Physicochemical Properties of Mung Bean Starch Paste, a Main Ingredient of Omija-eui

  • As a principle ingredient in omija-eui, the physicochemical properties of mung bean starch (MBS) paste were investigated and compared to those of rice and corn starch. The amylose and the protein content of MBS were higher than those of rice or corn starch while the total sugar content and the swelling power of MBS were lower. In addition, the clarity of MBS paste was higher than either rice or corn starch paste. Regarding pasting properties, the peak viscosity and cool paste viscosity of MBS were higher than those of either rice or corn starch. During the freeze-thaw cycle, MBS exhibited higher degree of syneresis than corn and rice starch, which decreased with high starch concentration and heating temperature. The paste properties and freeze-thaw stability of MBS showed a potential for improving the quality of omija-eui.

밤전분의 물리화학적 특성과 텍스쳐 특성 (Physicochemical and Textural Properties of Chestnut Starches)

  • To efficiently utilize not only fresh chestnut(FC) but also wormy chestnut(WC), four types of chestnut starches which were fresh chestnut starch(FCS), fresh chestnut crude starch(FCCS), wormy crude starch(WCS) and wormy chestnut crude starch(WCCS) were extracted. Amylose content of FCS(46.5%) and water binding capacity of FCCS(103.0%) were higher than those of othe three, respectively. Swelling powers of all sample starches increased rapidly from 6$0^{\circ}C$ to 8$0^{\circ}C$. Solubilities showed the same pattern as the swelling powers. In the textural properteis investigated with IUTM(instron universal testing machine), hardnesses and elasticties of chestnut starches were 50~58I.U. and 14~16I.U., respectively. The results of textural evaluations showed that it was possible to prepare chestnut mook with FCS, FCCS and WCS.

탈지 및 지방산 첨가가 쌀전분의 이화학적 특성에 미치는 영향 (Effects of Defatting and Reincorporation with Fatty Acid on the Physicochemical Characteristics of Rice Starch)

  • 쌀전분에 미치는 쌀지질의 영향을 살펴보기 위하여 극성용매인 85% 메탄올로 탈지처리한 전분 시료 및 탈지 후 1% palmitic acid를 첨가한 시료를 제조하여 이화학적 성질을 생전분과 비교 검토하였다. 탈지에 의해 아밀로오스 함량이 다소 높게 나타났으며, 광투과도, 팽화력 및 용해도는 생전분과 지방산 첨가전분은 2단거동을 나타내었으나 탈지에 의해 소실되었다. X-선 회절양상은 전형적인 A형을 나타내었으나, 탈지처리에 의해 상대결정도는 감소하였으며, 지방산 첨가로 상대결정도는 증가하였다. 아밀로그라프에 의한 호화양상은 탈지에 의해 최고점도와 break down이 소실되었으며 set back은 증가하는 경향을 보였고 지방산 첨가로 다시 생전분과 비슷한 특성을 나타내었다.

Epichlorohydin으로 가교결합시킨 감자 전분의 이화학적 특성 (Physicochemical Properites of Potato Starches Crosslinked with Epichlorohydrin)

  • Physicochemical properties of the crosslinked potato starches of MDC(Molar Degree of Crosslinking) 0.137~3.333 treated with epichlorohydrin were examined. MDC increased proportionally as epichlorohydrin concentration increased. Water binding capacity increased but blue value decreased with increasing MDC. Gelatinization trends obtained from DSC thermograms and transmittance showed that the gelatinization temperature of the crosslinked potato starch was higher than that of native potato starch, but there was no significant difference among the crosslinked potato starches. Solubility and swelling power decreased with increasing MDC. X ray diffraction patterns and scanning electron micrographs showed that the crosslinking of starch did not affect the crystallinity and the granule shape of starch.

Structural and physicochemical properties of starch by barley cultivars

  • The objective of this study was to investigate the structural and physicochemical properties of starch by barely cultivars. Hwanggeumchal had a moisture content and ${\beta}$-glucan content of 12.02 and 6.23%, respectively. Hyegang had higher protein contents than those of the other cultivars. As a result of observing the particle size of starch, Hwanggeumchal and Hyegang had smaller particles of starch compared with the other cultivars at 15.7 and $15.9{\mu}m$, respectively. The analysis results on the content of damaged starch showed that Dahan and Hyegang had a damaged starch content of 1.14 and 1.20%, whereas Boseokchal and Hwanggeumchal were 0.76 and 0.49% respectively, showing low waxy cultivars. As for the content of amylose, the results show that Dahan and Hyegang had an amylose content of 37.07 and 37.75%, and Boseokchal and Hwanggeumchal were at 11.22 and 37.75%, respectively. As for the degree of amylopectin polymerization, all four cultivars had the highest degree of polymerization (DP) content of 13 - 24 at more than 54%, whereas the DP content ${\geq}37$ was the lowest at less than 5.35%. The results for the soluble and resistant starch content show that the content of soluble starch ranged from 93.90 to 95.76%, and resistant starch was 0.17 - 0.40%. After analyzing the gelatinization properties of barley starch, the value of the setback was low in Hwanggeumchal and Hyegang; thus, it is considered that the aging process of those cultivars will be slower than that of the others.

연근응이의 제조 및 연근응이 음료 개발 (Research on Lotus Root Eungi and Development of Beverage from Lotus Root Starch)

  • This study was conducted to investigate the physicochemical characteristics of Eungi, which is used as a breakfast or health food. We manufactured lotus root starch and Eungi by a traditional method and discovered that the viscosity of Eungi with 4-5% starch content was similar to fermented milk. When the physicochemical properties and sensory acceptability of a Eungi beverage combined with different amounts (0.5, 1.0, 1.5, and 2.0%) of lotus root starch were investigated, consumer acceptability was highest with Eungi combined with 0.5% starch and 6% sugar. When the physicochemical properties and sensory acceptability of Eungi beverage combined with different extract bases were investigated, the acceptability of taste and texture was highest with purple sweet potato extract and the acceptability of color was highest with omija extracts.

