한국산 다류(茶類)의 항(抗)지아민 영향에 관한 연구 (A Study on the Antithiamin Effects of Korean Teas)

  • 우리나라에서 시판되고 있는 각종 다류(인삼차 2종, 인삼 extract 2종, 인삼분말, 생강차, 오미자차, 홍차, 인스턴트 홍차 2종)중의 antithiamin activity (ATA)와 탑닌함량을 정량하였 다. 한펀, Wistar계의 이유기의 숫쥐 30마리를 인스턴트홍차, 인삼차 B 인삼extract B와 Lipton tea 및 물 투여구(대조구)의 5군으로 나누어 일정향의 지아민을 첨가한 기본사료로 사육하면서 등물의 증체량, 사료 및 음료섭취량, 식이효율을 매주마다 측정하였고, 4주후 24시간 동안 각 투여구의 동물뇨중의 지아민의 함량을 비교하였다. 본 실험에서 사용한 다류중 ATA는 홍차 및 인스턴트 홍차 A가 가장 높았고, 인삼차 A와 오미자차는 비교적 낮았다. 일반적으로 ATA가 높은것은 탄닌의 함량도 많았고 ATA가 낮은 것은 탄닌의 함량도 낮은 경향이었으나, 같은 종류의 차라할지라도 ATA와 탄닌의 함량은 매우 상이하였다. 한편 동물실험에서 증체량은 인삼차 B와 인삼 extract B 투여구가 물, Lipton tea, 인스턴트 홍차 B 투여구에 비해 낮았으나 유의적인 차는 없었으며, 사료 및 음료섭취량, 식이효율도모든 실험구에서 유의적인 차가 없었다. 그리고 뇨중의 지아민 함량은 대조군에 비해 Lipton tea, 인삼차차 B, 인삼 extract구에서 높았고, 인스턴트 홍차 A구는 낮았으나 유의적인 차이는 없었다.

Microwave 처리가 알찜의 품질 특성에 미치는 영향 (Characteristics of egg coagulates cooked conventionally or by microwaves)

  • Comparisions were made for cooking times, internal temperatures, thiamin contents and textural properties of various portion weights of egg mixture cooked in a microwave oven at high and/or low power levels and in a conventional double boiler. The mean internal temperatures of conventionally cooked egg mixtures were 76.4~80.7$^{\circ}C$. When cooking was made by steaming, the mean internal temperature were comparable among samples. With the microwave cooking, the range of mean temperature was 83.8~96.4$^{\circ}C$, and they were significantly higher than the conventionally cooked egg mixtures. The hardness determination was conducted using universal testing machine and a taste panel. Samples cooked with steam or with larger portion weight had softer texture than samples cooked by microwaves or smaller amount, respectively. Mean internal temperature was significantly(r=0.99, p<0.05) correlated with mechanical hardness determination. Statistical analyses indicated no significant difference in the thiamin content among various treatments.

Optimum Conditions for the Formation of Acetoin as a Precursor of Tetramethylpyrazine during the Citrate Fermentation by Lactococcus lactis subsp. lactis biovar. diacetilactis FC1

  • To produce acetoin as a precursor of the tetramethylpyrazine flavor compound from citrate by Lactococcus lactis ssp. lactis biovar. diacetilactis FC1, fermentation factors such as inital pH of culture media, temperature, concentration of Na-citrate, thiamin-HC1 and sugars were examined. The best acetoin production was achieved with initial pH in the culture media of 5.5, fermentation temperature of $34^{\circ}C$, Na-citrate concentration of 3%, addition of thiamin-HC1 at 2 mg/l and galactose as a carbon source. When fermentation was carried out under the optimum conditions, the exhaustion of Na-citrate and the production of acetoin took simultaneously and acetoin reached the maximum content, 80 mmole/l after 20 hours.

