The purpose of this study was to determine composition of food groups appropriate for the evaluation of the quality of total diet or food guide, using the data from the 1998 National Health and Nutrition Survey. Twenty-four-hour-dietary recalls of total 1,110 Korean adolescents aged 13 - 19 years (male 543, female 567) were analyzed for food group consumed (Dietary Diversity Score, DDS), intake patterns of food group, mean index of nutritional quality (mINQ) and nutrient adequacy ratio (NAR). Considering Korean food pattern different from the Americans, this study is to check if Korean 5 food groups with both of oil & sugar group and vegetable & fruit group, and a minimum amount of 30 g in grain group and 15 g in meat group modified from Kant's minimum amount, 15 g in grain and 30 g in meat, could also be appropriate for the diet evaluation of Korean adolescents. Combination of food group and minimum food intake per each food group used in the first trial were categorized into 6 kinds of types: 1) American 5 food groups with Kant's minimum amount as control or 2) American 5 food groups with modified Kant's minimum amount 3) Korean 5 food groups excluded by sugar with the modified amount 4) Korean 5 food groups with modified amount 5) American food groups added oil group with the modified amount 6) American food groups added oil & sugar group with the modified amount. In case of oil group or oil and sugar group, 5 g was quoted for the minimum amount. Correlation between DDS and indices of other diet quality in each type of food group composition were analyzed and the best food group composition was traced by comparing the correlation coefficients of DDS and mINQ or MARs at ${\alpha}\;<\;0.01$. There was no meaningful difference in weight length index of the subjects of eating or not-eating oil or oil & sugar, while the values of mINQ showed higher in the subjects eating oil but no difference in the subjects eating oil & sugar, compared to the group not-eating, respectively. In comparison of type 1 and type 2, correlation between DDS and indices of other diet quality showed higher in type 1 using Kant's amount. And comparing the type of a combined group of fruit & vegetable (type 3 and 4) and the type of separated group of fruit and vegetable (type 5 and 6). six groups of separated vegetable and fruit showed the higher correlation of DDSs and indices of diet quality. In case of being classified into six groups with oil, DDS showed correlation of r = 0.293 with INQ. While, being classified into six groups with oil & sugar instead of oil only, DDS showed correlation of r = 0.249 with INQ. Accordingly the type 5 with oil is regarded as the better food group type than the type 6 with oil & sugar. Since better result was shown in the composition of six groups with Kant's minimum amount, the comparative analysis on both of type1 with oil and oil & sugar was finally performed. Then oil added type 1 showed higher correlation of DDS and indices of diet quality. These result indicated that it would be more appropriate to use six food groups with separate vegetable and fruit including oil group (oil-added type 1) rather than oil & sugar group for evaluation of dietary quality of Korean adolescents using DDS.
We performed a study to examine the association between diet quality and nonalcoholic fatty liver disease (NAFLD). Our study included 3,586 women aged 40-64 years who participated in the sixth Korea National Health and Nutrition Examination Survey. The study subjects were classified into the NAFLD group (n=816) and the normal group (n=2,770) using the hepatic steatosis index. The anthropometric indices, blood profiles, and dietary intake data of the subjects were obtained. The waist circumference, body mass index, and the serum levels of triglycerides, fasting blood sugar, HbA1c, and systolic and diastolic blood pressures were higher in the NAFLD compared to the normal groups (p<0.001, respectively). The intakes of protein (g/kg body weight, p<0.001), potassium (p<0.001), and vitamin A (p=0.006) were significantly lower in the NAFLD group. It was observed that the higher the total Korean Healthy Eating Index score, the lower the risk of NAFLD. A reverse relationship was shown between the NAFLD risk and the intakes of total fruits, total vegetables, vegetables excluding Kimchi and pickled vegetables, meat, fish, eggs and beans. Therefore, it is recommended that middle-aged women in Korea increase their intakes of fruits, vegetables, and foods high in protein for the proper management of NAFLD.
Literature suggests that iron deficiency anemia is prevalent among pregnant women all over the world. This study was designed to evaluate the iron status of pregnant women during the fist five months, with the intention of determining ways to reduce the prevalence of iron deficiency anemia among pregnant women in Korea. We collected dietary information and measured the biochemical status of iron in 171 pregnant women over 16 weeks of gestation (=16.7$\pm$2.34 week). Dietary intakes for 3 days were collected using the 24 hour recall and food record methods. The daily Fe intake was measured using the food frequency method. The Body Mass Index (BMI), calculated by using the pre-pregnancy weight and height, indicated that 31.3% of subjects were under-weight. We divided the subjects into normal and anemic group by using the serum ferritin levels. It appeared that the mean dietary intake of iron was 52.3% of the recommended level for pregnant women. The dietary quality evaluation showed that pregnant women ate only 58% of the recommended amount in the food groups of meat, fish, eggs, beans and milk and dairy products. The hematological indices showed that the mean Hemoglobin (Hb) was 11.9 g/dl, Hematocrit (Hct) was 35.1%, ferritin was 23.9 $ng/ml$, and transferrin was 297.3 ${\mu}g/dl$. The dietary intake of iron was significantly lower and the vitamin C intake was significantly higher in the anemic group. The pre-pregnancy BMI was significantly lower in the anemic group. Variables affecting iron intake were the Fe intake frequency index and the food group score. The Fe index showed significantly positive correlation with the pre-pregnancy food intake and the food group score. Hb showed a significantly positive correlation with the pre-pregnancy food intake. We concluded that strategies to improve iron status be implemented in the pre-pregnant stage so as to reduce the prevalence of iron deficiency and that we should stress on the importance of an adequate diet as well as the maintenance of a heathy weight.
