  • A processing factor (PF) has been used to define the maximum residue limits of pesticide in a variety of processed fruit products. This study summarizes PF by the stage of fruit processing based on JMPR reports from 2010 to 2014. When we compared PF of 19 pesticides in apple products during the processing of washing, drying, canning, juice, sauce, puree and pomace, PF was higher than 1 only in pomace. In the comparison of 21 pesticides during the process of grape (washing, juice, wine and raisin), PF was higher than 1 in raisin. In the comparison of 19 pesticides during the process of orange (juice, oil and marmalade), PF was higher than 1 in oil. When 27 pesticides were compared during the process of tomato (juice, puree and paste), paste showed the highest PF value except pomace. During the process of plum (washing, drying and puree) with 12 pesticides, PF was higher than 1 in drying. The correlation coefficients between physical characteristics of pesticide (fat-solubility and volatility) and PF were statistically significant in the processes of apple juice, orange juice, tomato puree and paste and strawberry jam.

  • This study was done to evaluate the nutritional status and the desirable time and period for making dietary records in male high school Taekwondo athletes. Nutrient and flood intake was investigated using dietary record method during usual training (UT, for 29 days) and special training (ST, for 17 days) periods in nine Taekwondo athletes. Nutrient intake by 7-d and 3-d dietary record were compared to the standard nutrient intake, which was computed from dietary record during total period of UT or ST. Total mean energy intake was 2278 kcal, 84% of RDA, and mean intakes of riboflavin, Ca and Fe were less than 77% of RDA. Mean intakes of energy, carbohydrate, protein, fat, cholesterol, thiamin, riboflavin, and P decreased during ST (p < 0.05 or p < 0.01). Mean intakes of vegetables and grains ware the highest in the two periods and following were beverages and instant floods in UT, and meats and fruits in ST. During ST, mean intakes of mushrooms, meats and their products, and instant floods decreased, and sugars and sweets increased (p < 0.05 or p < 0.01). The contribution of grains and their products, instant floods, and meats and their products to mean intakes of energy, carbohydrate, protein and fat were high. In snacks, the contribution of instant floods, breads and confections and beverages was high. During UT, cholesterol intake at weeks 1 and 3, and intakes of protein, fat, thiamin, riboflavin and niacin at week 4 by 7-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). Intakes of VA, Ca and Fe at week 1, and intakes of carbohydrates, cholesterol rind crude fiber at week 4 by 3-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). During ST, VC intake at week 5, and energy intake from carbohydrate and cholesterol intake at week 6 by 7-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). Cholesterol intake at week 7, and energy intake from carbohydrates and fat, and intakes of protein, fat, cholesterol and riboflavin by 3-d dietary record were different from their standard intakes (p < 0.05 o. p < 0.01). In conclusion, empty-calorie floods can be a main source of diet and snacks for Taekwondo athletes, and education about desirable nutrients and floods intakes is needed to help them control their weight. When investigating the nutritional status of Taekwondo athletes in the future, the 7-day or 3-day dietary record is desirable provided they are conducted in the milddle of each period artier distinguishing UT from ST period.

  • Quercetin is a flavonoid usually found in fruits and vegetables. Aside from its antioxidative effects, quercetin, like other flavonoids, has a various neuropharmacological actions. Quercetin-3-O-rhamnoside (Rham1), quercetin-3-O-rutinoside (Rutin), and quercetin-3-(2(G)-rhamnosylrutinoside (Rham2) are mono-, di-, and tri-glycosylated forms of quercetin, respectively. In a previous study, we showed that quercetin can enhance ${\alpha}7$ nicotinic acetylcholine receptor (${\alpha}7$ nAChR)-mediated ion currents. However, the role of the carbohydrates attached to quercetin in the regulation of ${\alpha}7$ nAChR channel activity has not been determined. In the present study, we investigated the effects of quercetin glycosides on the acetylcholine induced peak inward current ($I_{ACh}$) in Xenopus oocytes expressing the ${\alpha}7$ nAChR. $I_{ACh}$ was measured with a two-electrode voltage clamp technique. In oocytes injected with ${\alpha}7$ nAChR copy RNA, quercetin enhanced $I_{ACh}$, whereas quercetin glycosides inhibited $I_{ACh}$. Quercetin glycosides mediated an inhibition of $I_{ACh}$, which increased when they were pre-applied and the inhibitory effects were concentration dependent. The order of $I_{ACh}$ inhibition by quercetin glycosides was Rutin${\geq}$Rham1>Rham2. Quercetin glycosides-mediated $I_{ACh}$ enhancement was not affected by ACh concentration and appeared voltage-independent. Furthermore, quercetin-mediated $I_{ACh}$ inhibition can be attenuated when quercetin is co-applied with Rham1 and Rutin, indicating that quercetin glycosides could interfere with quercetin-mediated ${\alpha}7$ nAChR regulation and that the number of carbohydrates in the quercetin glycoside plays a key role in the interruption of quercetin action. These results show that quercetin and quercetin glycosides regulate the ${\alpha}7$ nAChR in a differential manner.

