Quality Evaluation of Sliced and Pizza Cheeses Treated by Gamma and Electron Beam Irradiation

  • This study was conducted to evaluate and compare the quality changes of commercial sliced and pizza cheeses processed by gamma and electron beam irradiation. The $L^*$-value of sliced and pizza cheeses decreased and the $a^*$-value decreased only in pizza cheese by both irradiation sources. There was no change in pH. There was no difference in 2-thiobarbituric acid reactive substances (TBARS) value between non-irradiated and irradiated samples at a dose of 3 kGy or less (p<0.05). However, both irradiation sources resulted in increased TBARS value in sliced and pizza cheeses at 5 kGy. Sensory evaluation revealed that irradiation influenced odor, taste and overall acceptability of both cheeses and may cause the limitation of consumers' acceptance for irradiated cheese products. Results indicate that both gamma and electron beam irradiations with less than 3 kGy may not influence significantly the physicochemical quality of sliced and pizza cheeses. However, to meet a market requirement, a method to overcome the sensory deterioration of cheeses should be developed and applied.

Determination of the Effect of Different Ground Mustard Seeds on Quality Characteristics of Meatballs

  • This study investigated the effect of yellow, black, and brown mustard seeds on color, lipid oxidation (thiobarbituric acid-reactive substances [TBARS]), and microbiological and sensory qualities of meatballs during storage. Heat treatment of mustard seeds affected the TBARS value of meatball samples (p<0.0001). The addition of mustard seeds decreased TBARS value of meatball samples (p<0.0001). Heat treatment of mustard seeds decreased the $L^*$, $a^*$ and $b^*$ values of meatball samples (p<0.0001). The meatball samples with mustard seeds increased $b^*$ value of meatball samples however it decreased $a^*$ value of meatball samples (p<0.0001). The addition of mustard seeds decreased aerobic mesophilic bacteria count (p<0.0001), Enterobacteriaceae count (p<0.0001), psychrophilic bacteria count (p<0.0001) and yeast and mold count of meatball samples (p<0.0001). On a given storage day, the yellow mustard added meatballs sample was given higher color, appearance, flavor, acceptability ratings than those added black and brown mustard. Regarding sensory and microbiological properties, mustard seed contributed to microbiological quality and sensorial properties of meatball samples.

고등어 지질의 산화안정성에 관한 연구 (Studies on the Oxidative Stabilities of Mackerel Lipids)

  • 고등어 지질의 산화안정성을 밝히기 위하여 어체를 표피, 보통육, 혈합육 및 내장의 4부위와 총어체에서 지질을 추출하여, $30^{\circ}C$에 저장하여 두고 산가, 과산화물가, TBA가, 요오드가, 중량변화 및 지방산 조성 등의 변화를 경시적으로 조사하여 산화안정성을 검토하였는데, 그 결과는 다음과 갈다. 1. 저장 중 지질의 과산화물가, TBA가의 변화 및 중량변화등으로 보아 산화속도는 표피지질, 내장지질, 총지질, 혈합육지질, 보통육지질의 순으로 빨랐다. 2. 각 부위의 극성지질과 비극성지질의 비율은 혈합육지질의 극성지질이 $15.46\%$로 가장 많았고, 표피지질의 극성지질이 $5.35\%$로 가장 적었다. 3. 전지질의 지방산 조성은 각 부위 모두 $C_{16:0}$산, $C_{18:1}$산 및 $C_{22:6}$산이 많았으며, 고도불포화산인 $C_{22:6}$산은 혈합육지질이 가장 많았고 표피지질이 가장 적었다. 4. 극성지질과 비극성지질의 지방산 조성에 있어서 $C_{16:1}$산 및 $C_{18:1}$산의 monoene산은 극성지질이 비극성지질에 비하여 낮았으며, $C_{20:5}$산 및 $C_{22:6}$산의 polyene산은 극성지질이 비극성지질보다 높았다. 5. 저장 중 지방산 조성의 변화는 polyene산 특히, $C_{20:5}$산 및 $C_{22:6}$산이 현저한 감소를 보였으며, $C_{14:0}$산 및 $C_{16:0}$산의 포화산의 증가가 두드러졌고 polyene산의 감소는 극성지질이 비극성지질보다 감소 속도가 빨랐다.

Effect of Protective Compounds on the Survival, Electrolyte Leakage, and Lipid Degradation of Freeze-Dried Weissella paramesenteroides LC11 During Storage

