Fermentation characteristics of cider from late harvest Fuji apples by a sugar tolerant yeast, Saccharomyces cerevisiae SS89 (내당성 효모 Saccharomyces cerevisiae SS89에 의한 늦수확 후지 사과의 사과주 발효 특성)

  • Normal- and late-harvested Fuji apples were fermented using the rapid-fermenting yeast strain Saccharomyces cerevisiae SS89. The late-harvest apples showed a slightly higher soluble-solid content with a lower level of total-acid and moisture (p<0.05) contents as well as hardness (p<0.05) than the normal-harvest apples. During the fermentation, the apples had similar changes in the pH and total-acid content regardless of the harvest time, but the increases in the alcohol content and yeast viable count with the decrease of the soluble-solid content were more rapid in the late-harvest apples than in the normal-harvest apples. After the completion of the fermentation, the soluble-solid and alcohol contents became very similar. The late-harvest cider showed a high total phenolic-compound content and a high DPPH radical scavenging effect, although these were slightly lower than those of the normal-harvest cider. It also showed a higher malic-acid content and higher hue color (p<0.05), Hunter's L, and b (p<0.05) values than the normal-harvest cider. In the sensory evaluation, the late-harvest cider obtained a higher score in taste and a lower score in color compared to the normal-harvest cider.

Development of Prediction Model to Estimate the Storage Days of Tomato Using Transmittance Spectrum (투과 스펙트럼을 이용한 토마토 수확 후 저장일자 예측모형 개발)

  • The goal of this study was to develop prediction models to estimate the storage days of tomato. The transmittance spectral data measured on tomato were preprocessed through normalization, SNV, Savitzky-Golay, and Norris Gap and then were used to build the prediction models using partial least square (PLS) method. For the experiments, the tomato samples of different varieties were collected at different harvest time. The samples were taken right after harvest from the field and then were stored in a low-temperature storage room in which room temperature was maintained at $10^{\circ}C$. The transmittance spectral data of the tomato samples were measured at three-day intervals for 16 days. The performance of the prediction models was affected by the preprocessing techniques as well as the varieties and harvest time of the tomato. The best model was found when SNV was applied. The accuracy of the best model was 90.2%. It can be concluded that the transmittance spectra are useful information for predicting the period of storage of tomato.

Development of a Planting Density-Growth-Harvest Chart for Common Ice Plant Hydroponically Grown in Closed-type Plant Production System (식물 생산 시스템에서 수경재배한 Common Ice Plant의 재식밀도-생육-수확 도표 개발)

  • In this study, a planting density-growth-harvest (PGH) chart was developed to easily read the growth and harvest factors such as crop growth rate, relative growth rate, shoot fresh weight, shoot dry weight, harvesting time, marketable rate, and marketable yield of common ice plant (Mesembryanthemum crystallinum L.). The plants were grown in a nutrient film technique (NFT) system in a closed-type plant factory using fluorescent lamps with three-band radiation under a light intensity of $140{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ and a photoperiod of 12 h. Growth and yield were analyzed under four planting densities ($15{\times}10cm$, $15{\times}15cm$, $15{\times}20cm$, and $15{\times}25cm$). Shoot fresh and dry weights per plant increased at a higher planting density until reached an upper limit and yield per area was also same tendency. Crop growth rate, relative growth rate and lost time were described using quadratic equation. A linear relationship between shoot dry weight and fresh weights was observed. PGH chart was constructed based on the growth data and making equations. For instance, with within row spacing (= 20 cm) and fresh weight per plant at harvest (= 100 g), we can estimate all the growth and harvest factors of common ice plant. The planting density, crop growth rate, relative growth rate, lost time, shoot dry weight per plant, harvesting time, and yield were $33plants/m^2$, $20g{\cdot}m^{-2}{\cdot}d^{-1}$, $0.27g{\cdot}g^{-1}{\cdot}d^{-1}$, 22 days, 2.5 g/plant, 26 days after transplanting, and $3.2kg{\cdot}m^{-2}$, respectively. With this chart, we could easily obtain the growth factors such as planting density, crop growth rate, relative growth rate, lost time and the harvest factors such as shoot fresh and dry weights, harvesting time, marketable rate, and marketable yield with at least two parameters, for instance, planting distance and one of harvest factors of plant. PGH charts will be useful tools to estimate the growth and yield of crops and to practical design of a closed-type plant production system.

