냉동 온도에서 소시지의 저장 수명에 관한 연구 (A Study on the Shelf-life of Sausages in Refrigerated Storage)

  • Quality changes of sausages in refrierated storage for 60 days were investigated. Nine types of sausages produced in Korea were stored at 4$^{\circ}C$(3~5$^{\circ}C$), and then chemical, microbiological, and sensory characteristics were evaluated on every 10 days. The proximate analysis showed considerable variation in fat (23.97%, 17.10~30.20%) with less variation in moisture (51.96%, 48.10~56.30%) and protein (12.96%, 11.40~13.95%), pH value decreased over time averaging from 6.31 to 6.22 with no significant difference. Water activity was consistent over refrigerated storage averaging 0.95. Volatile basic nitrogen (VBN) values were still within 20 mg% though VBN for all types significantly increased over time (p<0.05). Thiobarbituric acid (TBA) values were well below 1.0 though TBA showed significant differences among storage periods (p<0.05). Standard plate counts (SPCs) significantly increased during storage (p<0.05) while coliform group was not counted in all cases. SPCs reached 104 CFU/g in two types after 50 days' storage and were below 105 CFU/g in all types after 60 days' storage. Instrumental texture analysis showed that springiness, adhesiveness, and hardness signficantly decreased over time (p<0.05) while no change was observed in external color. significantly decreased over time the 60-day storage period (p<0.05) while cohesiveness, chewiness and gumminess did not change. Lightness, redness and yellowness of the internal Hunter color significantly decreased over time (p<0.05) while no change was observed in external color. Sensory profile showed that flavor, taste, texture and overall acceptable after 60 days' storage at 4$^{\circ}C$. However, the shelf-life of the samples should be decided in the consideration of the growth rate other spoilage flora coupled with the bacterial growth after 50 days' storage.

포장방법이 칼치제품의 저장성에 미치는 영향 (Effect of Packaging Method on the Storage Stability of Hair Tail Products)

  • 포장방법이 칼치 Chunk의 저장성에 미치는 영향을 알아보기 위하여 시료를 염장 혹은 무염처리 상태로 진공포장, 탈산소제 포장 및 대조구로 하여 $0^{\circ}C$ 또는 $5^{\circ}C$에 저장하면서 실험한 결과는 다음과 같았다. 염장 칼치의 적정 염농도를 4% 내외로 하였을때 적정 식염수의 농도는 15%였고 염장기간은 24시간 이었다. 염장 혹은 무염 처리구의 VBN, TMA, 생균수는 저장 기간이 길어짐에 따라 증가하는 경향이었으나 TBA 값은 $5{\sim}15$일 경에 최고값에 달한후 감소하였다. 칼치 Chunk의 품질 유효지표 성분은 VBN 이었으며 그 함량의 상한선은 29mg%였다. 칼치 Chunk의 간이 품질 평가방법을 도출하였다. $0^{\circ}C$에 저장한 무염처리 칼치의 진공포장, 탈산소제 포장 및 대조구의 경우, 저장 가능기간은 14, 10 및 6일 이었으며, $5^{\circ}C$의 경우는 7, 6 및 4일 이었다. 또한 염장한 칼치를 $5^{\circ}C$에 저장할 경우는 각각 14, 13 및 10일 이었다.

  • The chemical composition of fish feeds(mackerel, gizzard shad, shrimp and formula feed) were analyzed and compared with those of untreated and irradiated (5 kGy) feeds, and the effects of gamma irradiation (5 kGy) and butylated hydroxyanisole (BHA, 200ppm) on feeds spoilage were investigated by determination of thiobarbituric acid (TBA) value and peroxide value for 14 days at $20^{\circ}C$, $4^{\circ}C$ or $-20^{\circ}C$. Crude protein, crude lipid, crude fiber, crude ash and nitrogen free extract were not significantly changed by gamma irradiation with the dose of 5 kGy. Immediately gamma irradiation increased the initiative oxidation of feeds as expected. But BHA was found to be greatly effective in minimizing the radiation-induced peroxidation (p<0.05). The TBA value and peroxide value increased with the elapse of the storage period. The level of lipid oxidation was increased depending on the rise in storage temperature. But the additions of BHA inhibited the lipid oxidation (p<0.05).

돈육 지방에 미치는 함초(Saiicoma herbacea L.)의 항산화 효과 (Antioxidative Effect of Glasswort(Salocornia herbacea L.) on the Lipid Oxidation of Pork)

  • 염생식물인 함초는 우리나라에서 가능성 있는 기능성 식품소재의 알려져 있다. 본 연구는 돈육 지방에 대한 기능성 식품소재로서의 가능성을 알아보기 위해 실험을 수행하였다. 해안에서 채취한 함초를 부분적으로 잎, 줄기, 뿌리로 구분하여 항산화 효과를 비교하였다. 시료에 대한 항산화 효과는 TBA 방법을 사용하여 살펴보았다. 해안 함초의 경우 동격 건조한 잎(FLC)이 0일째에 BHT 다음으로 낮은 TBARS치를 나타내어 가장 항산화 효과가 좋았다. 그러나 저장 7일에는 온풍 건조한 잎(OLC)과 TBARS치가 큰 차이가 없었다. 저장 14일에는 온풍 건조한 잎(OLC)이 BHT 다음으로 높은 항산화 효과를 나타냈다. 결론적으로 해안에서 채취한 함초는 항산화 효과를 보였으며, 온풍 건조시킨 시료에서 잎 >뿌리 >줄기 순으로 돈육의 지방에 대한 항산화 효과를 나타냈다. 특히, 함초는 천일염(sea salt)과 죽염(bamboo salt)보다 2배이상의 항산화 효과를 보였다.

