경기도지역 학교급식시스템 유형별 생산관리 실태조사 (Analysis on Production Processes between Conventional and Commissary School Foodservice Systems in Kyunggi-do)

  • This study was designed to analyze and compare production management practices and labor productivity between conventional and commissary school foodservices and 46 dietitians of commissary school foodservices in Kyunggi-do. The response rates were 89.7% and 91.3$\%$, respectively. The number of meals served was ranged from less than 100 to over 1, 900 in conventional school foodservices and from 200 to 1, 600 in commissary foodservices. Thirty three conventional foodservices(42.3%) produced less than 300 meals per day. Numbers of satellite school per central kitchen were ranged from 1 to 5 schools ; fifty percent of commissary foodservices have contained 3 satellite schools. Meals for satellite schools were transported between 11:00 a.m.and 12:00 a.m ; transportation time was from 10 to 90 minutes. Waiting time before service in satellite schools was between 10 minutes and 80 minutes. Part time employees supported by parents were hired in 37.3$\%$ of conventional and 50$\%$ of commissary school foodservices. Voluntary workers were supplied for 64.9$\%$ of conventional and 52.4$\%$ of commissary school foodservices. Labor productivity was calculated from work schedule. Labor productivity(labor minutes per meal)was lowest in foodservices with 101-4-- meals(8.48 min)was lower than that of foodservices with above 401 meals ; no significant differences were found among 401-700(6.02 min), 701-1, 100(4.01 min), 1, 101-1, 500(3.41 min), and 1, 501-1, 900(3.15 min)meals in conventional foodservices. Labor minutes per meal of foodservices which served less than 400 meals(6.90 min) per day was significantly lower than those of foodservices which served 401-1, 900 meal(3.41-4.92 min) in commissary foodservices(p<0.05)

박류의 단백질 Bypass 처리가 면양의 광물질 이용효율에 미치는 영향 (Effects of Protein Bypass Treatments in Oilseed Meals on Availability of Mineral in Sheep)

  • 본 연구는 반추가축에 있어서 단백질 Bypass처리가 광물질의 체내이용에 미치는 영향을 조사하기 위하여 실시하였다. 반추위 Cannula를 장착한 면양 3두에 나이론백 실험방법을 이용하여 사양시험을 실시하였다. 시험사료로는 대두박과 채종박을 사용하였으며, 본 시험사료에 가열($133^{\circ}C$, $143^{\circ}C$) 처리와 포름알데이드(0.3%, 0.5%)처리를 하고 나이론 백을 사용하여 반추위내에서 배양한 후 Phytate와 P, Ca, Mg, Cu, Fe, Cu에 대해 각 항목의 반추위내의 소실율을 구하였다. 시험결과에 의하면 대두박과 채종박에 대한 단백질 Bypass처리는 Phytate를 포함한 모든 광물질에서 단백질 Bypass 처리의 강도가 높아짐에 따라 반추위내의 각 광물질의 소실율이 유의하게 감소하였다(P<0.05). 그리고 각 광물질간의 비교에서 Cu, Zn, Ca의 소실율이 타광물질에 비하여 낮은 경향을 보여 특히 본 광물질의 이용성 감소가 예상된다. 이상의 결과로 반추가축에 있어서 이용률이 매우 높은 것으로 알려진 Phytate는 단백질 Bypass처리를 함으로써 Phytate와 결합되어 사료내에 존재하는 광물질의 반추위내의 분해 율을 감소시켜 반추가축에 있어서의 광물질 부족 및 분으로의 배설 증가로 인한 토양의 오염증가가 예상된다.

Effect of nutrient composition in a mixed meal on the postprandial glycemic response in healthy people: a preliminary study

