Determination and Prediction of Partition Coefficient Values (Kp) for Printing Ink Solvents on Cookie from the Kp of Each Cookie Ingredient

  • The partitioning behavior of five printing ink solvents was studied in cookie ingredients and cookies to examine migration behavior, and to determine if one could predict Kp of a cookie from summing the Kp of each ingredient multiplied by its weight factor in the cookie formula. Solvents were ethyl acetate, hexane, isopropanol, methyl ethyl ketone, and toluene. Gas chromatography was used to measure Kp values on each raw and baked ($260^{\circ}C$ for 10 min) cookie ingredients, and lab-made cookies. The baking process-decreases in water content in each sample generally affected Kp of polar solvents, but did not affect that of the non-polar solvents. Structural changes in cookie ingredients during the baking process also caused some change of migration behavior. While the prediction of Kp of lab-made cookies using the Kp of raw ingredients showed significant differences between calculated and experimentally found values, predictions with baked ingredients showed much smaller differences. This suggests that loss of water and changes of crystallinity in cookies and cookie ingredients due to the baking process are important and affect the Kp.

  • We tested the hypothesis that alpine plants have special physiological and biochemical mechanisms in addition to their structural adaptation in order to survive under extreme conditions. The photosynthetic organs of Pinus pumila were used to examine the seasonal changes in sugar concentration, antioxidative enzyme, and lipid peroxidation. The concentrations of sucrose, glucose, fructose and reducing sugar were the highest in the leaves in April. But sugar contents in buds and inner barks did not respond sensitively on temperature change. Meanwhile superoxide dismutase (SOD) activity responded sensitively on the change of temperature and SOD in all tissues maintained high activity in April. Meanwhile anthocyanin content increased rapidly in June but the increase of anthocyanin content was not enough to prevent their tissues from the damage by the exposure of high temperature or other stress. In conclusion, under low temperature condition, P. pumila increased the concentration of soluble sugars and SOD activity in their tissues in order to overcome extreme environmental condition. But in summer, these stress defense system against high temperature might be disturbed slightly. This results in the increase of malondialdehyde (MDA) contents in three tissues by lipid peroxidation.

Changes in Non-Structural Carbohydrate in Overwintering Creeping Bentgrass (Agrostis palustris) (크리핑 벤트그라스의 월동중 비구조적 탄수화물의 변화)

  • To investigate the physiological responses to naturally occurring winter freezing stress in creeping bentgrass, changes in carbohydrates were monitored during winter period. Turf quality and leaf growth was nearly parallel with temperature fluctuation. The concentration of glucose, fructose and sucrose in both shoot and root gradually increased from November to January, and then sharply decreased until April. Sucrose was the largest pool of soluble sugars. Fructan also slightly accumulated in both shoot and roots from November to February. Fructan hydrolysis in both organs was found to be much active between February to April. Shoot contained largely higher carbohydrate content in all compounds examined than roots did. Fructan was found to be a main carbohydrate storage form, showing the highest concentration (176.7 and 126.7 mg g-' DW for shoot and root in February). The depolymerization of fructan from February coincided with the high declines in mono- and disaccharide. These results suggest that the accumulation of non-structural carbohydrate until January could be associated with freezing tolerance, and the active decrease from February with shoot regrowth.

Investigation of Changes in Structural Characteristics and Chemical Composition after Heat Treatment Process of JIS-SUJ2 Bearing Steel (JIS-SUJ2 베어링강의 열처리 이후 표면 및 심부에서 나타나는 구조적, 화학적 물성 변화)

  • In this study, we designed and manufactured a large angular contact ball bearing (LACBB) with low deformation using JIS-SUJ2 steel and analyzed changes in its structural characteristics and chemical composition upon heat treatment. The bearing was produced by hot forging and heat treatment including a quenching and tempering (Q/T) process, and its properties were analyzed using 4 mm thick specimens. A difference in the size distribution of the carbide in the outer and inner parts of the bearing was observed and it was confirmed that large and non-uniform carbide was distributed in the inner part of the bearing. After heat treatment, the hardness value of the outer part increased from 13.4 HRC to 61 HRC and the inner part increased from 8.0 HRC to 59.7 HRC. As a result of X-ray diffraction (XRD) measurements, the volume fraction of the retained austenite contained in the outer part was calculated to be 3.5~4.8 % and the inner part was calculated to be 3.6~5.0 %. The surface chemical composition and the content of chemical bonds were quantified through X-ray photoelectron spectroscopy (XPS), and a decrease in C=C bonds and an increase in Fe-C bonds were confirmed.

  • To evaluate on the applicability of Chemical Compaction Pile (CCP) method to weak soil improvement, two kinds of testing chambers were fabricated and the changes of water content and shear stress associated with soil types, ages and distances from the center of pile were measured with different mixing proportions of CCP such as bottom ash, lime powder and added admixture. As results of test, it was noted that water content and shear stress of ground are mainly affected by the amount of lime powder and increase of the amount corresponds to rapid improvement of soil. And the improvement depended greatly on the types of soil also. It was finally found that CCP developed can be applicable to bearing pile as well as soil improvement since CCP has a bearing capacity enough to carry loads.