Antioxidant and Antimicrobial Activities of Green Tea at Different Harvest Time (채취 시기가 다른 녹차의 생리활성 연구)

  • The present study was conducted to investigate the antioxidant and antimicrobial activities of green tea at different harvest time. The leaves were collected in late March(Ilro), early April(Okro and Ujeon), late April(Sejak), and early May(Eoksu and Hanra). The total polyphenol content of Sejak was highest (28.87mg TAE/g). Electron donating abilities toward $\alpha$,$\alpha$-diphenyl-$\beta$-picyryl hydrazyl (DPPH) radical were approximately 80%. SOD-like activities were above 30%, where ujeon showed the highest activity ($38.95{\pm}0.96%$). The nitrite scavenging ability was pH-dependent and shown to be highest at pH 1.2, and lowest at pH 6.0. The inhibitory effects against the angiotensin I converting enzyme were over 85%, except for Okro ($58.22{\pm}4.66%$) and Hanra ($77.96{\pm}3.83%$). The tyrosinase inhibition rate increased with harvest time. Okro showed the highest caffeine content ($3.86{\pm}0.32%$) and had the highest antimicrobial activities against Listeria monocytogenes, Staphylococcus aureus, Escherichia coli, and Salmonella typhimurium. The combined results of this work revealed that the antioxidant and antimicrobial activities of green tea were independent of harvest time.

Feed Value and Yield Potential of Main Whole-Crop Silage Rice Cultivars with Harvesting Time in the Central Plains of Korea (중부 평야지에서 사료용 벼 주요품종의 수확시기 별 사료가치 및 수량성)

  • To set an optimal harvest time for five main whole-crop silage (WCS) rice cultivars, Nokyang (Ny), Mogwoo (Mw), Mogyang (My), Nokwoo (Nw) and Yeongwoo(Yw), based on feed value and dry matter yield, we analyzed water content (WC), feed values such as percent crude protein (CP), crude fat (CF), crude ash (CA), neutral detergent fiber (NDF), acid detergent fiber (ADF), estimated total digestible nutrients (TDN), and calculated their dry matter yield (DMY). These parameters were estimated at the booting stage and every 10 days from start of heading to 45 days after heading (DAH) to identify the optimal harvest time for these rice varieties. In all varieties, except Ny, the WC was about 65% on the $30^{th}$ DAH. In terms of WC, it is judged that there would be no major problem in preparing high quality silage when harvested between 20~30 DAH for Ny and about 30 days for the other cultivars. The CP and CA decreased significantly as the harvest time was delayed in all varieties (p<0.05). However, the CF in the tested varieties generally declined as DAH increased, and then increased again(p<0.05). The decrease in ADF and NDF was significantly different from the booting stage to 45 DAH in all varieties (p<0.05) and the estimated TDN increased gradually in all varieties as the harvest time was delayed. The TDN of all varieties, except Nw, was over 70% around 30 DAH. As harvest time was delayed, the DMY for all WCS rice increased significantly (p<0.05). The maximum DMY for each cultivar was observed at 45 DAH, however, no significant difference (p<0.05) was seen after 40 DAH for Ny and Yw, 30 DAH for Mw and Nw, and 20 DAH for My. Considering these results and others factors such as lodging, shattering, digestibility of grains, conversion of eating rice, etc., the optimal harvest time for silage use of all WCS rice tested was generally the yellow ripening stage, at about 30 DAH (30~40 DAH for Ny and Mw, and 30 DAH for My, Nw and Yw).