  • BACKGROUND/OBJECTIVES: The glycemic index (GI) is a measure of the postprandial glucose response (PPGR) to food items, and glycemic load (GL) is a measure of the PPGR to the diet. For those who need to maintain a healthy diet, it is beneficial to regulate appropriate levels of blood glucose. In reality, what influences the meal GI or GL depends on the macronutrient composition and the physical chemistry reactions in vivo. Thus, we investigated whether different macronutrients in a meal significantly affect the PPGR and the validity of calculated GI and GL values for mixed meals. SUBJECTS/METHODS: 12 healthy subjects (6 male, 6 female) were recruited at a campus setting, and subjects consumed a total of 6 test meals one by one, each morning between 8:00 and 8:30 am after 12 h of fasting. PPGR was measured after each consumed meal and serial finger pricks were performed at indicated times. Test meals included 1) 68 g oral glucose, 2) 210 g rice, 3) rice plus 170 g egg white (RE), 4) rice plus 200 g bean sprouts (RS), 5) rice plus 10 g oil (RO), and 6) rice plus, egg white, bean sprouts, and oil (RESO). The incremental area under the curve (iAUC) was calculated to assess the PPGR. Mixed meal GI and GL values were calculated based on the nutrients the subjects consumed in each of the test meals. RESULTS: The iAUC for all meals containing two macronutrients (RS, RO, or RE) were not significantly different from the rice iAUC, whereas, the RESO iAUC ($2,237.5{\pm}264.9$) was significantly lower (P < 0.05). The RESO meal's calculated GI and GL values were different from the actual GI and GL values measured from the study subjects (P < 0.05). CONCLUSIONS: The mixed meal containing three macronutrients (RESO) decreased the PPGR in healthy individuals, leading to significantly lower actual GI and GL values than those derived by nutrient-based calculations. Thus, consuming various macronutrient containing meals is beneficial in regulating PPGR.

충남지역 대학생의 알코올 섭취가 영양섭취상태에 미치는 영향 (The Effects of Alcohol Intake on Nutritional Intake Status of College Students in Chungnam)

  • The purpose of this study was to investigate the effects of alcohol intake on nutritional intake status among the college students. The subjects were divided three groups; no-alcohol group(n=78), alcohol group(n=113), and high-alcohol group(n=82) according to intake and frequency of alcohol. And they were observed characteristics of alcohol drinking, dietary behavior and attitude, and nutrient intakes using questionnaires. The frequency of skipping meals in breakfast in high-alcohol group were higher than in other two groups(p<0.01). There were no significant differences in frequency of skipping meals of lunch and supper, reason why skipped meals, and total score of dietary attitude among three groups. However, the score of dietary attitude about no heavy drinking and smoking in high-alcohol group was higher than in other two groups(p<0.01). There were significant difference in vitamin B2 intake, alcohol intake, and energy intakes from carbohydrate, lipid, and alcohol among three groups(p<0.05, p<0.05, p<0.01, p<0.05, p<0.05). Compared energy intake of high-alcohol group with other two groups, intake from carbohydrate was low and intakes from lipid and alcohol were high. In the nutrient density, plant protein and carbohydrate in no-alcohol group, lipid and vitamin B2 in alcohol group, and animal lipid in high-alcohol group were highest among three groups. NAR and MAR were not significant difference among three groups except that NAR of P in alcohol group is highest among three groups(p<0.05). In conclusion, students high consuming alcohol have unhealty dietary behaviors in the light of high frequency of skipping breakfast, undesirable dietary attitude of alcohol drinking and smoking, and low energy inake from diet. Therefore, this results should be considered in meal management and nutritional education for student of high alcohol consumption.

한국인 대표 식단 및 당뇨 식단의 정상인에 대한 혈당반응 (Glycemic Responses of Korean Domestic Measl and Diabetic Meals in Normal Subjects)

  • 당뇨식이로 추천된 5가지의 식단과 설문조사에서 가장 많이 이용하는 한국식단 설문조사 결과에서 가정식 10가지와 외식 9가지 식단을 선정하여 원칙적으로 500$\pm$10 ㎉가 되도록 식단을 작성하였다. 남녀 정상인에게 섭취시킨 후 섬취전, 섭취후 15분, 30분, 60분, 90분, 120분에 혈당을 조사하고 glycemic index(GI)를 계산하였다. 당뇨식으로 추천된 식단과 일반 가정 식단간 혈당 반응에는 큰 차이가 없이 일반적으로 곡류군의 단위수가 적으면 GI가 낮았으며 곡류군의 단위수가 같을 때는 반찬의 종류에 따라 혈당반응에 큰 영향을 주었다. 곡류군에서는 밀가루 분식이 혈당상승 억제효과가 컸고 잡곡은 보리와 현미가 GI를 낮추는데 효과적이었는데 보리가 현미보다 약간 더 좋았다. 보리나 현미는 15%정도 이상 혼식하여야 효과가 있으며 5% 이하는 효과를 인정할 수 없었다. 백미로 3단위 이상의 곡류군 섭취시는 혈당 상승이 높았으며 채소군의 섭취량과는 뚜렷한 경향이 없었다. GI는 식사후 30분 후의 혈당치와 RAR과는 고도로 유의성 있는 상관관계가 있었다.

