Studies on Production of Modified Yoguhrt (Soy Cream) from Soybean Milk (I) (두유를 이용한 변형요구르트의 제조에 관한 연구(I))

  • To investigate the feasibility of producing yoguhrt from soybean milk which will be acceptable for Korean this experiment was carried out. The addition of pasteurized milk into soybean milk speeded up acid production by L. casei and also demonstrated the improvement of acceptability of the product. Certain additives like glucose, lactose and yeast extract also stimulated acid production. It was found that the yoguhrt of pH range of $4.2{\sim}3.7$ was well agreed to Korean preference. It was also observed by panel test in this study that the acceptability of Korean for yoguhrt increased through repeated tasting, and in consequence, this would turn out to be an ordinary acceptable food item, even though it is felt quite objectionable at the beginning of taste.

Studies on Physiological Properties of Isoflavone from Soybean and Its Processing Properties (콩 함유 이소플라본의 생리활성과 가공적성)

  • The antioxidant activity, nitrite scavenging effect, and angiotensine I-converting enzyme inhibiting activity of solvent extracts of soybean isoflavone were investigated. Also anticarcinogenic activities of them were examined by MTT assay using human cancer cell line. Isoflavone aglycones showed relatively high antioxidant activity in order of glycitein, genistein, and daidzein. Methanol extract of soybean actively scavenged free radicals and was shown excellent nitrite scavenging effect. Glycitein and methanol extract of soybean inhibited the growth of human cancer cell such as stomach carcinoma (SNU-1) and colon carcinoma (SNU-C4) effectively. Genistein, daidzein and methanol extracts of soybean inhibited the growth of cancer cell such as stomach carcinoma (SNU-1), but had weak activities to colon carcinoma (SNU-C4). To applicate the soybean isoflavone as an enhancer for food quality and processibility, the stabilities on heat and pH of isolated isoflavone, isoflavone in soybean flour and isoflavone concentrate of soybean were investigated. Stability of isoflavone concentrate of soybean was decreased in pH extreme (below 3, above 8) during sterilization, but isoflavone in soybean flour showed higher stability in all pH range. All kinds of isoflavone tested in this study were very stable during the heat treatment.

Biodiesel Production: Utilization of Loofah Sponge to Immobilize Rhizopus chinensis CGMCC #3.0232 Cells as a Whole-Cell Biocatalyst

  • Rhizopus chinensis cells immobilized on loofah (Luffa cylindrica) sponges were used to produce biodiesel via the transesterification of soybean oil. In whole-cell immobilization, loofah sponge is considered to be a superior alternative to conventional biomass carriers because of its biodegradable and renewable properties. During cell cultivation, Rhizopus chinensis mycelia can spontaneously and firmly adhere to the surface of loofah sponge particles. The optimal conditions for processing 9.65 g soybean oil at 40℃ and 180 rpm using a 3:1 methanol-to-oil molar ratio were found to be 8% cell addition and 3-10% water content (depending on the oil's weight). Under optimal conditions, an over 90% methyl ester yield was achieved after the first reaction batch. The operational stability of immobilized Rhizopus chinensis cells was assayed utilizing a 1:1 methanol-to-oil molar ratio, thus resulting in a 16.5-fold increase in half-life when compared with immobilized cells of the widely studied Rhizopus oryzae. These results suggest that transesterification of vegetable oil using Rhizopus chinensis whole cells immobilized onto loofah sponge is an effective approach for biodiesel production.

Germination Effect of Soybean on Its Contents of Isoflavones and Oligosaccharides

  • Three Korean soybean varieties - Shinpaldal-2, Seomoktae and Seoritae - were investigated for changes in their physical properties and the amount of functional components (i.e. isoflavones and oligosaccharides), during germination. Soybeans were germinated at $20^{\circ}C$ for 96 hr in complete darkness. The dry weights of cotyledone, hypocotyl, seed coat, and hilum of Seoritae were heavier than those of other varieties. The dry weights of the three bean varieties decreased steadily in spite of root growth. The largest amount of isoflavone content was observed from Shinpaldal-2 (1.824 mg/g), followed by Seoritae (1.216 mg/g) and Seomoktae (1.125 mg/g). Total isoflavone content increased by 13% during initial germination, and then decreased thereafter. Aglycone types such as daidzein and genistein dominated the increase in isoflavone contents. The increase in genistein content of Shinpaldal-2 was 17.5 fold compared with ungerminated soybean, while the amount of daidzein was 6.7 times as much as ungerminated Shinpaldal-2 over an 18-hr germination period. Oligosaccharide contents such as raffinose (Raf) and stachyose (Sta) rapidly decreased during germination, while the sucrose (Sue) content remained constant until 36-48 hr of germination. From these results, it was clearly shown that the germination process significantly changed the contents of functional nutrients in soybeans. Therefore, the optimization of germination process should be considered to improve the biological functionality of soybeans in food processing.

