In this study, the possibility of green tea waste (GTW) as a new ingredient of byproducts-mixed silage was investigated. Characteristics of GTW were low in dry matter (DM) content (20%), and high in crude protein (30 to 36%) and tannins (8.5%). The GTW was added to mixed silages composed of tofu cake, rice straw and rice bran that are locally available in Japan. In experiment 1, the effect of GTW addition to silage made from various patterns of byproducts mixture based on tofu cake was studied. In experiment 2, the effect of GTW addition and storage temperature on fermentation characteristics, nutrient contents and in vitro ruminal gas production of byproducts-mixed silages were examined. In experiment 1, GTW addition on tofu cake accelerated acetic, propionic and butyric acid accumulation in the silage. When rice straw was mixed with tofu cake, DM content was increased from 47 to 56%, lactic acid was the main acid and the pH was decreased below 4.2. In this case, GTW addition to those mixtures did not affect acid concentrations of the silage. In experiment 2, GTW addition to the byproducts mixture increased lactic acid concentration, decreased the pH and DM loss of the silages. In GTW treatments, tannin concentration was lower in the silage stored at $30^{\circ}C$ than $15^{\circ}C$. Addition of GTW into the silage also increased in vitro ruminal gas production. It was concluded that addition of GTW into byproducts-mixed silage enhanced lactic acid fermentation when there were insufficient materials for lactic acid production. Utilization of GTW as an ingredient in mixed silages would be effective in enhancing fermentation characteristics, lowering tannin content and in vitro ruminal gas production.
The aim of this experiment was to determine the chemical composition of six commonly utilized fodder trees and shrub species in Turkey, namely Glycrrhiza glabra L, Arbutus andrachne, Carpinus betilus, Juniperus communis, Quercus libari L and Pistica lentiscus and its relationship with gas production and estimated parameters when incubated with rumen fluid in vitro. There were significant (p<0.001) differences between leaves in terms of crude protein (CP), acid detergent fiber (ADF), total condensed tannin (TCT), bound condensed tannin (BCT) and soluble condensed tannin (SCT). Crude protein contents ranged from 5.74% (Juniperus communis) to 12.59% (Glycrrhiza glabra L). Acid detergent fiber contents ranged from 25.14% (Glycrrhiza glabra L) to 39.23% (Juniperus communis). Total condensed tannin (TCT) contents of leaves ranged from 4.34% (Quercus libari L) to 20.34% (Juniperus communis). Acid detergent fiber (ADF) and total condensed tannin contents of leaves were negatively correlated with gas productions and some estimated parameters. Potential gas productions (A) of Glycrrhiza glabra L, Arbutus andrachne, Quercus libari L and Pistica lentiscus were significantly (p<0.001) higher than those of Carpinus betilus and Juniperus communis whereas gas production rate (${\mu}_{24}$) of Pistica lentiscus was significantly (p<0.001) higher than the others. Time (h) to produce 50% of total gas pool size ($T_{50}$) of Juniperus communis was significantly (p<0.001) lower than that of Carpinus betilus whereas time (h) to produce 90% of total gas pool size ($T_{90}$) of Juniperus communis was significantly lower than the others except for Pistica lentiscus. The metabolizable energy (ME) contents of leaves ranged from 8.86 to 10.39 MJ $kg^{-1}$ DM. The results obtained in this study suggested that browse species had a significant effect on chemical composition, gas production and estimated parameters of leaves. Leaves from Glycrrhiza glabra L with a considerable amount of CP had a high rank value in terms of ME. Therefore leaves from Glycrrhiza glabra L may have a high potential value for small ruminant animals in terms of rumen and whole digestibility. Leaves from other species studied require protein supplementation when they are the only feed consumed by ruminant animals.