수온별 조피볼락(Sebastes schlegeli) 치어의 배합사료 적정 공급횟수 (Optimal Feeding Frequency for Juvenile Korean Rockfish Sebastes schlegeli Fed Commercial Diet at Two Different Water Temperatures)

  • We conducted two feeding trials to investigate the optimal feeding frequency of juvenile Korean rockfish Sebastes schlegeli fed a commercial diet of expanded pellets containing 47.2% crude protein, 9.2% crude lipid, and 14.5% ash at two different water temperatures. In the first experiment, triplicate groups of 20 fish with an average weight of 2 g were fed an equal amount of diet (5.97% based on body weight) at one of six feeding frequencies (2, 3, 4, 5, 7, or 9 meals/day) for four weeks at $17.5^{\circ}C$. After four weeks, we measured weight gain (WG), specific growth rate (SGR), feeding efficiency (FE), and protein efficiency ratio (PER). Fish fed diet five meals/day grew significantly better than those fed nine meals/day. The second experiment used identical experimental conditions and feeding regions, except the food ration was slightly less (5.92% based on body weight) and the water temperature was increased to $20^{\circ}C$. After four weeks, we again measured WG, SGR, FE and PER. Fish fed seven meals/day grew significantly faster than those fed 2, 3, 4, or 9 meals/day. Whole-body protein levels in fish fed three meals/day was higher than those fed four meals/day in $17.5^{\circ}C$ water, but whole-body lipids in the fish fed four meals/day was higher than those fed two meals/day in $20^{\circ}C$ water. A second-order polynomial analysis based on WG suggested the optimal feeding frequency for juvenile Korean rockfish was five meals/day at $17.5^{\circ}C$ and six meals/day at $20^{\circ}C$, indicating that fish reared in higher water temperature require higher feeding frequencies.

부산지역 학령전 아동의 식습관과 영양소 섭취평가에 관한 연구 (A Study on the Food Habit and the Evaluation of Nutrient Intake of Preschool Children in Pusan)

  • To assess the food habits, nutrient intake and diet quality of preschool children aged 1 to 6 in Pusan by their meals and snacks, dietary survey was conducted with 176 subjects by a questionnaire and 24hr recall method. 63.1% of the subjects often skipped meals and 72.1% of those skipped breakfast in the main. 94.5% had snacks over once per day. The mean energy intake was 1406.4kcal, with 57.7% of energy intake being supplied by carbohydrate, 13.7% by protein, 28.6% by fat. 54.9%, 71.7% and 26.5% of intakes of protein, calcium and iron were supplied respectively by animal food. Most of iron intake came from plant origin. The percent of calcium intake from animal origin was low significantly in a group aged 4 to 6(p<0.05). The mean intakes of calcium, iron and niacin of total subjects were below Recommended Dietary Allo wance(RDA) for Koreans. The mean intakes of iron and niacin of a group aged 1 to 3 were below RDA as well as those of energy, caicium, vitamin B2 and niacin of the group aged 4 to 6. For calcium, iron, vitamin A, niacin and vitamin C, proportions of subjects with intake levels less than 75% of RDA were all over 36%. For most nutrients, proportions of subjects with intake levels less than 75% of RDA were higher in the group aged 4 to 6 than in the group aged 1 to 3. Nutrient adequacy ratios(NAR) were the lowest in iron in case of the group aged 1 to 3 and in calcium in case of the group aged 4 to 6. NAR of iron increased and that of vitamin B2 decreased significantly along increase age(p<0.05). The mean adequacy ratios(MAR) were 0.82 for total subjects, 0.83 for the group aged 1 to 3 and 0.80 for the group aged 4 to 6. The indexes of nutritional quality(INQ) of calcium, iron and niacin of the group aged 1 to 3 were below 1 as well as those of calcium, vitamin B2 and niacin of the group aged 4 to 6. Both of the age groups received 31.6~59.0% of daily intakes of energy, fat, calcium, phosphrous, vitamin B2 and vitamin C from snacks. So snacks clearly play an important role in dietary intake. Both of the NARs of most nutrients and MAR were higher in snacks than in three meals. The INQs of calcium and iron from three meals and those of iron, vitamin A, vitamin B1 and niacin from snacks of the group aged 1 to 3 were all below 1. The INQs of calcium and vitamin B2 from three meals and those of vitamin A and niacin from snacks of the group aged 4 to 6 were all below 1. In conclusion, nutritional characteristics were different between the two age groups. More attention should be paid to improve adequacy of nutrient intake through meals. And dietary management for snacks is needed especially in the group aged 1 to 3.