The development of new soybean strain with ti and cgy1 recessive allele

  • Soybean [Glycine max (L.) Merr.] seed is an important dietary source of protein, oil, carbohydrate, isoflavone and other various nutrients for humans and animals. However, there are anti-nutritional factors in the raw mature soybeans. Kunitz trypsin inhibitor (KTI) protein and stachyose are the main anti-nutritional factors in soybean seed. The ${\alpha}^{\prime}$-subunit of ${\beta}$-conglycinin protein exhibit poor nutritional and food processing properties. The genetic removal of the KTI and ${\alpha}^{\prime}$-subunit proteins will improve the nutritional value of the soybean seed. The objective of this research was to develop a new soybean strain with KTI and ${\alpha}^{\prime}$-subunit protein free ($titicgy_1cgy_1$ genotype) and proper agronomic traits. A breeding population was developed from the cross of the Bl-1 and 15G1 parents. A total of 168 $F_2$ seeds from the cross of the BL-1 and 15G1 parents were obtained. The segregation ratios of 9: 3: 3: 1 ($104Ti\_Cgy_{1\_}:\;30Ti\_cgy_1cgy_1:\;21cgy_1cgy_1Ti\_:\;13titicgy_1cgy_1$) between the Ti and $Cgy_1$ genes in the $F_2$ seeds were observed (${\chi}^2=5.12$, P=0.5-0.10). Two $F_4$ plant strains with proper agronomical traits and $titicgy_1cgy_1$ genotype (free of both KTI and ${\alpha}^{\prime}$-subunit protein) were selected and harvested. 2 strains (S1 and S2) had yellow seed coats and hilum. The plant height of the S1 strain was 65 centimeters. The 100-seed weight was 29.2 g. The plant height of the S2 strain was 66 centimeters and 100-seed weight was 26.2 g. The two strains selected in this research will be used to improve the new cultivar that will be free of the KTI and ${\alpha}^{\prime}$-subunit proteins.

Comparision of soybean varieties for soybean sprouts and Tofu processing (콩나물과 두부의 가공을 위한 콩 품종의 비교)

  • Eight varieties of soybeans grown in Korea were investigated to compare chemical composition, protein dispersibility index (PDI) and some properties of soybean sprouts and tofu. The range of protein contents was $37.80{\sim}40.43%$ where the Kyungdong 3 was the highest and Suwon 157 was the lowest, while the Bokwang was the lowest in lipid contents. The range of PDI was $71.6{\sim}95.3%$ where the Kyungdong 3 was the highest and Suwon 162 was the lowest. The Kyungdong 3, Suwon 160 and Suwon 162 were significantly fast in growth rate of soybean sprout roots and the 100% of germination. The Kyungdong 3 was the highest in tofu yield and Suwon 146 was the highest in hardness. The organoleptic properties of tofu showed that $L{\times}2.3$ and Suwon 162 was relatively high in cooked beany odor, while the Suwon 146 were the highest in elasticity and hardness. Even though Kyungdong 3 was found as the best for tofu and soybean sprouts processing, the black color of seed coat affected negatively on tofu color.