Despite being a rich source of protein (28-34%), karanj (Pongamia glabra) cake is found to be bitter in taste and toxic in nature owing to the presence of flavonoid (karanjin), tannin and trypsin inhibitor, thereby restricting its safe inclusion in poultry rations. Feeding of karanj cake at higher levels (>10%) adversely affected the growth performance of poultry due to the presence of these toxic factors. Therefore, efforts were made to detoxify karanj cake by various physico-chemical methods such as dry heat, water washing, pressure cooking, alkali and acid treatments and microbiological treatment with Sacchraromyces cerevisiae (strain S-49). The level of residual karanjin in raw and variously processed cake was quantified by high performance liquid chromatography and tannin and trypsin inhibitor was quantified by titrametric and colorimetric methods, respectively. The karanjin, tannin and trypsin inhibitor levels in such solvent and expeller pressed karanj cake were 0.132, 3.766 and 6.550 and 0.324, 3.172 and 8.513%, respectively. Pressure-cooking of solvent extracted karanj cake (SKC) substantially reduced the karanjin content at a cake:water ratio of 1:0.5 with 30-minute cooking. Among chemical methods, 1.5% (w/w) NaOH was very effective in reducing the karanjin content. $Ca(OH)_2$ treatment was also equally effective in karanjin reduction, but at a higher concentration of 3.0% (w/w). A similar trend was noticed with respect to treatment of expeller pressed karanj cake (EKC). Pressure cooking of EKC was effective in reducing the karanjin level of the cake. Among chemical methods alkali treatment [2% (w/w) NaOH] substantially reduced the karanjin levels of the cake. Other methods such as water washing, dry heat, HCl, glacial acetic acid, urea-ammoniation, combined acid and alkali, and microbiological treatments marginally reduced the karanjin concentration of SKC and EKC. Treatment of both SKC and EKC with 1.5% and 2.0% NaOH (w/w) was the most effective method in reducing the tannin content. Among the various methods of detoxification, dry heat, pressure cooking and microbiological treatment with Saccharomyces cerevisiae were substantially effective in reducing the trypsin inhibitor activity in both SKC and EKC. Based on reduction in karanjin, in addition to tannin and trypsin inhibitor activity, detoxification of SKC with either 1.5% NaOH or 3% $Ca(OH)_2$, w/w) and with 2% NaOH were more effective. Despite the effectiveness of pressure cooking in reducing the karanjin content, it could not be recommended for detoxification because of the practical difficulties in adopting the technology as well as for economic considerations.
The tannin acid and the enzymes have been used in order to improve the ruggedness in laundry and the absorption of dyes and pigments in the textile industry for several years. The enzyme processing on the protein fiber minimizes the damage of the entire fiber and improves the dyeability by effectively modifying only the hydrophobic surface. This study tried out the structural observation by applying the Castanea crenata sieb. et. zucc. containing abundant tannin to the hair dyeing as the natural dyeing pigment along with Protease of Rhizopus sp. The dyeability was improved as compared to the dyeing using only the synthetic tanning and iron mordant. When the depth of pigment was higher in accordance with the surface observation, the enzyme dissolution had impact on dyeing and so the keratin layer on the hair surface. Accordingly, it was found that the appropriate depth was between 0.01 and 0.03%. It was estimated that 0.1% protease would treated within 30min. Consequently, it would cause the good reaction with the functional group of tannin pigment.
This study examined the dyeability, color fastness and functionality of cotton fabrics dyed with residual parts of cultivated Pteridium aquilinum. UV-Vis absorption spectrum, TLC and FT-IR spectra analysis showed that colorants of Pteridium aquilinum are a mixture of pyrogallol tannin and catechol tannin. Optimum dyeing conditions was confirmed colorant concentration of 500% at $100^{\circ}C$ for 60 minutes. Color fastness followed to washing, rubbing, perspiration and light as 4-5, 5, 4-5(acidic), 3-4(alkaline) and 2, respectively. Deodorization rates of ammonia($NH_3$) and acetic acid ($CH_3COOH$) were analyzed 88.8% and 78.0%. UV protection rate was 94.2% of UV-A and 96.8% of UV-B. UV protection factor(UPF) was 27. Therefore residual parts of cultivated Pteridium aquilinum could be used for a new functional colorant.
In order to promote the utilization of Hovenia dulcis leaf as food, leaf tea was nanufactured and its physicochemical properties were examined. Aong proximate composiotns of Hovenia dulcis leaf tea were found in both fermented tea and roasted tea the higher contents of total sugar and crude protein. In minerals component of fermented tea and roasted tea, potassium (K) was the most high amounts of 11,560.6 ppm and 11,084.6 ppm, respectively. The highest contents of free sugar in both teas were mainly consisted of sucrose, the amounts of sucrose showed 1.47% and 1.94% . In case of organic acids, oxalic acid and citric acid were revealed 631.26mg% and 660.05mg%, respectively. The highest contents of total amino acid in fermented tea and roasted tea were 812.01mg% and 709.72mg% of glutamic acid. the fatty acids of fermented tea and roasted tea were mainly composed of 40.18% of linolenic acid and 26.92% of palmitic acid, respectively. The major volatile compounds of fermented tea and roasted tea were composed of 3, 7, 11, 15-tertramethyl-2-hexadecen-1-ol and methyl palmitate and the amounts of those showed 290.1ppm and 472.97 ppm, respectively. The tannins of fermented tea and roasted tea were 1.02% and 1.26% , as the extraction steps increased the tannin contents decreased. In Hunter's color values of tea extract L and b values decreased , while a value of those increased as the extraction steps were repeated.

