  • It is generally thought that continuous oxidative damage to DNA is a major contributor to the risk of cancer development. Epidemiological studies suggest that fruits and vegetables might reduce the risk of cancer through their antioxidant properties. This study was designed to investigate the protective effect of fruits and fruit juice consumption against the oxidative DNA damage in lymphocytes of healthy subjects. (omitted)

  • The model of Poisson's ratio of the fruits was developed on the basis that the cylindrical fruits specimen became the barrel shape when it was being compressed. The model of the corrected creep compliance of the fruits was developed under considering the developed model of Poisson's ratio. Both of the Poisson's ratio and the corrected creep compliance of the samples showed the nonlinear viscoelastic behavior. Those models were a similar form, but their coefficients of the model were different, and these behaviors of the samples were well described by the nonlinear model as a function of the initial stress and time. Effects of storage condition and period on the Poisson's ratio of the samples were investigated, and comparisons between the corrected and the uncorrected creep compliance of the samples were made.

  • Pre-penetration behavior of Boytryosphaeria dothidea on apple fruits was investigated with scanning electron microscopy. Once conidia were deposited on the fruit surface, they germainted and produced germ tubes from one or both ends of the conidia. Germ tubes grew over the fruit surface and entered the fruits through lenticels or surface cracks formed naturally. Germ tubes of the fungus also appeared to penetrated the fruits directly with or without forming appressoria. Globose appressoria were frequently formed at the tip of germ tubes on the fruit surface, where no lenticels or surface cracks were found. The conidia collapsed and became flattened to the fruit surface after appressorial formation. Cuticles of fruit surface underneath appressoria and tips of some germ tubes were evidently altered, indicating possibility of direct penetration of the fungus by enzymatic degradation of the cuticle layers. This the first report on the formation of appressoria by B. dothidea.

  • Creep tests were performed to determine the nonlinear viscoelastic properties of apples and pears with the creep experiment apparatus designed in this study. Compressive creep characteristics of fruits were tested at two kinds of storage conditions, four periods of storage and three levels of initial stress. Ten replications were made at each treatment combination. The creep behavior of the fruits could be well described by the nonlinear viscoelastic model as a function of initial stress and time. however, for each level of initial stress applied, the compressive behavior of the samples was satisfactorily represented by Burger's model. For all sample fruits, the longer the samples was stored, the higher the instantaneous elastic strain was observed, and the creep progressed at a high rate. These phenomena were even more remarkable on the fruit stored at the normal temperature storage rather than at the low temperature storage.

  • The thermal Conductivities along the position of spherical shaped fruits, such as, apple, mandarine orange. citrus hagyul were predicted by the analysis of the cooling curves obtained by the hydrocooling procedure using ice water. The thermal conductivity was independent of temperature. The thermal conductivities along the position of the fruits were nearly constant, but their small deviations were inherited by the improper spherical shape and the heterogenous structural composition of the fruits. The thermal conductivities of apple, mandarine orange, and citrus hagyul were found to be 0.353, 0.430, and $0.397\;Kcal/mh^{\circ}C$, respectively.

  • A simple, safe, and sensitive gas chromatographic method using packed column and electron capture detector to analyze 2, 4-D herbicide in imported lemon, grapefruit, and orange was described and its usefulness evaluated. In this scheme of analysis the acid herbicide was converted into its alkyl esters by an one-step reaction prior to analysis. The herbicide in the fruits was extracted with ethyl acetate and partitioned against dichloromethane for purification, and the extracts finished partitioning were derivatized with alcohol, using sulfuric acid as a catalyst to form the corresponding alkyl derivatives. The analytical scheme studiedwas found to be applicable for the herbicide in the fruits without a column clean-up procedure. The mean recoveries of the herbicide for lemon samples fortified at 0.1 mg/kg and 1.0 mg/kg were 93% and 95%, respectively. The detection limit was 0.5 $\mu\textrm{g}$/kg for 2.4-D methyl ester.

  • The stress relaxation and creep characteristics of fruits have usually been fit to an exponential expression based on a generalized Maxwell model and Burger's model. It is known that two to three terms in the expansion of those models are necessary to obtain a satisfactory fit to the rheological characteristics of fruits. Since four to six constants appear in the models, it is very difficult to determine their physical meaning according to the experimental conditions and levels. Therefore in order to ease the comparison of data, this study was conducted to develop the linearized rheological model of the fruit from the previous studies of stress relaxation and creep characteristics of fruits. Stress relaxation and creep characteristics were able to normalize and presented in the linear form of $t/S(t)=K_1+k_2t$ and $t/C(t)={K_1}^{\prime}+{K_2}^{\prime}t$, respectively. It was possible to compare the effects of experimental conditions and levels much easier from the linearized models developed in this study than from the generalized Maxwell model and Burger's model.

  • Anthracnose fruit rot (AFR) has been observed in greenhouses during the harvesting period in the Chungnam Province of South Korea. Fruits infected inside the greenhouse show black or brown spots, orange conidial masses and in some areas of the infected parts, white fungal growths are visible. The size of these spots gradually expands, leading to the necrosis of the fruits and flowers. Three isolates were obtained from infected fruits and identified as strains of the Colletotrichum acutatum species complex based on morphological characteristics. Multilocus sequence analysis of actin, chitin synthase, glyceraldehyde-3-phosphate dehydrogenase genes, and internal transcribed spacer rDNA regions revealed that the isolates belong to a monophyletic group with the type strain of C. nymphaeae. This is the first time C. nymphaeae has been confirmed in strawberry fruit in Korea.

  • The strength of the connecting joint of boxthorn(Lycium chinense Mill) fruits to tree twigs was determined experimentally at several pulling angles(0$^{\circ}$, 15$^{\circ}$, 30$^{\circ}$,45$^{\circ}$and 60$^{\circ}$) and at different harvesting seasons from August to November 1999 using an universal testing machine. The detachment force of mature fruits of boxthorn decreased as the pulling angle increased and varied with the harvesting season. The detachment force however did not gradually decreased as the harvesting season advanced due to difference of maturity of fruits from one harvesting season to another. Among three varieties of boxthron Cheongyang gugija Cheongyang native and Cheongyang #2, the maximum detachment force was 1.24 N at the pulling angle of zero degree. The highest detachment forve(1.29 N) of mature fruits of boxthorn appeared at the harvesting season of August, 1999.
