Discussion on Spring Water(論泉水), a Study from Junsangpaljeon(遵生八牋) (『준생팔전(遵生八牋)』의 '논천수(論泉水)'에 관한 연구(硏究))

  • Objectives : Evaluating water and its comparisons to Yin(陰) and Yang(陽). In this section, we will look into this matter from Dongeuibogam(東醫寶鑑) and introduce an oriental perspective on the subject of water(水部). Methods : Translating Eumchanboksikjeon(飮饌服食牋) from Junsangpaljeon(遵生八牋). An in depth study of related contents and comparing to the water section(水部) of Dongeuibogam(東醫寶鑑) Results : According to the section of Varieties of Teas and Water(茶泉類) in The Discussion of Springs(論泉水), Goryum(高濂) divided water into five different types in Eumchanboksikjeon(飮饌服食牋) of Junsangpaljeon(遵生八牋). These different types are Water that runs between rocks, Clear and cold water, Sweet and fragrant water, Spiritual water and Well water. Dongeuibogam(東醫寶鑑) also analyzed 28 different types of water out the 33 its list. The idea is that one must use water differently according its origins, where it originated, when and what season to maximize the usage of the water because the energy of water would be different. Conclusions : By evaluating water, we have learned that water picks up energy and changes according to its surrounding environments. The different types of water used changes the medicinal ingredients and it affects the human body differently. One must keep in mind, the cycles of water, its energy and how it helps us live a healthier life.

The Characteristics of Cheonggukjang, a Fermented Soybean Product, by the Degree of Germination of Raw Soybeans

  • This study was conducted to observe the quality characteristics of cheonggukjang fermented with new small-seed soybeans ('Agakong') according to the degree of germination of the raw soybeans. The sprouting rate was $8.6{\pm}5.6%$ after 12 hr of germination, but at 24 hr it increased rapidly to $85.4{\pm}4.7%$. We confirmed that the total isoflavone content immediately after soaking was 273.9 mg%, which was at least 3 times greater than for common soybeans; content increased at the start of germination, and increased to 338.4 mg% by 24 hr of germination, but then decreased. The quantity of viscous substance of the cheonggukjang increased in proportion to the degree of germination of the raw soybeans. The levels of amino acids in the cheonggukjang made from non-germinated soybeans, and soybeans germinated 48 hr, were 12.45 and 10.06%, respectively. The isoflavone levels in the cheonggukjang were determined by the degree of germination of the raw soybeans. There were no significant differences between the odor, sweet taste, savory taste, bitter taste, and overall acceptability of the cheonggukjang with different germination times of 0 to 36 hr.

  • Objectives : The purpose of this study was to investigate Armeniacae Amarum Semen of poison and the Pragmatic significance of the processing method. Methods : We researched several books dealing with Armeniacae Amarum Semen of poison and the Pragmatic significance of the processing method. Results & Conclusions : Armeniacae Amarum Semen is sweet, bitter, warm and harmful in nature. It is known as moistening the lung to arrest cough, moistening the colon, to move the bowels and promoting digestion and curing dog bites. Armeniacae Amarum Semen has toxicity, decreasing toxicity of Armeniacae Amarum Semen is boiling, peeling or roasting. If Armeniacae Amarum Semen has two seeds in one apricot or has six-floral leaf, do not used for medicinal purposes.

  • In India, Gymnema sylvestre due to the unique property of the plant to antagonize the sweet taste is known as 'Gur-mar'. It has several ethnomedicinal values as various tribals/traditional communities and rural peoples of India find diverse medicinal uses viz. antidiabetic, stomachic, diuretic, and is useful in cough and throat troubles. Besides, it has strong effect on reducing blood sugar. The present communication deals with the detailed pharmacognostical evaluation of the aerial parts of G. sylvestre collected from three places of the country-Varanasi (U.P), Panchmarhi (M.P), Salem (Tami Nadu) and commercial sample procured from local market. The botanical and physico-chemical parameters of all the samples were quite similar though little variations were observed in foaming index, alcohol and water soluble extractives of local sample. The microscopic characteristics of the drug are horse shoe shaped petiole with 3 amphicribal vascular bundles, sieve tubes well developed; anomocytic stomata only on the abaxial surface of the leaf, the fan shaped amphicribal vascular bundle, presence of intraxylary phloem. The TLC fingerprint profile of all the samples was more or less similar only the quantity of some of the compounds varied.

