성숙중 딸기의 세포벽 비섬유성 중성당 변화 (Changes in Non-cellulosic Neutral Sugar of Strawberry during Maturation)

  • The changes of non-cellulosic neutral sugar composition of strawberry during maturation were investigated. Arabinose, xylose, galactose and glucose were the main non-cellulosic neutral sugar of cell wall and increased until ripe stage. The main non-cellulosic neutral sugar of alkali soluble hemicellulose were arabinose, xylose, mammose, galactose. The contents of non-cellulosic neutral sugar of alkali soluble hemicellulose were increased during maturation.

  • Sugar beet represents the root of Beta vulgaris L. var. rapa $D_{UMORT}$. of the family, Chenopodiaccae. Sugar beet has been generally cultivated in the northern temperate region, but in our country, there has been seen no production of sugar from the cultivated beet so far We obtained the seeds of sugar beet from Canada and began to cultivate them in our N.I.H. Medicinal Plant Garden from April, 1969. We found such successful 90% germination, where with in October obtained 1kg root per stub which contained $16{\sim}20%$ of sugar.

  • 당귀(當歸)의 수량(水梁)과 품질(品秩)을 증대(增大)시키기 위하여 3요소(要素)의 사용량(使用量)에 따른 생육시기별(生育時期別) 3요소(要素) 흡수(吸收) 및 유효성분(有效成分)으로 알려져 있는 decursin, decursinol 및 당함량(糖含量)의 변화양상(變化樣相)을 조사(調査)한 결과(結果)는 다음과 같았다. 질소(窒素) 및 가리(加里)의 시용(施用)은 지상부(地上部), 지하부(地下部)의 생육촉진효과(生育促進效果)가 있었지만 인산(燐酸)의 시용(施用)은 단지 지상부(地上部)의 생육(生育)에만 효과(效果)가 인정(認定)되었다. 생육(生育)함에 따라 지하부(地下部)에는 질소(窒素) 및 인산(燐酸)의 농도(濃度)는 감소(減少)하였지만 지상부(地上部)에서는 증가(增價)하는 경향(傾向)이었다. 가리(加里)의 농도(濃度)는 지하부(地下部)에서 증가(增價)하였지만 지상부(地上部)에서는 약간 감소(減少) 또는 거의 변화(變化)가 없었다. Decursin 및 전당(全糖)의 함량(含量)은 생육후기(生育後期)로 갈수록 계속 증가(增價)하였으며, Decursinol 및 환원당함량(還元糖含量)은 생육중기(生育中期) 이후(以後)에는 수확기(收穫期)가 가까워질수록 감소(減少)하는 경향(傾向)이었다.

양념류를 첨가한 전통고추장의 숙성중 이화학적 특성 변화 (Effect of Condiments on the Physicochemical Characteristics of Traditional Kochujang during Fermentation)

  • 전통 고추장의 품질개선과 기호성 향상을 위하여 마늘과 양파를 $0{\sim}6%$ 첨가하여 고추장을 제조하고 22주간 숙성시키면서 이화학적 변화를 검토하였다. 고추장의 수분은 숙성 중에 증가하고 총질소는 감소하였다. 고추장의 pH와 적정산도의 변화는 마늘 또는 양파 첨가로 적었다. 고추장의 총당은 숙성 $2{\sim}4$주 사이에 급격히 감소하였으며, 환원당은 숙성 2주 경에 높았고 마늘 첨가량이 높을수록 숙성 후기에 환원당의 감소는 적었다. 알콜은 숙성이 진행되면서 증가하였고, 양파 첨가량이 증가할수록 증가하였다. 아미노태와 암모니아태 질소는 숙성 6주까지 증가하였으며, 마늘이나 양파의 첨가 농도가 증가할수록 아미노태 질소는 증가하였고 암모니아태 질소는 감소하였다. 고추장의 Aw는 숙성중에 근소하게 감소하였으나 점조성은 숙성 18주까지 증가하였다. Aw와 점조성은 양념류 첨가의 영향이 적었으나 색도는 이들의 첨가로 L값이 낮아지고 a 와 b 값이 높아 색상이 진해졌다. 22주간 숙성시킨 고추장의 종합적인 관능치는 마늘$2{\sim}4%$ 첨가가 양호하였다.

