The Changes in Quality of Sugars Chestnuts by Sugars and Heating Methods (당의 종류 및 가열방법에 따른 당침밤 제품의 품질 변화)

  • The effects of sugars and heating methods on the sugar infilteration, hardness, color and organoleptic characteristics were investigated for quality improvement of sugared chestnuts. Among the tested sugars, isomaltooligosugar was the most effective on the rate of sugar infilteration. High temperature increased the rate of sugar infilteration during sugaring process, but color and flavor were deteriorated at 9$0^{\circ}C$. The most suitable temperature for sugaring process was 7$0^{\circ}C$. The product sugared with fructooligosugar recoreded the highest score in hardness, odor and preference than any other sugars tested and increased the rate of sugar infilteration when mixed with sugar at same amount. The changes of soluble solids in chestnuts boiled with microwave oven were ranged from 18。Brix to 32。Brix, while chestnuts heated in general were from 18。Brix to 28。Brix. Chestnuts boiled with microwave heating were sugared rapidly. The hardness of boiled and sugared chestnuts was lower when treated with microwave than with general heating. Hunter's L and b value of sugared chestnut treated with microwave decreased during processing but a value somewhat increased.

Characteristics of Peach Vinegar by Parallel Complex Fermentation (복숭아 식초의 병행복발효 특성)

  • The study was conducted to investigate the characteristics of peach vinegar by parallel-complex fermentations. The vinegars prepared by using Changbnag-Chosang and Yumung peach cultivars added with 7, 10, and 13% sugaring concentrations were examined. The rate of increase in alcohol degree and titratable acidity, and that of decrease in soluble solids showed higher at Yumyung peach than at Changbang-chosang. Alcohol and acetic acid fermentation by paralle-complex fermentation were performed better in Yumyung peach than Changbang -chosang. but the fermentation of Yumyung showed active alcohol fermentation in the early stage, and active acetic acetic acid fermentation in the late stage. Quality of the vinegar prepared with Yumyung peach was better than that of Changbang-chosang, which were evaluated by acetic acid contents , peach taste and odor in the vinegar, and overall taste. The fermentation was accelerated with an increase in sugaring , concentrating but overall taste was best in 10 % sugaring.

Optimization for the Sugaring Process of Yam for Snack Food Using Response Surface Methodology (마스낵 제조를 위한 당절임 공정의 최적화)

  • This study was conducted to optimize sugaring process of yam for development of new snack product and enhancement acceptability. Three variables by five level central composite design and response surface methodology were used to determine optimum conditions for sugaring time, temperature and concentration. Optimization of the process was conducted using the combination of the moisture content, solid content, color and rehydration ratio. The regression polynomial model was suitable (P>0.05) model by Lack-of-Fit analysis with highly significant. To optimize the process, based on surface response and contour plots, superimposing the individual contour plots for the response variables. The optimum conditions for this process were 5.5 hours and 58% at 40$^{\circ}C$ under the optimum of restricted variables as moisture content was 66 to 70, solid content was 25 to 30%, L value was above 75, a value was -2.1 to -2.4, b value was above 5 and rehydration ratio was 200 to 250.

  • Apple sugaring and apple nectar gel were treated with coating agent, and then the rate of weight loss, browning reaction and fungi growth on the storage conditions of those were investigated. The results obtained were summarized as follows; The composition of sucrose, D-sorbitol, corn syrup, gelatin, arabia gum, citric acid, sodium citrate and sodium ascorbate as a nontoxic coating agent was desirable to repress weight loss browning reaction and fungi growth of apple sugaring and apple nectar gel. It was the most effective method that apple sugaring was treated with the coating agent and refrigerated with double packaging. The contraction by weight loss, browning reaction and fungi growth of apple nectar gel treated with the coating agent and freezed with double packaging were repressed.

Changes of Salmon Meat Texture During Semi-Drying Process (조미 반건조 제품 가공 공정에 따른 연어육 Texture의 변화)

  • To obtain basic data for processing semi-dried salmon meat product, the results that were measured the textural properties of salmon meat during salting, sugaring and drying process followed. Drying time and temperature were longer, the moisture amount of salmon meat were reduced. Hardness of salmon meat was direct proportion to shear stress, but hardness was inverse proportion to cohesiveness during drying process. After sugaring and salting salmon meat, drying time was longer, hardness and shear stress of salmon meat were increased. The sensory evaluation of the textures of sugaring salmon meat dried for 3 hrs showed slightly good. In the changes of texture of salmon meat during steaming hardness and shear stress of salmon meat dried for 4 hrs were higher than that dried for 10 hrs. And steaming time was longer, hardness of salmon meat dried for 4 hrs was decreased and cohesiveness was not changed.