  • Objectives : This research examined about dietary therapy on the gastric & duodenal ulcer based on the literary findings, for clinical treatment and prevention of the gastric & duodenal ulcer. Methods : This Research examined on histories, compositions, applications, and effects of dietetic on about 200 cases of dietary therapy of the gastric & duodenal ulcer from recent Chinese literatures Results : 1. Various vegetables, animals and mineral materials including herbs, grains, vegetables, fruits, food and drink were used for the dietary therapy. 2. Methods of the preparation for use as therapeutics were decoction, pulvis, gruel, medicinal wine, cake, tea, paste and gelatin and etc. 3. Frequently used materials were cuttle fish bone, Bletillae rhizoma, oyster shell, egg shell, sugar, aloe, licorice, lily, red jujube, and pig stomach. 4. Four properties of cold, warm, cool and hot were equal in frequencies. Most common tastes were sweet and bitter. Conclusion : Though dietary therapy for the gastric & duodenal ulcer is not based on clinical or experimental data, but through experience. It is mostly based on Yin-Yang and five elements, visceral manifestation, channels and their collateral channels and chinese herbal medicine theories. If we use them properly according to oriental medicine method, it will be effective on treating and preventing the gastric & duodenal ulcer.

Quality Characteristics of Kochujang Added Medicinal Herbs (한약재를 첨가한 고추장의 품질특성)

  • This study was to develope health promoting and better quality of Kochujang. Three kinds of medicinal plants, Angelica acutiloba (AA), Akebia quinate decaisne (AQ), Caragana chamlagu (CC) were extracted with water. Hanbang Kochujang was prepared by adding water extracts of medicinal hem to the ingredients of Kochujang. Quality characteristics of Hanbang Kochujang were evaluated by its water content, color and sensory evaluation during storage at $5^{\circ}C$: and $20^{\circ}C$ for 90 days. Moisture contents of Hanbang Kochujang before storage were $33\~38\%$ and increased to $48\~51\%$ at the end of storage. Color values(L, a and b) of Hanbang Kochujang were decreased as the progress of storage period at $5^{\circ}C$ and $20^{\circ}C$. Redness (a) values of Hannbang Kochujang with Akebia quinate decaisne (KAQ) and Caragana chamlagu (KCC) were lower than that of control Kochujang (KC) during storage at $20^{\circ}C$(p<0.05). Yellowness(b) values of Hannbang Kochujang with Caragana chamlagu (KCC) was lower than that of control Kochujang (KC) during storage at $5^{\circ}C$(p<0.05). From sensory evaluation, preference was higher in Hanbang Kochujang (KAA, KAQ and KCC) stored at $20^{\circ}C$ than that stored at $5^{\circ}C$ during 60 and 90 days of storage. Sensory evaluation scores of color, sweet taste and overall preference were the highest in Hanbang Kochujang added Caragana chamlagu (KCC) during storage at $5^{\circ}C$ and $20^{\circ}C$ for 90 days (p<0.05).

  • The effect of natural foods, utilizing the extracts or juices of teas(Green tea; Camellia sinesis, Du'chung; Eucommia ulmoides Oliver), medicinal plants(Eu sung cho; Houttuynia cordata Thunb, Sam back cho; Saurus Chinensis, Baek hwa sa seal cho; Oldenladia diffusa Roxb.) seaweeds(Laver; Porphyra tenera, Sea mustard; Undaria pinnatifida, Sea staghorn; Condium fragile) and vegetables(Sweet pepper; Capsicum annuum var. angulosum, Kale; Brassia oleracea var.. acephala, Cucumber; Cucumis sativus, Onion; Allium cepa) and fruits(Tomato; Lycopericon esculentum, Maesil; Prunus mume, Plum; Prunus saticina and Grape; Vitis spp.)on the inhibition of N-Nitrosodimethylamine(NDMA) formation was investigated from the various conditions. The inhibition effect was observed in vitro using the reaction fluids of pH 1.2, 4.2 and 6.0. From the teas and medicinal plants, there was a positive response of NDMA formation; however, From the seaweed extracts, there was a negative response of the inhibition effect of NDMA formation, and as the pH of reaction fluids and the amount of materials increase, the inhibition of NDMA formation was strengthened. The inhibition ratios by the level of pH are as follows: under pH 1.2 vegetable juice were 57.6∼99.7% and fruits were 35.9∼99.7%; under pH 4.2 vegetable juice were 55.0∼97.5% and fruits were 21.3∼96.8%. All of the materials observed has been proved and shown the inhibition effect of NDMA formation.

