For preventing the biological damage domestically, insect damage control method using chemical medicine has been applied. However, it is trend to avoid existing chemical medicine such as Methyl bromide because of the problem of being harmful to human body and environment. Therefore, the research for new medicine to replace this has been done and the interest to the physical treatment such as temperature(high & low) treatment, hypoxic treatment, carbon dioxide treatment, and radiation treatment has increased. However the systematic application standard and way has not been established. Therefore, in this research, we are going to organize present condition of domestic cultural asset preventing biological damage after the 1980's. It will also consider the direction through the characteristic of technology, limit, and replacement medicine by examining the past research.
The adsorption and desorption behavior of biofilter-medium was investigated on the performance of an adsorption column. Continuous flow-isothermal adsorption experiments were performed to treat waste air containing such a VOC as ethanol under the same condition of > 90% relative humidity as the condition of the feed to a biofilter process. In case of feeding waste air containing ethanol of 1,000 ppmv (or 2,050 mg ethanol/$m^3$) to the adsorption system at the rate of 2 L/min, the onsets of its breakthrough and reaching the state of dynamic equilibrium at the exit had been delayed 10 and 3 times, respectively, later than those at the 1st stage sampling port. Moreover, in case of 2,000 ppmv (or 4,100 mg ethanol/$m^3$), they had been delayed 9 and 3 times, respectively. Thus, regardless of feeding concentration, the ratios of delaying period were observed to be quite consistent each other at the exit of the adsorption column. With regard to the period of desorption, the ratios of delaying period were consistent each other to be 1.5 for both cases. In addition, the effect of microbial activity and sterilization-process was studied on adsorption equilibrium. The ethanol concentration in the vapor phase of vials packed with sterilized granular activated carbon (GAC) was quite consistent to that with unsterilized GAC. However, the ethanol concentrations in the vapor phase of vials packed with unsterilized compost and the unsterilized mixture of GAC and compost were higher than those with sterilized compost and the sterilized mixture of GAC and compost, respectively.
This study was performed to investigate the microbiological contamination on toothbrushes, toothbrush caps, and tooth cleaning cups in the child care centers and to evaluate the toxin genes, toxin production ability and antibiotic resistance of food-borne pathogens. The average number of total aerobic bacteria and fungi were 5.3 log CFU and 3.2 log CFU. Coliform bacteria were detected in 41 (54.7%) of 75 toothbrushes, 13 (44.8%) of 29 toothbrush caps, and 29 (44.6%) of 65 tooth cleaning cups. Salmonella spp. was not detected in all of samples but Bacillus cereus was isolated from 1 (1.3%) of 75 toothbrushes and 2 (3.1%) of 65 tooth cleaning cups. Staphylococcus aureus was detected in 1 (1.5%) of 65 tooth cleaning cups. The nheA, nheB, nheC, hblC, hblD, hblA and entFM toxin genes were possessed in B. cereus isolated from toothbrush which also produce NHE and HBL enterotoxins. S. aureus was resistant to ampicillin and penicillin, while B. cereus was resistant to ${\beta}-lactam$ antibiotics. These results indicated that the sanitary conditions of toothbrushes and tooth cleaning cups in the child care centers should be improved promptly. The UV sterilization after drying and then storage in dried condition is required to improve the sanitary condition of toothbrushes and tooth cleaning cups in the child care center.
