  • 저자들은 colporrhaphy를 목적으로 실리콘 피하주사 후 호흡곤란을 주소로 내원한 2명의 환자에서 기관지폐포세척액 검사, 경기관지 폐생검, 고해상 컴퓨터 단층촬영, 폐동맥조영술 등을 시행하여 폐색전증으로 인한 급성호흡부전으로 진단하고 지지요법만으로 치료한 1예와 사망한 1예를 경험하였기에 문헌고찰과 함께 보고하는 바이다.

위생교육에 따른 선식 제조기구와 작업장의 위생상태변화 및 일부 선식제품의 안정성과 영양적 평가 (Nutritional Evaluation, Stability of Cereals and Sanitation Status of Processing Utensils and Environments Based on Hygiene Education)

  • This study was carried out to investigate the effect of hygiene education on the microbiological changes of processing utensils and the environmental in the manufacture of cereals and to evaluate the Cd, Pb contents and nutrient compositions of 11 cereals. The result of microbiological evaluation was that fungi, coliforms and staphylococcus species were detected in employees, on equipment, utensils and environments in the first inspection. Fungi were detected in most of the cereals, staphylococcus species were detected in soybeans, perilla seeds and sea tangle How, and bacillus cereus was detected in sorghum and black sesame seeds. The water content of rice, barley, glutinous rice, brown rice and carrot flour in packaged products, and in carrot flour, angelica keiskei, carrot, sea mustard and potato in bulk products was in excess of 8.0%. The Pb content of cereals was 0.14-0.51 mg/kg and Cd was not found. The acid value of Job s tears flour and black sesame seed flour was higher than 5.0 mg/g oil. Cereals were manufactured from 41 different cereals and grains, legumes, seeds and nuts, vegetables, potatoes, seaweeds, fruits, glucose and salt. The average content of cereals and grains, legumes, and seeds and nuts in cereals was 75.75%, 16.19% and 4.93%, respectively. The mean nutrient content per 100 g of cereals was calories 365.8kcal, protein 13.3 g, fats 5.9 g, carbohydrates 63.4 g, Ca 91.8 mg, p 269.9 mg, Fe 3.15 mg, Na 76.2 g, K 421.8 mg, Zn 2.33 mg, Vit. A 12.5 R.E., Vit. B$_1$0.23 mg, Vit. $B_2$ 0.16 mg, Vit. $B_6$ 0.46 mg, Niacin 3.5 mg, Vit. C 1.36 mg, folic acid 62.3 $\mu$g and Vit. E 1.24 mg. When nutrients value of 48 g of cereals and 200 $m\ell$l of milk was compared to 1/3 of the RDA, the values were below than 60% of 1/3 of the RDA except Na, K, Vitamin $B_1$ and C contents. The average carbohydrate : protein : fat ratio of energy intake was 54.27 : 17.45 : 28.28, respectively. Therefore, a training program consisting of the education of the staff in surveillance and standard operating procedures, the elimination of dangerous procedures, sanitation checklist, the implementation of Preparation methods and standard recipes for cereals is required.

유화액 시스템에서 옥테닐 호박산 베타글루칸의 계면 특성 (Interfacial Properties of Octenyl Succinyl Barley ${\beta}$-Glucan in Emulsion System)

  • The synthesis of octenyl succinyl ${\beta}$-gucan (OSA-${\beta}$-glucan) was carried out and its interfacial properties at the oil-water interface and in emulsion systems were investigated. An aqueous ethanol system as a reaction media was used to facilitate the synthesis process; 10% (w/w) ethanol found to be the best as it showed a maximum degree of substitution (DS: 0.0132). FT-IR showed a characteristic absorption spectrum at $1736cm^{-1}$, indicating the esterification of octenyl succinyl groups to ${\beta}$-glucan backbone. As for interfacial tension measurements, it was decreased with increasing concentration of OSA-${\beta}$-glucan in the aqueous phase and when NaCl was added to aqueous OSA-${\beta}$-glucan solution in the range of 0.01 M to 0.1 M and also when pH was raised (pH 3 ~ pH 9). In systems of emulsion stabilized with OSA-${\beta}$-glucan, fat globule size found to decrease with increasing concentration of OSA-${\beta}$-glucan, showing a critical value of about $0.32{\mu}m$ at 0.5 wt%. When the OSA-${\beta}$-glucan emulsions were stored, it was found that fat globule size was increased with storage time and particularly pronounced increase was observed in emulsion with 1% OSA-${\beta}$-glucan, possibly due to depletion flocculation. Results of creaming stability evaluated by light scattering technique showed that it was more stable in emulsions containing smaller fat globule size. Surface load of OSA-${\beta}$-glucan in emulsions increased with increasing concentration of OSA-${\beta}$-glucan, suggesting a multilayer adsorption.

