The purpose of this study was to determine the optimum chemical composition, color value, salinity, pH, total acidity, and texture for the production of short-term Green Gochujang using Cheongyang pepper powder and Meju powder. The results were as follows. The moisture content for Green Gochujang made from Cheongyang pepper powder was 33.50% for CON, and 27.21% for GG1. Crude fat and crude protein contents increased as the amount of added Meju powder increased (p<0.001). GG1 and CON contained 9.47% and 9.05% crude ash contents. Water activity was between 0.89 to 0.90. A higher amount of added Meju powder resulted in an increased color L value (p<0.001). CON showed the highest a value and b value compared to GG4, which had the lowest a and b values. Salinity was between 5.10% to 5.83%, which was lower compared to a former study. CON had a pH of 5.25, and GG4 had a pH of 6.06. Regarding total acidity, CON had a total acidity of 0.85, and GG4 had a total acidity of 0.44. Hardness value was highest in GG1 (1535.63), and lowest in CON (422.07) (p<0.001). GG1 showed the highest value in the adhesiveness property test, whereas CON showed the lowest value. GG1, which contained the highest amount of Cheongyang pepper powder showed the highest gumminess value (698.47). In an acceptance test, CON and GG3 showed the best appearance and scent value. GG3 received the highest interest in taste, texture, and overall quality. Through these results, GG3 made with 150 g of Chengyang Green pepper powder, 200 g of Meju powder, 600 g of starch syrup, 500 g of water, and 75 g of salt showed fine overall sensory interest, and therefore can be used for the production of fine Green Gochujang and Gochujang sauce.
For a period of 5 days, the quality of breads with Paecilomyces japonica powder were investigated using chemical, sensory, and mechanical evaluations at $25^{\circ}C$. The result of analysis of chemical properties revealed that the pH value of dough was increased as the amount of Paecilomyces japonica powder increased, but volume of dough and baking loss rate were decreased. Breads with 1% and 2% Paecilomyces japonica powder showed a good overall preference in sensory evaluation. As storing time passed. moisture content, lightness, and redness were decreased in all breads, but yellowness increased. Hardness and gumminess of texture analysis were increased as storing time passed, but springiness decreased. Springiness of the mechanical properties was negatively correlated with pH value of dough and volume of bread, while was positively correlated with volume of dough and baking loss rate. In the analysis of correlation between sensory and mechanical properties showed that hardness of mechanical properties had negative correlation with softness, moistness, and springiness. Cohesiveness of mechanical properties had positive correlation with acceptability.
This study was conducted to develop functional muffin in which grape seed extract(GSE) was added at 0, 0.5, 1 or 2% levels and to evaluate the quality characteristics. The volume of muffin decreased with the increasing GSE content, but no significant differences were observed. The weight and height of muffins increased with the increasing GSE content. The incorporation of GSE in the product lowered lightness (L value) and increased redness(a value). The mechanical texture parameters including hardness, springiness, gumminess and brittleness increased with the increasing GSE levels. Sensory analysis showed that muffin prepared with 0.5% GSE was considered to be as acceptable as control, based on hedonic scale ratings given by untrained taste panel.
This study evaluated the physicochemical and sensory characteristics of cookies containing various concentrations(0, 3, 5, 7 and 9%) of Enteromorpha intenstinalis powder. Cookies containing E. intenstinalis powder were significantly lower in L value than of the control. The L value of brightness decreased significantly when E. intenstinalis powder was added to the cookie formula. The a and b values also decreased significantly with the addition of E. intenstinalis powder. The loss and leavening rates were significantly higher when 5% E. intenstinalis powder was added to the samples. The spread ratio increased proportionally with the amount of E. intenstinalis powder added to the cookie formulation The hardness decreased significantly according to the amount of E. intenstinalis powder. A sensory evaluation of acceptability(appearance, flavor, color, texture and overall quality) indicated that adding a 5% E. intenstinalis powder was most the acceptable treatment compared to the other treatments.
We have investigated the rheological behaviours of emulsions containing polymers. The polymers used in this study were polyacrylamide and carboxy vinyl polymer. The emulsion with polyacrylamide shows better prior preference than that with carboxy vinyl polymer on the skin texture. In the toxicity test, such as, LLNA cell toxicity, skin organ culture and human patch test, polyacrylamide was the appropriate materials for the cosmetics. The viscosity of polyacrylamide shows maximum value in neutral pH and good stability against temperature. The decreasing effect of viscosity against salt was not good enough but showed a better result than that of carboxy vinyl polymer. Two times the amount of polyacrylamide should be used for the formation of a similar viscosity of carboxy vinyl polymer. Yield value of polyacrylamide was low and the effect for the stabilizing emulsions was also low.
The purpose of this study was to investigigate the effects of different tapioca powder on the quality of Chol-Pyon. As the result of the sensory evaluation, 5% addition groups showed good preference in chewness, moistness, softness, adhesiveness, after flavor. 10% addition groups showed good preference moistness, softness, after flavor. In texture profile, gumminess, cohesiveness, adhesiveness of Chol-Pyon was not different significantly among all the groups. All groups was getting higher by addition level. Softness was 5%, 20% addition groups had the higher. Tapioca Chol-Pyon seemed to increase hardness slightly. 5% addition group had the highest values in chewness. The desireable water content in 5%, 10% Tapioca Chol-Pyon was not different significantly among all the groups(p<0.05). 15%, 20% addition group was significantly different from all the groups. Hunter's rotor values higher redness and yellowness was 20% tapioca powder addition group more than the other groups but lightness were lowest value. Above results indicated that 5% tapioca powder addition level to give the best quality.
