Household dietary practices and family nutritional status in rural Ghana

  • A cross-sectional study involving 400 mothers was conducted in the Manya Krobo district of Ghana with the objective of studying household dietary practices, quality of diets and family nutritional status of rural Ghana, A combination of methods, including structured interviews using questionnaire, dietary assessments and anthropometry was used to collect data for the study. The data obtained was analyzed using Statistical Package for Social Sciences (SPSS) Version 10 in Windows. Means and standard deviations were generated for continuous variables and frequency distribution for categorical variables. Most women consumed meals three times a day but only a few (12.5%) cooked all three meals at home. Breakfast and lunch were the two main meals purchased from food vendors. The most frequently consumed food items on daily basis were the starchy staples, maize, fish, pepper, onion, tomato and palm fruits. The nutritional qualities of diets were poor in terms of calcium and the B-vitamins. A significant proportion of the women were nutritionally at risk of being either underweight (12%), overweight (17%) or obese (5%). For adequate nutrition in this population, nutrition education intervention programs aimed at improving nutrient intake through improved diet diversity and increased use of local foods rich in calcium and the B-vitamins needs to be undertaken. There is also the need to intensify education on excessive weight gain and its attendant health problems in the area.

Analysis of dietary insoluble and soluble fiber contents in school meal

  • The objective of this study was to estimate the contents of dietary insoluble and soluble fiber in school meal. Samples of the school meals were collected from May to June in 2008. Three elementary schools and three middle schools around Masan area were selected for analysis. Dietary soluble and insoluble fibers in the school meals were analyzed directly by the AOAC method. From the initial experiment phase, we used cellulose and pectin as a standard of dietary fiber, and average recovery rate of insoluble fiber and soluble fiber was calculated. The recovery rate was observed, the cellulose $109.7{\pm}11.7%$ (range 90~150%) and pectin $77.8{\pm}10.8%$ (range 64.7~96.7%), respectively. The amounts of insoluble fiber and soluble fiber were analyzed in the total of 66 dishes, which included 7 kinds of cooked rice (bab) made with some cereal products and vegetables, 19 kinds of soup (guk) made with meats or vegetables, 11 kinds of kimchi, 21 kinds of entr$\acute{e}$es or side dishes, and 8 special dishes. Conclusively the school meal, per serving size, would provide above 75% KDRI of total dietary fibers through mainly soups and special menu, with the exception to fruits. In addition, it might be expected that children could consume more soluble fiber from the meals with the special dishes than from the regular ones.

  • We investigated the proper feeding frequency and satiation rate for the growth of red- and white-colored carp fingerlings in a feeding experiment. Triplicate groups of fish averaging 6.3 g were fed diets at four feeding frequencies (1, 2, 3, or 4 meals a day) and two satiation rates (satiation and 80% satiation) for 6 weeks. The survival of the fish was not affected by either the feeding frequency or the satiation rate. The weight gain, feed efficiency, and protein efficiency ratio of fish were affected by the feeding frequency and satiation rate, and increased significantly with both. The feed efficiency and protein efficiency ratio with satiation feeding of fish fed four meals a day did not differ from those of fish fed three meals a day. The daily feed intake was affected by the feeding frequency and satiation rate. The moisture, crude lipid, and ash contents of whole body were affected by the feeding frequency. Moisture and crude lipid contents were affected by feeding satiation. Based on these results, we conclude that the proper feeding frequency and satiation rate for the optimum growth of red- and white-colored carp fingerlings is four meals a day with satiation feeding.

성남 고령자 무료급식소의 계절별 식단 및 기호도 조사 (A Survey on the Seasonal Menu and Consumer Acceptance Test of Free Meals for the Elderly Facility in Sungnam Region)

  • The purpose of this study was to nut a survey on the seasonal menu and consumer's acceptance test of free meals for the elderly facility in Sungnam Region. The elderly meals of the free lunch meal service were mainly composed of staple food, hot soup, and three kinds of side dishes. Questionare for accentance test was developed based on the seasonal menu including 13 kinds of cooked rices, 43 kinds of soups and 94 kinds of side dishes. The test was run for 104 elderly living and receving the service in the area. Average age of the subjects was 75.9 and 43% was male 57% was female. The 81% and 88% of the subject answered 'yes' on the intake of breakfast and dinner respectively representing high percentages of regular meal habits of the elderly. The cooked rice with black beans had significantly the highest acceptance score among the rice group and soups prepared with chunggukjang and cabbage had higher accentance scores(P<0.05). In the side dish groups, broiled eed, croakers, and various kinds of namuls had relatively higher scores than the others with significant difference at P<0.05.