동결건조 어류 알 농축물의 식품기능성 및 생리활성 (Food Functionality and Bioactivity of Vacuum Freeze-dried Fish Roe Concentrates)

  • The purpose of this study was to evaluate the food functional properties and in vitro bioactivity of vacuum freeze-dried fish roe concentrates (FRCs) prepared from Alaska pollock Theragra chalcogramma (AP), bastard halibut Paralichthys olivaceus (BH) and skipjack tuna Katsuwonus pelamis (ST). All three species showed better buffering capacity on the alkaline side (pH 10-12) than on the acidic side. The water-holding capacities of the FRCs were 3.5, 8.5 and 4.2 g/g protein for AP, BH and ST, respectively, and were significantly higher than that of commercial egg white. The protein solubilities of the FRCs were 42.5% (AP), 50.0% (BH) and 13.9% (ST). The foaming capacities of the FRCs were not significantly different among the species (128.0% for AP, 128.3% for BH, and 143.3% for ST; P>0.05), and their foam stability was maintained at 53.0-74.2% for 60 minutes. The oil-in-water emulsifying activity indexes of AP and BH (19.5 and 20.2 ㎡/g protein, respectively) were significantly superior to that of ST (P<0.05). The 2,2-diphenyl-1-picrylhydrazyl and 2,2'-azino-bis-3-ethylbenzothia-zoline-6-sulfonic acid radical-scavenging activities (IC50, mg/mL) of the FRCs were in the ranges of 1.05-3.26 and 0.13-0.18 mg/mL, respectively, and the angiotensin I converting enzyme inhibitory activity was in the range of 0.97-1.89 mg/mL.

포항 광정산 일대 산출 뇌록으로 제조한 안료의 특성 분석 (Analysis on Characteristics of Pigments Manufactured with Various Neorok Produced from Mt. Gwangjeongsan, Pohang)

  • 뇌성산은 국내 유일한 뇌록의 산출지이다. 본 산출지는 지질학적 가치와 함께 전통안료의 공급지로서의 역사·문화적 가치를 인정받아 2013년에 천연기념물 제547호로 지정 및 관리되어 연구 및 활용이 제한되었으며 이로 인한 뇌록의 제한적 공급에 따른 전통안료 복원에 문제점이 발생하고 있다. 최근 광정산 일대에서 뇌록이 다량 산출되어 전통안료 복원을 위한 공급지로 기대되고 있다. 따라서 본 연구는 광정산 일대에서 산출되는 뇌록으로 제조한 안료의 특성을 분석하고 추후 안료로서의 활용 가능성을 평가하고자 하였다. 제조한 안료의 특성 분석 결과, 뇌성산 뇌록은 대부분 셀라도나이트로 구성되어 있으며 광정산 뇌록은 셀라도나이트 외 크리스토발라이트, 트리디마이트 등의 유리질 특성을 보이는 광물이 함유되어 있었다. 광정산 뇌록안료는 광물 종류 및 함량의 차이에 따라 색도, 입도, 흡유량, 안정성 평가 결과가 달라지는 것을 확인하였다. 특히 GJS-2는 광물 조성비 및 물성, 안정성 면에서 뇌성산 뇌록과 유사한 특성을 보였다. 이를 통해 천연기념물 지정으로 활용하기 어려운 뇌성산 뇌록을 대신하여 추후 활용 가능할 것으로 사료된다.

한외여과에 의한 순물 농축액의 기능적 특성 (Functional Properties of Sunmul (Soybean Curd Whey) Concentrate by Ultrafiltration)

