Dimethylamine (DMA) is the immediate precursor of carcinogenic N-nitrosodimethylamine (NDMA). In vitro and in vivo experiments using whole strawberries, and garlic and kale juices were conducted to determine concentrations of DMA and trimethylamine (TMA) in foods and urine. Experimental diets [an amino-rich diet as nitrosatable precursors in combination with added nitrate-containing drinking water without (TD1) or with whole strawberries or garlic or kale juices (TD2, TD3 and TD4, respectively), or a diet of low in nitrate and amino (TD5) were incubated in simulated saliva and gastric juices at 37$^{\circ}C$ for 1 hour. We also studied the urinary excretion of DMA and TMA after consumption of the experimental diets (TD1~TD5). Urine samples were obtained for 18 hrs after consumption of experimental diets and concentrations of DMA and TMA were measured in the digested diet and urine. The DMA concentration after incubation in experimental diets (TD1~TD5) was 4.7$\pm$0.3, 6.7 $\pm$0.2, 7.9$\pm$0.2, 7.1$\pm$0.2 and 0.3$\pm$0.1 mg/kg, respectively. Urinary excretion of DMA (TD1~TD5) was 22.0$\pm$5.0, 28.3$\pm$4.3, 29.2$\pm$4.1, 27.4$\pm$4.5 and 20.4$\pm$3.1 mg/18 hr, respectively. Consumption diets with added strawberries or juices of kale or garlic increased urinary TMA and DMA, suggesting that those precursors were excreted and not converted to the carcinogen, NMDA.
A smart farm is a system that combines information and communication technology (ICT), internet of things (IoT), and agricultural technology that enable a farm to operate with minimal labor and to automatically control of a greenhouse environment. Machine learning based on recently data-driven techniques has emerged with big data technologies and high-performance computing to create opportunities to quantify data intensive processes in agricultural operational environments. This paper presents research on the application of machine learning technology to diagnose the growth status of crops and predicting the harvest time of strawberries in a greenhouse according to image processing techniques. To classify the growth stages of the strawberries, we used object inference and detection with machine learning model based on deep learning neural networks and TensorFlow. The classification accuracy was compared based on the training data volume and training epoch. As a result, it was able to classify with an accuracy of over 90% with 200 training images and 8,000 training steps. The detection and classification of the strawberry maturities could be identified with an accuracy of over 90% at the mature and over mature stages of the strawberries. Concurrently, the experimental results are promising, and they show that this approach can be applied to develop a machine learning model for predicting the strawberry harvesting time and can be used to provide key decision support information to both farmers and policy makers about optimal harvest times and harvest planning.
The purpose of this study was to estimate the economic evaluation of a smart farm investment for tomatoes and strawberries. In addition, the potential adoption rate of the smart farm was derived for different scenarios. This study analyzed the economic evaluation with the net present value (NPV) method and estimated the adoption potential of the smart farm with the trade-off analysis, minimum data (TOA-MD) model. The results were as follows: The analysis of the net present value shows that the smart farm investment for the two crops are economically feasible, and the minimum prices for the tomatoes and strawberries should be 1,179 and 3,797 won/kg to secure a sufficient economic feasibility for the smart farm investment. Next, the analysis of the potential adoption rates for smart farms through the TOA-MD model showed that when the support ratio for the adoption of a smart farm system was 50% and the price increase rates were, respectively, - 5, 2.5, 0, 2.5, and 5%, the conversion rates for tomato farms to switch to smart farms were 0.97, 1.78, 3.05, 4.91, and 7.47%, while the ratios of the strawberry farms to switch to smart farms were 0.12, 0.29, 0.65, 1.33, and 2.53%, respectively. This study has some known limitations, but it provides useful information on decision making about smart farm adoption and can contribute to government policies on smart farms.
