Rheological characteristics of starch isolated from germinated corn were investigated and compared with those of nongerminated corn starch. Flow behavior of both starches were Bingham psudoplastic. Consistency index and yield stress of germinated starch solution were lower than those of nongerminated starch solution, while flow behavior index was nearly similar. Concentration dependency of both starch solutions were similar to each other but lower temperature dependency of germinated starch solution was observed. Time dependent characteristics of both starches showed thixotropic behavior, but due to germination, germinated starch showed higher structural decay under shear than nongerminated starch and its elastic properties was weaker.
Rheological properties of gelatinized potato starch were investigated with Brookfield wide-gap viscometer at various conditions. The gelatinized potato starch at 3-7% showed a pseudoplastic behavior with yield stress, and presented thixotropic properties with time-dependent structural decays. The consistency index and yield stress of gelatinized starch were proportional to starch concentration but inversely proportional to measurement temperature, and the flow behavior index did not show constant relationship. The consistency index and yield stress of the gelatinized starch on addition of phosphate decreased as the flow behavior index increased. The values of activation energy at initial and equilibrium were 1.52 kcal/g.mole and 127 kcal/g.mole, respectively.

In this paper, thermo-mechanical and rheological properties of NCPs (Non-Conductive Pastes) depending on silica filler contents and diluent contents were investigated. And then, thermal cycling (T/C) reliability of flip chip assembly using selected NCPs was verified. As the silica filler content increased, thermo-mechanical properties of NCPs were changed. The higher the silica filler content was added, glass transition temperature ($T_g$) and storage modulus at room temperature became higher. While, coefficient of thermal expansion (CTE) decreased. On the other hand, rheological properties of NCPs were significantly affected by diluent content. As the diluent content increased, viscosity of NCP decreased and thixotropic index increased. However, the addition of diluent deteriorated thermo-mechanical properties such as modulus, CTE, and $T_g$. Based on these results, three candidates of NCPs with various silica filler and diluent contents were selected as adhesives for reliability test of flip chip assemblies. T/C reliability test was performed by measuring changes of NCP bump connection resistance. Results showed that flip chip assembly using NCP with lower CTE and higher modulus exhibited better T/C reliability behavior because of reduced shear strain in NCP adhesive layer.
Effect of acetylated starches (acetylated rice starch and acetylated tapioca starch) on rheological properties of hot pepper-soybean paste (HPSP) at different mixing ratios of rice flour (RF) and acetylated starch (AS) (10/0, 9/1, 8/2, and 7/3) was evaluated in steady and dynamic shear. All HPSP samples at $25^{\circ}C$ exhibited shear-thinning (n=0.31-0.36) and thixotropic behavior with high yield stresses and their steady flow curves were well described by power law and Casson models. The presence of AS resulted in the decrease in consistency index (K), apparent viscosity (${\eta}_{a,100}$), and yield stress (${\sigma}_{oc}$), and their predominant decreases were noticed at higher ratio of RF to AS (7/3 ratio). Arrhenius temperature relationship represents variation with temperature in the range of $5-35^{\circ}C$ with the high determination coefficients ($R^2=0.97-0.99$). Dynamic moduli (G', G", and ${\eta}^*$) values of HPSP samples mixed with AS were lower than those of HPSP with no added AS within the experimental range of frequency (0.63-62.8 rad/sec). Steady and dynamic shear rheological properties of HPSP samples seem to be greatly influenced by the presence of acetylated starch.
The rheological studies on dilute and concentrate solutions of naked and covered barley starches were carried out with various viscosimeters. The rheology of dilute solutions (0.05-0.3%) were characterized by intrinsic viscosity and related parameter according to Huggins equation. Also, the rheology of the solutions of higher concentrations (1-5%) were characterized by time dependent characteristics and pseudoplastic behaviors. The values of consistency index according to the power equation were exponen tially dependent upon concentration and temperature. The results showed that the rheological properties could differ greatly due to difference in varieties. The naked barley starch exhibited higher intrinsic viscosity, more thixotropic behavior and more dependence of consistency index on concentration and temperature than the covered barley starch.