  • 두부 순물을 UF막으로 농축시켜 제조한 UF 분리농축분말의 일반성분 및 이들 분말을 식품에 첨가할 경우 반드시 고려해야 할 용해도, 유화력, 거품형성능에 대해 살펴보았다. 그 결과 일반 성분에 있어서, UF 분리농축분말의 수분함량과 탄수화물 함량은 순물과 큰 차이가 없었으며 단백질 함량은 순물분말보다 2배가량 높았으나 회분함량은 2배 낮았다. 유지흡착력을 비교 시 ISP>UF 농축분말>순물 순으로 높게 나타났으며 UF 분리농축 분말의 용해도가 ISP와 순물에 비해 높기 때문에 수분흡착력은 매우 미약하였다 UF 분리농축분말의 단백질의 용해도는 등전점 부근인 pH 4.0에서 가장 낮았으며 산성 또는 알칼리성으로 갈수록 증가하는 전형적인 단백질 용해도 곡선을 나타내었다. 유화력은 ISP와는 달리 pH에 따른 현화를 보이지 않으며 150-200 정도의 EAI 값을 나타내었고, 유화안전성은 pH 6.0 이하의 산성에서 더 높은 값을 나타내며 대체로 75-92%의 높은 유화안정성을 보였다. UF 분리농축분말의 거품형성능은 증류수 처리구간에서 ISP와는 달리 pH 4.0-6.0에서 가장 우수하였으며 NaCl 농도가 높을수록 약간 감소하는 경향을 나타내었고, 거품안정성을 측정한 결과 ISP에 비해 대두 단백질의 등전점인 pH 4.0 부근에서 5-7배 높은 거품안정성을 나타내었으나 pH 4.0을 제외한 모든 pH 구간에서 20분 안에 거품이 소멸되었다 UF 분리농축분말은 isoflavone 등 여러가지 기능적 성분을 함유하는 것으로 알려져 있을 뿐만 아니라 용해도, 유화력, 유화안정성, 거품형성능 등이 ISP보다 우수하여 식품가공에서 다양하게 활용될 수 있을 것으로 기대된다.

고등어튀김 중간수분식품(中間水分食品)의 저장안정성(貯藏安定性) (Storage Stability of Intermediate Moisture Deep-Fried Mackerel)

  • 어육을 이용한 중간수분식품의 제조를 위한 기초 자료를 얻을 목적으로 고등어육을 원료로써 튀김중간수분식품의 가공조건을 검토하고, 그 최적조건으로 중간수분식품을 제조하여 함기(含氣)포장한 후 상온($25{\pm}2^{\circ}C$)에 저장하면서 품질변화를 검토하였다. 고등어 튀김중간수분식품의 가공조건은 물 45.9%, 식염 6%, sorbitol 40%, propyleneglycol 2.4%, 솔빈산칼륨 0.7%, 설탕 3%, 글루탐산나트륨 2%, 고추 가루 추출물 0.6ml로 된 침지용액에 고등어 육편을 넣어 $105^{\circ}C$에서 10분간 가열하고난 후 식혀서 빵가루를 입히고 $170{\pm}5^{\circ}C$의 기름에서 3분간 튀김하는 것이었다. 위와같은 가공조건에서 제조한 제품은 수분활성 0.86이었고, 저장 중의 품질변화를 과산화물값, TBA값, 색조, 생균수 및 관능검사 등으로 평가한 결과 상온($25{\pm}2^{\circ}C$) 저장 50일까지 품질에 큰 손상없이 저장 할 수 있다는 결론을 얻었다.

알긴산을 이용한 송이 향의 캡슐화 (Encapsulation of Pine Agaric ( Tricholoma matsutake) Flavor with Alginates)

  • 국내산 송이의 특징인 송이 향을 효과적으로 보존할 수 있는 방법을 개발하기 위하여 알긴산으로 송이 향의 주된 성분인 1-oc-ten-3-ol을 캡슐화 공정과 송이 향의 잔존량에 영향을 미치는 요인을 조사한 결과는 다음과 같다. 분무건조를 위한 alginates의 점도는 350cp 이하가 되어야 하므로, alginates 용액의 점도를 낮추기 위하여 첨가한 citric acid 량이 증가할수록 점도는 낮아졌으며, 또한 $0.1\%의 농도에서 150cp 이하의 점도를 나타내었다. 1-octen-3-ol과 유화제를 첨가하여 에멀젼시킨 alginates 용액의 점도는 에멀젼시키기 전의 점도보다 높았지만 150cp 이하를 나타내 분무 건조 공정에는 영향이 없었다. alginates 용액의 점도가 낮을수록 용액의 EAI는 증가하였으나 ESI는 감소하였고 캡슐의 1-octen-3-of의 잔존량이 감소하였다. alginates 용액의 점도를 낮추는 공정에서 citric acid 첨가 후 가열시간이 길어질수록 점도는 급격히 감소하였고 에멀전 전후의 점도는 큰 차이 없었다 생송이를 알긴 산용액으로 캡슐화할 때 첨가되는 대두유의 량이 많을수록 1-oc-ten-3-ol의 잔존량이 많았다. 생송이를 alginates용액으로 캡슐화한 후 진공동결건조한 캡슐이 풍건한 것보다 1-octen-3-ol의 잔존량이 많았다.

