Effect of Edible Coatings Containing Soy Protein Isolate (SPI) on the Browning and Moisture Content of Cut Fruit and Vegetables

  • Effectiveness of edible coatings containing soy protein isolate (SPI), in reducing oxidative browning and moisture loss during storage ($4^{\circ}C$) of cut apples, potatoes, carrots, and onions was investigated. The SPI coatings were shown to have antioxidative activity. Furthermore, addition of carboxymethyl cellulose (CMC) to the formulations significantly improved its antioxidative activity. Oxidative discoloration, as determined by Commission Internationale De I'Eclairage (CIE) lightness ($L^*$), redness ($a^*$), and yellowness ($b^*$) color scale, was significantly reduced (p <0.05) by SPI coating treatments over a storage time of 120 min. Loss of lightness was reduced by SPI coatings with and without CMC. These respectively showed 4.03 and 3.71% change of $L^*$ value compared to 8.56% for control. Browning of the control in cut potatoes was significantly increased by 106.6% in contrast to 34.3 and 35.2% for SPI coatings with and without CMC, respectively. The $b^*$ values also reflected effectiveness of SPI. Moisture barrier effect was significantly better for the treatments, compared to the control. SPI coatings reduced moisture loss in apples and potatoes, respectively, by 21.3 and 29.6% over the control. Cut onions did not show any treatment effect both in terms of browning and moisture loss. SPI coatings prove to be good moisture barrier and antioxidative property.

A Modified Standardized Precipitation Index (MSPI) and Its Application (수정 표준강수지수의 제안 및 적용)

  • This study proposes a modified standardized precipitation index (MSPI) which was developed to make up for the weakness of the SPI. Both MSPI and SPI are applied to the monthly rainfall at the Seoul station for the drought analysis. The MSPI proposed is nothing but the SPI for the normalized monthly rainfall, that is, an extra step for normalizing the monthly rainfall is included before driving the SPI. Thus, the MSPI has a structure to transfer the relative amount of rainfall to the next months, but the SPI the absolute amount of rainfall. The monthly rainfall data at the Seoul station used in this study are those collected from 1777 to 1996. The rainfall data collected before and after the long dry period around 1900 were also analyzed separately for the comparison. The results derived are as follows. (1) The MSPI was found to be more practical compared to the SPI. This was assured by comparing the analysis results of the data including and excluding the long dry period around 1900. (2) The MSPI is found to be less sensitive than the SPI to the extreme rainfall events. For the MSPI, the occurrence probabilities of moderate drought before and after the long dry period are similar, but those for the extreme drought becomes slightly decreased after the long dry period (from about 18 years of return period before the long dry period to the 16 years after the long dry period). However, the duration becomes longer after the long dry period (the duration for the extreme drought has been increased from 2 to 2.5 months after the long dry period). This results can also be compared with a rather unreasonable result derived by applying the SPI (for the extreme drought the return period has been decreased to be from 25 to 10 years after the long dry period, on the other hand the duration has been increased from 1.5 months to 3.5 months). So, we man conclude that the MSPI is more practical for the drought analysis that the SPI.

Short Term Drought Forecasting using Seasonal ARIMA Model Based on SPI and SDI - For Chungju Dam and Boryeong Dam Watersheds - (SPI 및 SDI 기반의 Seasonal ARIMA 모형을 활용한 가뭄예측 - 충주댐, 보령댐 유역을 대상으로 -)

  • In this study, the SPI (Standardized Precipitation Index) of meteorological drought and SDI (Streamflow Drought Index) of hydrological drought for 1, 3, 6, 9, and 12 months duration were estimated to analyse the characteristics of drought using rainfall and dam inflow data for Chungju dam ($6,661.8km^2$) with 31 years (1986-2016) and Boryeong dam ($163.6km^2$) watershed with 19 years (1998-2016) respectively. Using the estimated SPI and SDI, the drought forecasting was conducted using seasonal autoregressive integrated moving average (SARIMA) model for the 5 durations. For 2016 drought, the SARIMA had a good results for 3 and 6 months. For the 3 months SARIMA forecasting of SPI and SDI, the correlation coefficient of SPI3, SPI6, SPI12, SDI1, and SDI6 at Chungju Dam showed 0.960, 0.990, 0.999, 0.868, and 0.846, respectively. Also, for same duration forecasting of SPI and SDI at Boryeong Dam, the correlation coefficient of SPI3, SPI6, SDI3, SDI6, and SDI12 showed 0.999, 0.994, 0.999, 0.880, and 0.992, respectively. The SARIMA model showed the possibility to provide the future short-term SPI meteorological drought and the resulting SDI hydrological drought.

