 or 0.3%) without any deteriorative results when compared with the products manufactured with regular salt content(NaCl of 1.5~2.0% and phos phate of 0.4~0.6%). No colony formations of aerobic microorganisms were observed in the sausage with NaCl of 1.2% and phosphate of 0.2 or 0.3% up to 30 days storage at $10^{\circ}C$. No significant differences appeared in the TBA values among all the sausages during storage for 30 days. No colonies of aerobic microorganisms were observed in the 3 kGy irradiated patty. Lipid oxidation of the beef patties was inhibited by the addition of an antioxidant.