쌀보리 전분의 이화학적 성질 (Physicochemical properties of naked barley starches)

  • 멥쌀보리(늘쌀보리, 무등쌀보리, 새쌀보리) 전분과 찹쌀보리(수원 236호) 전분의 이화학적 성질을 비교한 결과는 다음과 같다. 멥쌀보리와 찹쌀보리 전분 입자의 모양은 둥근형이었으며, X선회절도에 의한 전분의 결정형은 전형적인 A형이었다. 물결합 능력, 팽윤력, 용해도는 찹쌀보리 전분이 멥쌀보리 전분보다 높게 나타났다. 0.1% 전분 현탁액의 광투과도는 찹쌀보리 전분의 경우 $60^{\circ}C$ 이후부터 급격히 증가하였고, 멥쌀보리 전분은 $65^{\circ}C$이후부터 서서히 증가하였다. 아밀로그라프에 의한 호화개시온도는 찹쌀보리 전분이 $62.5^{\circ}C$, 멥쌀보리 전분이 $68.2-73.5^{\circ}C$였다. DSC에 의한 호화 엔탈피는 멥쌀보리 전분이 1.12-1.58cal/g, 찹쌀보리 전분이 0.85cal/g 으로 나타났다.

대두유 첨가가 녹두전분의 이화학적 특성과 저온저장 녹두전분겔의 텍스쳐에 미치는 영향 (Physicochemical Properties of Mung Bean Starch and Texture of Cold-Stored Mung Bean Starch Gels added with Soy Bean Oil)

  • This study was carried out to investigate the physicochemical properties of mung bean starch and the texture of cold-stored (5$^{\circ}C$ for 0, 24, 48, and 72 hours) mung bean starch gels added with soy bean oil (0, 2, 4, 6%). The swelling power of mung bean starch added with soy bean oil did not significantly change, whereas solubility increased significantly. Soluble carbohydrate content of mung bean starch added with soy bean oil decreased without any significant differences, whereas soluble amylose content decreased significantly. In RVA viscosity, pasting temperature and peak viscosity of mung bean starch added with soy bean oil were not significantly different, whereas minimum viscosity decreased and breakdown and consistency increased significantly. In RVA viscosity, there were no differences according to concentration of soy bean oil. DSC thermograms show that onset temperature of mung bean starch added with soy bean oil did not significantly change, whereas the enthalpy increased in the case of 4% and 6% oil addition. Rupture properties of freshly prepared mung bean starch gels added with soy bean oil increased in the case of 2% and 4% oil addition, and oil addition to mung bean starch gels suppressed changes in rupture properties during cold storage. There were no significant differences in the texture of freshly prepared mung bean starch gels added with soy bean oil, whereas hardness, chewiness, and gumminess of cold-stored mung bean starch gels added with soy bean oil decreased. In the above textural charactristics, there were no differences due to concentration of soy bean oil. Thus, the addition of 2-4% soy bean oil to mung bean starch is appropriate for improving the quality characteristics of cold-stored mung bean starch gels.

도토리 조전분 및 정제전분의 이화학적 특성 (Physicochemical Properties of Acorn Crude Starch and Acorn Refined Starch)

  • 도토리묵의 특성을 규명하기 위한 기초 연구로서, 도토리 조전분과 정제전분을 대비시켜 이화학적 특성을 비교.분석하였다. 일반성분을 분석한 결과는 수분함량만 정제전분이 약간 높고 나머지 일반성분들은 조전분에 훨씬 많았다. 한편 물결합능력 및 팽화력은 조전분과 정제전분이 거의 유사하기는 하지만 조전분이 다소 높은 값을 나타내었고, 광투과도로 측정한 전분의 호화온도는 모두 68$^{\circ}C$이었다. 그러나 아밀로그래프에 의한 호화온도는 $73 ^{\circ}C$이었고, 호화개시 이후의 점도는 조전분이 정제전분보다 훨씬 높은 값을 나타내었다. 그리고 도토리전분의 아밀로오스 함량은 28.8%로 분석되었고, 아밀로오스의 분자량은 20425, 그 중합도는 126이었으며, 아밀로펙틴을 포도당 100개당 4.77의 분지도를 나타내었으므로 아밀로펙틴 분자내에서 가지와 가지 사이의 평균 포도당 단위의 수는 21이었다.

Propylene Oxide로 하이드록시프로필화시킨 감자 전분의 이화학적 특성 (Physicochemical Properties of Potato Starches Hydroxypropylated with Propylene Oxide)

  • Propylene oxide와 반응시켜 치환도가 0-0.2645되는 하이드록시프로필화 감자 전분을 제조하여 이화학적 성질들을 측정하였다. 전분의 하이드록시프로필기 함량은 propylene oxide의 농도에 비례하였다. 하이드록시프로필화 감자 전분의 물결합력은 치환도가 증가할수록 증가하였고 pH는 치환도가 증가할수록 감소하였다. 청가와 요오드 흡착 강도는 치환도가 증가할수록 감소하였다. 시차주사열량계에 의한 호화양상에서는 하이드록시프로필화에 의해 전분의 호화온도가 낮아지는 것으로 나타났다. 하이드록시프로필화에 의해 전분의 상대 결정 화도는 낮아졌고, 전분 입자가 파괴되었음이 X-선 회절도와 주사전자현미경으로 각각 관찰되었다. 이것은 고농도의 하이드록시프로필화가 전분의 무정형 부분뿐만 아니라 결정성 영역에까지 영향을 주었음을 의미하였다.