As of 2018, total yield of lettuce and strawberry amounted to 93,543 tons (representing 1.0 percent) and 183,639 tons (2.0 percent), respectively, among total yields worth 9,185,889 tons in South Korea. Lettuce is affected by a combination of numerous elements such as varieties, cultivation methods and pests during each growth phase (Lee et al., 1999). It is mainly cultivated in spring and fall. Especially due to respiration rate after harvest leading to reduced quality and poor storage, maintaining annual supply is unavailable (Jang et al., 2018). With the distribution of new varieties, forcing culture and indoor insulated facilities for plant cultivation during winter, strawberries are produced every year except for late summer and early fall. Due to active respiration, transpiration, soft flesh and high water content, the fruit is vulnerable to go bad and got rotten compared to other fruits. Furthermore, it is difficult to maintain freshness due to the possibility of softening, discoloration and fungi (Lee et al., 2012). In this regard, developing improved storage and package techniques is needed to ensure maintaining quality and safety even just two to three days after harvest. In order to ensure improved quality and safety of strawberries and lettuce after harvest, the present study applied a modified atmosphere packaging (MAP) technology (Mostofi et. al., 2008). Going forward, it compared the quality and safety of the two products while being stored in a way that put them in an MAP-applied container and a plastic container at room temperature and 4 degree Celsius.
소비자 구매 단계의 유기재배 청양고추, 토마토, 딸기의 기능성 성분과 무기 성분을 관행재배 농산물과 비교하였다. Total phenol 함량은 유기재배 청양고추와 토마토가 관행재배 보다 각각 14%, 30% 높은 함량을 나타냈고, 딸기는 관행재배에서 13% 높게 나타났다. Total flavonoid 함량 또한 청양고추와 토마토가 관행재배보다 각각 11%와 29% 높게 나타났고, 딸기는 관행재배에서 2배 높게 나타났다. Vitamin C는 유기재배에서 높게 나타났으나 유의적이지는 않았다. ${\beta}-carotene$은 유기재배 토마토가 22% 높은 함량을 나타냈고, 고추와 딸기는 관행에서 각각 15%와 29% 높게 나타났다. 청양고추의 capsaicin과 토마토의 lycopene 함량은 재배환경에 따른 차이가 나지 않았으며, 딸기의 anthocyanin은 관행재배에서 높게 나타났다. 무기성분 분석결과 청양고추의 Total N, P, K는 재배환경에 큰 차이가 나타나지 않았고, 토마토는 관행재배에서 22~28% 높게 나타났다. 딸기의 K, Ca, Mg, P 함량은 관행재배에서 16~29% 높게 나타났다. 소비자 구매 단계의 유기재배 과채류와 관행재배 과채류의 일반성분과 무기성분 및 기능성성분 함량을 비교 분석한 결과, 성분에 따라서는 함량이 높게 나타났으나 개체간 변화가 크게 나타났다. 재배법에 따른 기능성 성분 등의 함량 비교는 생산지와 품종을 나누어 수년간 조사하여 빅데이터를 구축할 필요가 있을 것이다.
이 연구는 수확 및 유통 단계에서 딸기의 미생물 오염 수준을 확인하고 수확 단계에서 사용 된 작업자 장갑을 교체하고 유통 온도를 제어함으로써 딸기에 대한 미생물 오염을 줄일 수 있는 방법을 확인하고자 하였다. 모니터링 결과 수확 단계에서 일반세균의 오염 수준은 토양 평균 $7.12{\pm}0.61{\log}_{10}CFU/g$, 장갑 평균 $6.06{\pm}1.80{\log}_{10}CFU/g$, 딸기 평균 $3.28{\pm}0.98{\log}_{10}CFU/g$, 용수 평균 $3.08{\pm}0.55{\log}_{10}CFU/g$ 순으로 높았다. 수확 단계의 딸기에서 평균적으로 $3.3{\log}_{10}CFU/g$의 일반세균이 검출되었으며, 저온 및 상온에서 각각 분포 된 딸기에서 $1.85{\pm}0.21{\log}_{10}CFU/g$ 및 $2.6{\pm}0.21{\log}_{10}CFU/g$수준의 일반세균 수가 확인되어 수확단계보다는 감소된 결과를 확인할 수 있었다. 작업자의 장갑 교체 및 냉장 유통 조건에 따라 딸기의 일반세균은 작업자의 장갑을 교체하지 않고 처리 한 딸기와 실온에서 유통 한 딸기의 일반세균 수준보다 유의적으로 낮게 확인되었다. 교체 된 장갑을 재활용하기 위해 시판 소독제 clorox로 세척하는 것과 삶아서 세척하는 것은 사용 후 작업자의 장갑에서 오염 된 미생물을 제어하기 위한 효과적인 세척 방법임이 확인되었다. 이 결과는 수확 단계에서 장갑을 주기적으로 교체하고 현장에서 쉽게 수행 할 수 있는 냉장 유통 조건이 딸기의 미생물 오염을 감소시키는데 효과적이라는 것을 확인할 수 있었다.