Effect of Cultural Practice and Harvest Time on Yield Components of Peanut (땅콩의 재배방법 및 수확시기가 수량구성 형질에 미치는 영향)

  • Late harvest in peanut has often resulted in reduced yield and dissipation of labor by virtue of increasing over-matured pods causing the pod shattering. Present study was conducted to obtain a basic information for deciding optimum harvest time of the peanut in Chungbuk province by examination of yield components at different harvest time of leading cultivars Saedl and Youngho cultivated with vinyl mulching or non-mulching conditions. Peg number and pod number were significantly increased by vinyl mulching and also significantly different by the harvest time. Pod number increased with the lapse of days after flowering was gradually decreased from 100 days after flowering in saedl and 110 days in Youngho. Number of seed-bearing pods and matured seed percent were significantly increased by vinyl mulching and had tendency to increase with the lapse of days after flowering. There was no significant difference in number of over-matured pods and pod shattering percent between vinyl mulching and non-mulching. They increased drastically in 110 days after flowering in Saedl, but in 120 days after flowering in Youngho, Increase in 100 seed weight by vinyl mulching was statistically nonsignificant in both varieties, however, total seed yield was significantly increased by vinyl mulching, showing maximum yield in 100 days after flowering in the variety Saedl and 110 days in Youngho, respectively, Seed yield was negatively correlated to peg number and positively correlated to pod number, seed-bearing pod number, pod shattering percent, matured seed percent and 100 seed weight, respectively.

Analysis of feed value for setting an optimal harvest time of whole crop rice cultivars for silage use

  • To set an optimal harvest time of main 7 whole crop silage rice cultivars, Nokyang(Ny), Mogwoo(Mw), Mogyang(My), Jungmo1029(Jm1029), Jungmo1038(Jm1038), Nokwoo(Nw) and Yeongwoo(Yw), based on feed value, we analyzed their feed values such as percent crude protein(CP), crude fat(CF), crude ash(CA), neutral detergent fiber(NDF), acid detergent fiber(ADF) and lignin. It was evaluated every 10 days from heading to 40 days after heading(DAH). Total digestible nutrient(TDN) and relative feed value(RFV) was also calculated from ADF and NDF. As results, CP was generally in decline as increasing DAH in Ny, My, Jm1029, Jm1038 and Yw and decreased to 20 DAH in Mw, decreased after increasing to 30 days in Nw. The CP content of Ny was relatively the highest ranged from 5.3% to 10.1% and Mw the lowest 4.5% to 5.2%, compared to others. CF content tend to decrease as DAH increase in Ny, My and Nw and decreased after increasing to 30 days Jm1029, increased after decreasing to 20 days Jm1038 but was not shown distinct trend of increase or decrease in Mw. Especially, that of Yw's CF gradually increased as harvest time late but relative content the lowest from 1.46% to 2.29% among 7 cultivars. The CA content of Ny, My, Jm1029 and Jm1038 approximately decreased as DAH increased and that of Mw was similar to others after heading, Nw decreased after 10 days and Yw increased after flowering. In all 7 cultivars, NDF and ADF had a tendency to decrease as days accumulated, in particular, Yw was the lowest on 30 DAH and so the content of Yw's TDN the highest(71.5%), while the lowest(67.2%) in Nw. For lignin, particularly, Mw tend to be in decline as DAH increase and was the lowest ranged from 1.34% to 1.87%. ADF analyses allows for the evaluation of in vivo digestible dry matter(DDM) and energy availability and NDF analyses provides the best indication of dry matter intake(DMI). Ultimately, the two factors can be combined to derive RFV for forage. RFV in general increased as DAH increased in all cultivars and was in order, Yw>My>Ny> Jm1038>Mw>Jm1029>Nw on 30 DAH. Taken together when these results, despite a slight increase of TDN after 30 DAH except Yw, considering forage yield potential, digestibility of grains and gradual decrease of CP and CF, the yellow ripe stage, about 30 DAH, was appropriate to harvest whole crop rice for silage use.