Silica Nanoparticles Suppress the Root Rot of Panax ginseg from Ilyonectria mors-panacis Infection by Reducing Sugar Efflux into Apoplast

  • Panax ginseng Meyer (Korean ginseng) is in the spotlight of Oriental medicine and is proclaimed as the king of medicinal plants owing to its adaptogenic characteristics. Ginseng root rot is a devastating disease caused by the fungus, Ilyonectria mors-panacis that generally attacks younger roots (~2 years), leading to defects in root quality, ginsenoside accumulation and also life cycle of the plant. Hence, there is an indispensable need to develop strategies resulting in tolerance against ginseng root rot. In the present study, we evaluated the effect of silica nanoparticles(N-SiO2) in Panax ginseng during I. mors-panacis infection. Long term analysis (30 dpi) revealed a striking 50% reduction in disease severity index upon 1mM and 2mM treatment of N-SiO2. However, N-SiO2 did not have any direct antifungal activity against I. mors-panacis. Membrane bound sugar efflux transporter, SWEET (Sugars Will Eventually be Exported Transporters) was identified in ginseng and as expected, its expression was suppressed upon N-SiO2 treatment in the root rot pathosystem. Furthermore, the total and reducing sugars in the apoplastic fluid clearly revealed that N-SiO2 regulates sugar efflux into apoplast. In a nut shell, N-SiO2 administration induces transcriptional reprogramming in ginseng roots, leading to regulated sugar efflux into apoplast resulting in enhanced tolerance against I. mors-panacis.

The physicochemical characteristics of silk-tofu added with medicinal herb powder preserved in kochujang and deonjang (Tofujang) (약초첨가 비단두부의 장담금에 따른 이화학적 특성)

  • The effect of medicinal herb Powder addition on the Physicochemical characteristics of tofujang preserved in kochujang and deonjang was investigated. The moisture contents of tofujang decreased rapidly till 4 weeks of storage, after which they showed a slight tendency to increase. The PH values of cochujang tofujang and deonjang tofujangs showed a tendency to decrease, but then showed a tendency to increase a little. The saltiness of tofujang increased rapidly till 2 weeks of storage, and then increased gently. The chromaticity of L and a values decreased, and that of b value significantly increased, during a storage. The total microbial counts of kochujang tofujang decreased till 4 weeks of storage, and then increased a little (103 CFU/ml). The total microbial counts of deonjang tofujang were decreased during storage. The total free amino acids content of silk-tofu was extremely small $(0.16\~0.92 mg/ml)$, but after 4 weekn of preservation, that of tofujang preserved in kochujang and deonjang increased to 10mg/ml and 40mg/ml, respectively In the kochujang tofujang, the textural characteristics of hardness, gumminess and chewiness increased rapidly at initial preservation and then showed a tendency to decrease significantly. The springiness and cohesiveness values showed no specific tendency. In the deonjang toking, the textural characteristics of hardness and gumminess increased till 2 weeks of preservation, and then tended to decrease. The springiness, chewiness and cohesiveness value had a tendency to decrease significantly with preservation. In the sensory evaluation, color, aftertaste and overall acceptability of mok-k tofujang showed significantly high score, but there was no significance in nutty taste, sweet, salty and hot. Color, savory, sweet and overall acceptability of mok-d and con-d tofujang were high, and the saltiness and aftertaste of sin-d tofujang got high score.

Proximate Compositions and Sensory Attributes of Soybean Sprouts with Recommended Soybean Cultivars (장려품종 나물콩으로 재배한 콩나물의 일반성분 및 관능적 특성)

  • This study investigated the proximate compositions and sensory attributes of fresh and boiled soybean sprouts. The sensory attributes of cooked soybean sprouts (Kongnamulmuchim) were also assessed after boiling and seasoning. Proximate compositions were analyzed from the total sprout, cotyledon and hypocotyl without hair root. Soybean sprouts cultivated with four recommended soybean cultivars (Nokchae bean, Dawon bean, Seonam bean and Pungsannamul bean) in a lab and then used for analysis. Carbohydrate, protein, lipid and ash contents were lower, while moisture was lower, in the cotyledon than in the hypocotyl of fresh soybean sprouts, regardless of the bean type. Each soybean sprout showed different contents of chemical constituents in total sprout, cotyledon, and hypocotyl parts. Sensory attributes such as odor, flavor, and overall acceptability were evaluated. Each panels showed a response on a 9-point rating scale. The acceptability of fresh soybean sprouts was negatively correlated with beany and grassy tastes, but positively correlated with nutty and sweet tastes. The acceptability of boiled soybean sprouts was negatively correlated with beany and grassy flavors, and positively correlated with nutty odor and flavor. In addition, acceptability of cooked soybean sprouts (Kongnamulmuchim) was positively correlated with nutty and sweet flavors. The beany and grassy flavors limited acceptability of fresh soybean sprouts, whereas the prominence of nutty flavor might contribute to acceptance of boiled and cooked soybean sprouts.