The Effect of Pursuit Benefit of Beauty Waxing on Reuse Intention (뷰티왁싱 요법에 대한 추구혜택이 재이용의도에 미치는 영향)

  • The aim of the study is to investigate the effect of the benefit of soft waxing, hard waxing, and sugaring waxing on intention to reuse in Korean adults, and to provide useful information to people who are new to waxing. As a research method, from May 1, 2019 to August 30 (17 weeks), we surveyed 422 subjects between 10 and 40 years old who lived in Busan and Yeongnam area and experienced waxing. In statistical analysis, Cronbach's alpha was calculated for reliability test, and Chi-squared test, independent t-test, correlation analysis and linear regression analysis were used. Multiple responses were analyzed using multiple response test. In the result of the effect of waxing benefit on intention to reuse, there was a significant positive correlation of waxing seeking score by body part, total waxing benefit score(r=0.389, p<0.001), and total score of intention to reuse (r=0.214, p>0.001) with intention to reuse. There was also a significant positive correlation between waxing benefit by body part and intention to reuse, except arms and legs. In the result of the effect of waxing benefit on intention to reuse, face waxing (β=0.106, p<0.001), Brazilian waxing (β=0.221, p<0.001) and total waxing benefit score (β=0.321, p<0.001) had a significant effect on intention to reuse. In the present study, awareness of sugaring waxing was low but favor and intention to reuse were strong, and the subjects sought sugaring waxing for sensitive body parts. Thus, would provide useful information for consumers new to waxing, and also basic information for studies on waxing.

Quality characteristics and antioxidant activity of fruit dressing using lentil (Lens culinaris Med. cv, Silvina) legume

  • Dressing is a seasoned mixture usually used as a stuffing in food. Quality characteristics and antioxidant activity of fruit dressing using lentil legume were investigated. The four groups were divided into D-1(fruit dressing purchased from the local market in Deagu, Korea), D-2 (grapefruit-sugaring dressing prepared with grapefruit sugaring and lentil legume paste), D-3 (vinegar dressing purchased from the local market in Deagu, Korea), D-4 (pineapple-vinegar dressing prepared with pineapple vinegar and lentil legume paste), and then they were analyzed with regard to general compositions, Hunter's color value, mineral and free amino acid content and antioxidant activities. The pH and titratable acidity in all samples ranged from 2.9 to 4.6 and from 0.6 to 1.2%, respectively. The crude protein content were 2.29% for D-2 dressing and 4.03 for D-4 sample, while were not detected D-1 and D-3 samples. In case of Hunter's value, The ' L'and 'a' values of all samples ranged from 45.98 to 56.54 and from -1.59 to 3.30, respectively. The D-4 sample exhibited the higher levels of Ca (215.40 mg/kg), K (1,105.83 mg/kg), Mg (233.63 mg/kg) and Fe (13.78 mg/kg). The levels of heavy metals (As, Pb, Cd and Hg) in all samples were not detected. The contents of total amino acid in D-3 and D-4 samples were 8.269 and 3.419 mg/mL, respectively. The highest contents of total phenols($191.13{\mu}g\;GAE/mL$) and DPPH radical scavenging activity(93.69%, Inhibition) were observed in D-4 sample.

The Effects of Microwave Heating on the Texture of Sugared Chestnuts (Microwave 가열이 밤 당침제품의 물성에 미치는 영향)

  • This study was conducted to investigate the differences of textural characteristics and microstructure of sugared chestnuts between heated by a heater and microwave. Raw chestnuts were boiled and infiltrated the sugar in sugar syrup by heating. The content of WSP (water soluble pectin) was increased, but HSP (hydrochloric acid soluble pectin) was decreased by boiling and sugaring. This change was remarkable when it was boiled and sugared by a microwave heating. The hardness, gumminess and chewiness were more decreased in the sugared chestnut boiled and sugared with a microwave than that processed with a heater. Microstructure of sugared chestnut processed with a microwave heating showed the distruction of cell wall.

  • 매실(Pruno mume Sieb. et Zucc)은 장미 나무과의 앵두나무 속에 속하는 핵과류로서 원산지는 중국이며, 아시아 대륙의 동남부인 한국, 중국, 일본의 온난한 지역에만 분포하는 동양의 고유한 품종이다. 3,000년전 중국의 고서 신농본초경(神農本草經)에 의하면 매실은 가장 오래된 과수의 일종으로서 약용으로 사용되어 왔다고 하였다(1). 우리나라에서는 삼국시대부터 관상용으로 정원에 심었고, 열매를 이용한 것은 한의학이 도입된 고려중엽부터라고 하였다(2). 매실을 본격적으로 재배하기 시작한때는 신품종이 도입된 1980년대 초부터이며, 1980년 재배면적 및 생산량이 150 ha, 913톤인데 비하여 2000년도에는 1,034ha, 7743톤으로 급증하였다(3).   • In Conventional process, sugaring and seasoning step were combined during seasoning process of Changran-Jeotgal. While, in the case of Improved process, sugaring and seasoning step were separated and agitation was employed in order to control moisture content and improve taste. The addition of $20\%$ of corn syrup and agitation with 10 rpm for 4 hours at $20^{\circ}C$ were carried out to optimize the seasoning process in Changran-Jeotgal. From above results, quality estimation of Changran-Jeotgal manufacturing process, such as chemical and microbiological changes, there were little difference for salinity, pH, VBN value, crude fat and crude protein between Improved process and Conventional one, However water activity of Changran-Jeotgal produced by the Improved process was lower with 0.82 than that of Conventional one with 0.90. And the sensory evaluation showed that Improved process produced more favorable products; By regional groups, Seoul residents favored them more than Busan ones and by age, teen-aged like them best.