  • Purpose: Thy yttria tetragonal zirconia polycrystalline(Y-TZP) is a good structural ceramic for dental restoration. But it have a problem that delamination of veneering ceramic from the Y-TZP core materials. The problem generally occur at the interface, thus this study was conducted to evaluate the interface of Y-TZP using scanning electron microscopy(SEM). Methods: To investigate this aspect, high-resolution SEM observations were made of polished and etched (HF content gel) cross-sections of the interface area. Dry and moist veneering porcelain powders were built up on the zirconia base. Results: The extent of this surface faceting is dependent upon the moisture content of the porcelain powder and the firing temperature. More moisture and higher final heating temperature accelerates the observed faceting of the Y-TZP grains at the interface to the veneering ceramic. Conclusion: These changes of the Y-TZP grains indicate that destabilization of the tetragonal phase of zirconia occurs at the interface during veneering with ceramic. It may result in a reduction of the stability of the zirconia and interface.

Effect of B2O3 Addition on Thermal, Structure, and Sealing Properties V2O5-P2O5-ZnO Glass (B2O3첨가에 따른 V2O5-P2O5-ZnO계 유리의 물성 및 구조와 봉착특성)

  • We have investigated a glass-forming region of $V_2O_5-P_2O_5-ZnO$ glass and the effects of the addition of modifier oxides ($B_2O_3$) to the glass systems as a sealing material to improve the adhesion between the glass frits and a soda lime substrate. Thermal properties and coefficient of thermal expansion were measured using a differential scanning calorimetry, a dilatometer and a hot stage microscopy. Structural changes and interfacial reactions between the glass substrate and the glass frit after sintering (at $400^{\circ}C$ for 1 h) were measured by Fourier transform infrared spectroscopy, X-ray photoelectron spectroscopy and scanning electron microscope. The results showed that the adhesion strength increases as the content of $B_2O_3$ at 5 mol% increases because of changes in the structural properties. It seems that the glass structures change with $B_2O_3$, and the $Si^{4+}$ ions from the substrate are diffused to the sealing glass. From these results, we could understand the mechanism of strengthening of the adhesion of soda lime silica substrate by ion-diffusion from the substrate to the glass.

Conformational and Structural Changes of Choline Oxidase from Alcaligenes Species by Changing pH Values

  • Results of intrinsic and extrinsic fluorescence studies on choline oxidase revealed that the enzyme at high alkaline pH values has more accessible hydrophobic patches relative to acidic pH. Fluorescence quenching studies with acrylamide confirm these changes. The quenching constants were also determined at different pH(s) by using the Stern-Volmer equation. CD studies showed that at higher pH a transition from $\alpha$-helix to $\beta$- structure was appeared while at lower pH the content of $\alpha$-helix structure was increased. Furthermore, analysis of the spectral data using chemometric method gave evidence for existence of intermediate components at very high pH(s). Results of thermal denaturation evaluated that the enzyme has the most instability at higher pH(s). Altogether low and high pH values caused significant alteration on secondary and tertiary structures of choline oxidase via inducing of an intermediate.

  • This study analyzes the discourse of Korean internet users regarding patient clothing and identifies the changes to structure and content of clothing resulting from infectious disease outbreaks. The analysis draws on texts from Korean blogs, internet cafes, and news articles from 2011 to 2021 related to patient clothing. Using Ucinet 5 and NodeXL 1.0.1 programs, network density, centrality, and cluster analyses were conducted using the Wakita-Tsurumi algorithm. Additionally, Latent Dirichlet Allocation (LDA) topic modeling was applied using Python 3.7 to further explore thematic patterns within the discourse. Throughout the period of study, it was found that users consistently discussed the specific purpose and functionality of patient clothing. Following the outbreak of COVID-19, the distribution and influence of keywords related to the functional aspects of patient clothing, such as "hygiene and safety," significantly increased. An increased focus was placed on elements such as functionality, activity, autonomy, hygiene, and safety during the pandemic as public health concerns grew. It can be seen that patients increasingly share their experiences online and hospitalization rates surge during health crises; this study provides valuable insights into how the design of patient clothing can be improved through various informatics techniques. It underscores the evolving perception of patient clothing as essential medical equipment during health emergencies. In addition, it offers practical guidance for enhancing designs that better reflect shifting societal concerns, particularly regarding health, safety, and patient comfort.

Pressure Induced Structural Changes of Proteins Affecting the Ice Nucleation Temperature of Pork Loins

  • This study investigated the effects of pressure-mediated protein changes on the ice nucleation temperature of pork loins. To variate chemical state of meat proteins, pork loin was pressurized at varying pressure levels (100-500 MPa) for 3 min, and moisture content, expressible moisture (EM) and differential scanning calorimetry (DSC) were analyzed. Although, all treatments showed similar moisture content, EM and degree of protein unfolding of pork loin showed different features as of 300 MPa. At moderate pressure treatments (100-200 MPa), all protein fractions were detected in DSC experiments, and pork loin had lower EM than control (p<0.05). Meanwhile, myosin and actin of pork loin treated at greater than 300 MPa were completely unfolded, and the treatments showed high EM compared to control (p<0.05). Unfolding of meat proteins was a factor suppressing ice nucleation, and the ice nucleation temperature tended to decrease with increasing applied pressure level. The ice nucleation characteristics of pressurized pork loin exhibited a potential application in freezing storage of pressurized meat with less tissue damage comparing to freeze fresh meat, and further exploration regarding the quality change after freezing of fresh and pressurized meat was warranted.