Organic acid and sugar contents in different domestic fruit juices

  • Organic acid and sugar contents in ten kinds of juices (two orange juices, two grape juices, two aloe juices, two citron juices, one bokbunja, and one grapefruit juice) were analyzed by high-performance liquid chromatography. Citric acid was detected in all the fruit juices analyzed. Grape juices contained the highest tartaric acid content (67.85 - 99.37 mg/100 mL) while orange and grape juices contained a high content of malic acid (151.67 - 211.18 mg/100 mL). Lactic acid was detected in all the aloe juices (35.12 - 65.27 mg/100 mL) as well as in one orange (203.8 mg/100 mL) and one grape juice (112.28 mg/100 mL). Citrus fruit juices (A, A', F) showed the highest content of total organic acids as 902.81 - 1,103.7 mg/100 mL. With regard to sugar contained in the juices, lactose and maltose were not detected in any of the fruit juices. Even when comparing the same kind of fruit juice, sugar (fructose, glucose, and sucrose) content showed a significant difference (p < 0.05) depending on the manufacturer. In the grape juices, contents of fructose (6.86 - 7.51) and glucose (6.23 - 7.3 g/100 mL) were higher than in other juices. One serving size of the juices (180 mL) analyzed in this study can provide approximately 3.3 - 4.9% of total daily energy requirements when consumed as part of the 2,200 kcal/day diet required for an adult.

인천지역 고등학생의 당류 저감화 인식 및 당 함유식품의 섭취실태 (Sugar Reduction Perception and Sugary Food Intake among High School Students in Incheon)

  • Objectives: This study examined ways to promote desirable eating habits by choosing foods with low sugar contents and provide nutrition education in adolescents. Methods: This study was a cross-sectional survey. The sugar reduction perception and knowledge, sugary food preference, and intake frequency of 487 male and female high school students in Incheon were analyzed comparatively. Results: Approximately 94.9% and 94.5% of the subjects were unaware of the promotion of a sugar reduction policy and the sugar reduction in the basic guidelines for school meals, respectively. Approximately 95% of them had not received any sugar reduction nutrition education, and 90% were not interested in sugar reduction. The perception for sugar reduction was significantly higher in girls (3.43 out of 5 points) than in boys (3.16 out of 5 points) (P < 0.001). Knowledge about sugar was 3.65 out of 6 points in girls and 3.04 points in boys (P < 0.001). The preference and intake frequency for fruits of the total students were 4.24 out of 5 points and 2.56, respectively. For beverages, the preference was significantly higher in boys (3.97 points) than in girls (3.70 points) (P < 0.001), and the intake frequency was significantly higher in boys (2.26 points) than in girls (2.08 points) (P < 0.001). The preference for snacks was significantly higher for girls (4.19 points) than boys (4.02 points) (P < 0.01), and the intake frequency was 2.22 points in boys and 2.17 in girls, showing no significant difference. Sugar reduction perception and knowledge about sugar showed significant negative correlations with the snack intake frequency (r = -0.11, P < 0.05; -0.13, P < 0.05) after adjusting for gender, grade, and body mass index. Conclusions: The high school students' perception of sugar reduction was very low, and there was a significant correlation with sugary food intake, suggesting that the sugary food intake will decrease as the sugar reduction perception and knowledge about sugar increase.