크릴이 첨가된 된장의 품질 특성 (Quality Characteristics of Soybean Paste Added with Krill)

  • This study was conducted to develop functional soybean paste with krill (Euphausiacea) as compared to a conventional soybean paste (S1). Soybean containing 10%, 20% and 30% (w/w) krill (S2~S4, respectively) was prepared and quality characteristics (moisture, crude fat, crude protein, ash, reducing sugar, pH, titratable acidity, total acidity and buffering power) were assessed during fermentation for 150 days. As well, antioxidative activities of krill soybean paste were compared to those of control soybean paste based on total phenolic compound content and free radical scavenging activity, including the 1,1-diphenyl-2-picryl-hydrazil (DPPH) scavenging activity and the thiobarbituric acid value (TBA value). The moisture content of all samples decreased to 41.91~53.47% during fermentation, while the crude fat increased to 1.98~5.21% with increasing addition of krill. Additionally, crude protein increased slightly to 8.24~14.08% with increasing addition of krill after 120 days of fermentation. Ash content was 15.96~18.92%. The reducing sugar content of S2, S3 and S4 was higher than those of S1 with increasing length of fermentation. S2, S3, and S4 displayed progressive decreases in pH and progressive increases in titratable acidity compared to S1. The total acidity of all samples was increased, while the buffering power was decreased with increasing fermentation. Especially, the buffering power of S1 was lower than that of S2, S3 and S4. DPPH radical scavenging activity of lipophilic extracts from S2, S3 and S4 was slightly higher than those of S1. However, the radical scavenging activity of hydrophilic extracts from all samples had similar tendencies, regardless of the krill content or fermentation period. Total phenolics increased with increasing fermentation time and TBA value increased with increasing fermentation time and krill content.

The Effect of Evening Primrose Oil on Chemical and Blood Cholesterol Lowering Properties of Cheddar Cheese

  • The present study was carried out to investigate the changes in chemical and sensory properties, and cholesterol lowering effect of evening primrose oil (EPO) addition in cholesterol-reduced Cheddar cheese. The cholesterol removal rate reached 92.07% by ${\beta}$-cyclodextrin in the cheese before EPO addition. The thiobarbituric acid (TBA) value of cholesterol-reduced and EPO-added cheese increased with both ripening time and amount of EPO addition. Addition of 5% EPO resulted in a significant difference in TBA value after 4-week ripening, compared with no addition of EPO. The production of short-chain free fatty acids (FFAs) increased with ripening period in all treatments. From 4 week of ripening, the amounts of short-chain FFA in 3 and 5% EPO-added groups were significantly higher than those in other groups. Among sensory characteristics, rancidity was mostly affected by EPO addition, however, the rancidity value of 1% EPO-added was not significantly different from that of EPO-free and cholesterol-reduced cheese. Also, Cheddar cheese flavor was not profoundly affected by 1% EPO addition in all ripening periods. Total blood cholesterol dramatically decreased from 184.0 to 137.1 mg/dL with 5% EPO-added and cholesterol-reduced cheese following 8 weeks of feeding. The present results indicated that 5% EPO addition resulted in a profound lowering effect on blood total cholesterol with some adverse effects on chemical and sensory properties.

  • 말쥐치 및 도루묵을 보다 효과적으로 이용하기 위하여, 축육과 유사한 텍스쳐를 가진 어육단백질농축물 저장 중의 품질 안정성 및 이용방안에 대하여 검토하였다. 제품은 함기포장하여 상온에 저장하여도 복수성, TBA값 및 갈변도 등에 큰 변화없이 90일간 품질이 안정하게 유지되었다. 햄버어그 및 튀김어단을 만들때 쇠고기 대신에 축육과 유사한 텍스쳐를 가진 어육단백질농축물을 50%까지 섞어도 맛, 냄새 및 텍스쳐 등에 별다른 손색이 없었다.