Use of Unmanned Aerial Vehicle for Multi-temporal Monitoring of Soybean Vegetation Fraction

  • Purpose: The overall objective of this study was to evaluate the vegetation fraction of soybeans, grown under different cropping conditions using an unmanned aerial vehicle (UAV) equipped with a red, green, and blue (RGB) camera. Methods: Test plots were prepared based on different cropping treatments, i.e., soybean single-cropping, with and without herbicide application and soybean and barley-cover cropping, with and without herbicide application. The UAV flights were manually controlled using a remote flight controller on the ground, with 2.4 GHz radio frequency communication. For image pre-processing, the acquired images were pre-treated and georeferenced using a fisheye distortion removal function, and ground control points were collected using Google Maps. Tarpaulin panels of different colors were used to calibrate the multi-temporal images by converting the RGB digital number values into the RGB reflectance spectrum, utilizing a linear regression method. Excess Green (ExG) vegetation indices for each of the test plots were compared with the M-statistic method in order to quantitatively evaluate the greenness of soybean fields under different cropping systems. Results: The reflectance calibration methods used in the study showed high coefficients of determination, ranging from 0.8 to 0.9, indicating the feasibility of a linear regression fitting method for monitoring multi-temporal RGB images of soybean fields. As expected, the ExG vegetation indices changed according to different soybean growth stages, showing clear differences among the test plots with different cropping treatments in the early season of < 60 days after sowing (DAS). With the M-statistic method, the test plots under different treatments could be discriminated in the early seasons of <41 DAS, showing a value of M > 1. Conclusion: Therefore, multi-temporal images obtained with an UAV and a RGB camera could be applied for quantifying overall vegetation fractions and crop growth status, and this information could contribute to determine proper treatments for the vegetation fraction.

  • Most of eco-friendly agrifood processing enterprises in Korean rural area are small and medium-sized business. For this reason, it's hard for eco-friendly agrifood processing enterprises to neither analyze business performance for efficient business management nor establish their own business plan for rational decision-making. Therefore it's necessary to design effective mathematical programming model and to make practical application which can support rational management decision-making ensuring the stable business activity of eco-friendly agrifood processing enterprises. Accordingly this paper focuses on the designing and its application of multi-objective mathematical programming model using goal programming to support rational decision-making of eco-friendly agrifood processing enterprise. Hansalimanseongmachum Food Inc. which runs soy bean processing business making tofu based on regional-based soybean farms around Anseong City will be the specific case to apply multi-objective mathematical programming model in practice. And it will suggest measures to support rational management decision-making of other eco-friendly agrifood processing enterprises.

11S and 7S Globulin Fractions in Soybean Seed and Soycurd Characteristics (콩 종실 단백질 분획(7S, 11S)과 두부특성)

  • Soybean seed consists of two major storage protein, the 7S and 11S globulins. For improving the quality of soybean seed protein, an increase of 11S/7S ratio would be a desirable objective because the 11S globulin contains much more the sulfur-containing amino acids than the 7S globulin. In this study, some soybean varieties were used to investigate the analyzing method for 7S and 11S globulins. 7S and 11S globulins couble be fractionated by their different solubilities in tris buffers. Adjusting the pH and tris concentration were major factors affecting the precipitation of the two globulins. And it was possible to screen the soybean genotypes having aberrant subunit compositions of the two globulins by an sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE) of total soybean proteins. The ratio of 11S to 7S globulin ranged from 1.29 to 1.38. This paper also dealed with the contribution of protein components in soybean seeds to the physical properties of soycurd. It indicated that the soycurd from crude 11S was remarkably harder than that from crude 7S, and springiness and cohesiveness were slightly higher in soycurd having higher proportion of 11S. So, it may concluded that proportion of protein components in soybean seed can be important factor which controls the suitability for soycurd or other foods.

Antioxidant Activity of Brown Soybean Ethanolic Extracts and Application to Cooked Pork Patties

  • The brown soybean extract (BE, extracted by distilled water, 50%, 75%, and 95% ethanol) were analyzed for their total phenol, flavonoid, anthocyanin content, and DPPH radical-scavenging activity to determine antioxidant activities. Brown soybean extract with 75% ethanol showed significantly higher DPPH radical scavenging activity, total phenol and anthocyanin content compared to the other treatments (p<0.05). Then, brown soybean extract with 75% ethanol was applied to pork patties at different concentration (0.05%, 0.1%, and 0.2%) and lipid oxidation was evaluated during 15 d of refrigerated storage. Addition of BE significantly increased redness and pH values, respectively (p<0.05). Moreover, TBARS value of pork patties decreased significantly (p<0.05) as BE concentration increased. In sensory evaluation, pork patties with 0.1% BE had significantly higher score than other treatments in flavor and overall acceptability (p<0.05). Consequently, these results indicate that 0.1% BE could be an effective natural antioxidant to inhibit lipid oxidation in pork patties.