Studies were carried out to develope the most economical and practical methods of packaging and preservation of kimchi, so commercialization of kimchi manufacture could proceed rapidly. The results obtained may be summarized as following. (1) It is generally established that the acceptable range of lactic acid content of kimchi is between 0.4% and 0.75%. Based on sensory evaluation, kimchi having lactic acid content below 0.4% and above 0.75% was not edible, and the time of optimum taste corresponded to the vicinity of 0.5% of lactic acid content. For the refrigeration storage with or without preservatives, the packaging kimchi in plastic film must be done at the lactic acid content of 0.45%, for lactic acid fermentation will continue slowly after the packaging. However, for the heat sterilized kimchi the packaging should be done at the 0.5% of lactic acid content for the best because lactic acid fermentation is completely stopped after the packaging. (2) Polyethylene, polypropylene, and polycello were chosen as suitable packaging materials. Polyethylene is cheapest among them but kimchi packaged in this film was damaged frequently in handling process and gave off kimchi flavor. On the other hand polypropylene also gave off kimchi flavor, but its higher mechanical strength gave better protection to kimchi and it had superior display effect due to the transparancy. Therefore polypropylene made much better packaging material. Polycello proved to be the best packaging material from the standpoint of physical characteristics but its price is higher than that of other plastic films. To be effective, the thickness of plastic films for packaging kimchi must exceed 0.08mm. (3) Keeping property of kimchi appeared to be excellent by means of freezing. However, by the time the frozen kimchi was thawed out at room temperature, moisture loss due to drip was extensive, rendering the kimchi too stringy. (4) Preservation of kimchi at refrigerated temperatures proved to be the best method and under the refrigerated condition the kimchi remained fresh as long as 3 months. The best results were obtained when kimchi was held at $0^{\circ}C$. (5) In general, preservatives alone were not too elective in preserving kimchi. Among them potassium sorbate appeared to be most effective with the four fold extension of self-life at $20^{\circ}C$ and two fold extension at $30^{\circ}C$. (6) In heat sterilization the thickness of packaged kimchi product had a geat effect upon the rate of heat penetration. When the thickness ranged from 1.5 to 1.8cm, the kimchi in such package could be sterilized at $65^{\circ}C$ for 20 minutes. Kimchi so heat treated could be kept at room temperature as long as one month without apparent changes in quality. (7) Among combination methods, preservation at refrigerated and heat sterilization could be favorably combined. When kimchi was stored at $4^{\circ}C$ after being sterilized at $65^{\circ}C$ for 20 minutes, it was possible to preserve the kimchi for more than 4 months.

This study was investigated for the purpose of obtaining basic data which can be applied to processing of canned sea mussel using tomato paste. Shell were washed, and then steamed and shucked. Sea mussel meat was prepared with ratio of sea mussel 90g, tomato paste sauce 65g(tomato paste 42%, gum guar 1.0%, salt 2.0%, starch syrup 2.0%, cooking wine 1%, water 52%). The sea mussel meats were packed with vacuum seamer in 301-3 can, and then sterilized for various F0 value(F0 8-12 min.) in a steam system retort at $118^{\circ}C$. The factors such as pH, VBN, amino-N, total amino acid, free amino acid, chemical composition, color value (L, a, b), texture profile, TBA value, mineral, sensory evaluation and viable bacterial count of the canned sea mussel produced with various sterilization condition(F0 8-12 min.) were measured. The same element was also measured during preservation. The results showed that the product sterilized at F0 8 min. and preserved for 90 days were the most desirable.
Increased sanitation management of foodservice establishments is required because most of the reported foodborne-disease outbreaks were in the foodservice industry. The purpose of this study was to determine the important control points for good sanitation. In this study, we inspected twenty foodservice establishments in Seoul, Kyunggi, Kyungnam with a self-developed monitoring tool. These foodservice establishments included secondary schools, universities, and industries. Six of them had appointed as the HACCP-certified establishments from the Korea Food and Drug Administration. The inspection was conducted from June to August in 2002. The inspection tool consisted of nine dimensions and sixty-five items. The dimensions were 'personal sanitation', 'supply of raw food', 'food storage', 'handling of raw food and ready-to-eat', 'cleaning and sterilization', 'waste control', 'pest control', and 'control of establishment and equipment' The highest possible score of this inspection tool is 105 points. Statistical data analysis was completed using the SPSS Package(11.0) for descriptive analysis Kruskal-Wallis. The score for the secondary schools (83.6 points) was higher than for the others and number of in compliance item was 50.9 on average. Therefore, we concluded that the secondary schools' sanitation condition was good. The foodservice establishments acquired HACCP certification was 89.7 points, which was significantly higher than that of establishments not applying foodservices in total score. Instituting the HACCP system in a foodservice is very effective for sanitation management. Many out of the compliance observations were found in the dimensions of 'waste control', 'control of establishment and equipment', and 'supply of raw food' 'Clean condition of refrigerator' item was $65\%$ out of the compliance that was the highest percent in this study. 'Notify and observance of heating/reheating temperature' was $45\%$ out of compliance. Items which were over $30\%$ out of compliance were 'sterilization of knifes and chopping boards in cooking', 'education of workers', 'maintain refrigerator temperature blow $5^{\circ}C$', and 'countermeasure of infection workers' In the results, most of the foodservice establishments were poorly managed in temperature control and cross-contamination. The important control points revealed in this study were preventing contamination, cooking temperature compliance, management of raw food and refrigerator. Therefore foodservice establishments should pay attention to education and training about important control points. The systematic sanitation management monitoring tool developed in this study can be effectively applied for conducting self-inspection and improving the sanitary conditions of their own foodservice operations.

