향기성분 미세캡슐화를 위한 유화 및 분무건조 공정 최적화 (Optimization of Emulsification and Spray Drying Process for the Microencapsulation of Flavor Compounds)

  • 본 연구는 분무건조를 이용한 미세캡슐화 기술을 이용하여 유화압력 및 분무건조에 있어서 송풍 온도와 분무 속도를 최적화하는데 목표를 갖고 수행되었다. 분석지표로 유화액의 유화안정성과 flavor release를, 분무건조 분말의 total oil, surface oil, flavor release, 흡습성을 측정하고, SEM에 의해 분말의 형태를 관찰하였다. Wall system을 이용하여 piston-type homogenizer의 압력을 달리하여 실험한 결과 향기성분의 미세캡슐화를 위한 최적 유화압력은 20.7MPa이었다. 분무건조공정에 있어서 송풍 온도와 분무 속도를 독립변수로, total oil retention, surface oil content, flavor release를 종속변수로 반응 표면 분석법을 행한 결과 송풍 온도는 $170{\circ}C$, 분무 속도는 15,000rpm이 우수한 공정 조건임을 예측 할 수 있었다.

  • Porous alumina was fabricated from pressureless powder packing forming method using powders granulated by spray drying. It was investigated the pore size distribution of fabricated porous alumina. The results of microstructural observation showed that intraganular pore size and intragranular pore size. At 1700$^{\circ}C$ there were no intragranular pores but it showed homogeneous distribution of intergranular pore size. The bending strength and shrinkage increased as porosity decreased. In case of thermal shock resistance sudden decrease of bending strength to $\Delta$T was not shown because intergranular large pore prevented sudden crack propagation.

  • Porous ceramics were fabricated from pressureless powder packing forming method using mullite and cordierite powders granulate by spray drying. The bending strength and shrinkage of porous ceramics were increased and their porosity were decreased with increasing temperature. It showed homogeneous distribution of 2$\mu\textrm{m}$ intergranular pores of mullite at 1400$^{\circ}C$, 2.5$\mu\textrm{m}$ intergranular pores of cordierite at 1300$^{\circ}C$ respedtively. Above that temperature intragranular particles were sintered and sintering by intergranular necking was extremely proceeded. In the test of thermal shock resistance sudden decrease of bending strength to $\Delta$T was not shown because intergranular large pore prevented sudden crack propagation.

  • Spherical fine BaTiO3 powders with an average diameter of 0.3${\mu}{\textrm}{m}$ to 0.9${\mu}{\textrm}{m}$ are prepared at 100$0^{\circ}C$ by the ultrasonic spray pyrolysis of solutions containing Ba(NO3)2 and TiCl4. Experimental variables are adjusted to produce BaTiO3 powders and its effect on the phase, the size and the morphology of the particles are investigated by XRD, SEM, TEM. Each particle consists of small primary particles and has a hollow around its center. The dependence of particle diameters on the concentrations of source solutions indicates that metal salt precursors are dried to precipitate solid particles and decompose to form BaTiO3 phase without gas phase reactions.

  • A study was designed to study the sorption characteristics of powder-type products of red ginseng such as red ginseng tea, red ginseng powder and spray 4ried powder of red ginseng extract The sorption rates and equilibrium moisture contents on these products were calculated at ova. a range of relative himidities and two different temperatures ($25^{\circ}C$ and 38$^{\circ}C$). Significant differences between these three products were found in water activities, sorption rates and the relationship between the ratio of %H2O/RH and moisture content The red ginseng tea required the most excessive drying to reach aw=0.4, followed by red ginseng power and spray dried powder of red ginseng extract Attempt was made to obtain equations which can predict sorption rate and moisture content of red ginseng products at given relative humidity and temperature after certain period of storage.

굴 세척액을 이용한 인스턴트 분말 수프의 제조 및 특성 (Preparation of Instant Powdered Soup Using Oyster Wash Water and Its Characteristics)