This study was carried out to investigate quality characteristics of Seolgiddeok containing 0, 1, 3, 5 and 7% of Lentinus edodes powder during storage. The water content of Seolgiddeok changed little with the length of storage and the amount of Lentinus edodes powder added. Hunter′s color L value of Seolgiddeok decreased and "a"and "b"value were increased significantly by increasing the amount of Lentinus edodes powder. The hardness, gumminess, adhesiveness, chewiness and cohesiveness of Seolgiddeok decreased, but springiness increased by increasing the amount of Lentinus edodes powder. Seolgiddeok added with 3% Lentinus erodes earned the highest scores in color, taste, softness, chewiness, moistness and overall preference. From the above results of sensory and texture analyses, an addition of 3% Lentinus edodes to Seolgiddeok showed the best result in quality.
This study was conducted to evaluate the effects of sweet pumpkin (Cucurbita Maxima D.) powder on the quality characteristics of cookies. The cookies were made with various sweet pumpkin powder levels (10%, 20%, and 30%). The pH of the dough increased while the density of the dough decreased as the amount of sweet pumpkin powder increased. The width of cookies determined by water content in dough increased with increasing sweet pumpkin powder level. The L value of cookies was significantly the largest in the control group. The b value was the highest for the 30% substituted sample group. According to textural measurements, the hardness, cohesiveness, springiness, and brittleness of the cookies with sweet pumpkin powder were higher in concentration than those of the control group. According to the sensory evaluation, the appearance, color, flavor, and texture of cookies with 10-20% sweet pumpkin powder were higher compared to those of the control group. The overall most acceptable cookie group was that with 10% added sweet pumpkin powder.
전통식품 개발의 일환으로 쑥 부각, 김 부각을 대두유(대조구)와 대두유+0.01% BHA, 대두유+0.01% tocopherol 등에서 튀겨 OPP비닐 포장하여 $4^{\circ}C(RH{\;}40{\pm}5%)$의 저온 저장, $25^{\circ}C(RH{\;}80{\pm}5%)$의 실온 저장을 하면서 부각에 함유되어 있는 유지를 추출하여 품질 특성과 전통적인 제품 합리화 공정을 보며, 부각식품의 제조는 원료를 물로 세척한 다음, 그늘에서 물빠짐을 한다. 여기에 찹쌀풍를 바르거나 버무려서 건조대에서 80%정도 2~3일 건조한 다음 열풍건조기로 수분이 13% 이하가 될 때까지 건조한다. 이렇게 제조된 부각을 건조상태로 포장하여 제품화하거나, $160^{\circ}C$의 기름에서 10초간 튀겨 제품화 할 수 있었다. $4^{\circ}C$의 저온저장과 $25^{\circ}C$의 실온에서 저장할 때 부각제품 추출유지의 산가, 과산 화물가, TBA가 대체적으로 $4^{\circ}C$의 저온 저장에서는 낮게 나타났으며, 품질 변화량도 적었고, $25^{\circ}C$의 실온 저장에서는 자장시간이 경과할수록 높게 나타났으며, 수분이 많이 증가하고 품질변화량이 컸다. 부각을 대두유(대조구)와 항산화제[(BHZ(0.01 %), tocopherol(0.01%)]을 첨가한 대두유에서 튀겼을 때, 항산화제를 첨가하였을 경우 저장에 따른 산가, 과산화물가, TAB가는 비교적 낮게 나타났으며, 자정 중 산화방지효과가 BHA가 자장 컸고 tocopheriol로 다소 안정되었다. 저장기간에 따른 부각의 질감(texture)을 주관적인 관능검사와 객관적 방법인 texturometer를 사용하여 측정하였을 때 저온 저장의 경우가 실온 저장의 경우 보다 품질이 양호하게 나타났고, 견고성(hardness)도 컸다.
본 논문에서는 zoom 영상 세트로부터 최적의 깊이와 텍스쳐 정보를 추출하는 효과적인 영상 코딩 알고리듬을 제안하였다. 제안된 알고리듬은 깊이 추출 단계와 텍스쳐 추출의 2단계로 구성되어 있다. 물체 공간에서 X-Y면을 삼각패치로 나누고 각 삼각패치 노드의 깊이 값은 깊이 추출 단계에서 결정한 후, 두 번째 단계에서 각 삼각패치의 텍스쳐를 추출한다. 깊이 추출 단계에서는 각 삼각패치의 노드를 중심으로 이루어진 사각형 윈도우 영역에 대하여 블록에 기반한 변이 보상 방법을 적용함으로 노드의 깊이를 결정한다. 텍스쳐 추출 단계에서는 아휜 변환에 기반한 변이 보상 모델을 이용하여 zoom 영상으로부터 삼각패치의 텍스쳐가 추출된다. 영상의 화질을 개선하기 위하여, 영상 평면에서 보정하는 대신 물체 공간에서 보정을 수행하였다.