감자의 몇가지 영양성분(營養成分)에 대한 마이크로파(波)와 재래적(在來的) 조리방법(調理方法)의 비교(比較) -1. 일반성분(一般成分), 무기질(無機質) 및 수용성(水溶性) 비타민의 변화에 대하여- (Comparison of Microwave and Conventional Cooking Methods on the Nutritional Composition of Potatoes -(1) Changes of Proximate Composition, Minerals and Water-soluble Vitamins-)

  • 우리나라산 감자를 가정에서 행하는 조리법(調理法)에 의하여 각각 조리 하였을 때 일반성분(一般成分), 무기질(無機質)성분 및 수용성(水溶性) 비타민의 변화를 조사 비교한 결과를 요약하면 다음과 같다. Electric oven 및 microwave로 조리하였을 때 감자중의 고형분(固形分)의 함량은 유의적(有意的)으로 증가하였고 조섬유(粗纖維)의 함량은 감소하였다. boiling, electric oven 및 microwave에 의한 조리는 감자중의 조회분(粗灰分)의 함량에 영향을 주지 않았으며, 조단백질(粗蛋白質)의 함량은 조리중 불규칙적으로 변하였다. 칼륨의 함량은 electric oven 및 microwave 조리로 증가하였고, 철의 함량은 electric oven 조리로 증가하였으며, 구리의 함량은 electric oven 및 microwave 조리로 각각 감소하였다. 그리고 감자중 macromineral에 속하는 인, 마그네슘, 칼슘의 함량과 micromineral에 속하는 아연, 망간, 닉켈, 납, 카드뮴의 함량은 본 연구에서 행한 조리법으로 변화가 없었다. 본 실험에 사용한 조리법중 microwave 조리에서 ascorbic acid의 보존률이 가장 낮았으나 thiamin의 보존률은 microwave 조리에서 가장 높았다. riboflavin과 folic acid의 보존률은 boiling 및 microwave 조리에서 서로 비슷하였으나 이 2가지 조리법이 electric oven조리법 보다 우수하였다. niacin과 비타민 $B_6$의 보존률은 사용한 조리법에서 모두 $93{\sim}100%$였다. 일반적으로 다소의 예외(例外)는 있으나 boiling 및 microwave로 조리한 감자가 electric oven으로 조리한 감자 보다 수용성(水溶性) 비타민의 보존률이 우수 하였다.

일부 지역 중학생 대상 일품요리의 대표영양가 산출 및 영양적정성 평가 (Representative Nutrients Contents and Nutritional Adequacy Evaluation of Single-Dish Meal for Middle School Students)

  • Objectives: With the increasing number of single households and so-called Honbab-jok, those who eat alone, people tend to enjoy convenient and simple meals, such as single dish meals. This study was performed to provide data on the energy and nutrient content, and nutritional adequacy of single-dish meal. Methods: From the literature reviews, 61 types of single-dish meals were selected, and divided into 4 groups (steamed rice, noodle, porridge, and sandwich burger), and a further 11 sub-groups (bibimbab, fried rice, topped rice, rolled rice/ warm noodle, cold noodle, seasoned noodle, dukgook/ porridge/, and sandwich, burger). In addition, 382 junior high school students from Gyeonggi, Sejong, Jeonbuk, and Chungnam areas were recruited for the survey. The survey questionnaires were composed of the characteristics, preference, and intake frequency of single-dish meals. The representative energy content (arithmetic mean) of single-dish meals were calculated, and compared with the energy contents of preference and intake frequency-weighted values adjusted. The representative nutrient contents, energy contribution ratio, and INQ (index of nutritional quality) of a single-dish meal were calculated for a nutritional adequacy evaluation. Results: The study subjects considered a single-dish meal as tasty, simple and fast to prepare, inexpensive, nutritious, and no low calorie food. The preference scores of all but 1 sub-group of singledish meals were ${\geq}5.00$ (5.00~5.97), and 1 sub-group (porridge) was 4.67 on a 7-point scale. The intake frequency of 11 sub-groups were 0.31~1.71/week, porridge was the lowest at 0.31 and warm noodles was the highest at 1.71. Fried rice, rolled rice, and warm noodle' intake frequency were ${\geq}1/week$. The representative energy of steamed rice, noodle, sandwich burger were 443, 429, and 428 kcal, respectively, and that of porridge was 264 kcal. Less than 5% differences in the representative energy of 4 groups were observed when adjusted for the preference or intake frequency-weighted values. The energy contribution ratio of macro-nutrients calculations showed that porridge was a high carbohydrate and low fat food, whereas sandwich burger were high fat and low carbohydrate foods. The INQ of calcium and vitamin C were less than 1.0 in all 4 food groups, but the INQ of protein and thiamin were > 1.0 in all 4 single-dish food groups. Conclusions: The representative energy in the 4 groups of single-dish meal was 264~450 kcal, which is a rather low calorie meal, and the energy contribution ratio of macro-nutrients were inadequate. The protein and thiamin levels were sufficient but the calcium and vitamin C levels were insufficient in all 4 groups of a single-dish meal judged by the INQ. The additional intake of fruits and milk dairy products between meals with a single-dish meal, supply of calcium and vitamin C may increase, which will result in an improved nutritional balance.

