Processing of the Rapid Fermented Sauce using Northern Sand Lance and Quality Evaluation (속성 까나리액젓의 제조 및 품질 평가)

  • To develop the rapid processing of northern sand lance sauce by thermoase, the rapid fermentation conditions and quality of fermented sauce were investigated gated The recommendable condition of rapid fermentation were determined as follows: thermoase concentration, fermentation time and fermentation temperature were $0.2\%$, 9hr and $60^{\circ}C$, respectively. The northern sand lance sauce fermented rapidly showed light brown color. The sweet amino acids were higher in the rapid fermented-sauce than commercal fermented sauce although the content of total nitrogen, amino nitrogen and total amino acids were low in it. Hereafter we suppose that the rapid fermented sauce by thermoase will be wide usable because it can use the salted northern sand lance in short time.

Comparison of Quality Characteristics in $\textit{Kochujang}$ prepared with Thermoase during Fermentation (Thermoase를 이용한 속성고추장의 품질 특성)

  • 알칼리성 protease의 일종인 thermoase를 선택하여 다양한 배합비로 고추장을 담금하고, 각 담금별 품질 특성에 대해 조사한 결과, 적정산도는 및 환원당 함량은 개량메주로 담금한 고추장(control)에서 높았다. 아미노태 질소 함량은 thermoase를 0.1% 이상 첨가한 고추장( II ~ V )에서 숙성 30~40일경에 최고 440.23~599.75mg%로, 속성발효 진행을 확인할 수 있었다. 속성고추장의 색상은 숙성이 진행됨에 따라 밝은 적색에서 어두운 암적색으로 변화하였으나 효소제에 따른 일정한 경향은 나타나지 않았다. 각 고추장의 점도는 숙성기간이 경과 될수록 증가 추세였으며, 고추장(IV, V )는 묽어지는 경 향을 나타내었다. 이와 같은 결과를 고려할 때 속성고추장 담금에 적합한 ther-moase 첨가수준은 0.15~0.2%로 사료되었다.

  • Attempts have been made to optimize the hydrolysis conditions of the oyster and the mussel by the commercial proteolytic enzymes. Raw materials were digested with seven different commercial enzymes, and their quality parameters measured in terms of degree of hydrolysis and content of free amino nitrogen, nucleic acid-related substances. and free amino acids as well as sensory evaluation of optimization of their hydrolysis conditions. As a result, following enzymes have been disclosed as effective for enzymatic digestion: MKC-HT proteolytic, alcalase 0.6L and thermease for the oyster whereas MKC-acid fungal protease and thermoase for the mussel, respectively.

  • The pure-separation of calcium chloride-treated fibroin hydrolysates could be carried out using gel filtration chromatography. Also, the effect of its enzymatic hydrolysis was investigated in order to find out the enhancement of their functionality. The average molecular weight(Mw), solubility and free amino acid compositions of three hydrolysates samples (calcium chloride, calcium chloride-flavourzyme and calcium chloride-thermoase)were measured to compare their characteristics. The molecular weight of calcium chloride hydrolysate was about Mw 46,800 and it can be reduced to Mw 12,500 and 1,070 upon the enzymatic hydrolysis by flavourzyme and thermoase, repectively. A solubility of calcium chloride-treated samples shows about 60% while calcium chloride/enzyme-treated samples are perfectly soluble (100% solubility). The total amino acid composition of calcium chloride enzymatic hydrolysates are much higher than that of calcium chloride hydrolysate.

Characteristics of iron powder formulation produced from porcine blood by enzymatic treatment (효소 처리한 돈혈 활용 철분분말제제 특성)

  • In this study, enzyme (thermoase) hydrolysis was applied to the porcine blood order to increase the iron content and solubility. It was confirmed that content of iron was increase up to 158.11 mg/100 g porcine powders after 0.2% thermoase treatment at $60^{\circ}C$ during 4 hr. The solubility of porcine blood powders was higher than other enzyme (various protease), temperature, reaction time. This optimized conditions were also worked to the in vitro iron bioavailability rate increasement, the bioavailability of hydolyzed porcine powders was 3-fold higher than that of an iron supplement on the market. These results indicate the possibility of porcine blood powder in iron supplements market as natural material. Also utilizing of reduced porcine blood will be possible to improve environmental issues.