  • Vinegar is a widely used acidic seasoning and can be manufactured using various methods and bases, including cereals, wheat, and fruits. Most studies on vinegar have been conducted to evaluate its antioxidant activity. In the present study, fermented dark vinegar (FDV) produced from unpolished rice was examined for its antimicrobial activity, biochemical content, including the amounts of sugar, total soluble sugar, organic acid, and free amino acids, and pH and physiological activity. The antimicrobial efficiency of FDV was assessed using the paper disc-agar diffusion method. FDV exhibited strong antimicrobial activity against the pathogenic bacteria and yeast strains that were tested. In fact, the activity of FDV was shown to be higher than that of the commercial antibiotics carbenicillin (50 µg/ml) and tetracycline (50 µg/ml) against Staphylococcus aureus, Escherichia coli, Listeria monocytogenes, Pseudomonas aeruginosa, Salmonella typhimurium, Yersinia enterocolitica, and Lodderomyces elongisporus. The antioxidant activity of FDV and ascorbic acid was evaluated. Using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging method, we found that FDV has the highest activity of the antioxidants. After spreading FDV onto tryptic soy broth and yeast extract-peptone-dextrose agar media, the microbial strains were isolated and characterized through physiological and biochemical analysis. Based on 16S ribosomal DNA sequence analysis, the isolated microorganisms exhibited a close similarity to Acetobacter papayae, Acetobacter pasteurianus, and Acetobacter peroxidans.

  • This study was conducted to determine the influences of winter and summer pruning on the yield and fruit quality in southern highbush blueberry (Vaccinium corymbosum L. hybrid) cv. 'Misty'. The 5-year-old southern highbush blueberry 'Misty' were used. The pruning treatments were as follows: 1) control (no pruning), 2) winter pruning (30% removed), and 3) winter pruning + summer pruning (Aug. 5). Fruits harvested for six times over the harvest season and measured yields, unmarketable fruit (defected and immature fruit), changes of each fruit weight and analyzed fruit characteristics, such as total sugar, total anthocyanin contents and total phenolic contents. The differential pruning treatments were not significant for fruit yields of southern highbush 'Misty'. No pruning treatment showed regular yields after the 2nd harvest, but the other pruning treatments were appeared that fruit yields were more concentrated on the 2nd~4th harvest time. Total sugar and total phenolic contents were observed the highest at the 4th time among the harvest period. No pruning treatment showed the highest unmarketable fruit yield at 57%, however, that of winter pruning and winter + summer pruning treatment occurred at 26%, 31%, respectively.