진주지역 국민학교 5학년 아동의 도시락에 의한 영양섭취에 관한 조사연구 (Study on Nutritional Contents of Lunchboxes Carried by 5th Grade Students in Jinju)

  • This reseach was undertaken to investigate the nutritional contents of lunchboxes of 5th grade students in the elementary school living in Jinju city. The survey was conducted from July 4 to July 7, 1988. Cereals and side dishes in the lunch box were weighed and nutrients were analyzed from the food composition table. Questionaires were used to determine family background and the food preference. The results were summarized as follows : 1) The average education of mother was 10 years and the average number of children in the family was 2.8. 2) The average food weight of 151 boys was 289g and that of 164 girls was 253g. The average number of side dishes was 1.7. 3) The average nutritional value and the percentage of Recommended Dietary Allowances of boys were calorie 578 Cal, 75%, protein 24.6g, 113%, calcium 128mg, 55%, iron 3.89mg, 78.0 %, vitamin A 807IU, 122 %, thiamin 0.32mg, 81 %, riboflavin 0.26mg, 56 %, niacin 4.07mg, 81 %, ascorbic acid 6.33mg, 38%. 4) The average nutritional value and the percentage of Recommended Diatary Allowances of girls were calorie 547 Cal, 82 %, protein 23.0g, 113 %, calcium 135mg, 58 %, iron 3.37mg, 56 % ,vitamin A 911IU, 137 % , thiamin 0.27m9, 732 % , riboflavin 0.26mg, 64 % , niacin 4.03mg, 93 % , ascorbic acid 7.40mg, 44 % . 5) The calorie ratios of carbohydrate, protein and fat from boys and girls were 75 : 18 : 7 and 76 : 17 : 7, respectively. 6) The favorite food for cereals were plain rice, breads, noodles, rice with beans and the favorite food for side dishes were ham, sausage, beef and chicken.

육류 및 수산물을 이용한 조리식품에 함유된 수용성 비타민 함량 (Water-soluble Vitamin Content in Dishes Containing Meat and Seafood)

  • In this study, the content of water-soluble vitamins such as vitamin B1 (thiamin), B2 (riboflavin), B3 (niacin), B5 (pantothenic acid), B6 (pyridoxine), B7 (biotin), B12 (cyanocobalamin), and C (ascorbic acid) in dishes containing meat and seafood consumed in Korea were determined by high-performance liquid chromatography (HPLC) with ultraviolet and fluorescence detection. All analyses were performed under strict quality control of vitamins B1, B2, B3, B5, B6, B7, B12, and C. The highest content of vitamin B1 was observed in Bugeo-gangjeong (1.373 mg/100 g) and the highest level of vitamin B2 (5.162 mg/100 g) was found in pig liver. Bugeo-gangjeong showed the highest content of vitamin B3 (21.676 mg/100 g), and kkomak-muchim contained considerable amounts (43.310 mg/100 g) of vitamin B5. Vitamin B6 was not detected in most seafood dishes except for yangnyeom myeongran-jeot (0.274 mg/100 g) and was present at low levels or not present at all in meat dishes. The highest content of vitamin B7 was 6.506 ㎍/100 g in saeu-jeon and kkomak-muchim showed the highest content (21.132 ㎍/100 g) of vitamin B12. The highest content of vitamin C was in yangnyeom myeongran-jeot (84.508 mg/100 g). In addition, the analysis methods of each water-soluble vitamin were verified. These results showed that seafood-based ingredients in several dishes could be a good source of water-soluble vitamins.