  • The effect of cryoprotectants (maltodextrin+glycerol) and cryoprotectants+antioxidant [ascorbic acid and/or butylated hydroxytoluene (BHT)] mixtures on the survival, electrolyte leakage, and lipid degradation of freeze-dried Weissella paramesenteroides LC11 during storage was investigated and compared with that of the control (cells without additives) over a 90-day storage period at 4 or $20^{\circ}C$ in glass tubes with water activity ($a_w$) of 0.23. The survival, electrolyte leakage, and lipid degradation were evaluated through colony counts, electrical conductivity, and thiobarbituric acid reactive substances (TBARS) content, respectively. The fatty acids composition was determined by gas chromatography, in both the total lipid extract and the polar lipid fraction, and compared with that of the control after the 90-day storage period. As the storage proceeded, increases in leakage value and TBARS content, as well as a decrease in viability, were observed. After 90 days of storage, the major fatty acids found in both the total lipid extract and the polar lipid fraction were palmitic (16:0), palmitoleic (16:1), stearic (18:0), oleic (18:1), linoleic (18:2), and linolenic (18:3) acids. The survival, leakage value, TBARS content and 18:2/16:0 or 18:3/16:0 ratio were the greatest for the protected strain held at $4^{\circ}C$. Cells with the cryoprotectants+BHT mixture showed the highest percentage of survival and 18:2/16:0 or 18:3/16:0 ratio in both lipid extracts, as well as the lowest leakage value and TBARS content after the 90-day storage period. Drying cells with the cryoprotectants+BHT mixture considerably slowed down polar lipid degradation and loss of membrane integrity, resulting in improved viability during storage.

솔빈산 칼륨이 첨가되지 않은 육제품의 저장 수명과 품질 특성 (Shelf-life and Quality Characteristics of Potassium Sorbate-free Meat Products)

  • This study aimed for the examination of quality characteristics and safety of potassium sorbate-free meat products. Therefore, experiments were carried out on the frankfurter sausage and pressed ham, which were stored at 4 and 30$^{\circ}C$ for up to 40 days. The potassium sorbate concentrations of the frankfurter sausage and pressed ham obtained from local market ranged from 1.087 to 1.449g / kg, which were below the permitted value as prescribed in the Korean Hygienic Regulation. At the 0 day the total aerobic bacterial counts of frankfurter sausage and pressed ham were in the level of around 103.0 and 103.4 CFU / g, respectively. However, they were prominently increased after 20 days at 4$^{\circ}C$ and 10 days at 30$^{\circ}C$ to higher than 105 CFU / g. After 30 days the counts were increased to 106.5 and 107.2 CFU / g, respectively. The growth curve of lactic acid bacteria was shown to be similar with that of total bacteria. the counts of lactic acid bacteria of the products stored at 4$^{\circ}C$ were 101∼102 CFU / g lower than those stored at 30$^{\circ}C$. Coliform bacteria was not detected in both of the products stored at 4$^{\circ}C$ even after 40 days storage, but after 10 days at the 30$^{\circ}C$. No significant differences in the microbial counts examined in this study were observed between frankfurter sausage and pressed ham. The biochemical tests on the isolated colonies from Clostridein agar showed no presence of Clostridium botulinum and Clostridium perfringens in the meat products examined. The pH of frankfurter sausage and pressed ham at the beginning was about 6.6, which level was maintained relatively constant during the storage at 4$^{\circ}C$, but it was increased after decrease to about 5.5 during the storage at 30$^{\circ}C$. TBA value was increased slightly till 30 days, but after that time increased sharply. VBN value was increased slowly during the whole storage, but it was more than 30 mg% for the samples stored at 30$^{\circ}C$.

Effect of Aged and Fermented Garlic Extracts as Natural Antioxidants on Lipid Oxidation in Pork Patties

  • The aim of this study was to investigate the natural antioxidant activity of raw garlic (RG), aged black garlic (AG), and garlic fermented with Bacillus subtilis (FG) extracts on pork patty lipid oxidation throughout refrigerated storage. The total polyphenol, total flavonoid content, 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging activity of three different types of garlic extracts were measured. The total phenolic and flavonoid content of AG was significantly higher than that of FG and RG; FG also showed a significantly higher total phenolic content than that of RG (p<0.05). The DPPH and ABTS radical scavenging activity of AG and FG was significantly higher than that of RG and that of AG was significantly higher than that of FG (p<0.05). To investigate the effect of processed garlic extracts on pork patty lipid oxidation, freeze-dried extracts of RG, FG, and AG were added to the patties at levels of 0.5% (w/w). Patties containing 0.01% (w/w) ascorbic acid (AA) and patties without treatment (CON) were compared with patties containing garlic extracts. The pH value, 2-thiobarbituric acid reactive substances value, and volatile basic nitrogen value of pork patties containing AG and FG extracts were significantly decreased compared to the other groups (CON, AA, and RG; p<0.05). Taken together, these results suggest that AG and FG extracts possess strong antioxidative activity and can serve as natural antioxidative additives to prevent pork patty lipid oxidation.