코로나-19 유행 이후 1인 가구의 식생활 변화와 식생활 만족 (Changes in Dietary Life and Dietary Life Satisfaction in One-Person Households during the COVID-19 Pandemic)

  • This study examined changes in dietary life and dietary life satisfaction in one-person households during the COVID-19 pandemic. Using a sample of 916 one-person households from the Food Consumption Behavior Survey, we applied ANOVA and a system of equations model for our analysis which produced four main results. Firstly, during the COVID-19 pandemic, eating homemade and delivered meals increased, whereas eating restaurant, group, and HMR meals decreased. Eating breakfast and regular eating habits also increased during the pandemic. Secondly, approximately 30% of the sample reported increased expenditure on fresh food and HMR meals. The proportion of positive changes in dietary life was also greater than negative changes, and dietary life satisfaction was about three times higher than it had been before the pandemic. Thirdly, having breakfast and regular eating fully mediated the relationship between spending on fresh food and dietary life satisfaction, as well as the relationship between HMR purchases and dietary life satisfaction. Changes in expenditure on fresh food and HMR meals positively affected dietary life satisfaction through eating breakfast and regular eating. Fourthly, increased consumption of delivered food had a positive direct effect on dietary life satisfaction. Among sociodemographic variables, gender, education, occupation, and age were also significantly related to changes in dietary life satisfaction.

Energy intake and snack choice by the meal patterns of employed people

  • The aim of this study was to provide descriptive information on meal and snack patterns and to investigate snacks in relation to energy intake and food choice according to the meal patterns of employed people in Korea. 683 employed people (292 males, 391 females) were interviewed to collect one day dietary data by using 24-h dietary recall. A recorded day was divided into 3 meal and 3 snack periods by the respondent's criteria and the time of consumption. To analyze the eating pattern participants were divided as the more frequent snack eaters (MFSE) and the less frequent snack eaters (LFSE). They were also categorized into 6 groups according to the frequency of all eating occasions. The common meal pattern in nearly half of the subjects (47.6%) was composed of three meals plus one or two snacks per day. A trend of an increasing the number of snacks in between main meals emerges, although the conventional meal pattern is still retained in most employed Korean adults. Women, aged 30-39, and urban residents, had a higher number of being MFSE than LFSE. Increasing eating occasions was associated with higher energy, protein, and carbohydrate intakes, with the exception of fat intakes. 16.8% of the total daily energy intake came from snack consumption, while the 3 main meals contributed 83.2%. Energy and macronutrient intakes from snacks in the MFSE were significantly higher than the LFSE. Instant coffee was the most popular snack in the morning and afternoon, whereas heavy snacks and alcohol were more frequently consumed by both of the meal skipper groups ($\leq$2M+2,3S and $\leq$2M+0,1S) in the evening. In conclusion, meal pattern is changing to reflect an increase of more snacks between the three main meals. Meal and snack patterns may be markers for the energy and macronutrient intakes of employed people in Korea.

A Survey on the Home Meal Satisfaction Levels of High School Students

  • This study aims to identify the importance and satisfaction levels of home meals of high school students. A developed survey was conducted on July 10 through July 13, 2012. Of 12 high schools located in three different areas in South Korea, three high schools were singled out. For the analyses of the study, the following statistical methods were employed: frequency, cross-tabulation, independent sample t-test, one-way ANOVA, and Duncan as a post-hoc test. As a result, food experiences and education through home meals during childhood promote close ties with other family members and help them develop the food taste and preference that can naturally raise the meal satisfaction level by developing proper eating habit. More implications and discussion are suggested.