  • 굴통조림 가공부산물인 세척수를 효율적으로 이용하기 위하여 굴세척액을 이용한 인스턴트 분말수프의 제조를 시도하였다. 대조구인 굴 열수추출물 분말 수프는 열수추출물 분말에 식염, 분말크림, 유대체 분말, 밀가루, 대두분말, 전분, 글루코스, 양파가루의 일정량씩을 각각 혼합하여 제조하였다. 굴세척액 분말수프는 열수추출물 분말 대신에 세척액 분말을 첨가하고, 기타 첨가물의 경우 굴 열수추출물 분말 수프와 같은 비율로 첨가하여 제조하였다. 굴통조림 가공부산물 유래 분말 수프인 세척수 분말 수프는 탄수화물이 71.1%로 거의 대부분을 차지하였고, 다음으로 조단백질(10.8%), 조회분(8.1%) 및 조지방(3.5%)의 순이었으며, 대조구인 열수추출물 분말 수프와 차이가 없었다. 굴세척액 분말 수프는 휘발성염기질소, 생균수, 대장균군 및 수분활성이 각각 29.4 mg/100g, $4.6{\times}10^4\;CFU/g$, <18 MPN/100 g 및 0.246으로 위생적으로 안전한 인스턴트 식품이었다. 굴통조림 가공부산물 유래 분말수프의 주요 지방산은 16 : 0(31.5%), 18 : 0(10.4%) 및 18 : 1n-9(27.4%) 등이었고, 단백질의 화학가는 59.4%이었으며, 주요 무기질은 철이었다. 관능평가 결과 대조구인 열수추출물 분말 수프에 대하여 세척수 분말 수프의 경우 점도, 색조, 향 및 맛과 같은 모든 항목에서 차이가 없었다. 이상의 이화학적 및 관능적 검사 결과로 미루어 보아 굴통조림 가공부산물인 세척수는 분말화하여 배합농도를 적절히 조절하면 우수한 인스턴트 분말 수프의 소재로 이용 가능하다는 결론을 얻었다.

Dietary spray-dried plasma supplementation in late-gestation and lactation enhanced productive performance and immune responses of lactating sows and their litters

  • The study was conducted to evaluate the effects of spray-dried plasma (SDP) supplementation during late gestation and lactation on productive performance and immune responses of sows and their litters. Twelve sows (227.78 ± 2.16 kg average body weight; 2.0 average parity) were randomly allotted to two dietary treatments: a basal diet (CON) and the basal diet supplemented with 1% SDP. Sows were fed experimental diets from d 30 before farrowing to weaning of their piglets. Blood samples were collected from sows on d 1, 3, and 7 of lactation and from two randomly selected nursing pigs per litter on d 3 and 7 after birth, and d 1, 3, and 7 after weaning. Productive performance and immune responses of sows and their piglets were measured. There was a trend of less body weight loss in sows supplemented with SDP (p < 0.10) during the lactation period and a trend of greater (p < 0.10) average daily gain in SDP piglets compared to those in the CON group. Sows in the SDP group tended to have lower (p < 0.10) serum concentrations of tumor necrosis factor-α (TNF-α), transforming growth factor-β1 (TGF-β1), and cortisol on d 3 and lower serum concentration of TNF-α on d 7 compared with sows in CON group. In comparison with CON piglets, piglets from SDP sows tended to have lower (p < 0.10) serum concentrations of TNF-α, TGF-β1, and cortisol on d 7 after birth, lower (p < 0.10) serum TNF-α and C-reactive protein on d 3 and 7 after weaning, and greater (p < 0.10) average daily gain after weaning. Moreover, weaned pigs from sows fed SDP had significantly lower (p < 0.05) serum concentrations of cortisol and TGF-β1 on d 3 and 7 postweaning, respectively, than CON piglets. In conclusion, SDP supplementation in sow diets from late gestation to weaning improved the productive performance of sows and their offspring; the beneficial effects of SDP may be mediated in part through modulation of immune responses of both sows and piglets.