The goal of this study is to suggest the technology and the way of developing ergonomic shampoo device, which is able to adjust the height and to be devided, and it uses ozone water. As a result of developing the device, it can complete better the effect of preventing water splash than existing devices by making neck holding part higher. And it is also made with ergonomic design, therefore, the head of shampoo candidate can be drawn into it more easily. By adjusting water temperature($38^{\circ}C$) to candidate's taste through water heater attached to water bucket, when a candidate is being shampooed, it can help keep warm shampooing without delaying. We could know the process through temperature sensor. And we could also know the utility of its own sterilization(1PPM) and purification. Finally, ozone water was measured for 20 minutes and the ozone concentration was measured to be less than 1 PPM to ensure stability. All parts of the mobile shampoo stand together with the hot water device and the ozonated water conversion device were designed so as not to be inconvenient for the user to use.

Recently, the pollution of groundwater has become serious. In particular, the contamination of groundwater near livestock farms is becoming increasingly severe and it is difficult to drink with drinking water. In this paper, a groundwater purifier apparatus that can be installed in a community well was designed. The designed groundwater purifier apparatus enables a RO membrane filter and UV sterilization to remove pollutants, such as heavy metals, bacteria, and organic compounds. In addition, electrical conductivity, pressure, and flow sensors were added for remote monitoring. Remote monitoring of the system can determine the level of fouling and contamination of RO membrane filters through pressure and flow sensor data, and can record changes in the contamination and condition of groundwater through the electrical conductivity of the feed water. The designed groundwater purifier apparatus was installed at a farmhouse and remote monitoring. The result after 15 days of operating a groundwater purifier apparatus and analyzing the monitoring data revealed an average permeate water flow rate of 2.67L/min and an average water pressure of 7.09kgf/㎠, indicating that the RO Membrane filtered without fouling and clogging. The average electrical conductivity was 796.6 S/㎠ of the feed water and 55.6 S/㎠ of permeate water, which is similar to that of general tap water. Through this, it was confirmed that no pollutant occurred in the surroundings. Therefore, the designed groundwater purifier apparatus can confirm the replacement time of the RO membrane filter in advance through remote monitoring, and check the pollution state of the groundwater.

In this study, the condition for preventing abnormal fermentation was set by heating the nuruk extract, such that glycosyl enzymes maintain its activity and unnecessary microbes are removed. The total colony of microbes in the heated nuruk extract was highest in number at $25^{\circ}C$ and began to reduce at 50, $60^{\circ}C$ and sharply reduced over $70^{\circ}C$. Saccharogenic power (SP), glucoamylase and acidic protease activities were highest at $50^{\circ}C$, 10, 20, 30min and ${\alpha}$-amylase activity was lower at $50^{\circ}C$ than at $25^{\circ}C$. In the pHs of the nuruk extract, as the heat temperature became higher and treatment time was longer, the pHs were reduced significantly. The total acidities of heat treatments at 50, $60^{\circ}C$ were lower by 0.2% than at $25^{\circ}C$, where as the 70, $80^{\circ}C$ treatments showed a sharp rise from the early stage of fermentation. Soluble solids showed the same aspects with the glycosyl enzymes cases. In reducing sugar, 25, $50^{\circ}C$ treatments were sharply increased from the first day of fermentation while $60^{\circ}C$ treatments began to rise from second day 70, $80^{\circ}C$ were slightly increased after the fourth day. The normally alcohol fermented treatments were 25, 50 and $60^{\circ}C$ 30min. The $70^{\circ}C$ treatments almost did not alcohol fermentation. In the preference tests, taste and total acceptability were high at 25, $50^{\circ}C$ treatments. These results suggest that makgeolli using heat treated nuruk extract also has good taste as well as did not.
This study was conducted to evaluate the application of high dose irradiation for ensuring shelf stability of marinated and precooked pork rib steak in the severe environments such as desert or space, etc. Marinated and precooked pork rib steak was manufactured, vacuum-packaged and gamma-irradiated with the absorbed doses of 10, 20, 30, 40 and 50 kGy, and used for the tests of the growth of microorganisms and lipid oxidation during storage at 35t of acceleration condition. Any growth of microorganisms was not observed in irradiated samples after irradiation immediately. However, the growths were observed in 10, 20 and 30 kGy samples at 4, 7 and 14 day storage, respectively. High dose (40 and 50 kGy) gamma irradiation retarded the growth of aerobic microorganisms by the analysis of kinetic parameter. The content of malondialdehyde increased in all samples during storage periods, and gamma irradiation accelerated the increase of lipid oxidation. Therefore, the application of combination of the various food processing technology should be considered for the sterilization of marinated and precooked pork rib steak without any deterioration of the quality occurred by high dose irradiation.