  • Objectives : To satisfy the demand of good treatment of constipation Methods : we investigated the literatures of Oriental Medicine about Constipation. Results: 1. There are three categories of etimological factors of constipation, that is, endogenous, exogenous and non-exo-endogenous factor. The endogenous factor is caused by seven emotions, called depression of Ki and stagnation of Ki. The exogenous factor is six excessive atmospheric influences, for example, wind, cold, dampness, heat and dryness. And the non-exo-endogenous factors are overfatigue, improper diet, stagnated blood and deficiency of Ki and blood that comes from old age, long disease and after delivery. 2. Classification: According to cause of disease it is classified by constipation due to cold, heat, wind, dryness, retention of undigested and phlegm. According to Internal Organs there are constipation due to deficiency syndrome of the stomach, excess syndrome of the stomach, deficiency syndrome of kidney and splenic constipation. And Differentiation of syndromes according to Ki and blood, there are constipation of deficiency type and excess type. There are constipation due to stagnation and deficiency of Ki, deficiency of blood and stagnated blood. 3. Principles and Methods of treatment 1) Herbal Medicine (1) Excess type [1] Constipation due to heat : Seunggitang(承氣湯) and Majainwhan(麻子仁丸) [2] Constipation due to stagnation of Ki : Samatang(四磨湯) and Yukmatang(六磨湯) (2) Deficiency type [1] Constipation due to deficiency of Ki : Whanggitang(黃?湯) [2] Constipation due to deficiency of blood: Yunjangwhan(潤腸丸) [3] Constipation due to cold : Jechunjun(濟川煎) and Banyuwhan(半硫丸) 2) Enema therapy: It is a method to induce defecation by honey or pig's bile juice for weak people. 3) Acupuncture and Moxibustion: Acupoints used to treat constipation are BL25, ST25 and TE6. Moxibustion at CV8, CV6 is good for constipation due to cold. (4) Diet therapy: It is very important that we eat meals regularly and defecate on the same time even if you don't. And we have to eat food like fruits, vegetables and beans. (5) finger pressure: Finger pressing around these points like ST25, SP25, BL25, BL31, BL32, BL33 and BL34 is good for it. (6) Kigong therapy: Abdominal breathing (7) Old man' s constipation: Hip bath or diet therapy is commended. Laxation with lubricant like Supungyunjangwhan(搜風潤腸丸) is used. (8) Women' s constipation: After delivery, we have to administer tonifying prescription Sipjundaebotang(十全大補湯) and enema can be used. Conclusion : We have to examine the cause of disease and bowl movement carefully. • Sugars are a ubiquitous component of our food supply and are consumed as a naturally occurring component of many foods and as additions to foods during processing, preparation, or at the table. Most fruits and dairy products are high in sugars and thus naturally occurring sugars are consumed as part of a healthy diet. Some countries developed recommended daily intake figures(daily values : DVs or guideline daily amounts: GDA) for nutrients, and some countries, but not most have developed DV/GDA for total sugars. Dietary Reference Intakes for Koreans established by the Korean Nutrition Society in 2005, did not include the reference values for total sugar or added sugar. The committee on Dietary Reference Intakes for sugar was constituted in 2006 and discussed whether to special added sugars or total sugar. Although added sugars are not chemically or physiologically different from naturally occurring sugars, many foods and beverages that are major sources of added sugars have lower micronutrient densities compared with foods and beverages that are major sources of naturally occuring sugars. But it was so hard to calculate a dietary intake of added sugar for Korean people, because there was insufficient information about contents of added sugar during processing or preparation of Korean food. Currently Korean or US food labels contain information on total sugars per serving but do not distinguish between sugars naturally present in food and added sugars. Therefore the committee decided to set the reference value for total sugar for Koreans. According to the recommended diet pattern for Koreans suggested by the Korean Nutrition Society, estimated sugar intake from the sugar containing food based on 2,000 kilocalories is 67 g or 13% of total energy. Based on the data available on risk of obesity, hypertension, hyperlipidemia, insulin resistance, and metabolic syndrome from the analysis of Korean NHANES, it was insufficient evidence to set a UL for total sugar, but tended to increase serum LDL cholesterol and obesity at over 20-25% of energy from total sugar when consumed with high carbohydrates. Therefore the committee on Dietary Reference Intakes for sugar set the Acceptable Macronutrient Distribution Range for total sugar as 10-20% of total energy intake.

  • This study was conducted among the university students to evaluate the recognition of food calories through questionnaire. The subjects were 88 male and 230 female students in Chungnam. 67.4% of the subjects experienced nutrition education, 50.8% and 86.6% of them recognized daily calorie requirement and definition of calorie, respectively. There were significant differences in response rate about frequency of supper, experience and satisfaction of weight control, degree of knowledge of calorie, and need of nutrition education among the subjects with experience of nutrition education and recognition of daily calorie requirement and calorie definition. The calories of 14 food items (29.17%) were low recognized in subjects with nutrition education than in subjects without nutrition education. The results also show that the calories of 38 food items (79.17%) were highly recognized than the actual clories of them in total subjects. Especially, vegetables, fruits, and oils were highly recognized. The daily calorie intakes in the subjects recognizing calorie definition were lower than in the other subjects(p<0.05). In conclusion, university students highly recognized than actual food calories, and there was significant difference in degree of recognition with various factors, such as nutrition education, knowledge of calorie, and weight control, and therefore showing a strong need of proper nutrition education about food calories.

  • For the production of second crop in 'Campbell Early' grape, the primary shoots were pruned at 3rd, 6th or 9th nodes from the shoot bases on 13 days, 23 days and 33 days after full bloom date on 7th June. Secondary shoots were sprouted 7~8 days after the pruning, and it took 19~25 days for the flowering on the secondary shoots. The flower cluster number on secondary shoots were 2.8 for 13 days after full bloom, and 3.2 for 23 days and 33 days after full bloom, meaning little effect by pruning time. The 3rd node pruning produced 2~2.4 flower clusters with flower cluster length of 9.3~10.4 cm, while the 6th or 9th node pruning produced 3.1~3.8 flower clusters with flower cluster length of 12~14.9 cm, showing superior flower cluster length for the 6th or 9th node pruning. The secondary shoots developed from the buds pruned 13 days after full bloom with pruning bud positions of 6th nodes demonstrated superior fruits with higher soluble solids and lower acidity than the rest of the pruning times and positions.