This study was investigated to study split diets on laying performance and eggshell quality with Hy-Line brown layers 43 weeks old for 12 weeks Layers fed a conventional diet and split diets were divided into morning and afternoon diet. The conventional diet contained 3.4 % Ca was given constant nutrients all day. Hens of the split diets fed morning diets contained 0.5 % Ca constantly and afternoon diets contained 5.9, 8.0, and 10.0 % Ca in T1to T3. Split diets were given morning diets from 04:00 to 15:00 and afternoon diets 15:00 to 21 :00 alternately. Egg production, egg weight, and egg mass were not significantly different among diets. Abnormal eggs decreased in T1 and T2, but no significantly differed(P>0.05). Feed intake decreased in all of split diets compared to control diets (P <0.05). So, feed conversion ratio also improved in split diets(P<0.05). ME and CP intake decreased in T2 and T3, and Ca intake increased in proportion to Ca content of diets(P<0.05). ME and CP requirements per kg eggs decreased in the split diets, and that of Ca increased. Although there were not different significantly, egg shell strength and thickness improved slightly in T2 at 12 week. Yolk color, haugh unit and yolk index were not different among diets. Therefore, we concluded that split diet feeding to layer could improve feed and economic efficiency with normal egg production.
According to economical status, malnutrition and overnutrition coexist among preschool children in Korea. Malnutrition have been a serious problem for children in some of rural. Many children have deficiencies of some nutrients such as riboflavin A, and simultaneously they have overcaloric intakes with empty calorie foods. Preschool children have nutritional problems which can affect the growth and development. To investigate whether nutritional intakes can influence on the growth or not, nutritional intakes and anthropometric measurements were determined for infants aged 4~6 years old in three different kinds of preschools. Daily nutrient intakes were calculated by the combination of a direct measurement and 24 hour recall, and the diet consumption patterns were determined by diet quality index. Overall growth of infants in Cheonan area was under the normal growth in Korea. Preschool children in orphanage consumed almost all nutrients much less than the recommended daily allowances, on the other hands, children in private preschool had over-intakes of nutrients when it is compared with the daily requirements. However, the scores of the diet quality index were similar in three preschools since children in private preschool consumed more fat and junk food than those in orphanage. The weight and height of preschool children in orphanage was lower than those in private preschools. This was due to the lower consumption of the important nutrients in infants in orphanage. The consumption of all nutrients except fat did not show any correlation with height or weight. The quality index of fat, cholesterol, grains and protein intakes was higher in children in private preschool than in orphanage. In conclusions, 1)the private preschool children had worse nutrient intake patterns. Better consumption of vitamin $B_2$, calcium and grains were, bigger height and chest circumferences children obtained. 2)Since most of energy intake of preschool children came from junk foods, they needed to consume more supplementation of vitamins and minerals, which is necessary for normal growth. 3)It is desirable for the children to cut down junk foods and empty calorie foods.

The purpose of this study was to assess several indices of diet quality based on nutrient, food and food group intake of Korean adolescents based on several indices on diet quality according to residence area and body size. Using the data from the 1998 National Health and Nutrition Survey, twenty-four-hour-dietary recalls of a total of 1,110 Korean adolescents aged 13 - 19 years (male 543, female 567) were analyzed for nutrient adequacy ratio (NAR) , index of nutritional quality (INQ) , the number of foods (Dietary Variety Score, DVS) and food group consumed (Dietary Diversity Score, DDS) . In doing that, it was attempted to apply only the minimum amount of solid foods of Kant's without inclusion of liquid foods because of the very limited variety in Korean foods. Based on weight length index, 13.1% of the subjects were categorized as obese, 14.2%, overweight, 44.4%, normal and 28.3%, underweight. Only vitamin B2 intake was higher in the obese group than in the underweight group. There was no meaningful difference in energy, protein and fat intakes according to the grade of the body size. In terms of residence area, intake of fat, niacin, vitamin $B_6$ and folic acid were lower in the rural areas than in the metropolitan city. Only vitamin E intake was higher in the rural areas. Mean value of NARs (MAR) and INQs (mINQ) was also higher in the metropolitan city than in the rural areas, but there was no significant difference of these two values according to body size of the subjects. Mean DVS was 21.02 for total subjects, and has no difference between male and female and between metropolitan city and other medium-small city. But, the rural areas showed the lowest DVS of 19.05. Mean DDS in which five is a maximum score was 3.3 with no significant difference by sex and by residence area in male subjects. However, in female subjects, DDS in the rural areas was the lowest. According to body size of the subjects, there was no meaningful difference in both scores of DVS and DDS. In conclusion, most indices of nutrient intake and food and food group intake were not significantly different by body size of the subjects, while most indices were significantly different by residence areas: higher in the metropolitan city than in the rural area.