Ethephon처리가 토마토의 비타민 및 무기질함량에 미치는 영향 (Effect of Ethephon Treatment on Vitamin and Mineral Contents of Fresh Tomatoes)

  • 과실의 균일한 숙성을 위하여 ethephon을 흔히 사용하는데, 수확전의 토마토에 ethephon을 처리했을때 토마토의 비타민과 무기질 함량에 어떤 영향을 주는지에 관하여 연구한 결과를 요약하면 다음과 같다. 1. 수확 1주일 전의 토마토에 ethephon처리는 아스콜빈산, 캐로틴(총 캐로틴 및 베타-캐로틴), 지아민, 리보후라빈의 함량에 영향을 주지 않았으며, 이런 결과는 2년간 계속적으로 확인되었다. 토마토의 리보후라빈 함량이 1979년에 1978년 보다 높았던 것은 아마도 생육환경의 영향에 의한 것으로 여겨진다. 2. 토마토의 무기질 함량은 수확 1주일전의 ethephon살포에 의하여 영향을 받지 않았다. 그러나 ethephon살포와는 관계없이 칼슘과 망간함량은 해에 따라 변하였다.

재배방법이 다른 미나리의 성분 특성 (Chemical properties of Watercress(Oenanthe javanica D.C.) Depend upon Cultivating Methods)

  • Chemical properties of the different parts of watercress(Oenanthe javanica D.C.) grown and harvested from the culture fields under different cultivating methods were studied. In proximate analyses of watercress in parts, moisture contained more in stem than in root or in leaf, but crude protein and crude lipid contents were lower in stem than in root or in leaf. Crude ash in root contained up to about double amount in leaf or stem. Major mineral elements detected in watercress were Fe, Mg, Ca, and K, and their contents in root was higher than those in stem or leaf. Especially, Fe in root was significantly higher than that in stem or in leaf. Total free sugar composed mainly with fructose and glucose, was the highest in watercress from Hwasoon and followed the watercress from Jeonju and Donggok in order. Free sugar content was highest in leaf and the lowest in root. Major water-soluble vitamins were vitamin C, thiamin and biotin and the content of vitamin C was higher than others. These vitamins contained more in leaf than in stem or root. Niacin contained 6.09 mg/100 g in leaf of watercress from Hwasoon, which was much higher than others, but it was not detected in stem of watercress from Jeonju. Organic acids detected were oxalic acid, citric acid and malic acid and other 12 organic acids were not detected. In fatty acid composition, there were significant differences among watercresses from different parts and different culture fields. Linoleic acid, linolenic acid and palmitic acid were major fatty acids contained in watercress and it took about 80% of the total content. Amino acid content in leaf was higher than that in root and in stem. Glutamic acid and proline were major amino acids in stem of watercress from Jeonju and in stem of watercresses from Hwasoon and Donggok, respectively. In leaves of all three watercresses glutamic acid content was the highest.

수경미나리의 영양성분 분석에 관한 연구 (Study on the Nutrition Composition of Hydroponic Water Dropwort)

  • This study was conducted to investigate the nutrient composition of hydroponic water dropwort and the effect of blanching condition on ascorbic acid content. Nutrient composition of hydroponic water dropwort of mid harvest on the 30th day was measured in three portions of leaves, petioles and stems, and was compared with that of late harvest on the 40th day. Hydroponic water dropwort was obtained from the Department of Horticultural Science, Seoul National University. The results were as follows. The nutrients content of leaves were significantly higher in ash and ascorbic acid and lower in moisture, crude fat and crude fiber than those of stems and petioles. There was no significant difference in total vitamin A and thiamin contents between three portions. Ascorbic acid content of leaves harvested on the 30th day was the highest, 57mg/100g, and decreased to 18mg/100g in the leaves harvested on the 40th day. Marked increase in crude fiber and vitamin A content of leaves was observed in late harvest may be due to the maturation. The results of nutrient composition analysis suggest that the leaves of hydroponic water dropwort is important in ascorbic acid and ash. It is recommended that shorter blanching time and addition of 0.5% NaCl to the blanching water are better for higher ascorbic acid retention of hydroponic water dropwort. In conclusion, as hydroponic water dropwort has high content in ash, calcium, vitamin and free sugar with alkalinity, leaves as well as stems and petioles can be recommonded as a vegetable of high nutritional quality.