This study was performed to evaluate tannin exposure by wooddusts for workers in furniture factories and to investigate the relationship between tannin exposure and sino-nasal cancer risk. In order to explore possible cytological changes leading to nasal cancer, we have examined 50 male furniture workers and 50 matched controls using brush cytology. The results we have obtained in this study were as follows: 1. The tannin contents of woods used in woodworking factories have been measured and varied from 0.43 to 8.72 mg tannic acid equivalent per gram wood, for reconstituted softwood and turpentine (Syncarpia glomuliferia) respectively. 2. Airborne tannins in wooddusts were also determined by area and personal exposure. The values of mean exposures for both methods are ranged from 3.1 to $5.0{\mu}g/m^3$ and from 4.6 to $14.5{\mu}g/m^3$ in furniture manufactures. 3. Over nasal cytology scores 2, the scores of study group were slightly more than control group and this kind of metaplasias seemed to be occurred over $2mg/m^3$ wooddust and $6{\mu}g/m^3$ tannin exposure. Keratinising squamous metaplasia was investigated at nasal cytology score 3 and $10{\mu}g/m^3$ tannin exposure. The nasal cytology score 4 was seemed to be atypical squamous metaplasia. 4. To find out contributing factors to nasal cytology change, odds ratio that is one of fundmental biostatistics was applied. Actually the relationship between wooddust, tannin concentration and metaplasia were not meaningful, but the relationship between working experence more than 15 years and metaplasia was calculated as 1.83. This reveals that significant clinical abnormalities could be influenced from the years of woodworking experiences. However further research is required to evaluate the significance of the data, for the purposes of sino-nasal risk assessment, standard setting to prevent nasal cancer occurrences and possibility of changing workplace.

This study was designed to investigate the possible utilization of Ligustrum japonicum leaves as a source of functional ingredients. Contents of total phenolic compounds and condensed tannin were $0.89{\sim}1.53%$ and $0.10{\sim}0.13%$, respectively. The major flavonoid compounds in the leaves of L. japonicum were luteolin, apigenin and their glycosides. Tyrosol, t-cinnamic acid, p-hydroxybenzoic acid, vanillic acid, shikimic acid and protocatecuic acid were detected in free phenolic acid, while tyrosol, t-cinnamic acid, ferulic acid, esculetin, caffeic acid, p-coumaric acid and hydroxytyrosol were detected in esterified phenolic acid. The insoluble phenolic acid contained tyrosol, t-cinnamic and p-caoumaric acid.
The herb of Geranium sibirium L, a drug knwon as "Chui Sonni Poul" distributed widely, has been used as a folk-medicine for the treatment of diarrhea. The dried entire herb is boiled with methanol and methanol is distilled of from the filtered methanol extract under reduced pressure. Then the extract is boiled with water and filtered off. From the filtrate, the following substances are isolated and identified by treating with organic solvents as ether, ethyl acetate, and etc.: 1. Gallic acid: a colorless needle crystal which is soluble in alcohol and water. mp.235.deg. C, positive (dark blue) against the ferric chloride reagent. 0.76 percent of gallic acid is yielded from the herb. 2. Quercetin: a light yellow crystal. mp.194.deg. C. negative against the ferric chloride reagent. 3. Ellagic acid: a light yellow crystal which is insoluble in ehter and acetone and slightly soluble in alcohol. Positive (blue) against the ferric chloride reagent. The crystal obtained by recrystalisation from pyridine, does not melt by 360.deg. C. Represent a yield of 0.03 percent from the herb. 4. Crude tannin: a approximately 7.6 percent of crude tannin is yielded by treating with ethyl acetate. gallic acid and querceetin are yielded by hydrosis with dliute sulfuric acid. Based on the above results, the following suggestion could be recommendable; Geraed in the Japanese Pharmacoeia VI.acoeia VI.
Chemical constituents and amino acid contents of tea leaves which were harvested three times (May, July and August) from the tree at two different locations were studied. The contents of total nitrogen, ascorbic acid and amino acid decreased, while those of fiber and tannin increased in the order of May, July and August crops. No differences were observed in the contents of reducing sugar, caffeine and ash among tea leaves harvested at different times. There were no effects of locations on the contents of chemical constituents of tea leaves.