프로스타글란딘 $E_1$ 마이크로에멀젼이 함유된 액상좌제의 제조 및 평가 (Preparation and Evaluation of Liquid Suppository Containing Prostaglandin $E_1-loaded$ Microemulsion)

  • The purpose of this study is to develop a transurethral liquid suppository containing prostaglandin $E_1\;(PGE_1)-loaded$ microemulsion, which undergoes a phase transition to gels at body temperature. The effects of oils, ethanol as solvent and HCl as pH-controlling agent on the physicochemical properties of liquid suppositories composed of poloxamer P 407, P 188 and carbopol was investigated. The stability of $PGE_1$ and release of $PGE_1$ from liquid suppository were evaluated. Oils such as Neobee and soybean oil significantly decreased the gelation temperature but increased the gel strength of liquid suppository due to their strongly binding with the components of liquid suppository base. However, ethanol slightly did the opposite. The pH of liquid suppositories hardly affected the gelation temperature and gel strength due to addition of very small HCl (0.005-0.01%). A liquid suppository [$PGE_1/P$ 407/P 188/carbopol/Neobee/ethanol/HCl (0.2/14/14/0.4/7/2/0.005%)], which had the gelation temperature $(34.2{\pm}0.6^{\circ}C)$ and gel strength $(31.35{\pm}4.37\;sec)$ suitable for liquid suppository system, was easily administered and not leak out from the body. About 60% of $PGE_1$ was released out within 2 h from this formulation. It was shown that the release of $PGE_1$ was proportional to the square root of time, indicating that $PGE_1$ might be released from the suppository by Fickian diffusion. It was stable at $4^{\circ}C$ for at least 2 months. The results suggest that transurethral liquid suppository containing prostaglandin $E_1-loaded$ microemulsion is thought to be a convenient, safe and effective dosage form for $PGE_1$. However, it should be further developed as a more convenient and stable dosage form for $PGE_1$.

시클로덱스트린과의 포접에 의한 케토코나졸의 비점막 흡수증가 (Enhanced Nasal Absorption of Ketoconazole by Inclusion with Cyclodextrin)

  • Inclusion complexes of ketoconazole(KT) with ${\alpha}^_$, ${\beta}^_$cyclodextrin(CD) and $dimethy1-{\beta}-cyclodextrin$ (CD) and $dimethy1-{\beta}-cyclodextrin(DM{\beta}CD)$ as nasal absorption enhancer were prepared in 1: 2 molar ratios by freeze-drying and solvent evaporation methods. In order to compare with the intrinsic absorptivity of KT in the jejunum(J) and the nasal cavity(N), the in situ simultaneous perfusion method was employed. The in situ recirculation study revealed that KT-CD inclusion complexes with the greater stability constant and the faster dissolution rate proportionally increased the absorption of KT in the J and N of rats. The rank order of apparent KT permeability$(P_{app}\;:\;cm/sec\;{\time}\;1O^{-5}{\pm}S.E.)$, corrected by surface area of absorption, was $5.10{\pm}0.3(N,\; KT-DM{\beta}CD)$ )> $4.13{\pm}0.4(N,\;KT-{\beta}-CD)$ )> $3.52{\pm}0.2(N,\;KT-{\alpha}-CD)$ )> $2.76{\pm}0.3(J,\; KT-DM{\beta}CD)$ )> $2.61{\pm}0.5(J,\;KT-{\beta}-CD)$ )> $2.42{\pm}0.4(J,\;KT-{\alpha}-CD)$ at pH 4.0. The in crease in permeability of $KT-DM{\beta}CD$ inclusion complex was 2.6 folds in the J and 4.5 folds in the N when the perfusing solution was changed from the buffer(pH 4.0) to saline. The absorption rate of $KT-DM{\beta}CD$ inclusion complex after nasal administration was more rapid than those of ketoconazole alone and $KT-DM{\beta}CD$ inclusion complex after oral administration to rats. In comparision with an oral administration of ketoconazole suspension in corn oil, the relative bioavailability was calculated 137.3% for the oral and 195.0% for nasal $KT-DM{\beta}CD$ inclusion complex in rats. The present results suggest that $KT-DM{\beta}CD$ inclusion complex may serve as a potential nasal absorption enhancer for the nasal delivery of ketoconazole.