한국 청소년의 혼밥 형태와 정신건강의 연관성 연구: 2015-2019년 국민건강영양조사 자료를 활용하여 (Association of Eating Alone Behaviors with Mental Health Conditions in Korean Adolescents: Data from the 2015-2019 Korea National Health and Nutrition Examination Survey)

  • In this study, we aimed to explore whether eating alone is associated with mental health conditions in Korean adolescents. The data of 2,012 Korean adolescents aged 12-18 years were obtained from the Korea National Health and Nutrition Examination Survey 2015-2019. Participants were classified into three groups based on the frequency of eating alone: none (all meals with others); 1 meal/day alone; and ≥2 meals/day alone. Mental health conditions were assessed based on stress recognition, depressive symptoms, and suicidal ideation. Multivariable logistic regressions were employed to calculate the adjusted odds ratios (AORs) and 95% confidence intervals (CIs) of poor mental health conditions according to the frequency of eating alone. Adolescents who ate ≥2 meals/day alone had higher odds of stress recognition (AOR: 2.65, 95% CI: 1.94-3.63), depressive symptoms (AOR: 2.55, 95% CI: 1.47-4.42), and suicidal ideation (AOR: 2.53, 95% CI: 1.05-6.08) than those who ate all their meals with others. In addition, having breakfast or dinner alone increased the odds of stress recognition. Considering the continuous increase in the social phenomenon of eating alone, nutritional educations are needed to develop adolescents' ability to choose more nutritionally balanced and healthy meals when eating alone.

지역사회 거주 일반 성인의 생활양식, 체성분 및 골밀도간의 관계 (Relationship among Life Style, Body Composition, and Bone Mineral Density in Community Dwelling Korean Adults)

  • Purpose: The purpose of this study was to analyze the relationship among life style, body composition and Bone Mineral Density (BMD) in community dwelling Korean adults. Methods: Data were collected from 140 adults who participated in a health check-up program at community health departments in D city, Choong-chung providence. Subjects' life style was assessed with a structured interview survey. Body composition analyses were performed by the bioimpedence method and BMD was measured by peripheral dual energy X-ray absorptionmetry. Results: Among the subjects, 39.3% showed normal BMD values, 50.7% were osteopenic and 10% were assessed as osteoporotic. BMD was significantly different by gender, age, education, economic status and BMI. Subjects who had three or more meals/day had higher BMD then who had less than three meals (t=-2.273, p=.026). BMD was not influenced by regular exercise, alcohol consumption, or smoking. In terms of body composition, there was a significant relationship between fat free mass and BMD (r=.172, p=.043). Conclusion: Implementing an osteoporosis prevention program would be warrented considering the significant proportion of osteopenic or osteoporotic subjects. Regular eating habit with three meals for adequate nutrition need to be emphasized to prevent further bone loss in this population. Among the body composition, fat free mass seem to be the mostly predicting factor for BMD.

충남지역 일부 남자 대학생의 흡연상태에 따른 식사섭취 실태조사 (A Survey on Dietary Behavior and Nutrient Intake of Smoking Male College Students in Chungnam Area)

  • The purpose of this study was to investigate the effect of smoking on dietary behavior and nutrient intake among the male college students. The subjects were divided into three groups; non smoker(n=84), moderate smoker(n=68), and heavy smoker(n=89) according to duration and degree of smoking. And they were asked for general characteristics, life style, eating pattern, food frequency, and nutrient intake using questionnaire and 24-hr recall method. The mean age, height, weight, and BMI of the subjects were 26.2$\pm$6.2 years, 173.3$\pm$5.3㎝, 66.5$\pm$9.3㎏, and 22.1$\pm$2.7㎏/$m^2$, respectively. The type of residence and frequency of alcohol drinking were significantly different among three groups; the frequency of self-boarding and alcohol drinking in moderate smoker and heavy smoker was higher than those in non smoker. Comparing with non smoker, the frequency of skipping meals, especially breakfast and supper, was significantly high in moderate smoker and heavy smoker. The most common reason why heavy smoker skipped meals was ‘eating habit’, while it was ‘lack of time’ in non smoker. The results showed that the heavy smoker tended to drink coffee more often compared to the other two groups. There were no significant differences in nutrient intakes among three groups. In conclusion, heavy smoking students have unhealthy dietary behaviors in terms of high frequency of alcohol drinking, habit of skipping meals and frequent coffee drinking showing a strong need of proper education on smoking withdrawal and meal practice for them.