  • 유통과정(流通過程)중의 품질안정성(品質安定性) 유지(維持)가 항상 문제시되고 있는 홍삼정분(紅蓼精粉)(동결(凍結) 및 분무(噴霧))의 안정성(安定性)을 시판차류정품(市販茶類精品)과 비교(比較)하기 위하여 이들 제품(製品)의 흡습특성(吸濕特性)을 비교(比較)하였고 또 초기수분함량(初期水分含臺), 조지방함량(粗脂肪含量) 및 밀도(密度)와의 관계(關係)를 조사(調査)하여 홍삼정립(紅蓼精粒)의 안정성(安定性) 미치는 영향(影響)을 비교(比較)하였다. (1) 홍삼정분(紅蔘精粉) 및 시판차류제품(市販茶類製品)의 입도(粒度)는 100 mesh 이하였으며 동결건조제품(凍結乾燥製品)이 분무건조제품(噴霧乾燥製品)보다 입도(粒度)가 컸다. (2) 홍삼정분(紅蓼精粉)(동결(凍結) 및 분무(噴霧))이 3.85% 및 4.56% 로 초기수분함량(初期水分舍量)이 높은데 비해 커피(동결(凍結) 및 분무(噴霧))가 2.17% 및 3.52%로 낮았으며 홍삼정분(紅蔘精粉)이 커피 보다 1.3$\sim$l.8배의 높은 초기수분함량(初期水分含量)을 나타냈다. (3) 탱이나 쌍화차가 흡습율(吸濕率)이 가장 낮아 높은 안정성(安定性)을 나타냈는데 이는 탱과 쌍화차의 지방함량(脂肪含量) (4.12% 및 0.62%)이 높을 뿐만 아니라 밀도(密度)(0.89g/ml 및 0.59g/ml)도 다른 제품(製品)에 비해 훨씬 높기 때문으로 판단된다. (4) 커피의 흡습율(吸濕率)이 홍삼정분(紅參精粒)보다 컸으나 커피의 안정성(安定性)이 홍삼정분(紅蔘精紛)보다 더 높은 것은 커피의 초기수분함량(初期水分含量) (2.17${\sim}$3.52%)이 홍삼정분(紅蓼精粉) (3.85${\sim}$4.56%)보다 낮을 뿐만 아니라 커피의 지방함량(脂肪含量)(0.31${\sim}$0.38%)도 홍삼정분(紅蔘精粉)(0.12${\sim}$0.16%) 보다 훨신 높기 때문으로 판단된다. (5) 따라서 홍삼정분(紅蓼精粉)의 안정성(安定性)을 높이기 위해서는 현행 물추출방벙(抽出方法)을 용매추축(溶媒抽出)로의 전환(轉換)이나 지방피막(脂肪皮膜) 처리(處理)에 의한 흡습물성(吸濕物性)을 개선(改善)함이 바람직할 것으로 판단된다.

Comparison of Protein Binding Polysaccharide from Agaricus blazei Murill Prepared by Ultrafiltration and Spray-Drying Process

  • Chemical properties of spray-dried powders separated based on molecular weight from crude protein binding polysaccharide (CP-SD) of Agraricus blazei were examined. Contents of ${\beta}$-glucan in SD-1, SD-2 and SD-3 were 18.67%, 48.24%, and 37.15% respectively, and SD-2 (10-150 kDa) showed the highest molecular weight. Obtained ${\beta}$-glucans were not pure glucan, but was determined to be an acidic proteo-heteroglycan with a large amount of glucose (74.46-80.05%), galactose (8.91-15.2%), and mannose (4.9-5.46%). Composition of their amino acids was mainly aspartic and glutamic acids. FT-IR spectrum revealed SD-1, SD-2 and SD-3 were structures of ${\beta}$-1,3-glucans and ${\alpha}$-1,6-glucans at 890 and 930 $cm^{-1}$, respectively, signals of ${\alpha}$-1,6-glucans for CP-SD was not found. Useful CP-SD was recovered from A. blazei for preparation of three powder types as food materials.

조선소 블록 도장시설에서의 휘발성 유기화합물과 총 탄화수소 농도측정 사례 (A Case Study on the Measurement Volatile Organic Compounds and Total Hydrocarbon Concentrations in Block Paint-Shops at a Shipyard)

  • In order to prepare the information needed to construct a reduction system for volatile organic compounds (VOCs) exhausted from ship-block paint-booths in a giant shipyard, VOCs in paint-shop airs were analyzed and compared to the components in paint thinners. Aromatic hydrocarbons containing eight and nine carbon atoms are known to be major VOC compounds found in shipyard paint-shops. The total hydrocarbon (THC(C7)) concentrations calibrated using toluene gas, were measured in block paint-shops with two photo-ionization detector (PID) meters, and the resulting THC(C7) data were converted to THC(C1) concentrations according to the Standard Methods for the Measurements of Air Pollution in South Korea. THC(C1) concentrations near the spray site ranged from 10 to 2,000 ppm, but they were less than 400 ppm near the walls of the paint-booth. The measurements of THC concentrations, based on the height of the monitoring sites, were related to the height of the target to which the spray paints were applied. The maximum concentrations occurred at almost the same height as the spray targets. When painted blocks had been dried-by warming with no spraying, the THC concentrations were 80~100 ppm.