국내 유통 가공식품과 단체급식 메뉴의 당 함량 실태조사 (Monitoring of Total Sugar Contents in Processed Foods and Noncommercial Foodservice Foods)

  • '06년-'7년 시중 유통되는 가공식품과 단체급식의 메뉴를 대상으로 과잉 섭취 시 위해 가능한 영양성분의 하나인 당 함량 실태 조사를 한 결과 사탕류, 캐러멜류 및 젤리류에서 31.7-71.1%로 가장 높게 나타났고, 특히 학교주변 문방구등에서 판매되는 저가의 어린이 기호식품의 경우 대부분 당 함량이 높은 것으로 나타났다. 또한, 단체급식에서 제공되는 반찬 중 찜류 및 볶음류, 조림류에서 물엿이나 설탕을 첨가하는 경우 29.6-49.2%로 어린이 기호식품과 유사한 수준의 당을 함유하고 있었다. 가공식품 및 단체급식 메뉴를 통한 당 섭취를 줄이기 위해서는 산업체나 단체급식 시설에서의 설탕이나 물엿과 같은 단맛 성분의 사용을 최소화하고 급식에 대한 영양표시제 활성화가 필요하며, 소비자들은 제품을 선택할 때 영양성분표시를 확인하여 당 함량이 적은제품을 선택하고, 섭취 시에도 가급적 1회 제공량 범위를 넘지않도록 해야 할 것이다. 본 연구 결과를 기초로 지속적인 실태조사를 통하여 가공식품 및 음식의 당 함량 데이터베이스 및 원료성 식품에 대한 데이터베이스를 구축한다면 소비자들에게 올바른 영양정보를 제공하고 당 저감화를 추진하는 등 어린이 먹거리의 영양 안전성을 확보하게 될 것이다.

호박술에 관한 연구 (Studies on a Pumpkin Wine)

  • In order to develop a pumpkin wine, the brewing conditions and sensory evalution of the wine were studied. The pumpkin can be made into wine by ethanol fermentation with Saccharomyces cerevisae. When the mash was adjusted 15aA pumpkin and 25% sugar and fermented for 15 days, the product was highly evaluted in color, flavor and taste. Contents of the refined pumpkin wine were 80mg/ml of total sugar, 70mg/ml of reducing sugar, 2.1 of acidity and 12% of ethanol, and it's pH was 3.6.

경상도 전통 마른 오징어 식해의 제법조사 및 품질특성 (A Study on Quality Characteristics and Establishment of Fermentation Process for Traditional Kyungsando Squid sikhe)

  • The method of the squid safe made in Kyungsando was examined, and fermentation precess was established. The chemical composition and functional effects of the squid sikhe were examined. In the sensory evaluation, the squid sikhe made from Gampo accepted to be best for traditional Kyungsangdo squid sikhe and it is called standard sikhe. The Gampo sguid sikhe showed higher values in total sugar, free reducing sugar and nitrogen compound analysis compared to the orthers. The sugar of standard sikhe consisted of four kinds including glucose. The contents of free amino acid was increased in the order of glutamic acid, alanine, and methionine. The composition of amino acid in water or salt soluble protein of squid sikhe contained 17 kinds, and the contents was increased in order of glut amine acid, aspartic acid, and proline.

나박김치의 저장성 향상을 위한 Chitosan 첨가의 효과 (Effect of Chitosan on Storage Stability of Nabak Kimchi)

  • The effect of chitosan on physicochemical and organoleptic properties of Nabak kimchi was studied during fermentation at 2$0^{\circ}C$ . Viscosity of the juice of Nabak kimchi added with chitosan was lower than that of control group. The viscosity was gradually increased during storage period, especially from 5 days to ,7 days of storage. Initial pH was higher in control group than inchitosan groups. The pH of controlgroup decreased rapidly during 4 days of storage. The pH of chitosan groups was slightly increased during the first 3 days of storage and decreased thereafter. Acidity was rapidly increased from 3 to 5 days. Reducing sugar contents increased up to 3 days and decreased thereafter. Acidity was rapidly increased from 3 to 5 days. Reducing sugar contents increased upto 3 days and decreased therafter. Glutamic acid, alanine, threonine, aspartic acid, proline and valine were the major free amino acids, and as the fermentation preceeded they were increased gradually. There were signigicant differences in saltiness, sourness and aged odor in sensory evaluation of Nabak kimchi solution during fermentation at 2$0^{\circ}C$.