Effect of acid whey and freeze-dried cranberries on lipid oxidation and fatty acid composition of nitrite-/nitrate-free fermented sausage made from deer meat

  • Objective: This study evaluated the effect of acid whey and freeze-dried cranberries on the physicochemical characteristics, lipid oxidation and fatty acid composition of nitrite-free fermented sausage made from deer meat and pork fat. Antioxidant interactions between acid whey and cranberry compounds were also explored. Methods: Four formulations of fermented venison sausage were prepared: F1 (control), F2 (with 5% liquid acid whey), F3 (with 0.06% of freeze-dried cranberries), and F4 (with 5% liquid acid whey and 0.06% of freeze-dried cranberries). Each sample was analyzed for pH, water activity ($a_w$), heme iron content, 2-thiobarbituric acid reactive substances (TBARS) value and conjugated dienes at the end of the manufacturing process and at 30 and 90 days of refrigerated storage. Fatty acid composition was measured once at the end of the manufacturing process. Results: At the end of ripening, all samples presented statistically different values for a pH range of 4.47 to pH 4.59. The sum of the unsaturated fatty acids was higher, while the conjugated diene and the TBARS values were lower in sausages with freeze-dried cranberries as compared to the control sausage. The highest content of heme iron (21.52 mg/kg) at day 90 was found in the sausage formulation with the addition of freeze-dried cranberries, which suggests that the addition of cranberries stabilized the porphyrin ring of the heme molecule during storage and thereby reduced the release of iron. The use of liquid acid whey in combination with cranberries appears to not be justified in view of the oxidative stability of the obtained products. Effects of Dietary Glycine Betaine on Pork Quality in Different Muscle Types

  • This study was conducted to determine the effects of dietary glycine betaine on pork quality in different muscle types. A total of 80 female pigs ($Landrace{\times}Yorkshire{\times}Duroc$) were randomly allotted into one of four experimental diet groups. Each group of pigs were fed a commercial diet (Control) with 0.2 g glycine betaine (T1), 0.4 g glycine betaine (T2) and 0.6 g% glycine betaine (T3)/kg for 40 days. pH of belly was significantly higher in the control than dietary glycine betaine groups at 13 days of storage, whereas pH of picnic shoulder and ham were significantly lower in control than glycine betaine groups. At 13 days of storage, redness (a*) of belly was significantly higher in control than dietary glycine betaine groups, whereas picnic shoulder and ham were significantly higher in glycine betaine groups than in the control. Water-holding capacities (WHC) of all muscle samples were significantly higher in the control than glycine betaine groups until 5 days of storage. Sarcomere length was significantly longer in the control than glycine betaine groups. The thiobarbituric acid reactive substances (TBARS) value of belly was much higher than other muscle types at 13 days of storage. In fatty acid composition, dietary glycine betaine increased the ratio of saturated fatty acids (SFA) and decreased unsaturated fatty acids (USFA) in loins.

냉동탕수육의 튀김횟수에 따른 튀김유지와 산화안정성 (Effects of Reusing Times on the Oxidative Stability of Frying Fat for Frozen Battered Pork)

  • 시판 탕수육을 대두유와 shortening으로 연속적으로 사용하여 튀긴 후 탕수육의 이화학적 및 관능적 변화와 튀김유의 이화학적 변화를 측정하여 이를 통한 한계 사용 횟수를 예측하고자 하였다. 튀김유의 TBA값은 대두유가 shortening보다 사용횟수에 따른 증가가 뚜렷하였으나, 탕수육의 경우에는 반대로 shortening을 사용한 탕수육이 대두유로 튀긴 탕수육보다 증가율이 높게 나타났다. 튀김횟수 증가에 따른 튀김유의 산가와 과산화물가는 증가하였으며 shortening에서 과산화물가의 변화가 크게 나타났다. 대두유로 튀긴 탕수육의 TBA값과 가장 상관 관계가 높은 풍미를 선정하여 한계사용횟수를 구한 결과 약 9회로 나타났고, shortening으로 튀긴 탕수육의 TEA 값과 가장 상관관계가 높은 인자인 조직감을 선정하여 한계 사용횟수를 측정한 결과 약8회로 나타났다. 대우유와 shortening의 한계사용횟수를 예측하기 위해 식품공전에 규정된 산가를 회귀방정식에 대입한 결과 두 기름 모두 약 8회로 나타나 위의 결과와 비슷한 한계사용횟수를 나타났다.

Effect of Allium hookeri Root on Physicochemical, Lipid, and Protein Oxidation of Longissimus Dorsi Muscle Meatball

  • The antioxidant effects of Allium hookeri root (AHR) were investigated by evaluating lipid and protein oxidation in meatballs during refrigerated storage at $4{\pm}1^{\circ}C$. AHR was mixed at concentrations of 0.5% (w/w, T2) and 1% (w/w, T3) with minced longissimus dorsi muscle. Meatballs containing AHR (T2 and T3) were compared to those containing 0.05% (w/w) ascorbic acid (T1) as a reference and without antioxidant as a control. The 2-thiobarbituric acid reactive substances (TBARS) value, disulfide bond formation, carbonyl contents, and volatile basic nitrogen (VBN) value of T2 were lower than those of the control during storage (p<0.05). The pH values of T2 and T3 were higher than that of the control (p<0.05). Texture profile analysis of T2 revealed a lower value compared to the control (p<0.05). Therefore, the VBN value, TBARS value, disulfide bond formation, and carbonyl content in meatball containing AHR were lower than those of the control meatball. These results indicate that AHR improves the quality of meat products and functions as an antioxidant.