반하온폐탕(半夏溫肺湯)과 반하온폐탕가미방(半夏溫肺湯加味方)의 효능(效能)에 관(關)한 실험적(實驗的) 연구(硏究) (Experimental studies of the effiency of Banhaonphetang and Banhaonphetang gamibang on the pulmonary injury in rats)

  • Experimental studies were done to research the clinical effect of Banhaonpyetang and Banhaonpyetanggarnibang estimated the level of $pO_2,\;pCO_2$, and pH, the concentration of $HCO_{3}-ion$, the lung TBA(thiobarbituric acid) values in blood and oxygen consumption values in blood in $O_{3}-intoxicated$ rats. The results were obtained as follows. 1. Both Banhaonpyetang and Banhaonpyetanggamibang revealed the increasing effect with statistically significant on the blood $pO_2$ level in $O_{3}-intoxicated$ rats 2. Both Banhaonpytang and Banhaonpyetanggarnibang revealed the decreasing effect with statistically significant on the blood $pO_2$ level in $O_{3}-intoxicated$ rats 3. Both Banhaonpyetang and Banhaonphetanggarnibang revealed the decreasing effects with statistically significant on the blood $HCO_{3}level$ in $O_{3}-intoxicated$ rats. 4. Both Banhaonpyetang and Banhaonpyetanggamibang revealed the increasing effects with statistically significant on the blood pH level in. $O_{3}-intoxicated$ rats. 5. Both Banhaonpyetang and Banhaonpyetanggamibang revealed the decreasing effects with statistically significant on the Oxygen consumption values in $O_{3}-intoxicated$ rats. 6. Both Banhaonpyetang and Banhaonpyetanggamibang revealed the decreasing effects with statistically significant on the Lung TBA values in $O_{3}-intoxicated$ rats. According to the above findings, it is suggested that Banhaonpyetang and Banhaonpyetanggamibang retain effectiveness on the lung damages and can be used for treatment of respiratory disease.

Assessment of the potential of algae phycobiliprotein nanoliposome for extending the shelf life of common carp burgers during refrigerated storage

  • This study is focused on the effect of phycobiliprotein extraction of Gracilaria on the quality of common carp burgers, and the application of nanoliposomes containing pigment in the improvement of its antimicrobial and antioxidant activity of burgers during refrigerated storage in 18 days. Burgers were incorporated with phycobiliprotein and liposomal phycobiliprotein (2.5% and 5% w/w), and their chemical and microbial changes in terms of pH, peroxide value (PV), thiobarbituric acid (TBA), total volatile basic nitrogen (TVB-N), total viable counts (TVC), psychrotrophic bacterial counts (PTC), and sensory characteristics were evaluated. Results presented a nanoliposome size of about 515.5 nm with capable encapsulation efficiency (83.98%). Our results showed non-encapsulated phycobiliprotein could delay the deterioration of common carp burgers, as a reduction in PV, TBA, and TVB-N, TVC, and PTC values in burgers treated with free and nano encapsulated phycobiliprotein. Moreover, the potential of phycobiliprotein was improved when it was encapsulated into chitosan coated liposomes. Burgers treated with 5% nanoliposomes displayed the lowest amount of lipid oxidation and microbial deterioration in comparison to others during storage. According to chemical, microbial and sensory evaluation, the shelf life of common carp burgers was increased in samples treated with encapsulated phycobiliprotein at 2.5% and 5%, as compared to the control (p ≤ 0.05).

녹차 및 연잎 열수추출물 처리가 염장고등어의 저장 중 품질특성에 미치는 영향 (Effect of Green Tea and Lotus Leaf Boiled Water Extracts Treatment on Quality Characteristics in Salted Mackerel during Storage)

  • 본 연구는 고등어의 지질산패에 미치는 녹차 및 연잎의 항산화 효과를 알아보기 위하여 1%와 2%의 농도의 녹차 및 연잎 열수추출물에 처리하여 28일간 $4^{\circ}C$ 냉장보관하면서 염장고등어의 품질특성에 대해 알아보았다. 수분은 대조구의 경우 저장기간 동안 점점 감소하는 현상을 보였으나 처리구에서는 14일까지 감소하였으며 조단백질과 조회분은 저장기간 동안 큰 변화는 없었다. 조지방의 경우 대조구에서는 저장기간 동안 점차 증가하였으나 처리구에서는 오히려 감소하였다. pH는 저장기간이 경과함에 따라 부패가 진행되어 처리구, 대조구 모두 상승하는 경향을 보였으며 특히, 대조구의 경우 저장 7일째 6.35를 나타냄에 따라 부패가 시작되었음을 알 수 있었다. VBN은 저장초기 대조구를 포함한 모든 실험구에서 5.1~5.3 mg%로 매우 신선한 상태를 유지하였으며 저장기간 동안 처리구는 대조구보다 완만하게 증가하는 모습을 보였다. TMA-N의 경우 대조구와 비교하였을 때 1%의 농도처리 보다는 2%, 녹차 열수추출물보다는 연잎 열수추출물로 처리한 고등어에서 낮은 값을 보였다. TBA가, 과산화물가 및 산가를 측정한 결과 모두 비슷한 경향을 나타내었는데 저장기간에 따라 대조구에서는 급격히 증가하는 반면, 녹차 및 연잎 열수추출물을 농도별로 처리한 고등어에서는 증가폭이 완만하였으며 1% 농도에서 보다는 2%에서 처리한 고등어가 현저히 낮은 값을 보였다. 본 실험결과로 종합해 볼 때 염장고등어 제조시 녹차 및 연잎 열수 추출물 처리가 고등어의 지질산패 감소하는데 효과적이었으며 특히, 열수 추출물 고등어처리에 있어서 전반적으로 1%보다는 2% 농도 처리가 효과적인 것으로 판단되었다.