자몽종자추출물(GSE)이 다른 농도(0, 0.6, 1.0%)로 첨가된 젤라틴 필름을 제조하여 필름의 물성과 딸기의 포장 효과를 각각 조사하였다. GSE의 농도가 증가함에 따라 젤라틴 필름의 신장률은 증가하였으나 인장강도는 대조구의 46.39 MPa에서 1.0% GSE 함유 젤라틴 필름 경우에 31.96 MPa로 감소하였고, 필름의 투습도는 GSE의 농도에 의해 영향을 받지 않았다. GSE 1.0%가 함유된 젤라틴 필름은 E. coli O157:H7과 L. monocytogenes의 성장을 억제하였다. GSE 1.0%가 함유된 젤라틴 필름을 딸기 포장에 적용하였을 때 저장 12일 차에서 대조구에 비해 총 호기성 세균, 효모 및 곰팡이의 수가 각각 1.60, 1.43 log CFU/g 낮은 값을 나타내었다. 또한 1.0% GSE-젤라틴 필름으로 포장한 딸기가 대조구나 젤라틴 필름만으로 포장한 딸기에 비해 관능적 품질이 우수하였다. 따라서 1.0% GSE-젤라틴 필름 포장이 딸기의 저장 중 미생물학적 위해인자의 감소와 딸기의 품질유지에 효과적인 방법이라고 판단된다.
본 연구는 딸기(cv. 'Maehyang')의 모의 선박 수출 온도조건($2^{\circ}C$(10일${\sim}8^{\circ}C$(11일))에서 MA 저장에 적합한 고 산소투과율(OTR) 필름 종류 구명과 이에 따른 품질 변화를 알아보기 위해 실시하였다. MA 저장 처리는 산소투과율이 각각 1,300, 10,000, 20,000, 그리고 $30,000cc/m^2{\cdot}day{\cdot}atm$ OTR 필름으로 하였고, 관행 유통 처리는 유공 필름으로 포장한 대조구로 두었다. 저장 중 생체중 감소율은 유공 필름을 제외한 모든 MA 저장 처리에서 0.5% 미만이었다. 포장 내 이산화탄소와 산소 농도는 10,000 cc, 20,000 cc, 그리고 30,000 cc OTR 필름에서 딸기의 적정 CA/MA 조건(이산화탄소 15~20%, 산소 농도 5~10%)을 유지하였다. 에틸렌 농도는 처리간 차이를 보이지 않았다. 이취는 1,300 cc OTR 필름은 관능 평가를 통해 높은 이취와 가장 낮은 곰팡이 발생률을 보였다. 경도, 당도, 그리고 외관상 품질은 10,000 cc OTR 필름에서 가장 높게 유지되었다. 결론적으로, 10,000 cc OTR 필름은 가장 높은 품질과 관행 유통 조건보다 저장 수명을 13일 정도 연장할 수 있었다.
Two isolates, Bacillus sp. BS87 and RK1, selected from soil in strawberry fields in Korea, showed high levels of antagonism towards Fusarium oxysporum f. sp. fragariae in vitro. The isolates were identified as B. velezensis based on the homology of their gyrA sequences to reference strains. BS87 and RK1 were evaluated for control of Fusarium wilt in strawberries in pot trials and field trials conducted in Nonsan, Korea. In the pot trials, the optimum applied concentration of BS87 and RK1 for pre-plant root-dip application to control Fusarium wilt was $10^5$ and $10^6$ colony-forming units (CFU)/ml, respectively. Meanwhile, in the 2003 and 2005 field trials, the biological control efficacies of formulations of RK1 were similar to that of a conventional fungicide (copper hydroxide) when compared with a non-treated control. The RK1 formulation was also more effective than BS87 in suppressing Fusarium wilt under field conditions. Therefore, the results indicated that formulations of B. velezensis BS87 and RK1 may have potential to control Fusarium wilt in strawberries.