The high prevalence of pediculosis capitis, commonly known as head lice (Pediculus humanus capitis) infestation, has led to the preparation of a community-based pediculicidal ointment, which is made of common household items and the extract of Tinospora crispa stem. The present study aimed to evaluate the safety, efficacy, and physicochemical characteristics of the T. crispa pediculicidal ointment. The physicochemical properties of the ointment were characterized, and safety was determined using acute dermal irritation test (OECD 404), while the efficacy was assessed using an in vitro pediculicidal assay. Furthermore, the chemical compounds present in T. crispa were identified using liquid-liquid extraction followed by ultra-performance liquid chromatography quadruple time-of-flight mass spectrometric (UPLC-qTOF/MS) analysis. The community-based ointment formulation was light yellow in color, homogeneous, smooth, with distinct aromatic odor and pH of $6.92{\pm}0.09$. It has spreadability value of $15.04{\pm}0.98g{\cdot}cm/sec$ and has thixotropic behavior. It was also found to be non-irritant, with a primary irritation index value of 0.15. Moreover, it was comparable to the pediculicidal activity of the positive control $Kwell^{(R)}$, a commercially available 1% permethrin shampoo (P>0.05), and was significantly different to the activity of the negative control ointment, a mixture of palm oil and candle wax (P<0.05). These findings suggested that the community-based T. crispa pediculicidal ointment is safe and effective, having acceptable physicochemical characteristics. Its activity can be attributed to the presence of compounds moupinamide and physalin I.
The Physical and chemical properties or dry acorn starch(DS), detannined acorn starch (DTS) and defatted and detannined acorn starch(Drn) were investigated. Ail acorn starch sample, observed by a scanning electron microscope, showed a hemispherical shape ud its size was about $5{\sim}10{\mu}m$ in diameter. It had a little change on the pasting temperature of DS, DTS and DFTS but peak viscosity of DTS was somewhat higher than that of n. Flow behavior of gelatinized starch pastes showed a pseudoplastic behavior and flow behavior index was lower than unit. The consistency coefficient showed concentraion and temperature dependency. The activation energies of DS, DTS and DFTS were $2.09{\sim}3.58Kcal/g\;{\cdot}\;mol and time dependent characteristic of acorn starch samples showed thixotrpic behavior.
Rheological propreties of defatted and 1% palmitic arid reincorporated rice starch solutions were investigated, comparing with nondefatted starch. Flow behavior of gelatinized starch solutions(3-7%) revealed pseudoplastic behavior with yield stress, but yield stress was decreased by defatting. Relationship between logarithmic consistency index and concentration of nondefatted starch solution was linear with single slope, but the slopes for defatted and reincorporated starch solutions were different at 3-5% and 5-7% starch concentration. The activation energies for 7% starch solutions were estimated to be 3.14-4.76 kcal/g mol and increased slightly by defatting. All thre starch solutions above 4% concentration exhibited hysteresis phenomena, but by defatting, humping phenomena was observed and thixotropic behavior were increased slightly.
Appropriate types and concentrations of starch-based fat replacers which are low-pH stable, shear resistant and heat stable were selected to develop reduced-fat mayonnaise without affecting taste, texture and emulsion stability. Four kinds of commercial fat replacers [Neutral DR (DR), Stellar 100X (SX), Sta Slim 150 (SS) and N-Lite L (NL)] were thermally activated after appropriately hydrated and applied to mayonnaise formulation. For each fat replacer, eight recipes having various ratios of soybean oil/fat replacer(95/5 to 60/40) were formulated and compared with standard formulation(100% soybean oil) using rheological and sensory evaluations. All tested starch pastes showed pseudoplastic behavior, time-dependent thixotropic gel characteristics. The increasing order of pseudoplasticity and yield stress was RM, NL, SS and ST. The hardness and adhesiveness of each fat replacer-added mayonnaise was increased in the same order as above. Formulated mayonnaise which contained higher ratio of fat replacer showed lower values in hardness and adhesiveness. ST at up to 25% oil replacement exhibited the highest oil replacing ability among four replacers. ST-added mayonnaise also exhibited the highest sensory score and emulsion stability among all products including standard formula. The high sensory score in spreadability of RM-added mayonnaise well reflected the consistent index of RM paste. Use of fat replacers reduced oily odor and greasy aftertaste of mayonnaise.
Effects of sucrose at different concentrations (0, 10, 20, and 30%, w/w) on steady and dynamic shear rheological properties of sweet potato starch (SPS) paste (5%, w/w) were investigated. The steady shear rheological properties of SPS-sucrose composites were determined from rheological parameters based on power law and Casson flow models. At 25$^{\circ}C$ all the samples showed pseudoplastic and thixoropic behavior with high yield stress. Consistence index (K), apparent viscosity (${\eta}_{a,100}$), and yield stress (${\sigma}_{oc}$) values of SPS-sucrose composites decreased with increasing sucrose concentration from 10% to 30%. The decrease of swelling power was observed at higher sucrose concentration (>20%) and the low swelling power yielded a lower K, ${\eta}_{a,100}$, and ${\sigma}_{oc}$ values. In temperature range of 25-70$^{\circ}C$, Arrhenius equation adequately assessed variation with temperature. Oscillatory test data showed weak gel-like behavior. Magnitudes of storage (G') and loss (G") moduli increased with an increase in sucrose concentration and frequency. The SPS-sucrose composite at 30% concentration closely followed the Cox-Merz superposition rule.