Effect of Soy Protein Isolate Coating on Meat Quality of Pork Fresh Cut during Refrigerated Storage

  • Soy protein isolate (SPI)-based edible coating, with and without carboxymethyl cellulose (CMC), were used to reduce oxidative degradation of cut pork stored at $4^{\circ}C$ for 5 days. The SPI coating reduced (p<0.05) thiobarbituric acid-reactive substances (TBARS) and peroxide value (PV), compared with controls. The inhibition of TBARS and PV for SPI-coated porks with and without CMC, compared with the control was 19.1 and 23.9, and 25.7 and 37.7%, respectively. The SPI coating prevented loss of $L^*$ and $a^*$ values of porks compared to the control. The ability of the SPI coating to provide a moisture barrier for the porks was reduced (p<0.05). The SPI-coated porks with and without CMC reduced moisture loss by 37.3 and 44.6%, respectively, over the control. However, SPI coating of porks did not inhibit the growth of either total plate counts or L. monocytogenes. The result revealed that SPI can effectively be used as a natural antioxidative coating to extend quality and shelf life of pork.

  • Korea 5MBA(Small and Medium Business Administration) is operating SMEs Policy Information System called SPi-1357 as a part of electronic government business, G4B. SPi-1357 system is offering tailor made policy information to a nation through on-off line system. In this paper, I provide the offering status of policy information, the status of SPi-1357 system, political results of SPi-1357 system, comparison with other country's policy information system, and the development direction of SPi-1357 system. Until now, most Policy Information Systems documents have focused on policy maker but the focus of this paper is functionally oriented SMEs.

Functional Properties of Soy Protein Isolates Prepared from Defatted Soybean Meal (탈지대두박(脫脂大豆粕)에서 추출(抽出)한 분리대두단백(分離大豆蛋白)의 식품학적(食品學的) 성질(性質))

  • A laboratory study was made to develop a simple and economic model method for the systematic determination of functional properties of 'Soy Protein Isolates (SPI)' prepared from defatted soybean meal. These are required to evaluate and to predict how SPI may behave in specific systems and such proteins can be used to simulate or replace conventional proteins. Data concerning the effects of pH, salt concentration, temperature, and protein concentration on the functional properties which include solubility, heat denaturation, gel forming capacity, emulsifying capacity, and foaming capacity are presented. The results are as follows: 1) The yield of SPI from defatted soybean meal increased to 83.9 % as the soybean meal was extracted with 0.02 N NaOH. 2) The suitable viscocity of a dope solution for spinning fiber was found to be 60 Poises by using syringe needle (0.3 mm) with 15 % SPI in 0.6 % NaOH. 3) Heat caused thickening and gelation in concentration of 8 % with a temperature threshold of $70^{\circ}C$. At $8{\sim}12\;%$ protein concentration, gel was formed within $10{\sim}30\;min$ at $70{\sim}100\;^{\circ}C$. It was, however, disrupted rapidly at $125\;^{\circ}C$ of overheat treatment. The gel was firm, resilient and self-supporting at protein concentration of 14 % and less susceptible to disruption of overheating. 4) The emulsifying capacity (EC) of SPI was correlated positively to the solubility of protein at ${\mu}=0$. At pH of the isoelectric point of SPI (pH 4.6), EC increased as concentration of sodium chloride increased. Using model system$(mixing\;speed:\;12,000\;r.p.m.,\;oil\;addition\;rate:\;0.9\;ml/sec,\;and\;temperature\;:\;20{\pm}1\;^{\circ}C)$, the maximum EC of SPI was found to be 47.2 ml of oil/100 mg protein, at the condition of pH 8.7 and ${\mu}=0.6$. The milk casein had greater EC than SPI at lower ionic strength while the EC of SPI was the same as milk casein at higher ionic strength. 5) The shaking test was used in determining the foam-ability of proteins. Progressively increasing SPI concentration up to 5 % indicated that the maximum protein concentration for foaming capacity was 2 %. Sucrose reduced foam expansion slightly but enhanced foam stability. The results of comparing milk casein and egg albumin were that foaming properties of SPI were the same as egg albumin, and better than milk casein, particularly in foam stability.