Effect of Planting and Harvest Dates on Quality and Productivity of Rye-Hairy Vetch Mixture (파종 및 수확시기가 호밀-헤어리베치 혼파의 사초수량과 품질에 미치는 영향)

  • Rye-hairy vetch mixture would be recommended fur produce higher yield and conserving soil environment. This experiment was conducted to investigate the effect of planting and harvest dates on quality and productivity of rye-hairy vetch mixture. Plant height of rye and hairy vetch was increased with delayed harvest dates, but it found that there was on significant difference among seeding dates. The dry matter(DM) content was increased with delayed harvest dates, and it showed 30% DM in mid-May. Crude protein(CP) content was decreased sharply from 17~18% in heading stage to 9~10% in flowering stage. The content of ADF(Acid detergent fiber) and NDF(Neutral detergent fiber) were increased with delayed harvest date, but IVDMD(In vitro dry matter digestibility) and TDN(Total digestible nutrient) were decreased. The change of dry matter yield was affected significantly by harvest date but was not by seeding time. The results of this experiments indicated that harvest in late-April would be recommended to produce the highest yield and quality if it is considered to cultivate com fur silage. Harvest in mid-May would be recommendable with the cultivation of early maturity silage corn or sorghum $\times$ sudangrass hybrids.

Browning of Minimally Processed Mushrooms (Agaricus bisporus Sing.) as Affected by Picking Season and Postharvest Holding Time (수확시기 및 가공전 보관기간이 신선 편이가공 양송이의 갈변에 미치는 영향)

  • This study was conducted to compare development of browning in minimally processed mushrooms (Agaricus bisporus Sing.) by picking season and postharvest holding time of the raw material. 'White' type of the mushrooms were harvested and minimally processed immediately after harvest or holding at 2$^{\circ}C$ for 7 days after picking in 4 seasons. The processed mushrooms were kept at 5$^{\circ}C$, and changes in surface color and content of total phenolic compounds of the mushrooms were measured. Respiration rate of the whole mushrooms was ranged from 9.55 to 17.93 mL C0$_{2}$/kg$\cdot$ hr, and the rate was low in mushrooms harvested in summer and autumn compared with those picked in spring and winter. Hunter L value of the mushrooms decreased rapidly just after slicing, especially in summer-harvest mushrooms. The mushrooms processed with the raw materials stored at 2$^{\circ}C$ for 7 days after harvest showed the lowest 'L' value among the sliced mushrooms prepared at different holding time. Consequently, summer-harvest mushrooms and the mushrooms kept at 2$^{\circ}C$ for more than 7 days after harvest would be unsuitable for minimally processing due to rapid browning.

Effect of Harvest Time on Seed Quality of Silage Corn Inbreds and Hybrids

  • In order to determine the optimum harvest time for the seed production of inbreds and hybrids in silage corn, the ears of sib-pollinated 'KS5', 'KS7rhm', and 'Ga209' and cross-pollinated 'KS5' $\times$ 'KS6' (Suwon19), 'KS7 rhm' $\times$ 'KSl17' (Suwonok), and 'Ga209' $\times$ 'DB544'(Kwanganok) were harvested at the one-week intervals from 4 to 10 weeks after silking. The optimum harvest time for the seed production for 'KS5', 'KS5' $\times$ 'KS6', 'KS7 rhm', and 'KS7rhm' $\times$ 'KS117' was 7 weeks after silking considering both emergence rate and plumule growth in cold test. Although earlier harvested seeds showed similar germination rate as the seeds harvested at the optimum time at $25^{\circ}C$, their emergence rate were lower in cold test. Seed weight and $\alpha$-amylase activity of earlier harvested seeds were lower compared to those of seeds harvested at the optimum time, while leakage of total sugars and electrolytes were higher. However, the later harvested seeds showed lower germination rates at $25^{\circ}C$ and emergence rates in cold test probably due to the lower $\alpha$-amylase activity although they showed increased seed weight and reduced leakage of total sugars and electrolytes. In contrast, the emergence rate of 'Ga209' and 'Ga209' $\times$ 'DB544' in cold test increased up to 10 weeks after silking probably due to the increased seed weight and $\alpha$-amylase activity and reduced sugar and electrolyte leakages during the germination. The cross-pollinated F$_1$ hybrid seeds showed higher germination and emergence rates at $25^{\circ}C$ and in cold test, and higher plumule growth and $\alpha$-amylase activity compared to those of sib-pollinated inbreds.
