The effects of selected stabilizers and sugars on color deterioration of anthocyanin in Schizandra fructus were examined at $100^{\circ}C$ for $120{\sim}180$ min. Among four test sugars, it was found that fructose accelerated the thermal color deterioration while maltose retarded the color deterioration by 40%. Maltodextrin and ${\gamma}$-cyclodextrin showed the highest stabilizing effect on the thermal color deterioration of crude pigment extract from Schizandra fructus(CPES) containing 2 mg% of anthocyanin. Addition of maltodextrin or ${\gamma}$-cyclodextin at 5% retarded thermal color deterioration of CPES. In gel system, 5% of maltodextrin also retarded the color deterioration by $15{\sim}20%$ during storage at $25^{\circ}C\;and\;35^{\circ}C$.

This paper presents a composite camera calibration method to determine thermal degradation of power distribution equipment by combining an infrared (IR) camera and a color camera. A calibration jig was first constructed to match the properties of the two cameras. Our calibration and visualization techniques allow for the display of two images, one from the color camera and the other from the IR camera with different field of views (FOVs), on the screen at the same time. To confirm its validity, several case studies have been developed to analyze thermal deterioration limits of indoor and outdoor power distribution facilities.
The purpose of this study was to analyze the anthocyanin content of black rice crude extract according to different extraction methods, as well as to compare the effects of stabilizers(${\beta}$-cyclodextrin, maltodextrin) and sugars(sucrose, maltose) on anthocyanin color deterioration, which was examined at $100^{\circ}C$ for $120{\sim}180$ min. In the water extract, C3G (cyanidin-3-glucoside) was detected, 3.22 ppm and 3.29 ppm of C3G respectively. In the $60^{\circ}C$ water extract, anthocyanin color deterioration was retarded by 10% sucrose and 1% maltose and the thermal color deterioration was retarded by the additions of 1% maltodextrin and 1% ${\beta}$-cyclodextrin.
The purpose of this study was to analyze the anthocyanin contents of black soybean crude extracts derived using a countercurrent system and to compare the effects of stabilizers(${\beta}-cyclodextrin$, maltodextrin) and sugars(sucrose, maltose) on the color deterioration of the anthocyanin. When the extraction process was kept at 100$^{\circ}C$ for 120$\sim$180 min, only C3G (cyanidin-3-glucoside) was detected in the water extract. The C3G contents in the water extracts acquired at 8$^{\circ}C$, 60$^{\circ}C$, and 80$^{\circ}C$ were 2.38 ppm, 1.73 ppm, and 1.73 ppm, respectively. Sucrose and maltose retarded color deterioration of the crude pigment extract by the countercurrent method with methanol. Finally, the additions of maltodextrin or ${\beta}-cyclodextrin$ did not retard thermal color deterioration of the black soybean crude pigment extract.
The effects of temperature and pH on color deterioration of anthocyanin in Schizandra fruit (Schizandra chinensis fructus) were determined with temperature range of $80{\sim}100^{\circ}C$ and pH range of $2.0{\sim}5.0$. Browning index was used as an index of color deterioration of crude anthocyanin extract from Schizandra fruit. As pH of crude anthocyanin extract was increased, color deterioration was accelerated, showing pH-dependency of thermal stability of anthocyanin extract from Schizandra fruit. Anthocyanin degradation could be modeled as a second-order rate reaction, with rate of $3.2{\times}10^{-3}\;h^{-1}\;(pH\;2.0){\sim}4.1{\times}10^{-3}\;h^{-1}\;(pH\;5.0)\;at\;100^{\circ}C$. Temperature dependence of deterioration was described by the Arrhenius relationship. Activation energies for pH $2.0{\sim}5.0$ ranged from $24.87{\sim}42.54\;kJ/mol^{-1}$.
In this work, a simple and low cost sensor technique is proposed to test oil color in real time using in-line sensor. It is presented to use a ratio of intensity in red wavelength range to intensities of green and blue wavelength ranges (defined as a 'chromatic ratio') in order to estimate the oil color change. The proposed sensor technique is realized by irradiating a white LED as light source and a RGB color sensor as photoreceiver, and the chromatic ratio of various types of used oils are measured. The results show that chromatic ratio generally reflects chemical deterioration of oil, including oil oxidation and thermal degradation. It is concluded that the proposed sensor could be used for an effective oil monitoring technology.

Purpose: In this study, we aimed to minimize quality degradation of concentrated blueberry puree by thermal treatment at $90^{\circ}C$ for 5 min, with citric acid (CA) and acidic sodium metaphosphate (ASM) as pH modifiers. Methods: The color values, redness a, anthocyanin contents, DPPH radical scavenging, elastase inhibition and tyrosinase inhibition activities were evaluated for quality parameters of concentrated blueberry puree. Results: The highest values of color value, redness a, anthocyanin contents, DPPH radical scavenging, elastase inhibition and tyrosinase inhibition activities were 1% CA+0.5% ASM followed by 1% CA and control. The quality parameters of concentrated blueberry puree were significantly different between control and 1% CA+0.5% ASM treatment (p<0.05). Conclusion: During thermal treatment, quality degradation of concentrated blueberry puree was reduced by 1% CA+0.5% ASM treatment, which is expected for new acidulants.
Thermal deterioration of fuel due to long-term storage influences engine performance and causes malfunctions. Fuel stability is usually evaluated via heat resistance and thermal stability during a brief heat shock at high temperature; storage stability in this scenario means that there is very little change in the quality of the fuel during long-term storage. In addition, rubber-based products such as oil seals, O-rings, and rubber hoses can influence the quality of the fuel. When these rubber products are in contact with fuel, they can swell, mechanically weaken, and occasionally crack, thus leaking low molar weight rubber and additives including plasticizer and antioxidant into the fuel to degrade its properties and shorten its useful lifetime. This study determines the thermal stabilities of three kinds of synthetic fuels by evaluating their low temperature kinematic viscosities, chemical composition changes via GC analyses, gross heat of combustion, and color changes. We evaluate the compression set of O-rings by immersing one NBR and two FKM rubber O-rings in the three synthetic fuel samples in airtight containers at variable storage temperatures for six months; from this, we estimate the lifetimes of the O-rings using the Power law model. There were very little changes in the chemical compositions and gross heat of combustion after six months of the experiment. The lifetimes are thus dependent on the materials of the rubber products, and in particular, the FKM O-ring was calculated to have a theoretical lifetime of 200 to 5,700 years. These results indicate that the synthetic fuels maintain their physical properties even after long-term storage at high temperatures, and the FKM O-ring is suitable for long-term sealing of these fuels.
The sensory quality describing terms of Takju were surveyed by questionair and classified according to the sensory characteristics. The effects of thermal treatment for the pasteurization of Takju on the sensory quality were tested and statistically evaluated. The important sensory quality attributes of Takju were white, gray, and yellow for color, acidic and yeasty for smell, sour, astringent, bitter and sweet for taste and gritty, viscous and carbonated for mouthfeel. The organoleptic properties of grayness, yeasty and cooked smell, astringent and bitter taste and thickness increased, while sourness, sweetness, yellowness, grittiness and carbonated feel decreased by the pasteurization treatments, heating $82^{\circ}C$, $93^{\circ}C$ or $135^{\circ}C$ for 9 seconds. These changes coincided with the overall reductions in the preference scores of pasteurized Takju. The degree of sensory quality deterioration appeared to be affected to some extent by the heating temperature.