Characterization of jute fibre reinforced pine rosin modified soy protein isolate green composites

  • Very slow degradation of synthetic based polymers has created a severe environmental issue that increased awareness towards research in polymers of biodegradable property. Soy protein isolate (SPI) is a natural biopolymer used as matrix in green composites but it has limitations of low mechanical properties and high water sensitivity. To enhance mechanical properties and reduce water sensitivity of Jute-SPI composites, SPI was modified with pine rosin which is also a natural cross-linking agent. 30% glycerol on the weight basis of a matrix was used as a plasticizer. The fibre volume fraction was kept constant at 0.2 whereas the pine rosin in SPI ranged from 5% to 30% of the matrix. The effects of pine rosin on mechanical, thermal, water sensitivity and surface morphology have been characterized using various techniques. The mechanical properties and water absorbency were found to be optimum for 15% pine rosin in Jute-SPI composite. Therefore, Jute-SPI composite without pine rosin and with 15% pine rosin were chosen for investigation through characterization by Fourier transforms infrared spectroscopy (FTIR), Thermo-gravimetric analysis (TGA), X-Ray diffraction (XRD) and Scanning electron microscope (SEM). The surface morphology of the composite was influenced by pine rosin which is shown in the SEM image. TGA measurement showed that the thermal properties improved due to the addition of pine rosin. Antimicrobial test showed antimicrobial property in the composite occurring 15% pine rosin. The research paper concludes that the modification of SPI resin with an optimum percentage of pine rosin enhanced mechanical, thermal as well as water-resistant properties of jute fibre reinforced composites.

Evaluation of Short-Term Drought Using Daily Standardized Precipitation Index and ROC Analysis (일 단위 SPI와 ROC 분석을 이용한 단기가뭄의 평가)

  • The Standardized Precipitation Index (SPI) is widely applied to evaluate for meteorological droughts. However, the SPI is limited to capture a drought event with a short duration, expecially shorter than one month. In this study, we proposed a daily SPI (DSPI) as a way to overcome the limitation of the monthly SPI for drought monitoring. In order to objectively assess the ability of the drought reproduction of the DSPI, we performed a receiver operating characteristic (ROC) analysis using the quantified drought records from official reports, newspapers, etc. The results of ROC analysis showed that the DSPI has an ability to reproduce short-term drought compared with other indices. It also showed that the main cause of historical droughts was the shortage of rainfall accumulated during the time period less than 90 days compared with the rainfall of normal years.

Immediate Effect of Serratus Posterior Inferior Muscle Direction Taping on Thoracolumbar Junction Rotation Angle During One Arm Lifting in the Quadruped Position

  • Background: The serratus posterior inferior (SPI) muscle originates from the spinous process of T11-L2 and inserts at the lower border of the 9-12th ribs. This muscle is involved in thoracolumbar rotation and stability. Several positions can be used to improve trunk stability; the quadruped position is a good position for easily maintaining a neutral spine. In particular, during one arm lifting, various muscles act to maintain a neutral trunk position, and the SPI is one of these muscles. If trunk stability is weakened, uncontrolled trunk rotation may occur at this time. Tape can be used to increase trunk stability. There have been no studies on the effect of taping applied to the SPI muscle on thoracolumbar junction (TLJ) stability. Objects: This study compared the TLJ rotation angle between three different conditions (without taping, transverse taping, and SPI muscle direction taping). Methods: Thirty subjects were recruited to the study (18 males and 12 females). The TLJ rotation angle was measured during one arm lifting in a quadruped position (ALQP). Two taping methods (transverse and SPI muscle direction taping) were applied, and the TLJ rotation angle was measured in the same movement. Results: SPI muscle direction taping significantly reduced TLJ rotation compared to that without taping (p < 0.001) and with transverse taping (p < 0.001). There was a significant difference in the TLJ rotation angle between transverse taping and SPI muscle direction taping (p < 0.017). Conclusion: SPI muscle direction taping reduces the TLJ rotation angle during ALQP. Therefore, SPI muscle direction taping is one method to improve TLJ stability and reduce uncontrolled TLJ rotation during ALQP.

Expression control of ssaJ and ssaK of SPI2 in Salmonella typhimurium (Salmonella typhimurium에서 SPI2의 ssaK와 ssaJ의 발현조절)

  • Salmonella Pathgenicity Island 2 plays an important role in Salmonella pathogenicity, especially invasion into host cell. We have investigated the effect of various environmental factors, such as oxygen level, osmolarity, pH, carbon starvation and glycerol addition on the expression of SPI2. For this research, we constructed the reporter plasmids, in which the promoter-less lac operons are fused with the regulatory regions (including promoter) of ssaJ and ssaK, major genes in SPI2. The study using the reporters showed that low oxygen, low osmolarity, or weak alkali conditions increased the expression levels of ssaJ and ssaK and when these three conditions exist simultaneously, the expression levels of ssaJ and ssaK are the highest. However carbon starvation and glycerol addition did not affect the expression of ssaJ and ssaK. These environmental effects on the expression levels of ssaJ and ssaK are the same in three Salmonella typhimurium wild types, LT2, UK1, and SL1344. In addition, we confirmed that the mutation in hilA, a regulatory gene encoding a transcriptional activator of SPI1, had no effect on the expression of ssaJ and ssaK. Thus, these results strongly suggest that the expressions of SPI2 and SPI1 are regulated by different control systems.