This study was conducted to investigate the effects of feeding probiotics on the egg quality and excretal noxious gas in laying hens. One hundred forty four, 36 weeks old ISA brown commercial layer, were employed in a 28 d feeding trial with a 7 d adjustment period. Dietary treatments are 1) control(basal diet), 2) PB0.3(basal diet+0.3% probiotics), 2) PB0.6(basal diet+0.6% probiotics). For overall period, hen-day egg production, egg weight and egg shell breaking strength tended to increase (P>0.05) by dietary probiotic supplementation. Egg shell thickness was improved by supplementation of probiotics(linear effect, P$<$0.01). Diets PB0.3 and PB0.6 improved the yolk color compared to control diet(linear effect, P$<$0.02). As supplementation level of probiotics increased in the diets, egg yolk index tended to increase(linear effect, P$<$0.04). $NH_3$-N concentration in excreta fed PB0.6 diet was significantly (P$<$0.04) lower than either control or PB0.3 diet. In conclusion, supplementing probiotics to a Corn-SBM diet for laying hens increased egg shell thickness, yolk color and decreased egg yolk index, and decreased excretal $NH_3$-N concentration.
The purpose of this study was to evaluate the dietary behavior, nutrient and food intake status and dietary quality based on nutrient and food group intake and Diet Quality Index-International (DQI-I) according to breakfast eating status in female university students. The survey was conducted using questionnaires and 3-day dietary records for 181 female university students residing in Seoul, Gyunggi, and Gangwon. The subjects were divided into two groups by frequency of breakfast eating: skipping breakfast (frequency of eating breakfast under 4 times/week, n=69) and eating breakfast (frequency of eating breakfast over five times/week, n=112). The skipping-breakfast group was significantly lower in its frequency of having lunch than that of the eating-breakfast group. There was no significant difference of energy intake between the two groups; however, the intake of carbohydrate, fiber, folate, vitamin C, vitamin E, Ca and Fe in the skipping-breakfast group was significantly lower than those in the eating-breakfast group. There was no significant difference in Korean's Dietary Diversity Score (KDDS) between the skipping-breakfast group ($4.65{\pm}0.56$) and eating-breakfast group ($4.73{\pm}0.50$). The average DQI-I of the skippingbreakfast group ($56.96{\pm}9.04$) was significantly lower than that of the eating-breakfast group ($61.32{\pm}7.99$). In conclusion, female university students with a high frequency of skipping breakfast may have a lower diet quality and DQI-I score. Therefore, in support of proper dietary management, it is necessary to promote and support breakfast eating.

This study was conducted to investigate the effect of dietary fiber(DF) levels on the meat quality in colored broiler. Colored broiler were fed on containing corn-soy basal diet(DF 5%) and high level(DF 6,7 and 8%) of dietary fiber diets for 7 weeks. Dietary fiber level of diet was make up by adding some alffalfa meal. Colored broiler meats were stored at 3$\circ$ for 24hr after skaughter, and used to analyze physico-chemical properties. Proximate component, pH, shear force value, myofibril fragmentation index, water holding capacity, cooking loss, protein extractability, fatty acid composition, Hunter's L, a value and palatability of cooked meat were not significantly affected by dietary fiber levels, whereas the Hunter's value of meat was significantly affected bty dietary fiber levels for the final period of feeding. Crude protein content, myofibril fragmentation index, water holding capacity, protein extractability and Hunter's b value of breast meat's were higher than thigh meat's, but crude fat content, pH, shear force value, cooking loss, palmitoleic acid, linolenic acid, and Hunter's a value were lower, regardless of dietary fiber level.

The short sleep duration increases one's body mass index and impairs the function of the endocrine and metabolism, causing increases in the risk of glucose intolerance and diabetes. The poor sleep quality and sleep disorders have similar impact on the metabolic function. In short, the sleep loss and the poor quality of sleep have a detrimental effect on the endocrine and energy metabolism. The improvement of sleep quality by the future research and appropriate clinical treatment would contribute to the decrease of the metabolic diseases such as diabetes.