남.여 중고등학생의 식생활 행동과 영양지식에 대한 실태 연구 (성남 지역을 중심으로) (Nutritional Knowledge and Eating Behavior of High School Students in Sungnam Area)

  • The purpose of this study was to find out how much they have several aspects of food related knowledge and eating behaviors of high school students in Sungnam area. The self-administrated questionnaire was used. The result were as follows: 1. The average height of boys and girls was $172.6{\pm}0.7$ cm and $156.3{\pm}1.5$ cm respectively. The average weights of them were $62.4{\pm}0.5$ kg (male) and $47.2{\pm}0.8$ kg (female). BMI (Body Mass Index) of them were $20.74{\pm}0.14$ (male), $18.82{\pm}0.28$ (female). The average age is 16.7 years old. 2. The 66.5% of the subjects were spent more than one-third of their pocket money in buying on light meals during three times a week. There were significant differences between income level of family. Boys spent more money on each meal than girls. And significant differences were also obserbed by their residence area and Bundang residences spent more in buying snacks. 3. The rate of skipping meals was 51.2% in boys compared with 68.0% in girls. The frequencies of buying snacks instead of main meal were high in girls. Time limits in eating may possibly be the main reason for skipping meals (59.8%), especially in the morning. Skipping a breakfast becomes general eating habits in high school students, because of pressure for time to go to school. 4. It is required that parents should be taught to prepare balanced lunch box for their children because the rate of students who prepared two lunch boxes are 49.4%. 5. The students took snacks once or twice a day. They usually bought snacks in school concessions (51.8%) and they selected items of snack instinctivly. The girls ate snacks during lunch break time (31.7%) and after dinner (23.6%). Boys ate snacks after dinner (29.1%). Preference of foods were different by sex. Boys preferred bread (31.7%), milk and otherdairy products (80.8%), cola and soda (42.0%) as their snacks between meals. Girls selected biscuit, chip, beverage, coffee as their snacks, frequently. 6. BMI value of the group who ate between meals more than three times a day was lower $(18.78{\pm}0.65)$ than that of the group who ate nothing between meals $(20.71{\pm}3.79)$. 7. As for the nutritional knowledge, the students generally had higher correct rate of answer about which nutritive components of food has (76.6%). But they had lower knowledge on questions of nutritive values in food (10.6%). There was a meaningful relation between favorite food and nutritional knowledge. In conclusion, there were some problems on nutritional knowledge and eating habits among the high school students. Therefore, it was required that girls should be learned to recognize the importance of breakfast and needed to select balanced meals and snacks. And it was required that the nutrition education should be complemented to motivate and improve practical eating behaviors.

The Causes of Guilt in Ready-meal Users: A Focus on Cooking Instructions and Consumers' Health Locus of Control

  • Although ready meals have recently increased their market share in the Korean food industry, a literature review found that the use of ready meals triggers feelings of guilt in homemakers. Such guilt arises as a result of several factors apparently related to consumers' health. Consequently, levels of guilt might be expected to vary depending on consumers' perceived health locus. The present study aims to examine (a) how health locus affects guilty feelings about ready-meal consumption, (b) how the effect varies in relation to the consumption of different types of ready meal, and (c) the relationship between consumers' guilty feelings and willingness to buy ready meals. Three dimensions of health locus of control (HLC) -internal HLC (IHLC), powerful-others HLC (PHLC), and chance HLC (CHLC)- were presumed to influence consumers' feelings of guilt in association with ready meals. Data were collected via an online survey, and participants were randomly assigned to either of two groups: one group was instructed to heat meals in a microwave (ready-to-heat [RTH] group, n=104) and the other cooked using a pan with additional ingredients (ready-to-cook [RTC] group, n=101). The study found that guilty feelings about consuming RTH meals increased in line with increased external HLCs, namely, PHLC and CHLC. For the RTC group, guilt increased in line with increased PHLC. IHLC had no significant effect on guilty feelings in either group. Willingness to buy ready meals decreased for both groups as consumers' feelings of guilt increased. Even RTC meals, which require more time and energy in food preparation, did not reduce guilty feelings among consumers with higher PHLC. RTC meals are preferable for consumers with higher CHLC, since their sense of greater involvement in the cooking process alleviates their feelings of guilt. Cooking with already prepared and uncooked ingredients brought fun and joy, both for the participants and their significant others. This interpretation may be developed into a strategic plan by ready-meal producers to strengthen their marketing strategy.
